I hope everyone had a great weekend.

Mine was quite nice if I do say so myself.

I enjoyed endured the Colts game on Sunday. Ugh. They have such potential, but geez, they just did not deliver. Peyton Manning however did deliver for the Broncos. I want Peyton back!! But regardless of the Colts first loss, I had a wonderful time out with Matt. It’s just so nice being normal again and doing normal things. I know a lot of you are probably thinking, “uh Debbie all you did was go to a bar and watch a football game?” Yes, that is all I did, but for me, someone who use to not be able to be out of the house for more than 4 hours because “what if I got hungry” “what am I going to have for lunch” and the list goes on and on, this is a huge accomplishment for me, to be able to actually just enjoy the game and go with the flow. And that is what I did.

But on to the more exciting part of my weekend.

Baking.

Yea I might have blown up Instagram with my baking adventure, but I was having a good time. I always forget how much I love baking until I actually do bake and realize how much I love it.

I was recently sent coconut oil from Tropical  Traditions to try (make sure to check back for a giveaway) so the first thing I knew I wanted to do was bake with it. I wasn’t expecting the overflow of recipe requests so I figured I would do a quick post to give you the recipes, then host the giveaway later.

So here you go loves.

First up.

Cake Batter Blondies

Ingredients

– 1 box funfetti cake mix (you can also use yellow cake mix and add sprinkles)

– 1/4 cup coconut oil

– 1 egg (beaten)

– 1/2 cup milk (I used Almond Vanilla Unsweetened)

– 1/2 cup chocolate chips (optional)

Directions

– Preheat oven to 350 degrees

– Combine cake mix, egg and oil in a large mixing bowl

– Add milk slowly until batter is combined – you want this to be a dense batter

– Place batter in a greased 8×8 pan

– Bake for 25-30 minutes, until edges start browning

Let cool for 20 minutes (the center will still appear to be gooey. This is ok. Waiting will allow it to “set” But you want the middle to be soft.)

After cooling you will have a soft cake batter texture with a wonderful gooey center.

Next up

Chewy Coconut Chocolate Chip Cookies

Ingredients

– 1-3/4 cups flour

– 1/2 cup coconut oil

– 2 eggs

– 1-1/2 cup brown sugar

1/2 tsp salt

– 1 tsp baking powder

– 1/4 tsp baking soda

– 1 tbsp vanilla

1/2 cup chocolate chips

Directions

– Preheat oven to 400 degrees

– In a large bowl use an electric mixer (I did this by hand) and beat together coconut oil, flour and brown sugar until well mixed

– Add remaining ingredients, mixing until well incorporated

– Roll dough into balls (I used a tablespoon as a scoop) and place on cookie sheet

– Bake for 9-11 minutes or just until cookies are brown along the edges

– Remove, cool, devour

Let me tell you both of these were amazing. I am a huge funfetti cake fan to begin with, but the addition of the coconut oil was just amazing. I am looking forward to experimenting more with it!
