I hope everyone is having a wonderful week! Mine of course is go go go.

I’m doing the best I can to balance and yes I am super busy, but not overly stressed, so that is a good thing at least.

I of course had to pop in and check in with all you loves and what a better time then What I Ate Wednesday.

I have actually had some tasty treats lately.

First let’s look at the amazing breakfast I had over the weekend when we met Matt’s parents.
Matt and I have been dying to try this local breakfast/brunch spot called The Breakfast Club.
It gets all the rave. We’ve been meaning to go for some time now, but never seem to have the time. Perfect excuse when the in-laws are in town!

We started with some fresh squeezed orange juice and tea.

I loved how they served their tea!

For breakfast I chose an egg white scramble which I added jalapenos to, fresh fruit, broccoli, tomatoes and a side of cottage cheese.

Matt’s parents both got omelets which were huge and looked amazing!!

I swear there are biscuits under all those potatoes! He doesn’t like eggs so he opted for more hash browns which they put over the biscuits.
I got a bite of the biscuits and they were sooo good.

I had to work so I only got to have breakfast with them, but when it comes to Matt’s parents any time I get with them is worth it!!
I have also been making some tasty creations at home.

I’m really starting to out do myself with these powercakes.

I am loving the Chike coffee protein and have been adding it to my powercakes. It adds an amazing taste. Not to mention some energy and protein.
Topped with fresh strawberries, blueberries and you guessed it and peanut butter drizzle.

I also managed to make a huge mess of a “sweet” sweet potato. I really don’t think I could have shoved anything else into it.

wiaw #45 – realizations and obsessions

Want to hear a shocker? This is going to be short. Probably boring. And really repetitive. And I greatly apologize.

I will never regret my decision on going back to school, but I am telling you this Pharmacology class is killing me. There is just so much. And I really feel like I don’t have enough time.

This Saturday Matt and I had plans to go to a friends for her birthday/pool party/cook out. Well Matt ended up going, but I stayed home to study.

Here is what really stinks about this situation. I am finally at a point where I want to go out, social situations no longer scare me. Different foods don’t scare me. And I want to see my friends.

What stinks, is I know I need to be responsible. I know I need to study. I know I shouldn’t go. So I didn’t. Ugh. It sometimes is so hard to make the right decision.

So all day Saturday I studied. And hated every second of it. But it was what had to be done.

What else needs to be done?

What I Ate Wednesday of course.

But this is where I warn you of the boring part. Because my meals have been quick and repetitive.

They also have been spent at this place a lot. I need to buy stock.

Breakfast at Starbucks before class. Check.

Pick me ups at Starbucks. Check. Seeing a trend?

But I do have something fun to show you. Quite ugly. But fun.

We all know my obsession with my soy chocolate panini.

I made quite a delicious addition that other day, which I don’t know why I didn’t think of earlier.

(warning. this is ugly)

What was my lovely addition you ask.

Peanut Butter.

So simple. Should have been done forever ago, but oh.em.gee. what a great addition.

I also didn’t use chocolate pudding in this one.

I also discovered yogurt works really well.

I was sketchy about heated yogurt, but if you can heat pudding, you can heat yogurt.

Another dish that hasn’t been getting old is my powercake.

I am obsessed to the max.

Not a bad thing I suppose, there could be worse things to be obsessed with.

Ugh. And nothing beats a topping of peanut butter and granola goodness.

It too quickly turns into this.

Saddest part of my breakfast.

I never look forward to this moment.

I first want to say THANK YOU for all your support in my schooling and studying.

A lot of the comments have been telling me to “take a break” and “not stress out”. It actually reminded me I totally left a part out of my post I wanted to write about!

I did take time off that weekend!

I actually realized I was working my brain way too much! So Matt had a dodge ball tournament on Sunday and afterwards we had decided to have dinner out and just relax and spend time together!

It was an amazing night. I studied some during the day and the rest of the night was just him and I.

And yes. Don’t worry. I rewarded myself.

Ahh. A nice cold beer. I enjoyed every last sip of it. And every moment of relaxation with the boy.

The rest of the night was seriously couch and TV. Another thing I am getting better at is learning how to balance, but thank you all for reminding me!!

Happy mid-week! I hope everyone is doing wonderful.

