Friends, Hello!!

I know it has been quite a while and I hope you have not forgotten about me, I have not forgotten about you! I really have missed writing this blog and am sad that I have not been more consistent with it. I think you all know that life just happens, we get busy, and time slips away from us. I mean, can you believe it is already October?? I have been doing a lot of thinking, goal setting and am really trying to start doing things that better serve me and my interests and passions. But me and my scatter brain hopping from one thing to another, sometimes time and tasks just get away from me.  In the future I really hope to start providing you with quality information and topics, not just my random life happenings. Although sometimes random life happenings are just as interesting to read about!

With that being said, I come to you today with random life happenings! But such a happy one that I just had to share.

I currently am on a plane right now coming back from Indiana where Matt and I attended our good friends Louis and Claire wedding reception. They are friends of ours that we had went to college with in Indiana, then sort of followed out to Arizona. It was one of those trips that I feel like we traveled more than we visited, but we wouldn’t have missed this day for the world. It is always good to go back and see old friends and celebrate such important events with those we love.

Their ceremony was on Saturday and family only, so we booked our flight for Saturday morning so we had one night to spend in Indianapolis before heading down to Southern Indiana where the reception was on Sunday. If you fly you know all the cheap flights are bright and early, so we booked the earliest flight to give us some time to settle into a hotel and have some dinner, there was a 3 hour time difference so even though we flew out at 7am, we “arrived” at 3pm. But even with an early flight we made time to hit up our favorite Dutch Brother’s for a coffee to start our trip.

You know you’re a regular when instead of going to the walk up window at 6:30am like your normally do, but go through the drive thru at 5:30am, and get the immediate response of “what are you doing in the drive thru and why are you so early???” from the staff. This is one reason why Matt and I go to Dutch Brother’s every morning. Yes I may be addicted to their coffee, but it’s the experience that we get. They really take the effort to get to know you and truly start our days off on a positive note. They alway’s put us in good moods, and at 5:30am, we needed that!

With out coffee’s in hand we were off to the airport! And of course as soon we get there airport selfies were to be had.

Matt for some reason loves to drink on the plane, and even though we had a short flight to Las Vegas for a short layover, he insisted on getting a drink, that we both had to chug immediately.

 One thing I insisted on doing at the Las Vegas airport was play a slot machine. And even though we were almost late to board our plane, I think it was worth it!

We landed in Indianapolis and went off to find a hotel. Matt thought it would be fun and spontaneous to not pre-book a room, and little did we know that there was some sort of racing event and high school sports team competitions going on, so a lot of the hotels were booked or only had one or two rooms available. We thankfully found one with not much trouble, checked in and headed out to find somewhere to eat. We drove around our old neighborhood, and was amazed at how much it’s changed and hadn’t changed all at the same time. Since we were both pretty hungry instead of driving aimlessly around we of course just settled for something we both love. Sushi.

In hindsight and driving around later there were probably so many better choices and new places we could have checked out, but you know when you’re hungry and everything and nothing sounds good at the same time? That’s where we were at. Sushi usually doesn’t disappoint.

It wasn’t bad, but it definitely wasn’t the best sushi I have ever had.

After dinner we had plans to meet up with one of our friends who recently opened up his own brewery called Big Lug Canteen. He is the head brewer, so we were really excited to taste the beers and catch up. Since the last time we had seen them, the couple had gotten married and had a kid, so it had been quite awhile.

The beer and food were both amazing and so was the company. It was so great to hang out with them and catch up. We ended up talking for over 3 hours before we all knew it! They had to get home to their son and Matt and I were both exhausted from the trip and were ready to settle in for the night.

Even when I’m on vacation or on a trip I always seem to get up early. It doesn’t matter the time zone, time difference, the type of trip. I get up early. While Matt continued to snore away, I decided to find the hotel gym. I’m following a new program, but didn’t have a portable DVD player so I just kind of winged it. One thing I love about having completed a few programs, I have favorite moves that I know work me. So even though this hotel gym only had a few treadmills and minimal free weights. I made it work.

And was a pretty sweaty mess by the end of it!

I headed back to the room where Matt had finally woken up. Our hotel actually had a decent continental breakfast, but we wanted to explore some more, so we headed to a really fun looking restaurant that served more local fresh ingredients called The Garden Table.

I had looked at the menu before we went and was pretty set on getting an Acai Bowl, but upon walking in and chatting with the friendly staff, they highly recommended the two salmon specials they had. One was a smoked salmon on house made sprouted bread with cream cheese and the other was a poke salmon with thai inspired kimchi and bok choy. Both sounded delicious and the couple sitting next to us actually had ordered both and raved about them. A staff member was taking his break and had ordered the smoked salmon and showed me how it was plated, so I decided to branch out and try that.

