sweet potato topped with amazing-ness

Hello my luvs!

I hope you all are doing well.

I’m doing great, because not only do I have Friday’s off (whew my weeks are long), but we also have Memorial Day off, so yay 4 day weekend!!

♥ ♥ ♥

If you’ve seen my previous What I Ate Wednesday post, you know my meals have been boorrr-inngg lately.

I mean, when you have to do a post dedicated to eating in your car, things are pretty bad.

♥ ♥ ♥

022-1

♥ ♥ ♥

So I also haven’t had time to really experiment, cook, or put much effort into any of my meals. By time I get home from work, taking the time to create new things is not high on my list.

But thank God for Instagram right? I get a lot of ideas and inspirations from there and actually put one to use.

♥ ♥ ♥

My creation again for us foodies, may not seem particularly strange, but again, when I get looks from the fiance of “you’re gonna put what on what?”, then I know I have a decent #strangebutgood creation.

♥ ♥ ♥

Sprint 2 the Table

♥ ♥ ♥

It all kind of fell together perfectly.

I already had plans to roast up a sweet potato for dinner. I also just happened to have received my foodie pen pals package that day. While my potatoes were roasting I opened the package to see what goodies I had gotten. (more of course on my entire package to come later, but you get a teaser) It was very hard not to gobble up all the tasty snacks I was sent, but one little gem particularly caught my eye, and it also reminded me of an Instragram photo I had seen earlier.

Wild HuckleBerry Preserves with Chili.

♥ ♥ ♥

025-1

♥ ♥ ♥

I had seen a photo for blueberry jam/goat cheese on a sweet potato and even though I knew I didn’t have goat cheese, I thought adding blueberry jam to my sweet potatoes would be amazing. I do love my sweets.

But when I saw this puppy in my package, I immediately changed gears and knew I wanted to add this to my dinner.

I don’t even know what to call this other then Sweet Potato topped with amazing-ness.

♥ ♥ ♥

010-1

♥ ♥ ♥

I really think the combination of everything on top is #strangebutgood. I surprise myself at the things I combine.

This bowl is filled with oven roasted sweet potatoes that I coated with coconut oil and a drizzle of maple syrup, topped with a drizzle of melty peanut butter, chocolate/cinnamon spiked whipped cottage cheese, huckleberry preserves and more cinnamon sprinkle love.

♥ ♥ ♥

009-1

♥ ♥ ♥

You can’t even really taste the chili in the preserves, it taste mostly like the sweet berries, which is ok with me and it was absolutely delicious. It was a wonderful addition to the bowl. I have obviously made sweet sweet potatoes before, but have never added fruit or a fruit jam, so this was an amazing taste combination. I will definitely be doing this again.

♥ ♥ ♥

014-1

♥ ♥ ♥

I seriously have been so obsessed with roasted squash and potatoes lately.

I’ve eaten so much kabotcha squash in the past week, I may turn into one!

♥ ♥ ♥

kabotcha

♥ ♥ ♥

But for now, I’m just fine with that.

♥ ♥ ♥

What have been some of your strangest flavor combinations?

ugly and delicious eats

Hello my luffs.

It’s Wednesday yay!!!

Long weeks make me actually appreciate hump day.

♥ ♥ ♥

My days have been long, but exciting, so I guess it all evens out. My externship is giving me exposure to so many new things, and even though it’s a bit frustrating I don’t know how to do everything yet, it is also so exciting to experience it! (for example we had an emergency where a dog jumped though a window and ripped the tendons in his foot and was bleeding all over the place and then I delivered my first C-Section puppy and revived it back alive!)

♥ ♥ ♥

But as exciting as all that is, I know that is not why you’re here. You’re here for the foodie wonderfulness that is What I Ate Wednesday.

As per usual make sure to head over to Jenn’s at Peas and Crayons to check out everyone’s tasty treats. Way better than mine I betcha.
♥ ♥ ♥
♥ ♥ ♥

I am going to call this the ugly, but delicious edition, because that is seriously what my meals have been.

I have come to realize there are not many ways I can make eating breakfast in the car pretty.

So I quit trying.

♥ ♥ ♥

But a new breakfast obsession that I have come to love?

