It’s the end of April and what does that mean? Other than this year is going by crazy fast! I’ve been in school for 6 months already, can you believe that! Oh my gosh, has it flown by!

But the end of the month also means I get to do my Foodie Pen Pals post!

The Lean Green Bean

It’s this little thing I’ve been doing for the past few months put together by the wonderful miss Lindsay at The Lean Green Bean.

Here is a little info about what it’s all about.

♥ ♥ ♥

-On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal! 
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month. 
-Foodie Penplas is open to US & Canadian residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa.

This month, oh man did I get lucky.

The lovely Sarah at The Smart Kitchen was who was sending a package to me.

Ok. I follow this girls blog anyways, and let me tell you, I have seen some of the goodies she whips up.

I knew (or shall I say hoped) I was in store for some delicious home made goodies.

I was right. So right. And so happy.

I have everything shipped to Matt’s work and sometimes it’s torture when he tells me I got a package and I have to wait until he gets home to open it.

Remember my last Foodie Pen Pal when I couldn’t even wait and opened it at his work?

Yea, I’m like a 5 year old.

But let me tell you and soon as he walked in the door I grabbed the box and ripped it open.

It was hard to take the time to photograph everything, because I wanted to dig in to so many things.

(It didn’t help it was dinner time too)

But I actually had some restraint.

Here is what the lovely and very generous lady sent to me.

I’m sure I am not the only one who is super excited for the week to be over. I feel like this week kind of dragged on. Usually my weeks drag on or they fly by. Never a happy medium. But such is life right?

♥ ♥ ♥

Well I have been promising this for a very long time and finally got my butt in gear!

I think we all know I am crazy addicted to sweet.

I mean my consumption of jelly is ridiculous. And fruit has to be my most favorite thing in the world. Any fruit. I’m not picky.

Ok I’m not a huge honeydew fan, but any other melon you can throw my way!

So when I discovered sweet dessert hummus’? Um. Jackpot. I was in love.

And since I eat so many banana’s I could turn into one when I saw a recipe for banana bread hummus. Cha-Ching. It was quickly made. Consumed. Made again.

Since I’ve started making it though, I think I’ve definitely simplified it and catered it to my own tastes, to where it’s not really the original recipe I made.

But I will say I love experimenting with it.

Remember when I made Chocolate Banana Bread Hummus? Oh my that was amazing.

But I thought I would share with you my staple go to recipe for when I make it. It can easily be tweaked to your liking, but here is what I do.

♥ ♥ ♥

Banana Bread Hummus


1 15oz can chickpeas (drained and rinsed)

1 medium – large size ripe banana

1 tbsp vanilla

1/2 tsp almond extract (key ingredient if you ask me)

approx 1/2 tbsp cinnamon (more or less to your taste)

approx 1/2 tbsp raw agave (or maple syrup or sweetener of your choice)

Pour chickpeas into food processor.

Add banana.

Sprinkle cinnamon.

Add vanilla and almond extract.

Little drizzle drizzle of agave (or your sweetener of choice)

Blend until hummus reaches your desired consistency.

(I like mine really creamy)

And you’re done!

Bowl it. Dip your finger in it. Spoon it. Put it on a cracker. Demolish it.

Then repeat.

This stuff does not last long in my house. I love it.

Maybe too much.

But then again, I am turning yellow and starting to peel.

(wow lame attempt at a joke)

Just a hint. This goes great on english muffins with no surprise. Jelly.

Trader Joes Fig Butter (♥) and Chobani greek yogurt on one half. Blueberry jam and banana bread hummus on the other.

Sweet and delicious.

I hope everyone is having a wonderful week so far!

Mine are of course is busy busy busy.

But after a relaxing weekend, I suppose its ok.

The weekend ended with this.

i seriously bought this wine strictly by the label design. i’m such a sucker for pretty bottles and designs.

