Oh my gosh. So glad it’s the end of the week! I have my final in Microbiology today and we all know how fun finals are.

Woo-Hoo. Can you hear the excitement sarcasm.

But at least it’s over and my next two classes should be fun.

It’s no secret when it comes to my cooking and baking there is no method to my madness.

I can’t follow a recipe for the life of me.

I measure in dashes/sprinkles/spills/squirts and it’s always to taste.

This is why I love and truly belong to the #strangebutgood movement.

Because when you have a cooking technique like mine, nothing normal will typically result.

I am perfectly ok with that, and thankfully I know most of you are too.

We are all out there, but the lovely Laura gives us a little nook to gather in. And I love it.

Sprint 2 the Table

My contribution this week is really nothing new to the Accidently Delish world and the concept isn’t that new either.

It’s dessert hummus.

Yes I know there are tons of recipes out there for sweet hummus, I even have one posted for my base banana bread hummus.

Well how about my most recent dessert hummus concoction.

I can’t even give you a recipe for this, because I honestly threw so much into the mixer, tasted, added more randomness, tasted, and when I was finally satisfied. I stopped.

I shall call this Everything But The Kitchen Sink Dessert Hummus.

Let me try and give you an idea of all that went into it.

Garbanzo beans (given)

Peanut Flour

Unsweetened Cocoa

Plant Fusion Chocolate Protein Powder

Maple Syrup

Vanilla Extract

Random spices including: Cinnamon, Ginger, Pumpkin Pie Spice

And I think I lost track after that.

More might have been added, you never know.

If you’re looking for ratios/measurements/proportions sorry I can’t give you that.

But I can tell you, it turned out amazing.

I’m sure I am not the only one who is super excited for the week to be over. I feel like this week kind of dragged on. Usually my weeks drag on or they fly by. Never a happy medium. But such is life right?

Well I have been promising this for a very long time and finally got my butt in gear!

I think we all know I am crazy addicted to sweet.

I mean my consumption of jelly is ridiculous. And fruit has to be my most favorite thing in the world. Any fruit. I’m not picky.

Ok I’m not a huge honeydew fan, but any other melon you can throw my way!

So when I discovered sweet dessert hummus’? Um. Jackpot. I was in love.

And since I eat so many banana’s I could turn into one when I saw a recipe for banana bread hummus. Cha-Ching. It was quickly made. Consumed. Made again.

Since I’ve started making it though, I think I’ve definitely simplified it and catered it to my own tastes, to where it’s not really the original recipe I made.

But I will say I love experimenting with it.

Remember when I made Chocolate Banana Bread Hummus? Oh my that was amazing.

But I thought I would share with you my staple go to recipe for when I make it. It can easily be tweaked to your liking, but here is what I do.

Banana Bread Hummus

Ingredients:

1 15oz can chickpeas (drained and rinsed)

1 medium – large size ripe banana

1 tbsp vanilla

1/2 tsp almond extract (key ingredient if you ask me)

approx 1/2 tbsp cinnamon (more or less to your taste)

approx 1/2 tbsp raw agave (or maple syrup or sweetener of your choice)

Directions:

Pour chickpeas into food processor.

Add banana.

Sprinkle cinnamon.

Add vanilla and almond extract.

Little drizzle drizzle of agave (or your sweetener of choice)

Blend until hummus reaches your desired consistency.

(I like mine really creamy)

And you’re done!

Bowl it. Dip your finger in it. Spoon it. Put it on a cracker. Demolish it.

Then repeat.

This stuff does not last long in my house. I love it.

Maybe too much.

But then again, I am turning yellow and starting to peel.

Just a hint. This goes great on english muffins with no surprise. Jelly.

Trader Joes Fig Butter (♥) and Chobani greek yogurt on one half. Blueberry jam and banana bread hummus on the other.

Sweet and delicious.

My foodie pen pal this month was the lovely lady Madeline at Food Fitness and Family

I have all my packages sent to Matt’s work because we just moved and have had some bad experiences with not receiving packages,  I actually had to stop by his office for something the day her package arrived. I didn’t even wait until I got home to open the package I was so excited!