Breakfast Protein Wraps

♥ ♥ ♥

012

♥ ♥ ♥

My first breakfast wrap in the making.

Banana, peanut butter and chocolate fudge protein frosting.

Then things got ugly.

♥ ♥ ♥

022

♥ ♥ ♥

This is what happens when you have to eat in the car, at random stop lights, that always turn green right as you’re biting, so then your food starts to get melty because you live in Arizona and it’s already 100 degrees.

But even though it may not look super pretty, seriously, these things taste amazing.

Clearly hooked, I had another one the next morning.

♥ ♥ ♥

022-1

♥ ♥ ♥

This time I added some blueberries and cinnamon.

Same melty problem, but you guessed it.

Yup. Still tasted ah-mazing.

I then attempted to get creative and made a green egg wrap.

♥ ♥ ♥

007-1

♥ ♥ ♥

Fail.

The egg wrap totally fell apart and it quickly turned into a egg pancake in some classy tupperware topped with banana and peanut butter.

But again, still delicious.

And just so you don’t have to stare at my ugly (but delicious) breakfast creations, I was actually impressed at the breakfast one of my co-workers created.

Talk about mountain of fruit goodness. She also used Chobani greek yogurt, so I was very impressed with that as well.

♥ ♥ ♥

026-1

♥ ♥ ♥

(Note: I totally took the risk of asking her if I could take a picture of her food. Did she think I was weird? Probably. I may have to explain myself later for this.)

We have a guy who boards his dogs with us at the clinic every Tuesday (I guess free of charge), so in return he brings us masses of fresh fruit and donuts or some baked treat. Fair trade if you ask me, and you better believe I gorge on that fruit. You guys know me and fruit. I’m obsessed.

♥ ♥ ♥

Well loves, I wish I had more to give you, but I think my ugly (but delicious) breakfasts are all I have to offer.

I hope you all have a wonderful rest of your week!

♥ ♥ ♥

Have you ever had to eat in your car?

weekend round up

Hello my luffs.

♥ ♥ ♥

I hope everyone is having a wonderful weekend so far (however, since most of my favorite blogger friends are all away at the Blend Retreat as we speak, I think it’s safe to say they are having a wonderful weekend! No, I’m not jealous or anything.) But for all you other unlucky peeps like myself who aren’t there, I hope your weekends have been wonderful as well!!

Mine sure has!

It started off with date night on Friday!

♥ ♥ ♥

008

♥ ♥ ♥

We had gotten a Groupon for Studio Movie Grill forever ago (it actually had expired, but thankfully you can at least get the face value for them!) which is a movie theater where you eat dinner in it while you watch the movie. Pretty cool concept.

Matt really wanted to see Star Trek (in 3D as you can see by his silly glasses), and even though I’m not a huge Star Trek fan, I liked the last one they came out with, so I thought why not.

It was way too dark (and probably would have been incredibly rude) to take pictures of our meals, but I ordered the Ginger Mint Salad with added grilled chicken and Matt ordered the Street Tacos.

Both were amazing! The movie ended up being really good as well. Lovely date night.

♥ ♥ ♥

On Saturday Matt and I really wanted to take advantage of the gorgeous weather we’re having, so we decided to ride our bikes for a relaxing breakfast together and a trip to the farmers market!

I was beyond excited! It has been so long since I have been to (and able to go) the farmer’s market!

♥ ♥ ♥

009-1

♥ ♥ ♥

We decided to try a new to us place for breakfast, RnR.

The menu looked promising and in walking in, the restaurant had a nice vibe to it.

We decided to of course start our morning off with appropriate breakfast drinks.

♥ ♥ ♥

019

♥ ♥ ♥

Mimosa’s and beer!

It should have been a sign from the beginning, my mimosa was way more orange juice than champagne and not a very good orange juice at that.

No pictures of food because:

1. Matt got biscuits and gravy and even though he said they were good, biscuits and gravy just aren’t very photogenic.

2. My meal was a hot mess from the very beginning.

I ordered a create your own omelet with a side of fruit.

(Just for reference I made mine with egg whites, sun dried tomatoes, red bell peppers, onions, tomatoes, and jalapenos and a side of salsa)

Round 1: Plate comes out, no fruit, covered in cheese, what appeared to be regular eggs, and I stopped paying attention after that. I immediately told the food runner that my order was incorrect and he said he would take it back and talk to our server.

