what i ate on vacation

This post really serves a dual purpose.

1. I really want to gush and flood you with adorable pictures of my new niece. Because seriously, babies are the most amazing thing ever.

2. I really wanted to focus on something that I feel is a very important topic. When you live a healthy eating lifestyle it is so easy to get sucked into the “I have to eat perfect and clean 100% of the time”.  I will admit I once lived in that world, but now a days, it’s just not how I live my life.  I can’t even say I believe in the 80/20 rule or everything in moderation view.  I really feel we should all just enjoy life, eat what we want when we want, and listen to our bodies.  Our bodies are so much smarter than we think and more than likely will not always crave or want junk.  I found this out in my weight gain journey when my nutritionist told me I needed to have desserts every night. My first fear was I would always crave a sweet treat, but trust me, after having ice cream every single night, you do in fact get sick of it.

But on to my more important point.  In visiting my niece I was a guest for 5 days at my parents and at my sisters.  This obviously meant I did not have my own kitchen with my own foods.  I was at their disposal on what they had and what they typically ate.  Of course the initial fear set in and the thoughts of “what if they eat foods I don’t deem “healthy” or “safe”. What is they want to go out every meal?  Well, then that’s what I would do. And it was a great challenge for me.

So today I bring you what I ate while on vacation and how my body reacted.

Another concern I know a lot of people have is the fear of gaining weight when on vacation.  My views on this are even if you do gain a little bit of weight due to eating different foods, once you get back your body will more than likely balance out.  You don’t lose 10 pounds overnight so it’s silly to think you would gain 10 pounds in that short amount of time. And as mentioned, even if you did gain a few pounds, I can almost guarantee they aren’t permanent and again it will balance out.

I will say probably 80% of my meals were eaten out on this trip. Starting with breakfast the day of travel.  Our flight was at 7:30am so needless to say breakfast was eaten at the airport.

Yup. Mimosa’s at 7:00am. No shame.  Matt and I also shared a side of fresh fruit and then also grabbed some Chobani’s to eat later on the plane. I also had a banana. Not quite the breakfast of champions, but that early…at an airport…our options were limited.

Needless to say when we landed we were starving.  My parents picked us up from the airport and we stopped for lunch at a place they really wanted to take us. Why? Because it had 30 beers on tap.  My parents know me too well.

I am so thankful that I have such a better relationship now with my parents. We all go through our hard times and I really feel our relationship is stronger now that we’ve moved past most of our issues. It’s good to have fun with them again, because let’s be real, they are where I get my quirky personality from.

For lunch I ordered the chicken avocado salad, which I was so happy to see came with tons of avocado.

The chicken was a little sub-par, but the lime vinaigrette it came with made up for the lack of flavor in the chicken.

After lunch we all actually took a nap and after we rested for a bit my mom and I ran to the store to get some last minute items for dinner.

And I was so excited about dinner.

This was one of my favorite meals growing up.  My mom always told me I didn’t want to know what she put into her famous tacos as I probably wouldn’t want to eat them if I knew, but whatever she puts in them…they were just as amazing as I remember.

Another small thing that really brought back some nostalgia was cooking the tortillas over the gas stove.  I don’t know what it is, but it just makes them taste better.

After dinner my mom had bought oatmeal raisin cookies that she swore were better than her homemade. Which to me seemed impossible because I love her home made cookies. But let me tell you, these cookies were ah-mazing.

So good I took about half the container home with me. So good that half of those didn’t make the trip home. I couldn’t stop eating them!

The next day we packed up and headed to my sisters. We got on the road a bit later than anticipated and didn’t make it to her house until around dinner time. We stopped by the store to pick up a quick dinner. With two little ones, quick easy dinners are needed so we picked up a few frozen pizza’s and called it good.

Frozen pizza’s are something I don’t typically eat at home, but I sometimes forget how good they can be.

After dinner we all just lounged around spent time with my new niece Kaylee.

While visiting my sister had two requests for me.

I make them biscuits and gravy and we go to Dairy Queen. ( I guess all my Dairy Queen posts on Instagram had her jealous and craving it )

Well that next morning I was able to fill one of those requests.

I forgot the sausage when I had gone to the store, but she had some left over chorizo so we used that instead. I loved the added spice.

Even though my sister and her husband eat in turns, they both really enjoyed the breakfast and I loved cooking for them.  I know cooking meals is hard for them with two little ones, so I really loved that I could help them out.

