I’m taking a break from studying because well I promised you an amazing cookie recipe, and a girl has to have priorities right. Posting about delicious cookies > studying. I think so anyways.

So what a better time then What I Ate Wednesday, so don’t you worry some eats will be here too!

But first, the star of the show.

I had mentioned in my last post, that these were kind of an accident. I of course found a recipe, took it as a starter, and kind of threw random things in. Something that typically isn’t a smart thing to do when baking, but it seemed to work this time.

So some measurements might be an estimate or best guess to what actually went in.

Chai Oatmeal Raisin White Chocolate Cookies

(yup I know it’s a mouthful)

– 1 cup butter

– 1/2 cup granulated sugar

– 1/3 cup honey (original recipe calls for 1/2c dark brown sugar & 1/3c white sugar, but I couldn’t find my brown sugar, so I used all natural clover honey instead)

– 2 large eggs

– 1-1/2 cups four

– 3-1/2 cups old fashioned oats

– 1 tsp baking soda

-1/2 tsp salt

– 1 tbsp vanilla

– 1/2 tbsp cinnamon

– 1 tsp ginger

-1 tsp cloves

– 1/2 cup raisins

– 1/2 cup white chocolate chips

– 1 chai tea bag

– 2 cups boiling water

– Let chai tea steep in boiling water for 5 minutes. Discard teabag. Let raisins seep in chai tea for 15 minutes, then drain.

– In a large bowl, cream together butter, sugar and honey for about 3 minutes. Beat in eggs and vanilla.

– In a medium bowl, combine flour, baking soda, salt, and spices. Add flour mixture to sugar mixture.  Stir in oats, raisins and white chocolate chips.

– Preheat oven to 350°F. Line two baking sheets with parchment paper. Drop dough in rounded tablespoons onto baking sheet. Bake until golden brown, 10-12 minutes.

These delicious babies were the result. And oh my gosh were they delicious.

When they came out of the oven they smelled amazing, but smells can be deceiving.

Matt and I took bites at the same time.

And both had the same reaction.

“Oh my gosh these are great!”

I made these specifically for my Foodie Pen Pal (I probably just ruined the surprise for her) and sent off some extras to Matt’s work.

He said his co-workers played the “what’s in this?” game.

But they loved them too!

So I will claim these a success (Lindsay you can be the final judge!)

And now on to a few delicious eats I’ve had lately.

I took a break for awhile, but whipped cottage cheese is back full blown in my life.

But not just any whipped cottage cheese Fitmixer chocolate infused whipped cottage cheese. I mean. You can’t get enough protein.

Put that protein #goop on top of a P28 bagel and talk about protein-palooza. Who needs cream cheese?

And it’s pretty tasty to boot.

Well loves it’s back to studying for me.

I have a lot of parasites to memorize and who doesn’t love learning about worms, fleas, and bot flies (youtube the removal of that one, you’ll thank me later)?
