Bad things happen sometimes right?

I truly feel it’s how you look at those bad things that define you. If something bad happens do you play the “whoa is me card”  “everyone is out to get me” “nothing goes my way”

Or do you say “well that stinks, but how can I make the best of this?”

I use to be number 1, but as of lately, I have learned how to find the positive in almost any situation.

Wow, seems like I’m going into a pretty deep thought right?

Really, the lemons that were recently handed to me, wasn’t that bad of a lemon.

But I’m a bit dramatic, so I like leading you guys on 😉

I was given the awesome opportunity to try Nikki’s Coconut Butter’s.

I had heard amazing things, and let’s be real, I am a bit coconut butter obsessed.

I seriously am not kidding you when I would pray and hope each day that Matt brought me home a special package.

Day after day I waited, and one glorious day it happened.

However, it didn’t happen as I had planned.

When he walked in the door instead of “babe you got a package today” I got a “babe, I’m sorry but you got a package today…and it was broken.”

-insert heart breaking-

He handed me a plastic bag of two cracked, oil soaked jars.

I thought I might be able to salvage my beloved coconut butters, but they were dry as cookie crumbles.

Now, Nikki has graciously offered to send me replacements, but I couldn’t bear the thought of wasting the coconut butter, even though it was dry as a bone.

So these were my lemons. Dried coconut butter.

What’s a girl to do?

Make home made banana coconut butter of course!

Ingredients are pretty dang simple too.

1 ripe banana (I started with just a half, but ended up using the whole thing) and 2 tablespoons of  chocolate hazelnut coconut butter crumbles.

Blend Blend Blend.

You end up with a creamy banana chocolate coconut butter amazing-ness.

See. Life gave me some lemons, but I made some pretty tasty lemonade with it!

I have some fun stuff to share with you today.

If you haven’t already heard of Lindsay’s Foodie Pen Pal program, you probably should.

The Lean Green Bean

It’s pretty neat. And pretty fun. And you usually end up with some pretty sweet treats.

I have had a great experience participating in it!

Here’s a little bit of a low down of what the program is.

-On the 5th of the month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treatsThe spending limit is $15The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you can choose to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.

This month the lovely Xenia (don’t you just love that name) was who was sending to me.

She did not disappoint.

She had asked if I had a Trader Joe’s near me and even though I do I told her I was a Trader Joe’s addict.

(I mean seriously. I think I did a post for their ketchup. I’m obsessed)

So I told her to feel free to send me some of her favorite goodies from there because there were still 8932748324 things I wanted to try.

♥ ♥ ♥

Here is an overview of what she got me.

The girl hooked me up.

Let’s start with the Trader Joe’s goodies: Honey Apple Butter (omg one of my favorites and I’m out! perfect.), Banana Chips, Chili Spiced Mango, Roasted Seaweed Snack, and Cinnamon and Sugar Pita Chips.

Other goodies: Coconut Pudding, Tajin Cajun Seasoning, Korean Kim Chee seasoning.

I love that she gave me a mix of flavors.

So of course per usual, I wanted to rip open every single package and taste them. You all will be proud of me. I restrained. Mainly because I was about to start cooking dinner.
So I decided to incorporate one of my goodies into my meal.

Ok, I seriously love that is says “this is not candy” on the lid.

(please ignore my thumb wound)

I added this stuff to my roasted broccoli I was making. I love spice. This was a nice kick. I can’t wait to add it to other things.

(i know you’re looking at my thumb wound because i told you not to)

The next thing I was intrigued to try was the Chili Spiced Mango.

I like Chili. I like Spice. I like Mango.

These were interesting. I liked them. Didn’t love them.

Who did love them?


So still a win in my book because that kid has been devouring them. It’s such an interesting taste I still find myself nibbling on them.

I wish I had a picture of me devouring the banana chips. Sadly those were the first things gone.

I love banana’s. I love banana chips. They were yummy.

Another very yummy thing were the Pita Chips.

Oh my. I was soooo pleasantly surprised with these.

And I made an amazing combination.

Cinnamon Sugar pita chips dipped in PB Crave Cookie Nookie.

The only things I haven’t tried yet is the coconut pudding and the Kim Chee seasoning. However, I have plans for the Kim Chee seasoning! I bought special noodles and stir fry veggies just for it and just have to not be lazy and make it. I am excited for it though!!

So overall, I scored some great things this time around, thank you so much Xenia! You made my (and Matt’s) belly very happy!!

wiaw #44 – no jar left behind

Hello my lovlies and happy Wednesday!

I swear time does not exist, I feel it goes by so quickly sometimes.