My new niece Kaylee was having some acid reflux problems so needless to say things were a bit stressful for my sister. A 2 year old and a baby that basically is in pain every time she eats. I knew my sister was stressed, so when Harper went down for her nap we put the boys on baby duty and I took my sister out to get her very first pedicure. I think she deserved it.

She really enjoyed it and it was great to get out with her alone, relax and be able to catch up. I don’t see her enough so I really loved spending some one on one time with her. After the pedicures request number two was filled.

I wasn’t impressed with their swirls, but it still was a tasty treat! And my sister got her Dairy Queen fix!

That night for dinner we decided to do take out. My sister is an extremely picky eater, so we just let them decide where they wanted to go.

I like going to places that I don’t have in Arizona, but my sister suggested Buffalo Wild Wings and really, I love that place so I wasn’t too disappointed.

Not the most healthy of foods. And from a girl with a past history of an eating disorder, you would think by now I would be freaking out.

Well, this really shows how far I’ve come, because I totally went with the flow. I think I was so happy to be around my family, food was not the focus. I will also note that I did not work out once this whole trip either. ( And maybe a bit TMI but my bowels were completely normal as well during and after the trip.  )

We decided to head back a little early to my parents since my sister seemed to be getting a bit overwhelmed with the new baby and having that many guests in her house.

I can’t believe I forgot to take pictures, but we cooked up a great dinner that night at my parents. We all kind of contributed to a dish and it was just a wonderful home cooked meal. We had rotisserie chicken, oven roasted potatoes, fresh green beans and salad with veggies from their garden.  It was all delicious.

Our last day in town before we had to fly out we met for breakfast with one of my best friends who is also going to be a bridesmaid in my wedding.

She suggested this cute little cafe that I had never been to.

I ordered a veggie omelet with a side of fruit and whole wheat toast.

It’s weird because I don’t typically eat eggs at home, maybe because Matt hates them and we never have them in the house, but whenever I go to cute cafe’s I always want to order omelets.

Kim’s husband and daughter had joined us for breakfast, so it was great to get to spend time with all of them.

We went back to her house for a bit after breakfast just to catch up and of course talk about wedding stuff!

It was soon time to head back to my parents as they wanted to have lunch with us before they took us back to the airport.

Again, failed to snap a picture, but we to Applebee’s to watch some of the football games and have lunch.  We ordered the pub pretzels and beer cheese dip as an appetizer (which actually the show stealer was the spicy mustard it was served with) and I got the strawberry and avocado chicken salad.  So I haven’t been to an Applebee’s in a long time, but honestly I think the avocado that came on this salad was by far the best I have had served on a salad in a while. It was perfectly ripe and creamy and they did not skimp on the amount. I’m pretty sure I had a whole avocado on my salad and I was perfectly OK with that. The chicken was also cooked and seasoned great. Way to go Applebee’s!

We then headed off to the airport and surprisingly there was no line for security so we had some time to kill.  As per usual most the of the airport bars were packed, especially with the games on, but a very nice man offered us his table since he was alone and he saw we were looking. To repay his kindness we bought him a round and he was very appreciative.  Pay it forward people, there needs to be more random acts of kindness in today’s world.

With the time change by time we landed I was starving. We decided to just eat at the airport because I honestly did not even think I could wait for the drive home with out chewing my arm off.

Most of the restaurants were actually closing, but we found one place that was still offering salads and appetizers.

And beer of course.

Yup more avocado. I think I ate the equivalent of about 5 avocados in 5 days. Again, not complaining.

We finally made it home and I passed out in probably 10 minutes flat.

So loves. That is what I ate while on vacation and let me tell you I did not regret a single meal.  Let me also tell you that I not only did not feel like I gained weight, I actually felt like I lost weight. I contribute it to listening to my body, not restricting, and in reality gave it what it wanted. More food.

So I am really living proof that eating pizza, wings, and drinking a lot of beer for a short period of time will not make you gain weight over night. I had a great time, I didn’t let food control me and my choices and I went with the flow and did what normal people do. Adjust.

And I can’t tell you how I great I feel for that.

Hello my loves!

I am popping in real quick just to say hi!

I’ve been a busy little bee lately: work, wedding planning and I am going back to Indiana for a few days to visit my new niece!

Matt is actually going with this visit and we’re all so excited because he hasn’t even met my first niece yet! It’s a short trip, but I am so excited to see everyone.