I was a bit nervous, I usually don’t do these savory type of breakfasts, but oh my gosh it did not disappoint.

The salmon was ah-mazing. Absolutely cooked and seasoned to perfection.

I was beyond happy with my choice and so glad I decided to branch out.

Before leaving town I wanted to stop by a local doggy bakery that I use to go to quite often for cookies and treats for Delilah. I swear these treats look good enough to eat myself!

After we grabbed the dogs some doggy donuts we headed down to the wedding fun!

And it was sooo much fun. It was nice to catch up with old friends at the reception and then head to Louis’ parents for a cook out and campfire. Even though it was a busy short trip, we wouldn’t have missed it for the world and had an amazing time celebrating with our friends.

return of the oats

I wish I could say this was my breakfast. Sadly it was not.

Matt has said he has been craving oatmeal lately so I figured, well I like to make oatmeal. I like to make oatmeal pretty. And I like to feed my babes!

Win-Win situation if you ask me.

I for once however was not feeling oatmeal, so I had a pretty boring breakfast of pb&j that did not get photographed.

I think Matt deserved breakfast being made for him also, on the count of he got me these beautiful lovlies.


I told him he “owed” me flowers for me having a great week of school.

I did very well on all three of my tests.

Yes, you heard me. Three tests.

We have a quiz, practical and test every week, and this week we got Friday off so everything was shoved up a day, so the mere fact that I was able to learn and retain that much information in that short of time, was anything less of a miracle.  I was pretty proud of myself. And I love having fresh flowers in the house, so I told him I wanted some, but somehow…he kept forgetting.

He had then went to a co-workers party and I had went to bed before he got home. I woke up to the beauty’s the next morning.

it was hard not to want to eat these. oh wait. i'm pretty sure some of them did. that's the fun thing about making meals for others. i lick the pots and spoons clean in the process.

I am really hating my lack of good light source. I can not find a good place to take my pictures. I end up standing outside freezing, but even in the mornings, I don’t get good sunlight. Hate it.

these were chocolate protein oats topped with cville cluster granola, banana, and peanut butter. my finger may or may not have slipped into the peanut butter jar. what is it about peanut butter?

Not only did I eat the oats out of the pan, dip my finger in the peanut butter jar, but I’m also pretty sure I ate some of the banana. Ok, did I even need breakfast after all that?

Of course I did.

Not going to lie. I was a little oat envious.

We went to visit Matt’s parents this weekend for his mom’s birthday and let’s just say I had a major fail this weekend.

We were going to go out to dinner, I was all set mentally I thought for it, and just couldn’t do it. Had a total break down in the car.

Thankfully they are very understanding and we had dinner at home, but I was so mad at myself for not being able to challenge myself.

This week my nutritionist made me get some “fatty” meals to prepare for dinner.

By fatty I just mean higher fat content than I am comfortable with.

I got some. So we will see how it goes. I need to do this.

I really feel like I am at a hump in my recovery. I’ve made it so far and just can’t break free now.

To eat what I want, when I want, how much I want.

So I will update you guys on how this week goes!

I love the holiday’s and all but our weather has been so poopy lately! Do you enjoy the colder weather? Do the holiday’s make it more tolerable for you?

I don’t know what it is, but something about it being the holiday’s make the bad weather more acceptable. Now come January and February when there are no holiday’s, well then I will be complaining a lot more! Rain rain go away! (It is Arizona, we don’t get the snow)

Are you ready for Christmas? Did you get your shopping done?

I will gladly say I think I am done! Although I keep seeing things here and there that I want to buy Matt.

That kid will be spoiled this year!

weekend with the rents

If you read my last post, I mentioned heading up to Payson, AZ this weekend.  We we’re helping Matt’s parents move into their new house.  Well, I don’t know how much “helping” we really did, but it is always so great to see them.  Matt’s mom is amazing and let’s me vent about all my current frustrations, never passing judgement, and that is just so great to have.

They also have a beautiful backyard.  You want to talk about privacy, nothing better than beautiful tree’s being your back fence.  I am so jealous of all their green and trees.  When we were driving to the store coming back the view of the mountains is just gorgeous.  Not nearly as brown as we’re use to in Phoenix.

i can't help that i have the cutest dog ever that has gotten so good at posing for pictures.

They only brought up some necessities as Matt’s dad is not moving until a later date, but his mom had to move up sooner due to her starting her new job on Monday.

