Hello my loves.

I hope you all are having a wonderful weekend! I of course worked on Saturday which is never fun, but I am looking forward to having today to relax a little bit.

I really wish I had something fun and exciting like a new recipe or adventure to share with you, but I just don’t.  So I thought instead I would share with you some of my Instagram highlights.

It’s better than nothing right?

I guess that’s yet to be determined.

Since I rarely have a morning off I rarely have time to make fun breakfasts. But on my one day off this week I made sure to make my plantain bread as I was having huge withdrawals, but the show stealer of the breakfast wasn’t the bread (even though it was amazing) it was a new topping. You guys may have noticed recently I have a huge CocoCardio obsession, adding it to almost everything including my red velvet hummus and red velvet plantain bread, but I recently added it to my chocolate peanut butter tofu (basically replacing the cocoa with the cococardio) and topped my plantain bread with the new spread.

Maybe it’s because I love everything pink, but it was pretty much amazing.


I have also actually tried to be a little bit more creative in my meals lately, but I’ve had some kitchen fails that still make for a good post.

Spicy crab mix with salsa.

Both never made it to the roll stage, but both still tasted amazing.

That’s all that counts in my book.

Even though I may have had some “fails” I also had some successes.

My roasting skills are always pretty good.


It started with a perfectly roasted carnival squash.

It then continued with perfectly roasted kale chips sprinkled with nutritional yeast.

I actually usually have a huge issue with making kale chips, I either burn them or don’t cook them long enough. Lately I have been spot on. It’s been pretty amazing.

More good things that have been happening? I’ve been spoiled by friends.

First the neighbors sent me a text telling me they had cupcakes for me.



That chocolate chip cupcake was probably one of the best things I have eaten in awhile.

Then I go into work and see this beauty sitting on the back counter.


Mmmm homemade pumpkin  bread.

So good.

Oh the perks of my job.

This would be the most adorable week old Maltese napping in my scrub top.

I have the best job ever.
