Happy Friday my loves ♥

Oh my what a week.  I feel like it flew by.

Despite having to conquer my fear foods, I’ve been feeling a lot better about my food choices and the fact that I eat so much right now.  The more I talk to my nutritionist the more I realize that what I’m going through is normal.  The weight gain is starting to…let’s just say mentally challenge me.  The thoughts of going back to my old body, the body I hated, is a huge fear.  But I am so focused on being healthy and being done with the negative thoughts, I tell myself the extra weight is worth it. And normal and healthy.

It’ll sink in one of these days. I have faith.

But on to happier things. I got some packages! Yay!

I seriously stalked the FedEx guy.  No really, not only did I track these bad boys and checked their status, oh every half hour, but as soon as I heard that truck noise I was at my door waiting for him! Why so anxious you ask?

nut butter!!! there was an amazing deal on open sky for this 3 pack. i think i only paid like $8 you really can't beat that. only wish it included the chocolate hazelnut because that stuff is to DIE for.

Andddd I got a bit carried away and was a bit excited over getting these bad boys.

yea. i make nut butter pyramids.

You can bet this made an appearance on my nightly snack.

By the way this now makes me have a total of 8 nut butters in my cupboard.

And how ironic.  I had actually finished a jar and had OIAJ for breakfast.

if you have never heard or tried nuttzo peanut butter, you need to. its amazing. and what makes it even more amazing? hot chocolate steel cut oats with banana and raspberries mixed in. too good for words.

Lunch was a simple turkey and bbq sauce panini.  I thought when I ate meat again it would be one of those “omg I missed this so much” moments.  But that hasn’t happened yet.  I think I am going to finish off what I have a be done with it.  It’s just not as good as I remember. BBQ sauce however is always amazing!

served with a side of oven roasted broccoli and some organic creamy roasted tomato soup.

I’m not typically a soup person, unless I make it myself, but these were on sale at Whole Foods so I thought I would try them.  It was actually pretty good.

almost made this with tempeh. should have went with that. meh. there is always next time! because let's be real, i never get sick of bbq sauce!

Another OpenSky package!

granola from Kath! yay! i always see her munching on this on her blog and when I saw the OpenSky deal I just had to get my hands on some.

I almost went against my original dinner plans.  I’ve been trying to do more savory items hoping they will keep me more full, but sometimes I find myself slipping back into the quick easy meals.  Which honestly have been cereal and panini’s lately.  But I decided to keep my original plan and I am glad I did.

Buffalo “Chicken” Salad

I used a Quorn chicken patty and topped it with Tabasco’s buffalo hot sauce.  Seriously this stuff is amazing and I’ve talked about it before.  Not only does it give me that buffalo flavor that I love, but it’s not thick like the other typical wing sauces.  A win in my book.

Romaine topped with carrots, zuchinni, yellow bell pepper and tomato. topped with vegan ranch and the buffalo chicken patty. this salad was pretty delish.

I love buffalo sauce so this meal was pretty much a win to start with.  I also love that the Quorn chicken patties are soy free.  I try not to eat too many of the fake meats made from processed soy, which is also why I learn more towards tempeh as well.
