peanut flour heaven

As promised I have some tasty treats for you.
It comes in the form of peanut flour.
Yes, peanut flour has swept the blog land and for good reason.
I know PB2 is huge, but plain, real peanut flour is really where it’s at. Who needs that extra sugar. Not this girl.
So when I had the opportunity to try Golden Peanut Company’s peanut flour, I was pretty excited.

Look at all that peanut flour goodness.
What I loved most about these flours is you get that real peanut taste. I love it.
It comes in two varieties the 12% and 28% and although very close in nutritional stats, the 28% had a deeper more “peanut” flavor which I loved. They offer both percents in light roast and dark roast. I only tried the light, so I’m not quite sure what the difference would be.
So with my new abundance of peanut flour it was off to experiment!

As you all know I love making my peanut flour fluff/frosting.
So this stuff made it on top of multiple of my powercakes in it’s simplest form.

I also used it to make my easy peanut sauce.
♥ ♥ ♥

This has become a staple in my dinner rotation.
The sauce is super easy, just take 2-3 tbsp peanut flour, water to thin, squirt of sriracha, dash of Braggs liquid aminos and you have yourself a spicy peanut sauce that you can add to any protein. Again, so simple, but so delicious.

I also whipped up an amazing power bake.

Not only did I add the peanut flour to the bake, but of course a little peanut frosting made it on top as well.

But my newest creation is a #strangebutgood creation
Cauliflower Peanut Power Pudding

Ingredients:
1 cup cauliflower, minced to a rice like consistency
1/2 cup almond milk
1/3 cup water
1 tbsp coconut flour
1 tsp vanilla extract
3 tbsp peanut flour
1 tbsp vanilla casein
1/2 tsp baking powder
sweetener, if desired
Directions:
Mix everything together and put in freezer for 20-25 minutes and top with whatever toppings you desire.

I ended up adding healthy chocolate sauce to mine.
- 2 tbsp unsweetened cocoa thinned with water.
It was a pretty delish concoction if I do say so myself.
Don’t judge. Try it.

So loves, I gave you some breakfast, dinner and dessert ideas and if you haven’t tried peanut flour you need to, and I highly recommend Golden Peanut Company’s, because I seriously can’t get enough of it!

I LOVED seeing this on IG, and, as you know, I am a huge fan of mixing random things like cauliflower in places where they typically don’t belong.
I love peanut flour, it’s so versatile. Sometimes I just mix it with cinnamon and eat it off a spoon, but I love making peanut stir-fries with it. So good!
I am a big fan of PB2, but would love to try a bit healthier version.