Server comes back. Apologizes. Said the kitchen made a mistake. Would bring out new order.

Since I was hungry and Matt was insisting on not eating until I had my meal, I asked if I could have my side of fruit.

The pineapple was at least good.

Round Two: Plate comes out. Salsa now gone, and not that I’m a huge food presentation snob (ok maybe a little) but my omelet looked like it was just thrown on the side of a plate. Even Matt made a comment about it. But regardless the omelet had a mish mosh of veggies in it, but I right away noticed no sun dried tomatoes or jalapenos (the two things I really wanted).

I asked for our server again. I told her I didn’t want a new omelet and that I would eat this one, but clearly this was wrong again. She agreed and said she would have my meal taken off the bill. She then offered to bring me a side of sun dried tomatoes which I thought was cute.

Here’s the kicker. My sun dried tomatoes get brought out (which turns out I guess to be by the manager) and he said, I hear you were wanting some sun dried tomatoes? Uh, yes because that’s what I ordered. Thanks. He then says he is going to buy me another mimosa for the inconvenience. Ok great, but um, I don’t want another mimosa, the first one sucked and why can you not just pay for my meal that you messed up twice? Seriously. Wtf.

Just didn’t make sense to me. Such a cop-out.  Safe to say we won’t be returning there.

(ps just a reminder for you guys, we still left our server a $10 tip regardless of the horrible experience, it wasn’t her fault. being a server, I have gotten so many bad tips when the kitchen or management are the ones providing poor customer service.)

♥ ♥ ♥

So after the sub-par breakfast experience, we headed off to the farmers market.

We had intentions of going to get some fresh produce for dinners, but kind of decided we really didn’t need anything, and just were going to go to walk around.

♥ ♥ ♥FM

♥ ♥ ♥

Fresh produce is always so tempting!

We somehow resisted all the fresh produce, but got suckered into some other goodies.

♥ ♥ ♥

FM1

♥ ♥ ♥

Since I am getting up so early now, I am really lacking energy. I actually re-started my bad habit of energy drinks, but honestly, they work for me and I was desperate. So when I saw these Green Tara Spirulina Energy Bites, I ran over to try one. They were actually really tasty, the guy also had these spirulina “crumblies” that you could sprinkle onto/into food.  He gave us a sample on cucumber, and those were surprisingly really tasty as well.  Matt and I just figured the bites would be more convenient for us, and I kind of just want to see if they work. I’d like to get energy the most natural way as possible.

Matt also sampled these noodles and he wanted to get a few for lunches for work. The lady was local and just started her own business so we like to support local businesses. The cool thing about these were the containers are re-useable! I thought that was a neat idea.

So in the end we got some things we didn’t necessarily need, but o’well, we had a good time!

♥ ♥ ♥

Now it’s back to the grind and back to work on Monday.

I hope you all had a wonderful weekend and have a wonderful week.

♥ ♥ ♥

What do you do when your order is wrong? Would you go back to the place?

Do you tend to pick up unnecessary items when shopping? Guilty.

i will win

Hello hello my love bugs.

♥ ♥ ♥

I will warn you right off the bat, this post may be a little bi-polar.

I had an amazing experience that I want to share, but I also want to be completely honest and not make life seem all rainbows and butterflies.

♥ ♥ ♥

♥ ♥ ♥

However, about 90% of my life is pretty much rainbows and butterflies lately, but we all have our ups and downs, and with every positive, sometimes there is a negative. It’s just how we handle that negative, do we dwell on it? Or do we move on?

And lately in my case, I have learned how to move on, find the positives, and not dwell on the past.

So if you’ve been reading lately, you know I have had a few amazing steps in my recovery lately.

Multiple frozen yogurt trips.

My sushi date out with friends.

My celebration dinner with Matt.

♥ ♥ ♥

I seriously feel like I am making huge strides in becoming normal again, eating normal again, losing the obsessiveness I had with food. I thought I figured out this is just what I need to do right now to get healthy. And yes, for me that means gaining weight. But I figured out I needed to stop looking at is as gaining weight, but getting healthy, getting my life back. It was an amazing freeing feeling and I was on cloud 9.

