August is over. Seriously? Where does time go. I can not believe it is already September. But with the end of the month comes that time where I get to reveal my foodie pen pal. Seriously guys, I love participating in this. Not only do you get fun new treats, but I have met some other fabulous bloggers.

So what is Foodie Pen Pals about? Here is a little blurb on it.

-On the 5th of the month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treatsThe spending limit is $15The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you can choose to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.

This month I got paired with Debra from Eliot’s Eats.

She sent me one of the most simple, but one of the best packages I have gotten since participating. When I say simple, I mean it in the best way possible. This lady sent me something that went straight to my foodie heart.

She had asked me some of the things I liked and my typical response is jams/jellies, nut butters and healthy snacks.

Ok, if you guys are avid readers of Accidently Delish you know I am obsessed with jam. Obsessed. So what she sent me made me beyond giddy.

Seriously it may look like 4 simple jars of jams, but I have never been so excited and happy with a package.

She had told me prior that she didn’t have time to write “a cute note”, but I thought her note was pretty cute!

When I received the package I quickly wrote her to let her know and to say thank you.  She sent me back a little description of what she sent.

Grape Jam with Orange Essence  made with grapes from our own vines.

Jalapeno-Mango Jelly made with jalapenos from our garden.

Peach Marmalade….Some of our peach preserves were made from peaches from our two tiny peach trees.  But, we relied on orchard peaches for most of our peach jams.

Blackberry Cinnamon Jam   We don’t have blackberry bushes but we do live very close to a huge blackberry/Christmas tree farm. Easy pickins’

This month I actually was paired with a non-blogger Monica.

Monica let me know she was 8 months pregnant (yay congrats) and wanted a mix of healthy and indulgent snacks. I have never shopped for a pregnant women before, so after I made sure she didn’t have dietary restrictions I had so much fun shopping for her!

Here is what she had to say and some pictures she snapped.

Thanks again for the great selection of treats for my prego self:) the night I got the package I of course had to bake the brownies. Possibly eaten with a little vanilla ice cream…DELISH!!! My two kids stole the dried mangos and I never saw them again. Haha! By far my favorite item was the home mixed granola! I loved all the different mixes together. It was perfection! Also while staying a tad healthy. Thanks again Debbie!

So I think I did pretty well at giving her a healthy yet tasty mix of treats.

Here is what I included: Apple, Orange, Trader Joe’s Dried Mango Slices,  Late July Organic Peanut Butter Cracker Sandwiches, Trader Joe’s Brownie Mix and then a homemade mix of granola.

In the mix I included banana chips, Enjoy Life Chocolate Granola, Nature Path’s Love Crunch – Apple Crumble, and Vanilla Granola.

I also got her two jars of baby food. I know newborns don’t eat baby food right away, but I just could not resist! I was so excited for her and love babies! Gotta get the future foodie some treats too!

Overall this was an incredible month, I feel like I got lucky on both ends.

wiaw #46 – sprinkle love and peanut butter goodness

Ok I feel like I have been way super chipper lately, but I really can’t help it.

Not only did I become an aunt, but I am also in an audit class and do not have the stress of school. It is so relaxing I can’t even describe.

If you’ve read a few of my other posts, you know how crazy stressed I was about school. So glad to be able to let my brain relax.

Along with the relaxation time, this girl has gotten back into the kitchen!

So let’s get on to What I Ate Wednesday

And for once I can actually show you some complete eats!

Breakfast started out pretty epic.

I took my new gorgeous PowerCake and added a little celebratory goodness.

Everything is better with sprinkles right?

I think so.

I’m not going to lie, these PowerCakes do not get old. And now I keep adding to the goodness. I do think I need to branch out and maybe try some new flavor combo’s. Now that I have the time the possibilities could be endless!

And I actually  got a little creative with dinner. It is so nice not having to rush the dinner process so it doesn’t cut into my studying time. What has my life become?

I took a spin off of Meg’s Peanut Chicken and made this amazing dinner.

I had bought a pack of yam noodles at the Asian market and have been dying to try them. They are similar to the tofu noodles I’ve had before so to cook them I threw them in the steamer with my broccoli and cauliflower. I marinated it all with some Braggs Amino Acids and crushed red pepper.

Here is what I put into my peanut sauce.

Spicy Peanut Chicken Sauce

-2 tbsp peanut flour

2 tbsp water

-sprinkle of cinnamon

-squirt of sriracha

-sprinkle of sweetener of choice

(don’t you guys know sprinkles and squirts are legit measurements?)

Basically season to taste.

I cooked the chicken and at the end poured on the peanut sauce and cooked for a few more minutes to thicken.

It was amazing.

Matt had dodge ball that night, so he was home late, but as soon as he let me know he was on his way home, I quickly informed him I would have dinner waiting for him. Yes, he got the same thing. No, he was not disappointed.  This is a dish that will be repeated.