I can tell you what my eyes zoomed to first. And Matt’s. And his co-workers.

Ok where do I begin?

PB2, Wasa Crispbread (I have been  wanting to try these for so long!), Bear Naked Soft-Baked Cookies (yum), Yogi Super Antioxidant Tea, Luna Bar, Larabar, ProBar (PB&J!), Peeps!!, Gummy Bears! (Matt stole these!!) and a cute little note!!

So it was dinner time and while I was preparing dinner, I couldn’t help but dig into a few of my goodies. I mean seriously. How can you not? This quickly happened.

I quickly pulled out my banana bread hummus and topped it on one of the Wasa Crispbread.

Delish.

The Crispbread was a lot harder than I thought, but I really liked the flavor. Great snacking cracker for sure, and I’m sure I will find multiple other things to dip it in! (my pumpkin butter stash perhaps???)

I’ve also been on a huge tea kick, so I was super excited to try this tea. I typically tend to buy the spicy teas but I thought this would be great for before bed.

This tea was very good and I think it will be a part of my nightly routine!

A bunch of the other goodies have been nibbled on. Matt loves the granola cookies. But who doesn’t love cookies? I mean really.

Sorry again for being so MIA lately. I really feel like I fail you and I actually really miss blogging.  But with school and all the other drama going on right now, I am finding it hard to have the motivation to blog.  Especially when I really don’t have much to show you!  Meals have been kind of blah, because honestly, I have been kind of blah. But let me tell you this. I have something very very exciting to share with you very soon. Please check back. You won’t regret it (giveaway maybe?) (and it’s a good one, I can guarantee that)

But hello Wednesday, I missed What I Ate Wednesday last week due to not having internet and just could not have that happen again. It was weird how odd it felt not having a post ready, but it just simply couldn’t happen. So since Jenn is going green for March, and it was just St. Patrick’s Day, let’s do a little recap.

Breakfasts have kind of been looking like this.

english muffins topped with random concoctions.

Lately I have been doing english muffins with toppings including nut butters, Chobani greek yogurt, my banana bread hummus and of course my variety of jams. Because let’s be real, I have a lot of them.

When I’m kind of rushed in the morning it just seems to work for me.

I did however have an extra special St. Patrick’s Day Chobani breakfast.

It was a green morning! I just had to do it! Totally the shirt I wore that night too. Love it.

Lunch was a random bowl of cereal. I haven’t had cereal in forever. I was just craving it.

A more natural golden grahams with less sugar? Um, yes please.

I had actually been craving golden grahams for awhile, so when I saw Mom’s Best Naturals offered this (and it was on sale) it was a no brainer. And it was pretty tasty.

Good choice.

For dinner we did what most normal people do on St. Patrick’s Day.

We got sushi.

I had been craving it. And I know not very Irish. Wait. Not Irish at all.

Since we just moved we wanted to try out a new place by us.
We chose Pearl Sushi.

it was a bit windy, but we still decided to sit at the outside bar.

Insert bad blogger alert. Only my appetizer got photographed. We were so hungry by the time the rest of the food came it just didn’t happen!

A green sake bomb was consumed as well!

this seaweed salad was amazing.

I’ve really come to love seaweed salads. Maybe seaweed in general. I don’t know. Getting my iodine in though!

Matt said he wasn’t too impressed with the sushi (we are sushi snobs) but I thought it was decent. Service could have been better, so I don’t know if we will go back. Lucky for us there are plenty more to choose from!

After dinner, we had plans to go see Flogging Molly. I had bought the tickets for Matt for Christmas. I have had a very hard emotional week, not only with school and my grandma, but with my body as well.  I have been doing an amazing job lately pushing myself with food. Making myself eat more even if I don’t want it, making myself eat new things and it really took a toll on me physically and mentally.  When I feel the physical progress it automatically triggers my mental issues.  ED still obviously plays a huge part in my life because you would think progress (weight gain) = good, but that scares my ED.  I’m getting through it though.

So instead of the show we decided to actually meet up with a few friends at an Irish Pub (Our favorite actually. It’s where we went after we got engaged!). I figured being around people, especially people I know care about me, would be better for me. And it was. And Matt and I ended up having a great night out together!  Flogging Molly will always be here next year!