It has been kind of stressful around here.  We found out Monday that Matt’s mom was taken to the hospital due to GI problems and severe dizziness.  We’re still not 100% sure what is going on, but she did have some GI bleeding. For those who follow me know how important Matt’s family is to me. His family is my family. Since mine basically abandoned me when I told them I had an eating disorder, Matt’s parents have been more than supportive. They mean the world to me.  So this is hitting me as if it was my own mother. Because really, she IS my mother.

On top of that, school is starting to get to me again. It’s just so much. So quick. I’m doing well don’t get me wrong, but sometimes we all have our freak out moments.

It happens. It’s allowed. And it will pass.

But on to fun stuff.

Because we like to keep it fun and light around here!

What I Ate Wednesday.

We all know I don’t have a problem in the veggie section.
Dinner time for me is always veg-tastic.
Meals again have been kind of repetitive, I wish I had something new to share, but alas, let’s take a gander at what I have been shoving in my mouth!

A lovely guest has made a re-appearance. A very very welcome appearance.
I forgot how much I loved these things.
The chocolate soy pudding panini.
It’s been too long.
Way too long.

In it is chocolate soy pudding, apple slices, banana bread hummus and a sprinkle of cinnamon.

I’m telling you. This sandwich is divine.
But we all know the huge sweet tooth I have.

Someone went a little crazy in the produce section.

Broccoli, zucchini, cherry tomatoes, peppers, carrots you name it. It’s probably in there.
I like veggies. What can I say?

Dinner’s have been kind of boring.
So let me show you some green I have been craving.
It has been way too long since I have had sushi.
Good sushi.
One night I caved and got sushi from Trader Joes. Now, I love everything Trader Joes, but it just wasn’t the same. Way too much rice.
So if a certain someone is reading -cough Matt- a sushi date would be highly appreciated.

wiaw #32 – learning to relax

We went to Matt’s parents for Easter and had a wonderful relaxing weekend. Just what I needed.

Things have been so busy for Matt and I; with school for me and work for him, that sometimes it is just so nice to just sit. Relax. And be with family.

But things are back in full swing around here. School is intense. But I am loving every minute of it!

But let’s all take a break, because it’s that time. And I missed it last week, so I am super amped to not miss it this week!

Before we headed out to Matt’s parents on Saturday (PS I love that they only live a little over an hour away now. We don’t have to spend half our day driving. So nice!) we decided to hit up the farmer’s market just to spend a little time outside together. Our days have be gorgeous here! I am loving it!.
So on our bikes we hopped and took a stroll.
As much as I love my bike (totally vintage 50’s) I miss my old bike that got stolen. Stupid kids.

I always forget to take pictures at the farmer’s market (too busy sampling) but the fresh flowers always catch my eye!
If we weren’t on bikes I totally would have taken some home with me.
Or maybe someone will bring some home for me. -wink wink nudge nudge-

My meals however have been kind of blah lately.
Same ole same ole if you ask me.
Thanks to Chobani, I have been quite stocked (however that stock quickly diminishes in this house)
So breakfast’s have included a lot of these combinations.

I love dipping my fruit in my yogurt. To me it’s so much better than mixing it together. Am I the only dipping lover?

Now I know the April challenge is an extra cup of greens, trust me there are no shortage of greens in this house.

Just a little boring.

Matt and I are really trying to be more creative in the kitchen.  But with it being so hot (hello Arizona heat) sometimes we just don’t like to heat the kitchen up.

We are being stubborn and refusing to turn on our air! Although the last few nights have been pretty miserable, I might be the one to break!

But the greens have been coming in this lazy form lately.

Oh yes. Oven roasted broccoli. And yes. I dip it in ketchup. I don’t know what it is. But I love the combination.

No I am not pregnant.

 So although not super green, I made a re-creation of an amazing breakfast I hadn’t had in awhile.

We have a lot of banana’s around here lately and one went a bit ripe.

I haven’t let my banana’s go ripe lately because I have been eating them like a mad man, so this breakfast hasn’t really been an option.

wiaw #26 – ups and downs

I first want to say Happy Valentine’s Day (I know a bit late) but I truly hope you all had someone special to spend it with.  Whether it be a significant other, or just simply family or loved ones.

i love cupcakes.

I’m not a huge Valentine’s Day person in the sense of having to have a big celebration, but I do look at it as a day of love, and that can be with anyone.

I just am lucky to have a wonderful fiance to spend it with.

Matt and I decided to do a low key Valentine’s Day as we typically do. We went to one of our favorite vegan restaurants, The Green Restaurant.  Matt is not vegetarian anymore, but he was kind enough to take me there.  Their food is so good, even if you aren’t a vegetarian I think you would enjoy it. I will be doing a Valentine’s Day update post tomorrow, so check back to see how my day went!

