Needless to say I am still enjoying using my P28 products in my meals.

I’m telling you, the bagels never get old and it will be a sad day when I am out. I’m trying to be smart and rationing myself with them.

And sometimes I can even practice amazing self control and only have half at a time.

However, I typically end up having the other half later on in the day, so really, I’m not doing too good of a job.

But since it’s time for What I Ate Wednesday, I figured I should probably show you some of the other eats I have been enjoying lately.

I’ve been trying to get a little bit more creative with my work day breakfasts. If I have enough time I’ll try and make something a little more involved as opposed to when I am running out the door and literally am throwing together a pb&j.

A few more healthy poptarts have been made, not as pretty as the first, but just as tasty.

I also find it funny  that sometimes I tend to photograph the process of eating my breakfast.

It starts off being made at home.

(and if I have time a mini photo shoot happens)

I used my new Cellucor Cor-Fetti protein to make a protein frosting for the top. I will say I was not as huge as a fan of this flavor as I thought it would be considering all the rave it was getting, but it is slowly growing on me. Honestly, I have to add a little bit of  a different flavor protein, whether it be vanilla or chocolate, and it makes it much better.

Sometimes when the at home photo shoot doesn’t happen or the first bite is too good not to share, that is photographed and documented.

But then I have to get that inside shot.

And it may or may not be obvious that this was eaten in the car. (stay classy)

But sometimes breakfast actually makes it into the clinic to be eaten (in the storage room – still super classy). So of course that needs to be documented.

For this healthy poptart I really was just so happy with this marshmallow mocha protein frosting. Sometimes I wish you could taste pictures so you could understand how delicious this was.

Speaking of delicious. I try and take advantage of my one day off and make a more involved breakfast.

It of course involved plantain bread. If you had any doubts.

This was a carob* infused plantain bread base (obsessed with carob powder) and topped with vanilla protein frosting and sprinkled with coconut shreds and local granola mix.

And just in case you didn’t know chocolate + coconut = amazing.

I also somehow managed to make a few amazing dinners as well. That is a rare event that happens few and far between these days.

I had some Trader Joe’s chicken strips that needed to be used and it just so happened some Trader Joes Thai Curry sauce sitting in the fridge.

I cooked up some rice (mixed with hoisin sauce) and added some of a frozen mixed veggie blend that also needed to be used and called it dinner.

Seeing a trend? Sometimes the best meals are made from cleaning out the fridge and freezer.

Is it just me, or are there certain foods you could eat everyday?

I have a few, and seaweed salad is one of them.

Cantaloupe isn’t really in season anymore, but when I find a good ripe one. I get a bit happy.

Oh the  life I lead that food gets me that excited.

I suppose things could be worse.

Like not having your Christmas shopping done.