This is my second month doing it, and let me tell you I’ve been having a great time.

(Even had a scare this month that my pen pal didn’t receive her package. So glad you got it Meg!!)

Here is a little sneak at what I sent Meg.

udi's gluten free chocolate chip cookies, oraganic oven baked cheese crackers, two types of bars (i think one clif kids and one other one i don't remember) swedish fish (which i read she loved), organic fruit strips, and a hello kitty valentines chocolate box. sorry. i love hello kitty. and i love valentines day.

And of course I included the recipe for my banana bread hummus. Because seriously. That stuff is crack to me.

Yea remember crafty nerd? That’s me. You should have seen the outside packaging of the box!

But on to the goodies I got. Because let’s be honest, that’s what I’m most excited about!

Lauren from Hugs Kisses N Dishes sent me some wonderful wonderful things.

In my package was Trader Joe’s (she won me at Trader Joe’s) creamy salted peanut butter (win)

St. Dalfour Cranberry/Blueberry jam (I think the jar speaks for itself on how much I liked it)

Ok first of all. Seriously this speaks for itself.

We all know I have a sweet tooth. It’s no secret. And I love jams!! I have had this brand before, I had gotten their pear preserves, which is amazing by the way, but I had not tried this flavor.  Again, I think the jar speaks for itself. It’s amazing. And I couldn’t wait to use it.

I was trying to not open anything before I took pictures. This just wasn’t possible with the jam.

I am pretty stocked on peanut butter so I haven’t opened that jar yet, but trust me. It will not go to waste. Not in my house.

And I am super excited to try the jalapeno hot sauce! I love spicy. I love hot. And Lauren said it’s a hit in her house!

And seriously. Mango? Who doesn’t love it. I know I do.

Ok. So I did a good job on not opening bags before I took pictures.

Then this happened in the middle of the shoot.

And it was all downhill from there.

She even put in her note  how addicting they were.

She was not lying. I seriously think I ate half the bag. They are that good.

I had to force myself to close the bag.

So thank you Lauren. I have loved everything so far!!

I hope everyone is having a great weekend!  Mine has been extremely great! Good news all around!  One thing I can not make public yet, but as soon as I can I will be sure to fill you in! It is super exciting and I smile just thinking about it!

But what I can share with you is Matt and I found a new apartment!!

I know it may not seem like a huge deal, but we have been looking for sometime now and nothing just seemed to fit.  Unfortunately, our budget is way lower than it was, due to me not working and going back to school, and the area we were looking is the “fancier side of town” if you will.  But we are moving in order to be closer to Matt’s work and get me a bit closer to school, because gas prices are just killing us.  It doesn’t help that Matt drives a truck!  So we kind of needed to look in that area.  Well we finally found a great place, tons of space and the price was so much lower than everything else we had been looking at.  Also, one of Matt’s co-workers lives there, and she has been happy with the place, so that is a bit re-assuring as well.

I’m kind of bummed to be going back to the apartment living though.  We definitely got spoiled with our townhouse and our amazing landlords. But again, these times just call for us to do things we don’t really want to do, and it won’t be forever and I think this place will be nice for the time being.  I love moving and making new spaces my own! So I am excited for that at least!

The day of apartment hunting was a long one! I had to volunteer that morning at the animal clinic and  was going to meet Matt at the apartment right after.

I knew my morning was going to be long, so I did what any normal person does.

Make the most random breakfast ever.

english muffin with the most random combination toppings ever.

I’m not indecisive or anything.  Sometimes when I can’t decide what sounds good, or make up my mind on what I want, it all ends up on my plate.

This started with a Rudi’s english muffin half topped with Trader Joe’s fig butter, topped with Chobani blueberry greek yogurt.

The other half ended up being topped with cranberry/blueberry preserves that my foodie pen pal got me (amazing) topped with my banana bread hummus.

Ok this batch of banana bread hummus was one of the best I have made. I sort of started “winging” it and found a few great combinations.

