Happy Wednesday luffs!

I hope you are all having a wonderful week so far!

Mine started out with a few crazy days at work, but I have today off, so I am taking that time to relax!

I actually have a baking experiment I think I am going to plunge in and try, so look forward to a review on how that goes.

It may end up being a #strangebutgood contribution, but really with me and cooking, what isn’t?

But it’s not time for that yet. Now it is time for What I Ate Wednesday!

So let’s make sure we heard over first and thank the wonderful Jenn for being such a great host and check out all the good eats everyone has been having. I must admit, this week they might be better than mine.

I have to confess meals have been kind of boring around here. I may have already lost my cooking mojo.

It does not however mean that my meals have not been delicious. Because sometimes simple makes the most amazing meals.

So this week is all about keeping it simple.

A lot of simple breakfasts have been happening.

And when I saw simple, I mean simple.

We’re talking as simple as it gets with peanut butter and jelly on toast.

But not just any jelly.

Matt’s parents made us some home made jam that was out.of.this.world.

This one was peach/strawberry and coming from a jam addict, it seriously was one of the best home made jams I’ve had.

I honestly don’t think I could ever get sick of the peanut butter and jelly combination.

So classic. So good.

Another simple breakfast that doesn’t get old?

Overnight prOATs.

And as if I could ever just eat them out of a bowl.

Honestly, what is better than oats in an almost empty peanut butter jar?

Again, not a scrape or swipe of peanut butter goes to waste. Not in my house.

I also have become obsessed with almonds lately and have found they make an amazing topping to my oats. I love adding crunch to my oats, but I find when I add cereal or something like that it gets soggy way too quickly. You don’t have that problem with almonds. I also love the little bit of saltiness it gives the  breakfast.

Again simple, but delicious.

Dinner additions have been pretty simple too.

As simple as salads are, they actually have been pretty non-existent in my life lately. I still love and eat my veggies, just not really in salad form.

Welcome back salads! I loved going to the store and buying fresh romaine, fresh whole carrots, zucchini, and tomatoes and putting together a simple fresh mix.

This salad was so good, it was basically repeated identically the next night.

Only with a little twist.

A definite #strangebutgood home made dressing.

If you follow me on Instagram you know what this was made of, but if you don’t, you will just have to wait until Friday for the recipe.

Let’s just say it was a surprisingly wonderful addition to the salad.

Another simple dinner that is not as colorful, but was amazing in every other aspect was this one.

Trader Joe’s organic chicken strips topped with a peanut flour sauce, parsnip chips, and roasted kabotcha topped with whipped protein cottage cheese fluff. Everything about this plate tasted so amazing.

It was my first time roasting the kabotcha in the “ring” form instead of chopping it into cubes. I really didn’t think this would make such a big difference, but boy did it. I will never go back to my old way. Rings are the way to go.

Simple and brown, but this plate was full of deliciousness.

But I’ll be honest, you really can’t go wrong when there is kabotcha involved.

Kabotcha along with plantains are still my two current obsessions that I may or may not eat way too much of. But I’m not complaining.

So with that being said, for good measure I’ll leave you with plantain bread.