Then I saw how much I gained, and yes a little bit of me freaked out. Well a little bit of my ED freaked out. I wouldn’t say I pulled back per say, but I was a bit more anxious. One thing I am very proud of, is I never restrict anymore. So after my trip to my nutritionist, there was a part of me that was automatically planning my “safe” meal. When I have thoughts like these the one thing I try to do is challenge it. If I have an ED thought, I will counteract it. And then some.

So what did I do?

I called Matt up and said meet me out for a drink.

♥ ♥ ♥

025-1

♥ ♥ ♥

A nice cold beer is what I needed to calm my nerves. This not only challenged my eating disorder with not going home to “be safe”, but also oh my gosh how many calories were in that beer? Who cares. I was with Matt, I had comfort, half the anxiety was gone.

But with it still being early, I still had time to choose to go home and make dinner.

And I almost did.

Then I brought up to Matt eating dinner out. Half the battle was won. But when we started talking about restaurant options, the ED started to sneak back in. I will be honest in saying I was trying to think of the safest restaurant I could. We both couldn’t agree on a place and since we were in a shopping area, I suggested just walking around to see if we could find a place that sounded good to both of us. We turned onto a street we both had never been down and there were two restaurants. Sauce (pizza) and Zoe’s Kitchen. (semi-healthy sandwiches).

Automatically out of my mouth came, “oh, let’s try Zoe’s Kitchen”.

I then thought about why I was choosing that restaurant, looked at Matt and said (pardon my french) fuck it, let’s get pizza.

So that’s what we did.

♥ ♥ ♥

030-1

♥ ♥ ♥

I started with more liquid courage.

(because really what’s pizza without beer)

♥ ♥ ♥

035-1

♥ ♥ ♥

And then followed it with this beauty of pizza.

Guys, it has been a long time since I have had pizza out.

You want to talk about fear food, this cheesy masterpiece was one of them.

I am happy though to report that I ate 2/3 of it. All by myself.

I left comfortably full, satisfied, and back on cloud 9. I knew I had beat ED.

And if that wasn’t enough, we had plans to meet a friend who was in town for more drinks.

Yup. Beer. Pizza. More beer.

♥ ♥ ♥

038-1

This was a banana beer which just makes everything better.

♥ ♥ ♥

But with these rainbows came some rain.

Working at an animal facility, there is a huge scale available to weigh the dogs. I take advantage of that, because a long time ago I threw away my scale at home. So when I stepped on that scale, saw the number, I freaked. I know better than to weigh myself. It’s on the top of the my nutritionists’ list of things not to do. But sometimes I go against my better judgement and I do it anyways. I don’t know, it’s really just self-sabotage, but this is just a part of me that isn’t recovered yet. But again, I am getting really good at fighting my ED thoughts. I walked away thinking “Debbie, this is a good thing. This is getting healthy. This is what you need to do.” Because let’s be honest, if I want to be a successful vet tech, I can’t weigh what I weigh. And what, did I go to school just to not be able to perform at my job? No. I didn’t.

♥ ♥ ♥

So even though I battled my disordered thoughts. Got through them. Talked sense into myself, I did want to be honest that I still do have these thoughts. And even though I like to document the achievements and high moments, there are still low moments. But again it’s how we fight and counteract them.

♥ ♥ ♥

And to show my ED who really is boss, this happened too.

027

♥ ♥ ♥

I teased you guys earlier in my WIAW post about this tasty treat, and lemme tell you, it was tasty.

We were walking back to the car from the bar and walked past Sparky’s Old Town Creamery, which is kind of like a Cold Stone, but better.

After sampling probably every flavor, we decided to get Chocolate Fudge Brownie. You also get one free add in and I decided on chocolate chips. Seriously, something about chocolate chips in my ice cream I am obsessed with. Matt insisted we get it in a chocolate covered cone, we were informed that the cone was actually a topper because the ice cream doesn’t fit in it. Works for me!

This was so good. And so worth it.

♥ ♥ ♥

Overall though I will say I think I have accepted what I need to do.

I have seen the positives of challenging my ED and the negatives of falling victim to the thoughts.