But here we are again. Middle of the week. And that special occasion we all enjoy so much.

What I Ate Wednesday.

♥ ♥ ♥

I’m still loving the fitness theme and loving it in real life too.  I have had to be creative in my at home work outs, since a gym membership isn’t in my near furture.

But who says you can get sweaty with an at home workout.

#Proof. Sweat-tastic. And ignore the veins popping out of my hand and arm. That is kind of gross.

It’s 100+ degrees here, even by 7am when I get up, so runs aren’t usually a desirable option. But I get sweaty other ways. Although in this heat, cleaning the house gets me sweaty.

Gross. I know.

On to less gross things!

So we don’t like to waste around this house.

If I like something, I like to enjoy every last drop of it.

Which means my jars (of almost everything) never get left behind.

The lovely Heather treats me so well and sends me lovely presents in the mail sometimes. She knows I am obsessed with the F.R.O.G.’s jam she has access to and sent me a jar.

This stuff doesn’t last long with me. I love it.

Maybe a bit too much because this happens way sooner than I would like it to.

Sad times.

I actually hadn’t been eating oatmeal for awhile. I don’t know, I got oatmeal-ed out. If that’s even possible. But when a situation like this happens, there really only was one solution.

Because like I said. No mere morsel of this stuff was going to go to waste.

Oh yes. Return of the OIAJ. I whipped up a batch of “overnight oats” (I quote because they didn’t sit overnight, but I make them as soon as I get up and by time breakfast time rolls around, they have had a long enough time to sit and cool in the fridge)

Topped with half a frozen banana, blueberries and peanut butter drizzle and a little granola crunch.

Welcome back oats. Welcome back.

So in conclusion.

How we make a sad day a happy day.

It had to be done. And I’m so glad it did.

It doesn’t end there. Oh no. It has only started.

Empty nut butter jar? Why hello there. BAM.

I really forgot how amazing these are. Getting random surprises of peanut butter goodness? It’s a God send.

Frozen surprise berries with pb&j granola are pretty much amazing as well.

Think that is where it stopped?

Guess again.

This stuff is like $6 a jar. Not going to waste. Nope. I’m getting my money’s worth!

And I did.

Then a couple days ago I noticed another jar of peanut butter looking on the slim side.
I felt kind of bad, because to finish it off I chose Matt’s breakfast by making him a pb&j.

I didn’t feel too bad though.

It was all for a greater cause.

Always sad when a jar of nut butter is gone, but we send them out with style.

And some added blueberry goodness.

Oats, I must have missed you, because I could probably eat you everyday again.

And I just might.

wiaw 39 – let’s get fruity

As the title says, let’s get fruity! I am been on such a fresh fruit kick lately, it’s been a bit ridiculous.

Ridiculous in the best way possible of course.

I mean really how can you go wrong with fruit?

Now I still love my veggies, don’t get me wrong, but there is something about summer and warm weather that makes me crave everything fruit.

So since it is that time of the week. Oh yes, What I Ate Wednesday time, I thought I would show case some of my lovely meals and snacks that include fruit. Because there have been a lot of them.

I have also oddly enough been on a cereal kick as well.

I took a huge break from it, and I guess my body missed it. Craved it. I gave in to it.

But you can’t just have a plain ole bowl of cereal.

That would be boring. And we don’t like to be boring around here.

This was a yogurt mess of a cereal bowl. And topped with what? Of yes. Tons of fruit.

There was a Chobani vanilla greek yogurt in there, topped with a mix of cereals, frozen banana, fresh strawberries, raspberries and blueberries. A lovely drizzle of PB2 to top it off.

Ready for your close up? Super goodness right there.

This bowl was so good, it had to be repeated a few days later.

This one was pretty tasty as well. Instead of greek yogurt, I made a cottage cheese mess. Topped with of course a mesh of cereals, frozen banana, strawberries, raspberries, and you guessed it, a peanut butter drizzle.

another marvelous monday

I really like doing this, because what makes my Monday’s marvelous are my wonderful weekends I have been having.  I love looking back on all the positive things that have been happening.  That’s how we grow and learn right? By our positives and accomplishments, not the negatives and failures. A failure is really just an opportunity to learn.

So let’s take a look at what has made my weekend and Monday so fabulous.

Let’s start with Friday night.

First great thing? I got my braces off!!

Matt surprised me with these.

Friday night to celebrate my newly fabulous teeth, we went out with a few friends to get sushi.

(do you know how wonderful it is, not to have food stuck in braces and having to pick it out? It’s amazing by the way.)

It was a dress up kind of night.

Matt and I got a bit fancy. Well fancy for us. We are your total jeans and t-shirt type of people. It was fun to get a little dressed up to celebrate.

