This is going to be really short, but I did want to write one more post before I headed back to Indiana for my grandma’s funeral.  I am so happy that I am able to go back to be with my family, but also a bit torn, nervous, anxious about the whole situation.

I don’t talk much about my parents on here, well because I haven’t had the best relationship with them over the past few years.  If you have followed me for awhile you kind of know the story, if not, let’s leave it at they were not supportive at all during my recovery from my ED.  But as I get better and have progressed in my recovery, we are slowly trying to build a relationship again.  It’s a work in progress.

But with it being What I Ate Wednesday and all, I thought I would show you guys a quick peek at some of the goodies I have been eating lately.

Although if you know me, they will be some pretty repetitive eats.

When I got the news about my grandma, I was a bit torn. Part of me had been expecting this for some time, so I was almost kind of prepared. She had been battling cancer for over a year and when first diagnosed we were told she had about 2 months to live.  Those 2 months turned into over a year, she was defiantly a fighter and I guess just wasn’t ready yet.  This is why I truly believe this was her time and she is in a better place now.  But of course there is a huge part of me that is just so heart broken that she is actually gone.

That night I pretty much drowned my sorrows in kabotcha.

I know it’s not completely healthy to find comfort in food, but that night all I wanted to do was relax, have a glass of wine, and basically demolish a whole kabotcha.

So yes, this meal is boring, ugly, and repetitive, but it was what I wanted.

Another maybe repetitive idea, but an amazing twist was my protein plantain bread.

Since I knew I was leaving town and still had half a plantain in the fridge, I figured I would test how the plantain bread would travel.

I know it’s not as pretty in tupperware, but I’m telling you, this base was one of the most delish I have made to date.

I added Click mocha protein and a bunch (and I mean way more than a normal person would or should add) of cinnamon and a splash of vanilla. Honestly, this would have been amazing plain.

But we all know me, and I don’t do plain. So a swirl of Plant Fusion chocolate protein frosting and peanut butter was added on top.

Yup, took it up a notch. And if you were wondering, the plantain bread travels well and tastes great eaten in a car out of tupperware.

And one more quick thing to share.

I just wanted to prove to you all that no jar goes unused in my house.

We all know I am a jam addict, so when this opportunity presented itself, I knew this empty jar of pear jam had to be filled with overnight prOATs. Mixed in was frozen banana, berries and topped with healthy chocolate sauce.

Overflowing goodness is what this was.

I also received news yesterday that my grandma had passed. She has been battling cancer for over a year now and over the past few months took a turn for the worse.  And with that being said I do truly believe it was her time, she is in a better place, and is at peace.  I will miss her so much, but I have so many amazing memories with her and that is what I will remember.

I can’t help it, I find something I like and that’s all I crave. I usually get over it though, but then quickly just move on to something else.

I’m a creature of habit, I can’t help it.  But I’m ok with it.

But my newest addiction?

Well I’ve already mentioned it in a few posts so it shouldn’t be too unfamiliar.

You guessed it. My Protein Plantain Pizza.

I blame these ladies. They started the whole thing!

It started off so simple, but of course as time progressed so did my tweaks and additions.

It began with the indecisiveness of toppings.

Why have one topping when you can have four? Because again, obsessed with protein frosting lately.

Then the additions to the actual bread switched up a bit too.

Insert the very berry version of the plantain pizza. Why stop at just plantains when you have some frozen fruit left over that you can toss into the batter? Seemed logical. Tasted amazing.

And of course that had to be topped with multiple things as well.

Then when I had plantain bread once again for breakfast and I had 2 very ripe banana’s that needed to be used (i know most normal people would have made banana bread, but not this girl) I whipped up my avocado banana spread, banana coconut butter, and banana almond butter. Again, why  make just one thing when you can make many?

I have actually been making the plantain bread the night before and sticking it in the fridge to be ready for me in the morning. Yes, I always sneak a few bites when it comes fresh out of the oven (look close at the pictures and you can tell) but this morning I decided to re-heat a few slices in the oven, and let me tell you, warm banana coconut butter is ah-amazing. I may  have to stop being lazy and just make it the morning of and eat it fresh out of the oven.  Maybe next time, I do have half a plantain that needs to be used :)

Heyyyy my lovlies. It’s Friday! Woo-Hoo!!

Now that I have Friday’s off, they are just that much sweeter for me. I love having three day weekends, although today I am so busy it really won’t be a day off. I have a hair cut appointment,then I have to go straight to an appointment with my nutritionist and then I have to run Delilah to the vet right after that.

It will defiantly be a go go go kind of day. But don’t you worry, there is still something I have time for.

If you follow me on Instagram you know my breakfast has been pretty repetitive lately with my protein breakfast wraps.

I know not the weirdest creation I’ve put together, but like I always say, when the fiance gives a weird look when I’m making something, I think it’s worth mentioning.

And since I am seriously obsessed with them, I’d thought I’d share the goodness with you all.