It was a very short visit as they had to leave pretty early the next morning to return their rental van, but I had a really good time visiting with them.  And again, the town is just gorgeous, so it is always nice to get up there.  So glad that they are moving closer!

more challenges ahead

Hello my loves.

I hope everyone is having a good week. I really feel like time has been flying lately!

I however am very excited for this weekend as we are going to Payson to help Matt’s parents move.  Matt’s parents moved to Arizona from Indiana shortly after we did.  Matt’s mom had gotten a job out here and even though they were still 4 hours away it was soooo much better than 2000 miles away!  But now they are moving to Payson for a new job which is actually only about a little over a hour away from us so now they will be even closer!! And the town is just gorgeous and actually gets 4 seasons!  Lucky them!


But going on a trip also means I have to fight my ED and the fact that I may need to go out to eat and eat foods outside of my comfort zone.  I’ve been kind of getting use to eating only my safe foods at home, so I thought this would actually be really good for me.  My nutritionist is really pushing me to fight back because I think she noticed my trend as well.  I am still gaining which is good, but either not as fast as she wants or not by the foods she wants.  Just the whole gaining weight has really been doing a number on me emotionally.  I’m just not comfortable in my body right now.

But I try to stay positive and know that this is all for the best, and my health is the most important thing.  I just want to get to that mentally healthy part too.

On to some eats.  I always get excited when I get to have one of these.

And on to the new challenges.  I kind of got in trouble for not eating enough fats.  My nutritionist basically told me I was eating too healthy and eating “eating disordered food”.  That’s one hard thing about my recovery is, I am a healthy eater, but now it’s viewed as “eating disordered” because I am eating too healthy.  Well if that is the case a lot of people have eating disorders.  Granted, and especially after joining the food blog community, I do think a lot of people hide some of their eating habits behind the excuse of leading a “clean healthy life” when I really think weight loss and control is part of a deeper picture.  But that’s a can of worms I really don’t want to open.

But I decided to challenge myself on eating more fats and scaring my ED.  Matt and I use to frequent Jimmy Johns often, on the vegetarian sub comes mayo and avocado spread.  Now during my ED days, well earlier ones, if I even let myself go to Jimmy Johns, I would get my sandwich as a lettuce wrap, no mayo and light on the avocado spread.  Seriously?  Why even get the sandwich.  So today, I told myself I was getting my normal order. Bread, mayo, avocado spread. And you know what? It was delicious.

yea matt and i like to cheers with our sandwiches, but we were trying to make this as fun as possible for me.

I felt pretty accomplished because I ate the whole sandwich! But I’m not going to lie, I kind of had a freak out afterwards.  I just felt so bloated and let myself think about what I just ate.  I had a good cry, but thankfully I had this guy there to talk some sense into me.

thank god for matt sometimes. he's been a real trooper in letting me vent/cry/yell. and he's always there when i need a hug.

So today I feel like was a accomplishment for me.  Although I did have an episode after lunch the fact that I made the effort to scare my ED and to take a step getting back to a normal eating experience.  I’m beginning to learn these experiences aren’t about the actual food, it’s about scaring and challenging my ED.  And trust me, he was talking loud today.  We’ll see how talkative he is this weekend.  I have a feeling he is going to be very chatty.

september round up

Oh my gosh guys can you believe September is already gone? It seriously flew by so quickly.

So much has happened with me over the last month.  I feel like I have been making so much progress with my eating disorder and am starting to feel so much better!  (Here’s how pathetically excited I get over my progress, Matt and I went to Petsmart the other day to get dog food and I was actually able to carry the 17lb bag!  For me that was a huge accomplishment, because I had gotten so thin and lost so much muscle that I use to have to physically lift my legs to get into a car.  So the fact that I can lift a 17lb bag, and not fall over, was a huge accomplishment.  Matt and I were both pretty excited.) Not that it is desirable to be under weight, but I am kind of dreading when I can’t “eat whatever I want, whenever I want”.  After restricting for about a year you don’t know how nice it is to actually be able to enjoy food again.  However I know some of these eating habits I will have to watch because I do not want a new problem of over eating.

Another recent love obsession is Cacao Bliss Chocolate Coconut Butter.


This stuff is seriously amazing and I think for a week I had it everyday.

I am not even a huge coconut person, but there is just something about this stuff I can’t get enough of!

First thing I am so excited about it Halloween! But I think that is a given with a lot of people.

I love fall. I love Halloween. I just love holidays!