We had met Matt’s parents for lunch and we got an early Valentine’s Day gift. All I can say is yum! Clearly I couldn’t wait to take a picture before this happened.

But since this is What I Ate Wednesday, and I have actually switched things up a bit, I thought I would share with you some new eats.

So what’s with the title you ask?  Well. Things have been good and bad around here. I’m pretty open about my life on here, so if you follow me, even just occasionally, you know that I am in my recovery process from an eating disorder.  Things were really hard in the beginning, but I pushed through and made great progress. I started school and then things just kind of. Tapered off.  I think I let myself use school as an excuse to not push as hard, and got to a comfortable spot.  Well, let’s just say my therapist and nutritionist were not happy with my stagnant stand still and have really been getting on my case about my lack of weight gain.  Also the fact that I was eating pretty much the same foods everyday.  Ruts anyone? But I have recently really started to push myself again. To remind myself that I need to gain weight.  And that I will not become overweight over night.  My nutritionist is amazing and flat out tells me she will never let me be overweight. I trust her to recognize if I get in bad habits or patterns. So lately I’ve done the work.  Am I a bit uncomfortable? You bet. But it is what I need to do to beat this, and I will do what it takes.

So let me show you some fun new eats I have had lately.

I had seen a picture on Food Gawker and I just couldn’t get this simple lunch out of my head.  I finally made my own little version.

simple little sandwich.

The original recipe was for a chive spread, but I didn’t really have anything to make it with, but I did have a laughing cow swiss cheese wedge that I used as my base. Topped with alfalfa sprouts and some tomato.  So simple, but seriously so tasty. I used Ezekial sprouted bread which I am obsessed with. I am totally a carb girl, so good bread gets me really excited and really makes a difference when it comes to simple sandwiches.

I’ve been seeing these guys all over the blog world and on my last trip to Trader Joe’s I decided to give in and buy a bag! I had been wanting to switch up my fruits anyways, I feel like all I eat are banana’s and apples. I could probably become one! I forgot how much I liked oranges. And so pretty too!

Another new and simple recipe came at dinner time.

i made my own mushroom noodle casserole.

Again, super simple. I haven’t used canned condensed soups in forever. And for good reasons. Some of the stuff they put in there. Meh. But again, I saw a recipe for this and thought hey why not. I need to start challenging myself and eating things I’m not 100% comfortable with, because sometimes I really think the whole “healthy eating” is just a cover up and an excuse for restricting. Not all, and not everyone. But some. And a few preservatives now and then won’t kill me!  So I put some garlic infused cream of mushroom soup with some linguini and added some peas. Baked this bad boy up for a bit and enjoyed!

it was actually pretty tasty. and i enjoyed it more than i thought i would.

I really am working hard on trying to add a little variety to my diet. Even if it’s not a fancy meal, something different is still good.

Again, it was super simple, but a nice change from what I had been eating.


No really. I love peas. I love almost any veggie though. I’m weird. I know.

Another challenge that I’m pretty proud of happened a few days ago.

I had been  craving fro-yo lately. (Heather I totally blame you) and I saw a Groupon for a place near Matt’s work that we hadn’t tried. Talk about impulse buy! Come to find out it was one where you had to use it that day! No backing out for me, I was not wasting my money. So I drove out to surprise Matt and really pushed myself to make a normal sized cup. Not a eating disordered portion. And you better believe I devoured it all!


I enjoyed every last bite of this! Oatmeal cookie and thin mint yogurt topped with strawberries, pineapple, graham cracker crumbs, cotton candy sprinkles and a few marshmellows.

This thing was delish!

I don’t even remember what all went into Matt’s. Like five different flavors. I did get a bite of his red velvet cake and that was pretty tasty as well!

So I was very proud of myself because I finished my whole cup. No guilt. No hard feelings. I just simply enjoyed it!

wiaw #24 – fun new things

Wow this week sure is flying by. I can’t believe it’s already time for What I Ate Wednesday!

I have been super busy with school, no surprise there.  It is our final week and not only that, but the two chapters were doing in addition are proving to be incredibly challenging.  Needless to say, I am really looking forward to this week being over and done with!

But I actually have a lot to share with you today. Lot’s of delish things to share!

But before we get started let’s head over to give the lovely Jenn at PeasandCrayons a big thank you for hosting this.  It is really one thing I look forward to doing and I love reading everyone’s eats.  It’s a great way to find new blogs and new ideas!