I am thinking next time I want to either make it with tempeh or tofu. I have been craving tempeh lately!

Of course I am going to partake in the lovely Katie’s Marvelous In My Monday, but let me tell you guys something, this Monday is an extra special Monday.

I bet you’re expecting me to say it’s extra special because it’s my first Monday of my audit class and I get to relax. I mean, if you read my last post you know how crazy excited I was for Pharmacology to be over.

But no friends, this Monday is extra special for another reason.

I got a call early this morning that my sister is going to have her baby today!!

I am going to be an aunt!

And I can not tell you how excited I am!

This of course makes me wish I was there, but I am going to visit in a few weeks, so now I am extra excited. Ah. I can’t contain myself.

And as per usual on my Marvelous In My Monday posts is recap on my weekends. I mentioned we visited Matt’s parents on Saturday, which was so nice, but Sunday was nice and relaxing as well.

Have you gotten any exciting news lately?

a sigh of relief

First off, let me get this off my chest.

Pharmacology is over!

♥ ♥ ♥

And guess what. Not to toot my own horn -toot toot- but I passed the class with a 94%!!

I am incredibly proud of myself, not only because I got an A is one of the hardest classes, but I got an A in one of the most hardest classes!

I can not explain how incredibly relieved I am for this class to be over and for me have done so well.

♥ ♥ ♥

Going in to the final I wanted to get a good breakfast in. And boy did I get a tasty one in.

One of the most delicious powercakes I have made to date! And one of the prettiest I might add.

It was a special day, I deserved a special breakfast.

It was my typical powercake mix topped with fresh banana, strawberries, peanut butter and chocolate drizzle.

Ah-mazing.

A great way to start my day let me tell you.

One of the bad things about my classes is even on the last day of class we have to stay for the whole class. Which means my teacher waits until the end of the class for us to take our final. Do you know how hard it is to sit through nonsense all day when all you want to do is take your final and be done. The teacher gave us some “study time” which is so pointless because the whole class basically sits there talking about how nervous we all are about the final.

I took the time to fuel up some more brain power.

The topper to my day was our teacher had calculated all of our grades up to the final and how many points we needed to get on the final to pass the class. I guess a lot of people were at risk for failing, so she wanted to give everyone a heads up on what they needed.  Good and bad idea if you ask me. That could put a lot more pressure on people. I went up there and do you know how many points I needed to pass the class. Zero. Yup, I could have not taken the final and still passed the class. Yay for me, really made me just want to go home.  Not that I could ever really do that, it was nice to know though and it took a bit of pressure off. I of course still wanted to do well. You know over-achiever me.

Final over. Ready to celebrate. And I did. I have some amazing classmates and celebrated this with gorgeous creation.

It tasted as amazing as it looks. S’mores cupcake. Oh.em.gee it was amazing. And totally worth it.

I deserved it right?

My next class is a general class, which I don’t even have to take, so I’m basically going to a class that doesn’t count, but let me tell you, I am so excited to be able to relax and not worry for a whole month. So excited.

We went to visit Matt’s parents Saturday and it was so nice to not have to bring my text book and have nothing to prep for.

Matt’s mom is still recovering from her GI upsets (she had to have another surgery) so it was so nice to see her feeling better.

We even went out to lunch to watch the Colt’s game.

Oh little mountain town bars. I love them.

(I didn’t take a picture, but I ordered a grilled chicken salad, that for a small little bar was amazing. Loaded!)

Do you know what is so great about this Monday?

It’s my last Monday of Pharmacology!! Can I get a woot woot!

I may be a bit over excited this is my last week of this class, but it has been stressing me out like crazy, so I am happy to see it go.

Thankfully I have done way better than I thought. Not that I thought I was going to fail by any means, but I just surprised myself. Let’s leave it at that.

So which that being said I think it’s a perfect intro for the lovely Katie’s Marvelous In My Monday.

Because let’s be honest. This Monday is pretty marvelous to me.

The weekend was kind of chill. Which I am always ok with. Sunday I was not feeling well at all, so it was an early night in and a lot of laying on the couch. I hate when the tummy is upset.

But Friday was a day worth mentioning.

♥ ♥ ♥

Sushi. Friends. Drinks (much needed and deserved) and Fun.

My friend Heather (girlfriend of Matt’s co-worker Nick) suggested we do a triple double date. I know. It doesn’t make sense. It was a triple date, but she really liked the sound of triple double date, so I went with it.

We met up with her and Nick and one of Matt’s other co-workers Travis who is now dating Heather’s best friend Christina.

Confusing I know.

We met up at an old favorite sushi restaurant Sakana.