So loves, yes I still have my challenges, but I have decided to fight them, battle ED, and I will win.

♥ ♥ ♥

it’s all about balance

Oh lovies, get ready.

This post is going to be here there and everywhere.

But that seems to be my life as of lately.

Up. Down. Right. Left. Sideways. And all directions in between.

♥ ♥ ♥

But I somehow found my way back for What I Ate Wednesday.

♥ ♥ ♥

I’m going to warn you, this post is no where near a healthy one.

But lately my days have been fun, carefree, and me just living.

So sometimes that’s what you get.

Matt and I have really been taking advantage of me having some days off.

And honestly, one of the things we use to always do, how we met, how we bonded, how we fell in love.

Was going out day drinking.

#sorryimnotsorry

I’m a beer girl. I like to drink.

And I don’t care if you deem it unhealthy. As cheating. Or as bad.

Because I don’t. I like it.

♥ ♥ ♥

beer

♥ ♥ ♥

Proof.

If drinking some beers get’s Matt and I’s spark back in our relationship, well I’ll bite the bullet.

We have had some amazing days together, just enjoying each other and having a good time.

That is all that matters to me. Us being happy again. And falling in love again.

♥ ♥ ♥

Oh and some of this deliciousness makes me a happy girl too.

027

Yup, and I even ate this after all the beer and before dinner.

♥ ♥ ♥

But there has been another liquid lately in my life that could possible get me in some financial trouble.

This guy.

♥ ♥ ♥

coffee

♥ ♥ ♥

If you follow me on Instagram, you know I’ve had a bit of a Starbucks problem lately.

There is a Starbucks literally connected to the clinic I am externing at.

Yea. And when you work with a bunch of co-workers who are just as addicted to coffee as I am, it tends to turn into daily walks next door for coffee. And since I am not getting paid during my externship, well this could really turn into a problem.

It needs to stop.

But I kind of don’t want it to.

♥ ♥ ♥

But my week hasn’t been filled with only liquids.

There have been some decently healthy meals sneaking in here and there.

I mentioned that my go to breakfasts lately have been green smoothies.

They are easy to make the night before and the more and more practice I get, the better they are tasting.

It started with my protein green lemonade smoothie that I shared with you all.

♥ ♥ ♥

017

♥ ♥ ♥

But now I am starting to get more creative.

I mean. You guys have seen my oatmeal, it’s really hard for me to eat not dressed up food.

Especially breakfast, I am always proud of my breakfast.

So I’ve played around with my toppings.

♥ ♥ ♥

002-1

♥ ♥ ♥

In the mix:

Baby spinach, pear, cucumber, Plant Fusion vanilla bean protein powder, lemon juice, chia seeds and NuNaturals liquid lemon stevia.

Topped with:

Click mocha protein frosting and Love Grown Granola and a cinnamon sprinkle.

Delish.

I think it got better the next day.

♥ ♥ ♥

002-1

♥ ♥ ♥

My containers may not be pretty and well neither are the smoothies to be honest, but I can try be a bit fancy with my toppings right?

In the mix:

Baby spinach, 1/2 frozen banana, 4-5 strawberries, Fitmixer chocolate protein powder, NuNaturals liquid vanilla stevia, chia seeds cinnamon, ginger.

Topped with:

Coconut flour/BSN banana cream protein frosting and graham cereal crumblies.

♥ ♥ ♥

So there you have it, a mix of healthy and not so healthy, but you know what it all balances out.

It always does.
I have finally realized life is too short to dwell on being 100% healthy 100% of the time, because honestly, to me healthy is living, enjoying life, enjoying food, and enjoying love.

I’m doing all of the above.

Are you?

It’s not secret I have a bit of a bar obsession.
I’m very open about it. No shame.

And even though I have boxes of bars, if I see a new one that I haven’t tried, I have to try it.

So when I came across Recharge Foods, they were no exception.

♥ ♥ ♥

The first bar that caught my eye that I seriously drooled over just staring at my computer screen was their new lower sugar protein bar.

Why so mouth watering?
The neapolitan flavor. I mean seriously.

♥ ♥ ♥

005

♥ ♥ ♥

I think we all know how chalky and unappetizing some protein powders and supplements are. Not with this bar.

