I hope everyone’s week is going well so far. I am still sleepy as ever, but I am hanging in there.

Work was crazy yesterday and we ended up having an emergency surgery so it was a 12 hour day for me.  But faces like this make it worth it.

With it being What I Ate Wednesday and all, I am going to apologize ahead of time and say that my eats are still pretty repetitive and pretty much the same. Boring I know. I am such a bad blogger.

In the past are the days when I was creating new recipes daily, so I apologize for that, but with the change of a lifestyle comes a change in the way I blog. I hope you all will still stick around.

As per usual make sure you thank the lovely Jenn for hosting this event, I keep hoping it will give me inspiration to be more creative in the kitchen, but usually what it does it make me wish some of you would come cook for me.

Even though the meals may be the same, they are still super tasty and worth sharing.

Repetition #1.

Protein Plantain Pizza

I just had to grab another plantain for the weekend so I could make this. Seriously one of my favorite breakfasts as of late.

And since I made four different toppings, it is just an amazing diversity of flavors.

For the base:

– 1 medium plantain

– 1/2 cup liquid egg whites

– 1 scoop vanilla protein powder

– 5-7 drops liquid vanilla NuNaturals

– dash (downpour) of cinnamon

Toppings:

Plant Fusion chocolate protein frosting

Click mocha protein frosting

BSN Lean Dessert Banana Cream protein frosting

– homemade banana coconut butter (best coconut butter ever)

This is seriously such a great and filling breakfast. I usually pair it with a yogurt, because if you guys know me, you know my obsession with dipping things, so I like to have something to dip my bread pieces in. I have weird food habits I know.

Since I only have a few days off to actually make breakfast and not have to eat it in the car, I am always planning ahead for things that I don’t typically make. One thing I always make sure I eat on the weekends are my overnight prOATs.

For once I did not have an abundance of fruit in the house.

Blasphemy, I know.

So this bowl toppings wise was kept very simple.

I topped my cinnamon lemon overnight prOATs with 1/2 frozen banana, Love Grown granola, raisins and a cinnamon sprinkle love.

Simple, but delicious.

I do feel like I need to redeem myself in my oatmeal decorating skills, so let’s actually take a look at a bowl I made last week that I never shared.