We had a wonderful night out with friends which is what I needed. Good food. Good friends. Good conversations.

Saturday = day of relaxation.

And it was wonderful.

This guy wouldn’t leave my lap!

I didn’t really mind though. He is pretty good company.

Matt and I ran some errands on Saturday, but it mostly consisted of lounging around. I’ll take it.

Sunday started in a most fabulous way as well.

This breakfast was simple, but so satisfying.

Cottage cheese mess topped with a mess of cereals, frozen banana, fresh strawberries and raspberries and of course a peanut butter drizzle.

I’m not gonna lie, sometimes a bowl of cereal just really hits the spot.

For Father’s Day we headed up to see Matt’s parents.  Matt’s mom really isn’t doing well (she had a tumor removed from her GI tract) and Matt’s dad has been super stressed. It was nice to get up there and kind of give him and break and get him out of the house for a bit.

We went fishing for a part of the day.  While the boys fished I found a nice spot under a tree and sat and read in the shade.  It was a beautiful day, so it was so nice to be outside and enjoy it.

It was an overall great weekend.

Very relaxing. Just the way I like it.

wiaw 38 – welcome back oatmeal

Usually I say time has been flying, but boy has time been dragging!

Not in an all bad way, but since I am not as busy, I actually get to enjoy my time and not worry about everything getting done.

I’ve mentioned a few times about my battle with boredom, but as of late (and of course as things are about to change again) I am embracing my time off.

Getting a little crafty. Cleaning. Just getting things done and not rushing.

If you read my baking adventures post, you know I’ve had some free time in the kitchen. Time to actually prepare meals.

So I know the theme for What I Ate Wednesday is sensible snacking, I thought I would show you some of the lovely things I’ve been able to create with my extra time.

This really isn’t a new dish, more of a twist on an old favorite.

I haven’t really had oatmeal in forever. I don’t know. I just got in a rut of other things. And with it being so hot oatmeal didn’t always pop in my mind for breakfast. Solution? Over night oats of course.

And this was one tasty batch.

No really. It was pretty amazing.

Chocolate Pumpkin Protein Overnight Oats

1/2 cup rolled oats

1 cup almond milk (I used Almond Breeze Unsweetened Chocolate)

1/2 cup pumpkin

1 tbsp protein powder

1 tbsp cocoa

vanilla extract to taste (I used about 1/2 tbsp)

sweetener of choice to taste (stevia, sugar, maple syrup, agave)

Um yea. Tasty.

If you like thicker overnight oats  you can add greek yogurt as well.

Topped with banana and the local granola I picked up at the farmers market.

This will probably happen again soon. Very soon.

To stay on the snacking theme. I did whip up a batch of these puppies.

I got the idea from Lindsay at The Lean Green Bean.

Now mine aren’t as pretty, but I promise you they were just as tasty.

I didn’t have chocolate on hand, so I did the next best thing.

Chocolate Peanut Butter Frosting.

I took some PB2 and Sun Warrior chocolate protein powder, made a little frosting and dipped the yogurt bites into it and let it freeze some more.

In my frozen bites were Chobani Pomegranate greek yogurt, local granola, dipped in the above mentioned concoction.

These were an awesome little snack to grab.

Another not so pretty, but delicious recent adventure?

Super simple. Super delish.

Ok honestly, I had no intentions of taking a picture of this, but it was so good and I knew I wanted to share it, that I took this mid-eating.

I’m sorry. And a bit embarrassed. But I will tell you, it was delicious.

I’m just going to leave it at that.

(ps I tried Trader Joe’s rice tortilla’s for the first time. Ah-mazing. What don’t I love at Trader Joe’s? Seriously.)

I whipped up some ranch dressing using a plain Chobani and ranch mix. Oh. Amazing.

I love ranch.

Yea. Secret fat kid right here.

I think we all know my obsession with Chobani. It’s really no secret.

And since we’re being honest, I stalk them on Pinterest. No really, if you follow me, I constantly re-pin their recipes.

But if we continue with the honesty, there is also the fact that as much as I love to bake and as much as I love to cook. I am in reality quite lazy. I see all these inspirations, have the ingredients, but when it comes down to it. Straight out of the tub works best for me.

And as you can see the laziness doesn’t end there. I love to dip. So half the time I don’t even use a spoon. Who needs a spoon. I have apples.

But loves. I finally got a bit creative. Not crazy creative. And not as creative as I wanted to, but I was hungry. So it got half the effort.

But it was a tasty half the effort.