The night was not planned to end with wine. It was actually quite a relaxing Sunday. Matt and I lounged around for a bit. Hung a few pictures in the new place, and then we decided we each would have a pamper day. I got a pedicure (obsessed ♥) and he went to a local bar and grabbed a few beers to wait for me. After my pedicure I met him at the bar and we sat outside and enjoyed the gorgeous weather. His tummy started to rumble, so he ordered a small order of their sweet potato fries (which are amazing) and I of course had to have a side of BBQ. Well let’s say Matt may have had a few too many beers while waiting for me, because the day ended with my water spilled onto my phone and me wearing the BBQ sauce.

Insert bottle of wine.  I actually found the situation quite funny (only because my phone was ok) and I told him we should walk over to the market and get a bottle of wine for me. I deserved it. We then enjoyed the rest of the evening at home watching Burn Notice on Netflix.

A great way to end my night if you ask me.

But on to other important things.  A Giveaway!.

I first did a taste test on its own.
I actually did two glasses. One with just water. And one with almond milk.
Obviously the almond milk was the tastier one, it added a nice creaminess, but I will say water alone was not to shabby either.
I mentioned previously that I actually like the “greens” taste, but some can be really nasty.
This one actually was not.
But if I am to just drink it, I think I will typically opt for the almond milk route. But to each their own.

I added it to a few other typical dishes. Didn’t change the flavor much which I liked. Most of them you couldn’t even tell it was in there.

Oh wait. I actually love greens!

All were delicious and I could barely, if at all, taste the greens! Win!

I also used the last of my plain Chobani greek yogurt and made a little dip!

This ended up going on top of an un-pictured sweet potato. I think I also added some cinnamon.

wiaw #32 – learning to relax

I hope everyone had a wonderful Easter holiday! Or Passover. Or if you don’t do either, I hope you had a wonderful weekend!

We went to Matt’s parents for Easter and had a wonderful relaxing weekend. Just what I needed.

Things have been so busy for Matt and I; with school for me and work for him, that sometimes it is just so nice to just sit. Relax. And be with family.

But things are back in full swing around here. School is intense. But I am loving every minute of it!

But let’s all take a break, because it’s that time. And I missed it last week, so I am super amped to not miss it this week!

Before we headed out to Matt’s parents on Saturday (PS I love that they only live a little over an hour away now. We don’t have to spend half our day driving. So nice!) we decided to hit up the farmer’s market just to spend a little time outside together. Our days have be gorgeous here! I am loving it!.
So on our bikes we hopped and took a stroll.
As much as I love my bike (totally vintage 50’s) I miss my old bike that got stolen. Stupid kids.

I always forget to take pictures at the farmer’s market (too busy sampling) but the fresh flowers always catch my eye!
If we weren’t on bikes I totally would have taken some home with me.
Or maybe someone will bring some home for me. -wink wink nudge nudge-

My meals however have been kind of blah lately.
Same ole same ole if you ask me.
Thanks to Chobani, I have been quite stocked (however that stock quickly diminishes in this house)
So breakfast’s have included a lot of these combinations.

I love dipping my fruit in my yogurt. To me it’s so much better than mixing it together. Am I the only dipping lover?

Now I know the April challenge is an extra cup of greens, trust me there are no shortage of greens in this house.

Just a little boring.

Matt and I are really trying to be more creative in the kitchen.  But with it being so hot (hello Arizona heat) sometimes we just don’t like to heat the kitchen up.

We are being stubborn and refusing to turn on our air! Although the last few nights have been pretty miserable, I might be the one to break!

But the greens have been coming in this lazy form lately.

Oh yes. Oven roasted broccoli. And yes. I dip it in ketchup. I don’t know what it is. But I love the combination.

No I am not pregnant.

 So although not super green, I made a re-creation of an amazing breakfast I hadn’t had in awhile.

We have a lot of banana’s around here lately and one went a bit ripe.

Yup. Banana Oatmeal Pancake.

Topped with Cookies N Cream Protein Frosting.

I haven’t let my banana’s go ripe lately because I have been eating them like a mad man, so this breakfast hasn’t really been an option.

So glad it was.