My latest creation got a bit out of control and my wrap turned more into a pita due to the wrap splitting from being so full (of goodness).

A lot of people have been asking what I put in my wraps, and even though they differ everyday here is the main gist of what goes into them.

Breakfast Protein Wrap

- 1 tortilla (I typically use Flat Out Bread Multigrain with Flax)

- 1/2 banana (I will throw in other random fruit that I happen to have, but a banana is always a must!)

- 1/2 scoop protein frosting (my favorites are Plant Fusion and BSN Lean Dessert)

- 1-2 tbsp peanut butter (or nut butter of choice)

You can play around with these and really add anything you want.

They may be ooey and gooey, but seriously they are so delish.

I know it’s been awhile and I apologize, but this girl has been busy. Well really by time I get home from work I am exhausted and sometimes blogging isn’t my first thought. I know. Bad blogger.

But I did want to pop in because I have some deliciousness to share with you.

None that I can claim my own, but a wonderful night out with Matt, that was long overdue, and that was amazing.

We had bought a Groupon for The Sushi Room and actually went out and redeemed it.

I don’t know what happened, but somehow the Groupon didn’t get redeemed and it said it was still available, even though we definitely got the discount the first time we went.  Well who am I to argue with more sushi, so we went to use it again.

This place has really good sushi, but what really made this visit great was after only one previous visit (date night #1), the sushi chef remembered us.  I love that.  He also gave us a little free bowl of a tuna mixture he had made. I love that too.

I of course had to start off with a seaweed salad. I am addicted to that stuff. And Matt always says you can’t go out for sushi without getting edamame.  Who am I to argue. it’s good stuff.

Now if you are an avid AccidentlyDelish reader, you know Matt and I love our sushi and pretty much eat our weight in it. No shame.

Matt ordered his typical soft crab roll.  I am just not a fan of the soft crab, so that one he gets all to himself.

Since the sushi chef is so amazing, there was a roll I wanted to try, but tweak a bit.  Ok, so I basically made up my own roll, but he was totally down with it and we created a wonderful roll together.

Funny side note, as we were at the restaurant I had gotten on my Groupon app to see if there was any fro-yo Groupons going on. (I can’t help it, whenever we go out for dinner I always crave fro-yo for dessert) Sadly no fro-yo deals, but guess what was my first recommendation?

Oh yes, The Sushi Room. So we totally bought another Groupon for the place we were still at. I told you we’re obsessed.

Well loves, it’s that time again.

Time where we moan and groan that our weekends are over and it’s back to the daily grind of life. We call this Monday.

But thankfully the beautiful Katie gives us the opportunity to find beauty in this day with Marvelous In My Monday.

I love having my weekends off, but I actually find that they are so uneventful.

Not having money will do that to you.

I also have the laziest fiance ever who finds nothing wrong with sitting on the coach all day and watching TV.  Trust me, I like to relax just as much as the next person, but sitting around for that long drives me a little crazy.  But with this insane Arizona heat (hello 110 degree days) and not having any finances, it kind of hinders any extracurricular activities and daily outings.

We make it though and find some fun things to do.

Matt is on a soccer kick and really wanted to watch the USA vs Jamaica match on Friday, and since soccer isn’t huge out here and we don’t have cable we had to find somewhere to go watch it.  Knowing us, we can not go to a bar without ordering at least one drink, and really, it’s not too polite to take up a bar seat and not give the bartender some business. Solution? We cashed in our coin jar! Woo-hoo $25!

My new version of my Protein Plantain Bread.

It started as a blank canvas.

Ingredients:

- 1 ripe medium plantain

- 1/2 scoop vanilla protein powder

- 1 tbsp coconut flour

- 1/2 cup liquid egg whites

- 1 tsp vanilla nut extract

- 5-7 drops liquid vanilla NuNaturals Stevia

- 1/2 tbsp cinnamon

Directions:

- Blend all ingredients

- Bake in pre-heated oven at 350 degrees for 20-25 minutes

- Become incredibly indecisive on which toppings to use

Plantain bread may have been one of the most amazing things I have discovered lately. Plantains definitely went from something I never bought, to something I will be buying a lot of in the near future. Hopefully I don’t become as addicted as I am to kabotcha squash.

Matt and I are really working on having more family meals. We got so use to eating separate meals and not cooking together anymore, and we both really want to change that. So we scoured the inter-webs for dinner ideas, both chose a few and decided to take turns cooking meals.

I went first and chose a Sweet Potato Lentil Enchiladas.

I based it off of this recipe, but instead of cooking them as enchiladas, I just cooked up the filling, pre-cooked some rice, and figured we would just make what we were feeling that night.

Matt made his into corn tortilla tostadas and I made quesadilla’s out of mine.

These turned out absolutely amazing. I used Trader Joe’s enchilada sauce, which seriously that stuff is so amazing on it’s own, that I knew it would make this dish.  But the combination of the sweet potato, lentils and veggies was so so good.