So with all the hustle going on there isn’t much time left for anything else. But I did want to share some deliciousness with you guys.

I know most of us bloggers look forward to fall for one reason.

Pumpkin.

Some may say there is too much hype over it, but I am not one of those! Now I will admit I’m not one of those crazy people who go bonkers for the Starbucks pumpkin spice latte, it’s just never been my thing, but I love cooking and baking with pumpkin. And honestly I hoard cans so I can be stocked all winter long, but we’ll keep that a secret.

a wedding update and labor day celebrations

Hello my loves!

I hope you all enjoyed your Labor Day weekend and I hope you were lucky like me and actually had the day off!

I felt like even though I barely left the house, I did however get a lot accomplished. And a lot of the wedding front.

I haven’t updated much on the wedding basically because it has been stressing me out to no ends.

Not only do I feel like there is so much to do, but I am basically doing this all on my own, so it’s very stressful.  I feel like all Matt and I do is argue, whether it be about the wedding, the budget, and the lack of time we are spending together. He is working very hard on his freelance and I know he is doing it make money so we can afford this wedding, and I do not hold that against him in the slightest, however sometimes I feel he doesn’t understand why I am frustrated. I know most men are not involved in the wedding planning, which is fine, but with all my family and bridesmaids being thousands of miles away, I am basically on my own. Which can be a bit overwhelming at times. Slowly but surely though I am getting things accomplished and the wedding will be what it is.

But I digress.

One thing planning a wedding is showing me though are the effects of stress and our health.

Before I started planning the wedding I was actually noticing great improvements with my health, mood and energy levels.

I briefly mentioned I was trying to cut some gluten and dairy out of my diet to see if I was having any food sensitivities.  I have not gone completely gluten or dairy free, but I have cut back on certain food items that I do believe I was reacting to. I can not even begin to describe the difference I felt!

But let me tell you, with the whole wedding planning process, I have really started to notice the effects that stress is putting on my body.

I feel like I am always tired regardless of how much I sleep, I am moody, irritable and just honestly emotionally worn out.

This really doesn’t come as a surprise to me though. I have been listening to a lot of health and nutrition podcasts and almost all of them will tell you that in order to maintain a healthy lifestyle that the most important things sometimes are not diet and exercise, but sleep and stress. You can eat the cleanest diet, exercise daily, but if you are not getting enough sleep and are always stressed out, it will counteract all of that.

So I am working on de-stressing, taking everything day by day, and trusting the process. Everything will get done and the day will be the best day of my life, not because of the wedding location, decorations, or party favors, but the fact that I will be married to the love of my life and best friend.

So with that being said let’s move on to more good things!

I know the traditional Labor Day celebration are BBQs, cookouts and parades, but not in our household.

We actually spent more the day inside, Matt working on freelance work and me on wedding stuff.  I actually feel like I got a lot accomplished and didn’t stress out. Woo-Hoo!

We started our day off by going to one our favorite coffee spots Buzz Berry, but instead of getting our typical Americano’s we decided to get a little crazy.

I still ordered an iced Americano, but spiked with in house made Kahlua. Matt ordered a bloody mary.

I was very entertained with myself.

As mentioned we spent the majority of the day both working on our own projects.  We had made plans for dinner as Fox Restaurant Concepts always sends out coupons for these small holidays.  Matt and I have kind of made it a little tradition to go when we get them since we love basically all of their restaurants. Last year we went to Blanco’s Tacos and Tequilla so we decided to keep with it and go again this year! Because really, on Labor Day, you get Mexican food.

Their guacamole is so delicious, there are seriously like whole chunks of avocado in there. I could seriously eat this whole bowl with a spoon no problem. But I restrained. Had to save room for my meal.

I debated in between the salmon salad, chicken fajitas, or chicken burrito. I knew all three wouldn’t disappoint, but the salmon was so good the last time I got it, I just had to get it again. Good salmon I feel is hard to find sometimes.

We actually went to a different location as we had initial plans to stop by Baskin Robbins on the way home because I had gotten an e-mail alert that they released a new Pumpkin Cheesecake flavor, but while walking to the restaurant we walked past a new to us gelato spot called Frost Gelato that looked pretty tempting.  There ended up being a little bit of a wait to get a table, so while we waited we walked over and sampled a few flavors. They were all amazing, so our dessert plans quickly changed and we decided we would just come back after dinner.

So glad we did.

