Hello loves ♥

I hope everyone has had a great week so far!  Mine has been, well let’s just say kind of rough.  A lot realized, a lot to think about, a lot of mixed emotions.  However, I am strong, I am determined and I will stay positive!

This morning I made Matt and I yogurt bowls.

matts was greek gods honey greek yogurt (which is amazing) topped with fresh nectarine, golden raspberries, blueberries, red raspberries and cherries. sprinkled with raw agave.

mine was plain greek yogurt topped with pineapple, blueberries, cherries and banana. sprinkled with raw agave.

This is my normal post walk snack, but Matt typically either grabs something quick for breakfast or eats at work, he was SUPER happy with his bowl.  We always have plenty of fresh fruit, but for some reason he doesn’t typically eat it.  Which of course I am ok with.  More for me!

Lunch was a whole wheat tortilla pizza topped with garlic hummus, pumpkin, chopped veggies and soy crumbles.  Amanda at .running.with.spoons. has a similar recipe on her site if you want to check it out.  But let me tell you this bad boy was delicious.  The garlic hummus really added a nice twang that went very well with the pumpkin.  Let’s just say this will be making more appearances in this household.  Matt has already requested one!

I have been craving Nicky’s banana bread hummus that I had made awhile ago, and it just so happened i had gotten some dates the last time I was at Whole Foods, so I decided to whip up a batch today. Gah, the stuff is just so amazing.  It went straight from the food processor to a Kamut puff cake and was quickly consumed.  Seriously one of the best snacks.

I seriously found that every time I opened my fridge I found myself dipping something into the hummus. No self control I tell you.  I just can’t help it, maybe I should move it to the back of the fridge so it’s less tempting.  But that wouldn’t be fun now would it. 😀

Today was really just another day. But sometimes, even the days that seem boring, not worth talking about, nothing special, well its still a day.  I’m alive and am thankful. So a boring day? Yes. But you know what… I’m thankful for it.