Wine was quickly ordered. They have the best plum wine. And I deserved it. (I had found out that I did so much better on my test than I thought I did. I was ready to celebrate)

I started off with a seaweed salad. I am addicted to this stuff.

Not the most photogenic seaweed salad, but it was still delicious.

Matt ordered the seared tuna tataki, which I really think was the best cooked tuna I have had in some time.

Next the sushi. And lots of it.

Too much actually, for once we didn’t finish everything.

Matt got the soft shell crab for himself. He usually gets this wherever we go.

I got a Boston roll for myself. Basically a California roll topped with spicy tuna.

♥ ♥ ♥

And then we shared a spicy tuna and spicy salmon.

Yea. I think only half of this was eaten.

Well Travis and Christina took care of the rest, but that’s what friends are for right?

After dinner Nick wanted to come over and hang out for a bit. We’re always down for hanging out (Heather had to go back to work, she is a manager at Wal-Mart and they had their Hunger Games DVD release extravaganza. Crazy Hunger Games people.)

We told Nick just to meet us at our place and we would stop and grab a few more drinks on the way home.

Funny story.

We get to our apartment and notice Nick isn’t there yet. He should have beat us to our place.

When we had turned onto our street a cop had pulled someone over. I made the joke of, oh I hope that’s not Nick.

It was.

Nick has more of a sports car and I guess he um accelerated a bit too quickly.

He had to do the whole field sobriety test, which thankfully he passed everything and got off with a warning.

That kid got lucky.

Let’s just say the rest of the night was chill.

All in all a great night out with friends. Which is always good.

I know it is What I Ate Wednesday, but honestly, this new product has been a staple in my house lately.


Even if you don’t have, um, problems in that department, which I never really have, I still jumped at the chance to try Good Belly’s 12-day challenge.

I was more or less curious to see if I would notice a change.

I started off my challenge by having the juice every morning.

Let me say. This stuff regulates you. Well, it regulated me.

Like I said, I never really had an issue in that department, but this definitely kept my body on a schedule. Which I didn’t mind.

The Tropical Green flavor also gets a huge thumbs up in my book. It was basically just like drinking juice in the morning, but this stuff is better for you.

The shots and drinks were good as well. I didn’t consume them everyday since I was drinking the juice everyday, but once in awhile I would sneak one in.

The lemon-ginger flavor was interesting, but good interesting. And I loved that it was sugar free.

And the blueberry acai was amazing. I think these would also be good mixed into green smoothies to add a little flavor and probiotics.

Overall, even if you really don’t have issues in that department, these products are worth checking out!

celebrations were in order

I hope everyone had a wonderful weekend! Mine was, well let’s say not as stressful as last weekend.

Remember my post where I basically was freaking out over my Pharmacology test? Well. With good reason. I mean. There was just so much. And so little time. And so much.

But I am very happy to report that all my hard work and studying paid off!

So what a great way to celebrate Katie’s Marvelous In My Monday.

What are we celebrating? Well, I surprised myself by getting a 88% on my quiz!! (most of my class actually failed this quiz and I thought I did too) I literally walked away from that quiz knowing I only 100% knew one answer. The others I truly felt I guessed on. I guess I’m a good guesser. Ha.

That night I really didn’t know how/what to study for the test the next day. I tried not to stress over it. Went over what I could. Didn’t over do it. And decided to let fate take over.

I guess that worked too, because I got a 94% on my test!!!

I seriously about peed my pants.

I off course had texted Matt right away, but when he got home I demanded celebratory fro-yo. Like he would have said no to fro-yo anyways, but he graciously obliged!.

There is a Yogurt-Land by us that we haven’t tried yet, so Yogurt-Land bound we were!!

Matt was super boring with his and only got lychee as a topping, although I was jealous of his pistachio flavor choice. I didn’t think I liked that flavor. I do now.

Mine however was chocolate heaven. Half dutch chocolate and half cocoa almond.

With some banana and the must needed graham cracker crumbs and sprinkles. Sprinkles make everything better. And we were celebrating!

Let’s just say this was devoured in no time.

On to more celebrating!

Yea I’m sorry, I’m a beer drinker. It how I like to celebrate.

We had an awesome chill tonight watching the Olympics and just hanging out. Being normal. Doing what people do.

Oh the simple things in life.

And like the grandma I am, I passed out before 11pm. I’m that awesome.

The weekend was actually a well balanced one. I had my Asian market adventure, but yes, more of this did happen.

I had a note card stealer on the loose! Ok, so he really wasn’t on the loose. And I guess he really wasn’t stealing them, but it’s a wonder why it takes me so long to study, I mean I have the most amazing study buddies. Ok, they might be more of a distraction, but they are just so cute.

Gotta love them.

Well it’s back to crazy town for me. Trust me when I say I can not wait for this class to be over.