Halloween has always been a favorite though. Something about dressing up is just always fun.  Regardless of how old you are! I guess it gives you an excuse to be a kid again!

And speaking of bikes, that is another thing I am so excited for October. Our weather is finally cooling down.  Which means I can ride my bike more! (Again another huge accomplishment that I can finally even ride my bike again)

I love riding my bike and if I can ride it instead of driving I will.

I don’t however like when cars don’t pay attention and hit me though. Which happens a lot around here. I swear Arizona houses the worst drivers of the world. It is one of the main things I hate about it here, people can not drive. And they don’t care.  People are just kind of overall mean here. One of the reasons I want to move again. Just not my vibe. I really feel like I am too nice to be living here.

So those are some of my recent favorites. I do however love this time of the year in Arizona.  It  reminds me why we moved here. No snow. 70 degree winters. Can’t beat it.  I’ll need to remember this come next summer when its 115 degrees again.

September is upon us and pumpkin is popping up everywhere.

But I refuse, REFUSE I say to make any warm pumpkin in any way until my temperatures are below 100 degrees.

Yes your pumpkin oats looks absolutely delicious. Yes your pumpkin spiced coffee tempts me with its frothy creamy lather. And trust me those pumpkin pancakes topped with warm maple syrup make my mouth water.  But no pumpkin, I will not fall to you just yet. (please ignore my previous post of my pumpkin hummus quesadilla. it was a moment of weakness.)

Fall is truly the one thing I miss about living in Indiana.  We had beautiful falls there.  The changing of the leaves. The bright colors of the trees. The crunch of the fallen leaves under your feet.  The slight cool breeze that requires only a small hoodie.


But alas I live in hot hot hot Arizona now where the season fall does not exist. So pumpkin you will just have to wait.

While everyone else I’m sure has enjoyed their warm pumpkin oats and gooey pumpkin pancakes for breakfast, I enjoyed something else. Something cool and refreshing and honestly quite fun!

I decided to make Ashley’s at the edible perspective’s Banana Split Oats.

I really apologize for the pictures. I was extremely lazy, I’m not even going to lie. Please check out Ashley’s if you want better ones because hers are of course amazing.

She actually makes hers overnight oats, but I made mine hot oats, either way I’m sure is delicious. In my oat mix was:

1/4 cup steel cut oats

1 scoop Tempt Vanilla Spice Protein

1 tbsp vanilla

dash of cinnamon

After my oats had cooked I started to assemble!

Step 1: Place banana in bowl. Easy enough. So I thought.

oops. banana fail. he broke.

Step 2: Pour oats over banana.

mmm just look at those oats.

Step 3: Pour banana/cherry mixture over oats.

so i've never attempted the whole make ice cream out of a frozen banana so i was really excited. i used a frozen banana and frozen cherries and it still kind of just turned into a puree? not sure if i did something wrong, but it was still tasty! duh.

Step 4: Add what ever banana split toppings you want!

i added a sprinkle of whole foods granola and an extra cherry on top! divine.

As are all her recipes, this was very tasty. I’m pretty much obsessed with bananas. And oats. So…this as really going to be a win win for me to begin with. I wasn’t that worried. And again. It was from Ashley. She hasn’t let me down yet.

So while my oats were cooking I was busy doing something else.


If you didn’t read my previous post I had one delivered about 2 weeks ago and it was stolen off my patio! I made sure to stalk the FedEx guy this time around.

And it came just in time. Yesterday I went to make a small pot of coffee in my french press and came back to a huge mess.

a nice big crack 🙁 i haven't even had this for that long but of course i didn't save my receipt. -le sigh-

But look at my beautiful new Keurig in all it’s glory. I spent about 10 minutes just trying to get the thing out of the box! Thankfully I was the only one home and the pup was the only one who got to witness my struggle and fight with the box. The box almost won. But alas.

I feel kind of bad for my coffee pot, the Keurig can be kind of a scary neighbor.

i thought i was suppose to get a sample pack of the cups, but i didn't. i dont know if it was because i had to reorder or what, but i was sad. coffee pot, you got one more day!

So that’s that. I’m on a pumpkin strike. But with all the tasty posts going up, I don’t know how long I will last. I still have half a case of pumpkin laying around after all. And sometimes when I walk past it, I feel it’s stare.

oh case of pumpkin. you waited all summer for me. but i'm just not ready. call it fear of commitment. but don't worry. i will come around soon, i only hope you are still waiting for me. thank you for understanding, but i just can not truly appreciate your warm, filling, savory taste until i am no longer sweating while i prepare meals in the kitchen. thank you for understanding, but it really is me not you.
