Well loves, my vacation is finally over. Boo!

I really enjoyed my time off from school, maybe a little bit too much because I have almost no motivation to go back! I mean, of course I am going to go back, but I just hope I can quickly get back into the swing of things. I’m going to have too, because our final is this week!  I’ve been doing really well in this class I would hate to ruin it in the last week.  I’m sure I will be fine though!

So it is already that time again. What I Ate Wednesday.

I don’t know the last time I actually did a complete day of eats, but you guys I’m sure have come to not expect that.

But before I do show you some tasty eats that I have been enjoying let’s head over to the lovely Jenn’s at PeasandCrayons and thank her for being the lovely host.

As I mentioned I of course did not get a fulls day of meals, but I did however have two amazing breakfasts that deserve some spot light.
Again, my excitement for these should be little if no surprise to those of you who know me.
Two of them.
I know right.
Each special in their own little way.

OIAJ to me is always bittersweet.  Yes I love the mixture, but it means I am out of whatever deliciousness was in the jar.
I’m pretty good at keeping back-ups, this one however I did not.
I actually went to the farmer’s market specifically to get this and they were closed!
I was pretty bummed.
But I still did enjoy this breakfast.

And let me tell you, these were no ordinary oats. Oh my do I have a lovely treat for you all.

I made Strawberry Banana Protein Oats.

Strawberry Banana Protein OIAJ

In my mix:

1/2 cup rolled oats

2 tbsp chia seeds

2-3 tbsp strawberry banana protein powder (I used Spiru-tein)

1 tbsp cinnamon

1-2 tbsp maple syrup

Let me tell you. These were delicious.

might have been even more delicious with the addition of a nut butter. but then again what isn’t better with the addition of nut butter. nothing i tell you.

The combination with the left over pumpkin butter was just over all awesome.

And if you can see my oats were pink! How cute. I love pink!

Very soon after this while making Matt breakfast another great/sad thing happened.

I used all of our almond butter.

But you know what that means.

Oh yes, another OIAJ.

This one however topped the last, not because it was in a nut butter jar (although I think that would have been enough) but I took a little spin off of this recipe, but added/subtracted my own spices and obviously didn’t bake it.

I will call these Cinnamon Apple OIAJ

this by far was one of the best oiaj i have had in a bit.

Cinnamon Apple OIAJ

In the mix:

1/2 cup rolled oats

2 tbsp chia seeds

1/2 unsweetened applesauce

1 tbsp maple syrup

1-2 tbsp cinnamon

dash of either pumpkin pie spice or apple pie spice

topped with banana and a sprinkle of cinnamon

I usually keep my oats pretty plain because I feel when you add too much it really takes from the oatmeal flavor and texture which I love all by itself.  So the fact that I am so excited over how delicious this was, let’s you know it was pretty delicious.  I may have to make this into a oatmeal pancake recipe as well.

I know a lot of people have mixed emotions about OIAJ, but I love them. I just love eating out of random containers. I’m weird like that.

yup. cereal in an empty fage greek yogurt container.

Seroiusly though, the left over yogurt and using chocolate almond milk is amazing. Yes I know it’s just cereal. I’m easily pleased.

Well, being back in the grind of things means more boring quick meals. Yay.

Do you prefer your oatmeal plain? Or do you have to spice it up? For me it really depends on my mood.  Sometimes I love the plain nothing in my oatmeal taste, but sometimes when I find a right combination, I’m in love with flavor.