Not going to lie, I have a case of the Monday Blues.

You wouldn’t think one could get so lazy in just two days, but I’m telling you, I’m liking this whole weekends off thing and being lazy.

This weekend was particularly dull, it’s a very tight pay check for Matt and I (ever notice how all bills seem to be due at the same time?) so there was really no extracurricular activity going on.

I did however manage to find some marvelous things to share with you, because Monday’s are a must to get Marvelous with the beautiful (and almost ready to pop!) Katie.

One thing I love about the weekends, I don’t have to eat breakfast in the car!

Always a plus right? I find I try to make a little more effort in making my meals presentable (really with only the blog in mind because I know I need something to share with you guys)  on the weekends.

The past few breakfasts have really been made with the thought: I have all this fruit I need to use before it goes bad, so I better shove as much as I can into breakfast.

Example 1:

Jamming an empty jar of Trader Joe’s pumpkin butter with fruit worked for me. I mean really, that stuff is so good (and out of season) that I have to savor every last smear.

By the way does anyone else find frozen grapes to be 2983232x more amazing? I do.

Fruit is always a must on my overnight oats, but this bowl got an extra dose.

Berry Lemonade Overnight TVP/PrOATs

- 1/4 cup rolled oats

- 1/4 cup TVP

- 1/2 cup almond milk (I use Silk vanilla)

- 7-9 drops NuNaturals Liquid Lemon Stevia

- dash of ginger and cinnamon

- 1/2 scoop vanilla protein powder – stirred in at end (I used Plant Fusion – vanilla bean)

Topped with every berry imaginable.

I’m usually pretty consistent with my oatmeal add ins. Usually chocolate protein powder, usually an over abundance of cinnamon, but I saw someone post the whole “lemon” idea in oats, so I thought I would give it a shot.

Holy goodness. These oats were amazing and I will be doing this flavor profile again!

So even though we are on a budget, Sunday I got a little stir crazy.

Matt’s birthday is coming up and he is currently obsessed with bow-ties (I blame him being Dr. Who for Halloween). There is a local business called Dapper & Dash that sells bow ties that are recycled from the creators grandfathers old ties. It’s a pretty cool concept and I like to support local businesses, so I decided to take Matt shopping. We unfortunately did not find one that he really loved and left empty handed.  So what do you do after an unsuccessful shopping trip?

She told me she just recently moved to Austin, TX so I told her any local spicy Texas goodness she could find, she could send my way!

Oh don’t worry, I told her about my jam addiction too.

As I say almost every month, I always feel like I get so lucky and she delivered a wonderful package!

- Wild Huckleberry Preserves with Chili - love, I was worried it would be too spicy because I’m not a huge spicy jam lover, but to my pleasant surprise you can barely taste the chili and the huckleberry was ah-mazing

- austiNUTS Texas BBQ Peanuts – bought from a local grocery store. BBQ+Peanuts = Win

- Gopal’s Power Wraps: Texas BBQ – She said her son said they taste like beef jerky (but they’re vegan! yay!) I can’t wait to try these!

- Good Health Peanut Butter Filled Pretzels – She said she bought these because I love pretzels and then included the Rawtella for Matt because he loves chocolate. Seriously how sweet is that??

- Source of Life Energy Shake – I’m all about anything that will give me energy before or after a workout!

- Wolff’s Kasha - Her daughter is gluten free so she said she cooks with this a lot, I have a few ideas already brewing on what to use this in!

My foodie pen pal that I sent to this month was Danelle who does not have a blog. It was also her first Foodie Pen Pals ever!

I actually love getting first timers, but it also puts a little bit of pressure on me, because I want to make sure I give them a good first impression of the program!

I was so happy to receiving my VERY FIRST Foodie Pen Pal box from Debbie this month and what a treat it was! She was so attentive to my email requests as I have some food allergies and dislikes.  What a surprise to find out that we both live in the same metropolitan area.  Her box arrived the day after she mailed it..speedy quick.  She shopped at a favorite store of mine as well as one I’ve never frequented before (but I certainly will now, thanks to her, for introducing me to it).
 
There was a variety of items in my box from Trader Joe’s (a favorite store) and Fresh and Easy (new to me *gasp*).  A favorite item in the package were the chocolate chip cookies that my family was very pleased to share with me ( the 3 teenagers in the house think Debbie is their new favorite pen pal!)…they were gone in less than 24 hours.  I had to fight off my husband to keep away from the espresso chocolate bark that was from Fresh and Easy, what a lovely treat that was.  Other items that were new to me were Plum Amazins dried plums, true to Debbie’s advice, they go GREAT on oatmeal.  I have slowly been enjoying the trail mix and cinnamon and sugar pita chips, too.  Debbie was so kind to include a card that explained her reasons for each purchase and her blog address.  I have been popping in on her frequently and am so pleased to have joined Foodie Pen Pals. Thanks again, Debbie for a GREAT experience!