 After trying almost every single flavor I decided to go with the Strawberry Yogurt.

Which even though it may be a bit confusing, is was still gelato, just a strawberry “yogurt” flavor. Regardless, it was delicious with big chunks of strawberries in it.

 Overall even though it wasn’t too eventful of a day in terms of activities, it was a very productive day that ended with a lovely meal with my love. And for once we had a wedding conversation without a fight.

So loves, I hope you all had a relaxing stress free weekend. And if things do get stressful, just remember to breath, take one day at a time, and all with work out.

Now if I could only take my own advice.

I had told her that I liked dips, sauces, jams and salsa’s, so I was very excited when I saw the variety that she sent me.

As soon as I saw the salsa I knew I had to try it that night with dinner.  It is defiantly a unique taste, but I really liked it.

I have actually received the apricot preserves and roasted raspberry chipotle sauce in a previous foodie pen pal package, so I knew I would like those! And this coffee loving girl is always excited for flavored coffee’s. I haven’t tried the coconut Thai noodles or peanut coconut sauce yet, but since I love Thai food I’m pretty confident they will not disappoint.

So thank you very much Ester, I loved my package!

Two posts, two days in a row?

Who am I?

This week I actually got two days off, (in a row none the less!!) so I had some extra time to actually sit and write some posts.

Don’t get use to it though ;)

But since I did have the time and it’s been awhile since I have done a What I Ate Wednesday, I thought this would be the perfect opportunity!

Matt and I have been making a habit of having morning coffee together. Usually we just run down to a coffee shop right around the corner, hang out for a few minutes before I have to rush off to work.

Since I was off from work, I actually had more time to hang with him and we decided to go to a local coffee shop that allows dogs inside. Delilah was very excited to come with and even got a home made treat!

I then got a little fancy with breakfast.

Ok that is a total lie. It may look a little more fancy, but there was absolutely nothing home made about it.

I guess I wanted dessert for breakfast, but to me that is never a bad thing.

I took a Van’s gluten free waffle and topped it with a scoop of the new Arctic Zero Coconut ice cream and then drizzled NuStevia Cocoa Syrup on top.  It was pretty amazing.

Dinner’s have been fun too thanks to my new spiralizer. I am loving this thing!

I am basically spiralizing every and any vegetable I have in the fridge!

I  saute them with a little Braggs Liquid Aminos and top it with nutritional yeast and it is such an easy, delicious side.

And don’t think I got sick of ice cream by having it for breakfast.

Pssh. Do you know who I am.

Matt and I have been wanting to go to a ice cream parlor called Slickables that is known for their ice cream sandwiches. Basically you can choose any of their freshly made cookies (flavors including red velvet, mint chocolate chip, peanut butter, snickerdoodle, white chocolate macadamia nut…) and then you choose your ice cream flavor (butter pecan, rocky road, strawberry cheesecake, mint chocolate chip, cookie dough…) Seriously too many choices for this indecisive girl. I of course tried almost every ice cream flavor before settling on a all time favorite.

For my creation I chose one regular chocolate chip cookie and one mint chocolate chip cookie filled with mint chocolate chip ice cream. This thing was ah-mazing.
I wish it wasn’t so far away from us, or maybe that’s a good thing, because with the endless amounts of flavor combinations you can make I would be totally fine with eating one of these every night. Oh and the best part? They’re only $2.00!! Seriously unheard of these days considering my fro-yo cups cost me about $6.00.

We all know I love my chips, crackers and breads. Yup. Total carb girl here. #noshame

With that being said though, as much as I love Italian food, it’s not something I cook often. And now that I type that out I really don’t know why.  I love the flavor profiles of Italian food and recently discovered a product that combines two of my favorite things.

Yes loves you heard me. As soon as I heard of these I knew I had to try them.

The crisp chip that I love with amazing Italian flavors.

They come in 5 flavors:

Marinara, Sea Salt, Garlic Olive Oil, Spicy Tomato Herb and Alfredo.

I was clearly very excited about these, enough so to take wonderful chip selfies.

I honestly would say out of all the flavors the sea salt was one of my favorites.

It was just a very versatile chip that I used to dip in multiple spreads and also just munched straight out of the bag.

Sadly however all my chips did not travel safely.