(So right as I’m starting to write this, I’m finally going through my pictures and realized this first batch came out horrible. So I apologize ahead of time. Dinner was later than normal and I guess I didn’t realize the lack of lighting. I promise the dish was way more tasty than it looks. So use your imagination!)

Does anyone else have too fun of a time cutting a spaghetti squash? I love stabbing my knife into it. I swear I don’t have a serial killer instinct in me. Maybe I watch too much Dexter. 😉

i'm pretty proud of my muscles and being able to cut this bad boy. ok so i cheated a stuck him in the microwave for a few minutes, but matt wasn't home and i had to do it on my own!

So after the stabbing, some seasonings were added.  I think on this one I did a simple sprinkling of garlic powder, onion powder, a bit of chili powder and I think I added a bit of cumin for a little kick. I’m weird. And random. I know. It tasted good though so that’s all that matters to me!

I then topped my cooked spaghetti squash with one of the most delicious sauces I have had in some time.

ok guys seriously. try this stuff.

I know you’re all super shocked it’s a Trader Joe’s product right?  I mean, it’s not like I’m obsessed with that place or anything.

All put together and you get this beautiful and tasty dish.

again i apologize for the not so great picture, but let me tell you. this sauce. spaghetti squash. delish!

The sauce just has such a nice blend of spices and the turkey is spiced really nice too.  It’s not too meaty, but meaty enough for me.

I had a side of veggie’s along with this. It was a simple, nice meal.

i'm pretty sure another mound of spaghetti squash and sauce was added to this bowl after pictures were taken. it was so good.

This next thing I am so excited to share with you guys!

I know dessert hummus’ are nothing new.  Definitely not new to me.  Banana bread hummus is probably by far one of my favorite things. I make it all the time.

I also always try to switch it up a bit. I don’t follow a true recipe anymore, it has kind of turned into a throw what I feel like kind of thing. Banana and chickpeas are always my base, but I’ll play with it from there.  I’ve done some where I add cocoa, chocolate protein powder, nut butters, pumpkin, you name it, it’s probably made it in there.

But I made a batch this morning, and had a real random idea. And boy. Did it turn out to be a good one.

Banana-Fig Hummus

In the mix:

1 medium size banana

1 can chickpeas

1 tbsp vanilla

1/2 tbsp almond extract (my hand slipped and a little more went it and it was great!)

1 tbsp Trader Joe’s fig butter (this makes the dip!)

1/2 tbsp cinnamon


Place everything in food processor and blend till smooth, scraping edges down as needed.

i can't even describe how much of a difference the fig butter made

So I may be obsessed with the fig butter to begin with, but seriously one of the best batches I have made in awhile. My finger wiped the food processor clean!

Oh I can not wait to use this on my breakfast tomorrow!!

Another thing I wanted to share with you all is kind of random. Go figure huh.

If you follow my blog I always say I put the most random things together to make a meal. It’s kind of just everything I have a taste for and if they don’t necessarily go together, well half the time I don’t care. As long as it tastes good to me, that’s all I’m concerned about.

under that cottage cheese is some blueberry jam, on top of that cottage cheese is some cinnamon. in that yogurt is cookies and cream protein powder and cinnamon.

Random. Weird. Super tasty (to me at least)

wiaw #21 – spaghetti squash for the win

Well loves, being back in school definitely has taken it’s toll on me.  There is also some other drama going on that I’d rather not get into that has also made my life a little more hectic than wanted.  But that’s life right?

A positive side though is Matt and I had some amazing friends visit us last weekend! It is always so refreshing to have positive people around, I really feel like it helps me and my spirit.  I have been having some pretty rough days lately, I’m not going to lie, so it was nice to be able to relax with good friends.

What I Ate Wednesday

And we all know who we need to thank for this wonderful party. Oh you don’t? Well the lovely miss Jenn at PeasandCrayons is who we thank, without her this wouldn’t be possible.

As stated in my last post, breakfast’s have sort of been looking like this.

As much as I love my nut butter and jelly sandwiches (am I the only one who constantly typos but butter for nut butter? Happens way too often to me) they do get a little boring.

With the help of Chobani and their new flavors however, breakfast this morning was a little bit more exciting.

I will say it was not as cinnamon apple-ly as I thought it would be, but it was still super tasty and a nice switch up!

I also picked up a new to me product on my way to class.