Frozen Black Cherry Dipped Banana’s

I love frozen banana’s.  Sometimes when I know I’m having a banana with my breakfast or lunch, I throw it in the freezer about 15-20 minutes before I’m planning on having lunch.

Don’t know what it is. Just love it.

Frozen banana’s topped with Chobani? And then frozen some more?

Even better.

My intentions were to top these with crumbled graham crackers, but my laziness (and hunger) got the best of me.

I think I will next time. Everything is better with crunch crumbles. Or chocolate. Mmmm. The possibilities.

These were fun little treats and a great way to cool down in the hot weather.

(oh yes, Arizona is already in the 110’s. gotta love it)

How do you make these little treats? I don’t think I even need to write this out for it. It’s pretty simple.

Take 1 banana and cut into slices (it is up to you if you want to freeze your banana before or after slicing)

If you choose after stick banana slices in freezer for about 15-20 minutes.

Take out and top with Chobani. I just spooned it on.

Stick back in freezer for 15-20 minutes.

Maybe you can be smarter than me and in this freezing time crumble up some graham crackers, get out the chocolate chips, granola or whatever you want to top these babies in.


And you can obviously use whatever flavor you want. And trust me, I will be experimenting with other flavors.

wiaw #36 – return of the smoothie

Hello loves.

It has been so lovely not having to study and read 24/7. I almost don’t know what to do with all my spare time. It’s funny how when you’re go go go all you want to do is relax.  And when you’re able to relax, it’s like, well now what do I do with myself.  But it has been nice to actually be able to get some cooking and baking done.

I made my very first banana bread!

But that will be at a later date. Now it is time for the party.

The party we call What I Ate Wednesday.

As I mentioned before, I have a general class this month, which I am actually auditing so it doesn’t even count, but that means I am back to 7am classes. Yay. (note sarcasm).

I really don’t mind getting up that early, but it totally messes with my schedule.

But I learned last time I had an early class of what works for me.

Smoothies for the ride in! I can’t have a full breakfast that early, it just doesn’t work for me, but a smoothie tides me over until I can have a proper breakfast.

Monday Matt and I made a Trader Joe’s run and I made sure to stock up on some frozen berries! And a few other things of course.

I seriously can walk into that store for one thing and come out with 20. It always happens.

(For example all those pizza making ingredients. Not on the list. O’well. Worse things could happen.)

This morning’s smoothie was a lovely one. I missed smoothies.

In the mix:

1 cup vanilla almond milk

1/2 cup frozen mixed berries

1/2 cup frozen strawberries

huge handful of spinach

1 scoop chocolate protein powder

2 tbsp oats

a generous scoop of PB Crave Coco Bananas peanut butter

Oh my was this thing delish.

But adding peanut butter to anything really does the trick.

My smoothies always looks gross, but I promise you they are super tasty.

I guess I was missing my normal breakfast’s because for lunch I had breakfast.

Oh, you didn’t know I was obsessed with jam?

Now you do.

I also had this on the side.

And dinner.

Oh loves, I have been doing so well with challenging myself.

I actually made the decision to go out. And no, I didn’t choose my safe sushi.

I chose Mexican food.

After my first challenge with my nutritionist, I remembered how much I loved Mexican food. And yes, I can make 100’s of Mexican recipes at home, but honestly, as good as a cook as I like to think I am, nothing beats going out.

So that’s what I did.

Like normal people right? Right.

And I did not regret it at all.

We had decided to try a new to us Mexican restaurant, Blanco Tacos & Tequila. I actually got a coupon for 25% off for Memorial Day.  The company owns multiple restaurants in our area and I had been to another one (True Food Kitchen) before, which was amazing, so I had high hopes for this one. It did not disappoint.  One thing the company prides itself on is using natural, fresh ingredients.

On the way to the restaurant Matt and I had both gotten a text from a mutual friend. With good news. Her boyfriend had proposed and they just got engaged!  We are both so excited for them, they are both amazing people.

There was a short wait when we arrived, so we ordered a few drinks and then sent this to our friend.

For as busy as the restaurant was, I was super surprised at the quickness of service.  I really think we got our food 10-15 minutes after we ordered.

Didn’t even really have the chance to enjoy these bad boys.

For dinner, I chose the chicken burrito.

Served with a side of rice and vegetarian black beans.

I don’t know what sauce they cooked the chicken in, but this thing was ah-mazing. I had to make sure I paced myself because I was shoveling this in my mouth.  The beans were also really good.

Matt ordered the carnitas tacos.

Served with a side of rice and he opted for the pinto beans. (We both agreed my black beans were better)

But everything was so good. So glad I made the decision to be a bad American and get Mexican on Memorial Day!
