Ok guys. Seriously. Tomorrow is Thanksgiving. Can you believe it? I can’t.

I don’t know where my year has gone.

We are going to Matt’s parents as per usual, so if I don’t get a post in before hand I just want to say I hope everyone has a very safe, fun, loving and food filled Thanksgiving!

Remember. This is a day to enjoy with family and loved ones, so make sure that is what you focus on.

I know with an ED, a lot of us focus on the food, what to eat, what not to eat, how much to eat.

You know what. Throw that out the window for a day, because that is not what the day is about. It’s a day to remember what we are thankful for.

So we should all be thankful that we’re alive, healthy, and have our loved ones surrounding us.

I know that is what I’ll be doing.

Trust me, I will be eating lot’s of mashed potatoes, stuffing and of course pumpkin pie.

Guilt free.

But on to more fun things!

What I Ate Wednesday!

There are also some goodies going on around here. And boy do I have a Thanksgiving treat in store for you.

Two actually!

First things first.

We all know I love my power cakes.


But I decided to switch it up a bit.


Chocolate Pumpkin TVP PowerCake Bake

– 1/2 cup egg whites

– 1/4 cup canned pumpkin puree

– 1/4 cup TVP

– 1 scoop chocolate protein powder

(could sub 2 tbsp cocoa powder)

-1/2 tbsp cinnamon

– 1/2 tbsp pumpkin pie spice (or more if you’re like me)

– 5-7 drops vanilla stevia drops (depending on how sweet you want it)

-1/4 cup water

– Preheat oven to 350 degrees.

– Combine  TVP and water in a microwave safe bowl and microwave until all liquid has been absorbed. (about 1-2 min)

– Mix in remaining ingredients.

– Spray oven safe ramekin or bowl with cooking spray and pour in ingredients.

– Bake for about 40-45 minutes or until the center appears set.

– Safely remove dish from oven and flip onto a plate.

– Top with desired toppings!

I topped mine with peanut flour fluff and of course a sprinkle of more cinnamon! But greek yogurt or protein #goop would be good too!

The TVP added a nice thickness to this bake and I mean extra protein staying power?

Can’t go wrong there.

Topped with whipped pumpkin infused cottage cheese a peach and look some more cinnamon.

I could really go on, but I won’t bore you.