Now that I think of it, I did add some of my Incredible Greens. So there was some green in there.

I wanted to talk a bit about what’s been going on with me lately, I feel like I haven’t given you guys an update in awhile.

wiaw #29 – going green

Good morning loves.

First I want to apologize for being so MIA. Things have been really crazy around here.  I went back to Indiana last weekend to visit my grandma.  She has recently been diagnosed with cancer and recently started her chemotherapy. Why an 84 year old chose to do chemotherapy, I’ll never know, but I’ll keep my true opinions to myself.

♥ ♥ ♥

If you follow my blog you know that my parents have been extremely un-supportive when it comes to my eating disorder and my recovery. I do believe my father told me that I’m 28 and I should just take responsibility for my problems, stop blaming others, and get on with my life. Then later admitted him and my mother had both had body image problems and obsessions while we were growing up. Yet they see no correlation between the two? Amazing. I never blame anyone for my eating disorder, what I try to explain is their personal body images issues influenced me as a child. I mean seriously. How could it not.

♥ ♥ ♥

Anywho. Not my point. But the weekend was. Good? Good in the fact that I got to spend some quality time with my grandmother.  I bit my tongue when it came to my parents. And this somehow made my mother think we were okay and things were good again.  Another realization she is so out of it and just doesn’t get it.

I also got to spend some quality time with my friend Kimmie, who was so giving and let me stay at her house while I was visiting. This girl is seriously amazing and deserves her own post on how much she has supported me and showed me what a true friend really is. Unconditional love. She is amazing. Enough said.

I also got to see my sister, who just recently told me she is pregnant!! I am so excited to be an aunt and wish I could be closer, but I am super excited none the less!!

It was really great to be able to spend some time with her, and we had a real good conversation. I think she kind of “gets” it a little bit more with what is going on with me. I would never want to tarnish her relationship with my parents, but I also think she needs to be aware of what’s really going on and how they treat me. Because honestly, they are very very cruel to me.

But I’ve also been trying to stay real positive about things. I need to focus on me and getting better and if my parents do not want, or can’t, be a part of that right now, then they just simply won’t be in my life right now. Does that hurt? Of course. They’re my parents. But I’ve realized I need to do what’s best for me right now.

I also have started my vet tech classes again. So overwhelming. It is my sanitation and nutrition class and we actually do a lot of hands on with the animals at the school. A lot to learn in a short amount of time, but I am excited to actually be working with the animals.

But those are my excuses for being so absent, but I of course had to come around for What I Ate Wednesday.


Jenn wanted to continue the theme trend with Going Green.

Since I had not been home to really cook my meals, I thought I would showcase some of my favorite ways to cook and eat green foods.

Because let’s be real. I eat a lot.

Why do I check them in the morning before breakfast? It’s dangerous.

I seriously eat so much of this stuff.

I eat it oven roasted marinated with a little bit of braggs amino acids and a sprinkle of spices.

I eat it in stir fry’s.

And even raw in delicious fresh salads.

I love the stuff.

Served as a fresh summer salad.

Or paired with a pita sandwich.

Even on top of a pumpkin hummus tortilla pizza.

wiaw #28 – veggie loving

We have been in the process of packing for our move and I am also flying back to Indiana this weekend, so it has been kind of a crazy few days.

But don’t you worry I remember what time it is, and that is What I Ate Wednesday time.

So first and foremost, let’s head over to the lovely Jenn’s at PeasandCrayons to give her a little love for being such a great host every week. Also check out some others eats. I know that’s where I get a lot of my ideas.

So I’ll admit it. Sometimes I don’t follow rules. Call me a rebel, call me what you will, but I tend to march to the beat of my own drum.

Well this time I got called out on it. Whoops.

Jenn was a little bummed that my last post didn’t really include any veggies, for veggie loving February.  Truth is, I eat a lot of veggies. But they tend to look like this most of the time.

Now, these things are delicious. And dipped in Trader Joe’s ketchup? Yes please. (yes I dip my broccoli in ketchup, trust me though I do weirder things than that)

Although delicious. Kind of boring. I know. And I’m pretty sure people would get sick of seeing a bunch of broccoli or other miscellaneous veggies I throw in the oven.