Usually when a protein bar tastes like dessert, it has the nutritional stats of dessert. Again, not with this bar.

This bar only has 3g of sugar.

You heard me. Only 3g.

And with as delicious as it tasted, you really can’t get better than that.

Or can you?

They also have Recharge Bars.

♥ ♥ ♥

004

♥ ♥ ♥

The first one I tried was the chocolate and caramel. Ok. You guys remember those rolo candies? Where the caramel literally melted in your mouth?

Yea. Think of that. And that’s what I thought I was eating when I ate this bar.

Do I need to go into any more explanation? I mean, I think that should be all I need to say to get you to run over and order a box right now.

Ok you want more.

This bar has 1g of sugar.

I’ll wait while you rush over to their site to order some. (these bars are only available for purchase online)

I’ll even give you the link again.

You’re welcome.

♥ ♥ ♥

So if me telling you these bars are absolutely amazing and you should go buy some ASAP isn’t enough for your to actually purchase them, but you’re dying to try them, you’re in luck.

Because I also have a giveaway for you!

Recharge Foods is amazing and wants to offer 30 Accidently Delish readers the chance to try their Recharge Bar Sample Pack at no charge to you. You heard me. For free.

It gets sweeter yet, all you have to do is head over to the website shop around and leave me a comment letting me know which product you are most wanting to try.

Also head over to their Facebook page and like them and let them know you’re an Accidently Delish reader and how much you appreciate this offer!

Leave me a comment letting me know you did both things, along with your e-mail address and I will e-mail the first 30 people to comment the free sample pack discount code.

Disclaimer: Recharge sent me these products to try. The opinions are my own.

green protein lemonade smoothie

Happy Friday my loves.

I am happy to report I have survived my first week of exernship.

I am completely wiped out and a little mentally drained, but I survived.

And I am loving it.

I have been exposed to so many new things, and introduced to the world of breeders and artificial insemination’s and semen collection. It’s really no big thing and done daily at my clinic. But to me, it’s still is a little strange to look over and see my vet jacking off a dog and having a normal conversation with the owner.  Oh the world I live in now.

♥ ♥ ♥

But I don’t think you came to hear about all that. I think you’re here for another reason.

A #strangebutgood reason.

♥ ♥ ♥

Sprint 2 the Table

♥ ♥ ♥

Now I am going to be honest in saying this week’s creations are not really that strange in the blog world. That happens to me quite often where I see the same concept all over the blog land and Instagram, yet when I tell a “normal” person what I am eating it may be a bit strange to them. So I say it counts.

♥ ♥ ♥

Since my mornings are so early, breakfast is now consumed in the car and I have relied on green smoothies to be my go to breakfast. I may get brave and eat other things as I get use to this schedule, but I am whipping these up the night before so they are just ready for me to grab on my way out and I don’t have to worry about preparing anything. So it’s working for me right now.

My first green smoothie. Well, in the looks department. Epic fail.

♥ ♥ ♥

002-1

♥ ♥ ♥

I shared this in my last post and it seriously is so gross looking it deserves a second look.

We all know how I like to cook; throw basically everything or anything you have into a blender and hope it tastes good.

It was decent. Not the best.

Check out my last post to find out what I threw in it.

I am happy to report that I think I got better with practice and after finding Brittany’s recipe for her Green Lemonade Smoothie I had new inspiration.
And kids for once other than adding protein powder and tweaking a few other things, I pretty much followed the recipe.

Here is what went into my spin off.

Green Lemonade Protein Smoothie

- 1 heaping handful baby spinach

-1 scoop Plant Fusion Vanilla Bean protein powder

- 1 small pear

- 1/2 frozen banana

- 1/2 cucumber

- juice of 1/2 lemon

- 5-7 drops Lemon Liquid Stevia

- water until smoothie reaches your desired consistency

Mine was a little watery, so I added some chia seeds to let soak overnight. Thicker smoothie, and added nutrients.

I am happy to report this smoothie was amazing. I know it’s risky, but I am loving throwing random things into my smoothies. It’s like my oatmeal, flavor combinations are endless.

I’m really wanting to get some fresh ginger and do a spin with that.

I am obsessed with ginger.