Doesn’t mean they still weren’t tasty, but a few of the bags were all crumbs so I basically had to salvage what was in the bag and then actually used the crumbs to sprinkle over other dishes. I guess if any flavor had to be crumbs the spicy tomato herb were a good flavor, as the flavor was pretty intense so I actually sprinkled it over some salads and used it as a little flavor boost.

Overall though I loved the chips.

And if you are like me and love Italian food and love chips I think you’ll love them too!

Oh hello my loves!

Just popping in to let you know I am still alive!

As much as I love blogging, gone are the days where I have the extra time, or really the motivation to spend creating and experimenting in the kitchen. Trust me, I still love creating healthy new dishes and it does still happen, but I just don’t have the time to actually spend a whole day experimenting in the kitchen. Trust me, I miss it.

But I do still have the time to share fun and exciting new products I have been using and updates on my daily happenings.

I have seen oodles of zoodles all over Instagram and finally decided to cave and get a spiralizer! Now, I will disclose I have nothing against real pasta or carbs and did not get this to replace all my noodles with zoodles. Let’s be real nothing replaces good ole pasta. But I also love my veggies and thought this would be a fun way to get more creative. And I love kitchen gadgets.

I know you can spiralize endless veggies, but I started with the standard zucchini.

I wasn’t aware I had multiple blades so I used the one that was already assembled. So my first zoodles were ribbons, which was fine with me because I had a little bit too much fun making them!! Matt and I even made a silly video. Yes. I’m that lame. #noshame

I made the mistake of going to Pinterest to look for recipe ideas. Gah, there were so many I wanted to make. But I ended up just making one of my favorite spicy peanut sauces and used that as my first dish.

The only down side to these were they are literally one continuous string. Next time I think I will cut it up into smaller pieces. That’s probably what most people do anyways right? I’m new to this, bear with me…

Along with my indecisiveness. Let me take this opportunity to express my appreciation for good service.

Matt and I went to TCBY and I could not decide what I wanted. I tried I think every flavor, and the girl was so awesome and patient with me. Then she made the amazing suggestion to get both soft serve and ice cream in a waffle cone since I couldn’t decide between the two.

I proclaimed I can do that?? And she responded you can do whatever you want.

So this cone was not only delicious, but the experience was great as well.

Seriously, good customer service is hard to find, so when I find it I really appreciate it.

How sweet.

eggplant french toast

Honestly, I don’t even know if I should share this. Because even though this is a #strangebutgood meal, I’m not sure how good it really is.

I mean. It wasn’t bad per say, and it’s so far out there I feel like I have to share it… but it definitely is not for everyone.

You’ll see what I mean.

Yup. You heard me.

Eggplant for breakfast seems pretty far out there, but if you haven’t made eggplant bacon yet…well you need to get on that.

But I know eggplant is not everyone’s cup of tea, I however happen to love it.

One of my favorite Thai dishes is a spicy basil eggplant and more recently Whole Foods introduced me to an amazing spicy grilled eggplant that is just too good to pass up when it’s on the hot bar. But I can honestly say I had never had a a sweet eggplant dish. Well, I changed that.

I’m sure I got the idea in my countless hours spent on Pinterest. And I don’t know what actually pushed me to try this one, but I did.

It’s pretty simple, you basically just use the eggplant in the place of your traditional bread.

And since when I make French Toast, I typically make protein French Toast, I decided to stick with that.

Ingredients:

(serves 1)

- 2-3  1/4″ thick slices of eggplant

- 1 large egg white (or 3 tbsp liquid egg whites)

- 1/4 cup vanilla almond milk

1/2 scoop vanilla protein powder

- 1/2 tsp cinnamon

- liquid vanilla stevia (optional)

Directions:

- In a bowl combine egg whites, almond milk, protein powder, cinnamon and stevia if using. Mix together.

- Place the egg plant slices in mixture and soak. (Note: This may take longer than your traditional bread)

- Fry in skillet over medium high heat for approximately 2-3 minutes on each side.

- Top with desired toppings. I sprinkled mine with more cinnamon and a drizzle of maple syrup.

I actually think this has potential to be a delicious dish, however there are a few things I think I would change if I make this again.

Next time I think I would slice my eggplant a little thinner and let it cook longer to get softer.  I also think before soaking I will poke the eggplant with a fork allowing the mixture to soak better into the eggplant.  And finally I think I will top my next batch with peanut butter, because really. Peanut butter makes everything better.

So this recipe is a work in progress and I am not giving up on it yet, if you decide to try it let me know how it turns out for you!
