Thank you all for the awesome welcome last week for my very first WIAW post! It’s honestly so great to be a part of this little family and I love love love reading everyone’s posts!

(ok so i didn’t read every post, but i would say pretty close!)

Also thank you miss Jenn for hosting. You are amazing and it’s amazing to see how big this has grown.

My day started off with my morning walk per usual.  I could not go to sleep the night before, which actually has been becoming a frequent occurrence, and only got a few hours of sleep, but when Matt’s alarm went off I was surprisingly energized.  I would love to be able to do more than a short morning walk, but right now that is all I am allotted to do.  I am SO ready to be able to run again.  That will be a very big accomplishment for me and something for me to work for.

Post walk, got my protein in with chocolate whey protein and some unsweetened cocoa mixed in with cottage cheese. Chocolate cottage cheese sound weird? It’s not. It’s amazing.  Check out Amanda’s at .running with spoons. recipe for . [i’ve died and gone to] heaven in a bowl . if you don’t believe me.

topped it off with frozen cherries, frozen grapes, fresh pineapple and strawberries. i am obsessed with fruit right now and can't decide which i want to eat. so why not eat a little bit of it all.

yup. they're baby puffs. and no. i do not have any children. all for me.

So not only is this my second WIAW post, which is very exciting for me, but it is also my first OIAJ experience. And let me tell you it was great. I started out with this.

oh no! my jam jar is almost empty (which means a trip to the farmers market to get more) but hmm what can i do with this little bit of jam? ohhhhh my, i can make my very first OIAJ. i was going to do overnight oats, butttt i got a little bit lazy the night before and just made hot oats in the morning.

Which ended up like this.

nom nom nom. look at all the jam goodness. all smeary and on the sides.

add a little crunch to the top. wait. something is missing...

almond butter! no girls. i didnt forget. im addicted. thanks. oh and that's a delish home made soy chai tea latte. 100 degree forecast. pfft i got this.

I think it’s safe to say I had a pretty good first experience with my OIAJ. But I pretty much like anything including oats, so i don’t really know where that can go wrong.  I’ll try anything once 😉

Lunch was a random concoction as always.

BBQ Baked Tofu Pumpernickel Panini

(say that 3 times fast)

What as on it: Baked Tofu topped with Trader Joes BBQ sauce (omg yum) Veggie Mix: Eggplant Bacon, Alfalfa Sprouts, Zucchini, Tomato.

onto the grill we go.

finished product. served with a side of roasted broccoli, peas, and snap peas and a little sprinkle love of nutritional yeast. although i'm a firm believer anything made into a panini is fantastic, this was indeed pretty tasty

V for Vendetta? Vengance? err happy V word... verr... VICTORY!

Dinner was also more than amazing, but I am also pretty easy to please.  I love being creative with my dishes, but sometimes sticking to the basics works for me too.  I see sooo many great recipes and the lazyness inside of me typically wins and says oh but thats sooo much cooking.  What can I say. I have the passion for cooking, but sometimes not the motivation. So for dinner some tempeh went into a skillet, a salad was made, i was feeling spicy. So a buffalo tempeh salad is what ended up on my menu.

topped with some vegan ranch and we are clear for take off!

(does anyone even use ps anymore? did you ever write notes in school to your friends and you had ps. then pps. then ppps. yea i was that cool)

And the best snack ever?

why have i never had these delish little snackimals before. gah. amazing.

Plain Chobani yogurt topped with fresh blueberries and a sprinkle of cinnamon. Perfect end to my night. Delish.

I also wanted to add in what I’m reading right now.  Sarah’s Key.

The more I read the more I don’t want to put it down. Should be done in no time.  I really wish it wasn’t 100 degrees here still.  One of my favorite things to do is sit outside and read, I tend to get distracted in the house.  But with 3 cats and 1 dog and HGTV it’s not too hard to distract me.  Even our nights are still hot and humid. waahhh. I moved to Arizona to get AWAY from the humidity, why did it follow me here. -le sigh-  But in November I will remember why i did move here, when I’m still in a t-shirt and able to sit outside. muahahah.