This batch was:

-1 large ripe banana

-1 – 15oz can chickpeas (rinsed)

– approx 1 tbsp vanilla extract

– approx 1 tsp almond extract

– 1 squirt maple syrup (yes I measure in squirts, totally acceptable)

– sprinkle or two of cinnamon (again, totally acceptable form of measurement)

Blend, blend, blend.

This batch was seriously amazing. The almond really adds to the taste, just have to be careful not to overdo it because it can become over-powering very quickly.

So after signing the paperwork for our new place (!!!), Matt and I did a quick lunch at Subway. I was going to take a picture, but the guy basically demolish my sub and it was just not as photogenic. But it was tasty. Sometimes Subway just hits the spot for me. Today was one of those days!

Matt and I then headed to Total Wine and More (may or may not have done some free wine tasting) and picked up a build your own 6-pack for celebration.

So the couch. My love. Some good beer. And relaxation that our house hunt is over is where I’m headed tonight.

Today has been good. Long. But good.

wiaw #27 – you made chocolate what?

I seriously am so excited about this.

I thought why not a perfect time, but What I Ate Wednesday to share these wonderful new creations with you, because honestly, it’s what I’ve been eating all week!

Before I share some of my eats though, let’s all head over to the wonderful Jenn’s at PeasandCrayons to thank her for hosting this wonderful event.

First, was a very very tasty breakfast.  Maybe not extremely special, but I haven’t made myself a nice bowl of oatmeal in awhile. So instead of my quick sandwiches I usually have to make because of school, this was a very nice change.

chocolate protein oats topped with banana, fresh strawberries and a peanut butter drizzle.

Kind of a simple classic breakfast, but it was so delicious and such a welcome change.

it's been awhile since i've hard fresh berries in the house so this was a nice topper. and you can't beat peanut butter. i mean seriously.

Blueberries were also suppose to make it to this bowl, but they made it straight into my mouth instead.

just a very nice return of the oats. they were so tasty.

Am I the only one who licks their bowls clean after oatmeal? I never want my bowl to be empty. Why can’t I have a magic bowl of oatmeal that never ends? That would be nice.

And now for my creation that I am so proud of. And so happy I made!

chocolate banana hummus

Yea. I went there.

I know chocolate hummus isn’t completely new, but I kind if just whipped this together on a whim without really following a recipe so I was extremely happy with how delicious it turned out. And trust me. This stuff is delicious. And addicting.

Chocolate Banana Hummus

Ingredients:

– 1 – 15oz can chickpeas

– 1/2 – 1 banana (depending on size of banana)

– 2 tbsp unsweetened cocoa

– 1 tbsp vanilla extract

– 1/2 tbsp cinnamon

– 1 tbsp agave or maple syrup

Directions:

Place all ingredients in a food processor and blend until desired consistency, scraping down sides as needed.

it gets even better once it has been in the fridge for a few hours!

This stuff has seriously been on almost everything I’ve eaten. Sandwiches. With PB&J. Straight onto my finger. You name it.

Pretty amazing huh? But guess what?

Ok getting a bit long? I know, but trust me. It’s worth it.

The lovely Heather posted this the other day and I thought oh.my.goodness. I have to make that.

Well something like that. I’m not a huge egg person, so mine had to be tweaked. Of course.

I have been in such food ruts lately I thought this would be a great chance to actually start branching out again.

Almost didn’t do it.

So glad I did.

Dessert Banana Bread Hummus Pizza

Serves 1

Ingredients

– 1 whole wheat tortilla

– 1 banana

– 2 tbsp banana bread hummus

Optional Toppings:

(what I used)

-drizzle of maple syrup

-sprinkle of Sun Warrior chocolate protein powder

-sprinkle of cinnamon

The possibility for toppings is endless though. I really wanted to do a peanut butter drizzle, but my tortilla heated up way quicker that I thought it would and I was super hungry, so I didn’t take the time.

Additional Topping Possibilities:

chocolate chips, shredded coconut, peanut butter, fruit, whatever your little sweet tooth desires.

