I hope everyone is having a fabulous week. I think I am still on high from my weekend, so my week so far has been good.

Just overall happy. Happy with life. Happy with Matt. And happy with Me.

It’s amazing what small accomplishments can do.

Part of my challenges lately have been to, well simply put, challenge myself.

So one thing I am doing is trying to get out of my safe food zone and eat new things. One of the things Matt and I decided to do was cook new dinners. Since we are both pretty busy, me with school and him with work, cooking up a meal when we get home isn’t always possible.

Solution?

The return of the crock pot!

Matt and I both looked up some recipes and picked some and for our first experiment we decided to go an Enchilada Chicken Stew recipe that I found.

Here’s all that went into it.

Ingredients

  • 2lbs chicken breasts
  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 (4oz) can of chopped jalapenos
  • 1 (4oz) can of chopped green chiles
  • 2 tablespoons coconut oil
  • 1 (14oz) can of diced tomatoes
  • 1 (7 oz) can tomato sauce
  • 3 garlic cloves, minced
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 2 teaspoons dried oregano
  • salt and pepper, to taste
  • bundle of cilantro, to garnish
  • avocado, to garnish

And the directions couldn’t have been easier. (reasons why I love crock pots)

Directions
  1. Pull out your handy dandy crock pot.
  2. Add your chicken breasts.
  3. Then add the rest of the ingredients on top, in any order.
  4. Put on low for 8-10 hours or high for 6-8.
  5. After it’s done cooking, use tongs to pick at the chicken to shred it in with all the ingredients.
  6. Top with cilantro and some avocado.
  7. Eat up!!

Gotta love that simplicity. I know I do.

So this morning before I left for school I dumped everything into my handy dandy crock pot.

When I came home from school oh man did the house smell good!!

It was also nice for me to be able to get a few things done around the house instead of running around trying to get dinner ready by time Matt got home.

When Matt did get home all I had to do was spoon this stuff up into some bowls!

With actual dinner I also cooked up some brown rice to help soak up some of the juice.

It was a perfect, quick, easy meal I’ll tell ya.

Now if only I could switch up my breakfasts, because let’s be real, it’s been looking a lot like this lately.

P28 bagel topped with whipped protein #goop. That would be cottage cheese mixed with chocolate Plant Fusion and a bit of Trader Joes pumpkin butter.

Proof I will mix anything together.
And it wouldn’t be complete with out a sprinkle of Quest Bar crumblies.

I’m on my last bagel from P28 and I am so sad about it. They are seriously the best.
