Wednesday already? And on top of that the end of February. Seriously where does time go. I know I sound like a broken record when I say that, but it never ceases to amaze me how quickly time flies. Just to put that into perspective, I have two, yes you heard me, two classes left until I go onto my externship and then graduate.

I mean seriously. It seems like only yesterday when I started school. Oh how things and my life have changed since then!

Sometimes I look back at old posts and think, who was that girl? There have been ups and downs, but things have definitely changed for the better and I am in such a better place now.

One thing that hasn’t changed is my participation in What I Ate Wednesday.


Well the food and presentation has changed, but as always, we need to thank the lovely Jenn for hosting all this delicious-ness.

(and if you didn’t know because I just found out, she is expecting!! ahhh so exciting! babies are taking over blog land and I love it!)

Another thing that hasn’t changed, and probably never will, is I can never do a standard What I Ate Wednesday. It’s always a pish posh of random goodies I have been enjoying lately.

I do however have a very delicious dish I whipped up the other day.

Well, I guess I need to give my crock pot all the credit, because really he did all the work.

This recipe is so simple, I feel a little wrong even calling it a recipe.

Crock Pot Salsa Chicken

Ingredients:

– Chicken Breast

– Jar of Salsa

That’s it. Nothing more. Nothing less.

Matt literally said “this is the best crock pot dish you have made”. Thanks babe, because I had absolutely nothing to do with it’s success, other then my amazing pouring skills of the salsa into the crock pot.

A new to me flavor of Zevia. I had been looking for this flavor everywhere and at my last trip to Whole Foods I spotted it.

It did not disappoint. It was delish.

Well loves, I hope you all are having a wonderful week and the rest of your week goes splendid as well.

This is my finals week of Microbiology, so that is going to be super fun. But I have anesthesia class next to look forward to, I am kind of excited for that class because that means my next class is surgery, and I am very excited for that.