Directions:

– Turn broiler on and heat tortilla for 3-5 minutes

– Take tortilla out of oven and top with banana bread hummus, banana and other desired toppings

– Place back under broiler to heat for an additional 3-5 minutes

– Take out of oven and drizzle with remaining toppings of choice

Enjoy.

It’s that simple. I promise you. And it’s soooo tasty.

I seriously have so many ideas for what I can put on this next, but the maple syrup really hit the spot today.

Maybe next time use my chocolate banana hummus? That I think would be ah-mazing.

I am still on a huge sweet kick, so even though it was lunch, it really hit the spot.

I have been super busy with school, no surprise there.  It is our final week and not only that, but the two chapters were doing in addition are proving to be incredibly challenging.  Needless to say, I am really looking forward to this week being over and done with!

But I actually have a lot to share with you today. Lot’s of delish things to share!

(So right as I’m starting to write this, I’m finally going through my pictures and realized this first batch came out horrible. So I apologize ahead of time. Dinner was later than normal and I guess I didn’t realize the lack of lighting. I promise the dish was way more tasty than it looks. So use your imagination!)

Does anyone else have too fun of a time cutting a spaghetti squash? I love stabbing my knife into it. I swear I don’t have a serial killer instinct in me. Maybe I watch too much Dexter. 😉

i'm pretty proud of my muscles and being able to cut this bad boy. ok so i cheated a stuck him in the microwave for a few minutes, but matt wasn't home and i had to do it on my own!

So after the stabbing, some seasonings were added.  I think on this one I did a simple sprinkling of garlic powder, onion powder, a bit of chili powder and I think I added a bit of cumin for a little kick. I’m weird. And random. I know. It tasted good though so that’s all that matters to me!

I then topped my cooked spaghetti squash with one of the most delicious sauces I have had in some time.

ok guys seriously. try this stuff.

I know you’re all super shocked it’s a Trader Joe’s product right?  I mean, it’s not like I’m obsessed with that place or anything.

All put together and you get this beautiful and tasty dish.

again i apologize for the not so great picture, but let me tell you. this sauce. spaghetti squash. delish!

The sauce just has such a nice blend of spices and the turkey is spiced really nice too.  It’s not too meaty, but meaty enough for me.

I had a side of veggie’s along with this. It was a simple, nice meal.

i'm pretty sure another mound of spaghetti squash and sauce was added to this bowl after pictures were taken. it was so good.

This next thing I am so excited to share with you guys!

I know dessert hummus’ are nothing new.  Definitely not new to me.  Banana bread hummus is probably by far one of my favorite things. I make it all the time.

I also always try to switch it up a bit. I don’t follow a true recipe anymore, it has kind of turned into a throw what I feel like kind of thing. Banana and chickpeas are always my base, but I’ll play with it from there.  I’ve done some where I add cocoa, chocolate protein powder, nut butters, pumpkin, you name it, it’s probably made it in there.

But I made a batch this morning, and had a real random idea. And boy. Did it turn out to be a good one.

Banana-Fig Hummus

In the mix:

1 medium size banana

1 can chickpeas

1 tbsp vanilla

1/2 tbsp almond extract (my hand slipped and a little more went it and it was great!)

1 tbsp Trader Joe’s fig butter (this makes the dip!)

1/2 tbsp cinnamon

Directions:

Place everything in food processor and blend till smooth, scraping edges down as needed.

i can't even describe how much of a difference the fig butter made

So I may be obsessed with the fig butter to begin with, but seriously one of the best batches I have made in awhile. My finger wiped the food processor clean!

Oh I can not wait to use this on my breakfast tomorrow!!

Another thing I wanted to share with you all is kind of random. Go figure huh.

If you follow my blog I always say I put the most random things together to make a meal. It’s kind of just everything I have a taste for and if they don’t necessarily go together, well half the time I don’t care. As long as it tastes good to me, that’s all I’m concerned about.

Doesn’t seem all that random? Let me tell you everything that really went into this.

under that cottage cheese is some blueberry jam, on top of that cottage cheese is some cinnamon. in that yogurt is cookies and cream protein powder and cinnamon.

Random. Weird. Super tasty (to me at least)

Goodness. Even me looking at this, I think I’m weird.