I’ve tried the cinnamon flavor as well and really enjoyed it.  The grape was very good as well. I am a fan.

And I actually prepared a real dinner tonight.

I have been real lazy lately on my dinner, but made myself snack so I could wait for dinner to cook.  Something for some reason I mentally hate doing.

I decided to cut into this bad boy (and boy was it work) and make me some spaghetti squash.  I seriously love this stuff!

topped with a garlic and onion marinara sauce.

Simple? Yes. Delicious? Double yes.

I spiced the spaghetti squash with an onion and herb spice and also some cayenne pepper.  I definitely tasted the spice! I loved it!

That is another great thing about spaghetti squash. It yields an insane amount of filling. Leftovers for days! And I’m not complaining.

Do you mind snacking before dinner is ready? This is part of my ED that I want gone. I hate it.  Right now with me being in my gaining process the fact of eating just to eat really bothers me mentally.  I’ll push through it and do it, but the after effects are sometimes so hard to deal with. I need to learn snacking is not bad.


wiaw #20 – peanut butter and jelly – oiaj style

Well loves, my vacation is finally over. Boo!

I really enjoyed my time off from school, maybe a little bit too much because I have almost no motivation to go back! I mean, of course I am going to go back, but I just hope I can quickly get back into the swing of things. I’m going to have too, because our final is this week!  I’ve been doing really well in this class I would hate to ruin it in the last week.  I’m sure I will be fine though!

So it is already that time again. What I Ate Wednesday.

I don’t know the last time I actually did a complete day of eats, but you guys I’m sure have come to not expect that.

But before I do show you some tasty eats that I have been enjoying let’s head over to the lovely Jenn’s at PeasandCrayons and thank her for being the lovely host.

As I mentioned I of course did not get a fulls day of meals, but I did however have two amazing breakfasts that deserve some spot light.
Again, my excitement for these should be little if no surprise to those of you who know me.
Two of them.
I know right.
Each special in their own little way.

OIAJ to me is always bittersweet.  Yes I love the mixture, but it means I am out of whatever deliciousness was in the jar.
I’m pretty good at keeping back-ups, this one however I did not.
I actually went to the farmer’s market specifically to get this and they were closed!
I was pretty bummed.
But I still did enjoy this breakfast.

And let me tell you, these were no ordinary oats. Oh my do I have a lovely treat for you all.

I made Strawberry Banana Protein Oats.

Strawberry Banana Protein OIAJ

In my mix:

1/2 cup rolled oats

2 tbsp chia seeds

2-3 tbsp strawberry banana protein powder (I used Spiru-tein)

1 tbsp cinnamon

1-2 tbsp maple syrup

Let me tell you. These were delicious.

might have been even more delicious with the addition of a nut butter. but then again what isn’t better with the addition of nut butter. nothing i tell you.

The combination with the left over pumpkin butter was just over all awesome.

And if you can see my oats were pink! How cute. I love pink!

Very soon after this while making Matt breakfast another great/sad thing happened.

I used all of our almond butter.

But you know what that means.

Oh yes, another OIAJ.

This one however topped the last, not because it was in a nut butter jar (although I think that would have been enough) but I took a little spin off of this recipe, but added/subtracted my own spices and obviously didn’t bake it.

I will call these Cinnamon Apple OIAJ

this by far was one of the best oiaj i have had in a bit.

Cinnamon Apple OIAJ

In the mix:

1/2 cup rolled oats

2 tbsp chia seeds

1/2 unsweetened applesauce

1 tbsp maple syrup

1-2 tbsp cinnamon

dash of either pumpkin pie spice or apple pie spice

topped with banana and a sprinkle of cinnamon

I usually keep my oats pretty plain because I feel when you add too much it really takes from the oatmeal flavor and texture which I love all by itself.  So the fact that I am so excited over how delicious this was, let’s you know it was pretty delicious.  I may have to make this into a oatmeal pancake recipe as well.

I know a lot of people have mixed emotions about OIAJ, but I love them. I just love eating out of random containers. I’m weird like that.

Seroiusly though, the left over yogurt and using chocolate almond milk is amazing. Yes I know it’s just cereal. I’m easily pleased.

Well, being back in the grind of things means more boring quick meals. Yay.

What is your New Years resolution?

Do you prefer your oatmeal plain? Or do you have to spice it up? For me it really depends on my mood.  Sometimes I love the plain nothing in my oatmeal taste, but sometimes when I find a right combination, I’m in love with flavor.