See. I bet you’re already sick of looking at this stuff.

So that’s why veggie’s typically don’t make it to my posts.  Since I’m in school, I eat a lot of random, boring sandwiches so dinner is really only the fully prepared meal. Which even then, by time I’m done with appointments, errands, studying, those get whipped together pretty quickly too.  But I tried to make an effort this time to get more veggies in! And in more fun ways.

♥ ♥ ♥

Breakfast this morning was a green smoothie.  And a good one I might add.  I had seen on someone’s blog that they added some oats to the mix. I thought hey why not. I also got the idea that I would put everything in the blender the night before, let the oats soak up the liquid and it would be more of a blended oatmeal.  Sounded good to me.

And it was good.

Into my mix went

1 frozen banana

1 heaping handful of spinach

1 cup almond milk

3 tbsp roll oats

1 scoop chocolate protein powder

dash or two of cinnamon

Blended this bad boy in the morning and I had a pretty tasty treat!

Adding the oats gave it a totally different texture. But I liked it. It was like it made it thick without needing to add ice or anything. A win in my book. This may be repeated tomorrow.

Lunch unfortunately was a quick pb&j, but hey I’m really not complaining because it was made with two new to me products.

Side story. So I had seen/heard so many good things about this stuff. I saw it in the store a few times, but just never picked it up. I don’t know why.  Then one day I decided to make cookies for Matt’s work. I think it was Christmas actually. I found a recipe for cookie butter cookies. Perfect excuse for me getting it! (Matt’s typical response when I grabbed the jar to examine it was always “babe you have 5 jars of nut butter at home already” Didn’t he know this was something completely different? Boys. So it never made it home with me.) I head off to Trader Joe’s to get my supplies for the cookies and what do you know. I can’t find the cookie butter anywhere. So I asked a worker if they had any. They were sold out. So I call around to a few other Trader Joe’s in my area. They were all sold out. And they didn’t know when they would be re-stocking.  I guess they weren’t expecting it to be such a huge hit. I waited. And waited for it’s return. So when I went to Trader Joe’s (by myself mind you) the last time and saw this. It quickly went into my cart! And I can guarantee you I will be stocking up on this stuff. It was seriously the best thing that I have tasted in a long time.

The other amazing part of this sandwich? Check out my post from my February foodie pen pal, because my pen pal got me the most amazing cranberry/blueberry jam. Delicious jam + delicious butter = the most amazing pb&j ever.

Who needs veggies.

Dinner however, was another new creation that I whipped up. And it was amazing.

And full of veggies.

I have been seeing recipes for stir fry’s everywhere lately.

I just so happened to have some left over rice sitting in my fridge. And trust me, there is never a shortage of veggies in my fridge. Unless it’s at the end of the two weeks and we need to go shopping.  Then sometimes it’s pretty sparse.

One thing I need to do in my recovery is challenge myself. Eat new things. Have a variety. That is one thing I struggle with. I tend to stay with safe familiar foods. But you know what. Different is good. And it was good to actually cook and prepare a meal.

If you know me at all you know measuring doesn’t typically happen in my kitchen, but I will try to give you an idea of what went into this, because it’s worth trying to re-create on your own!

Spicy Tofu Stir Fry

Stir Fry:

2 medium sized carrots

1/2 cup onion

1/2 cup broccoli

1/2 red bell pepper

1/3 yellow squash

tofu (amount would depend on you. I always just cut a decent chunk off my block)

brown rice


(ok here’s where it gets tricky)

I seriously just pour, dab, shake random amounts into the pan while the veggies are cooking.

Main base though was hoisin sauce, soy sauce, and sriracha.

I wish I could give you more than that, but I really did it all to taste.

I can tell you however, that whatever combination I came up with. Was amazing and delicious. Actually almost wish I added more sriracha. I love the spice!

I also hadn’t had tofu in awhile and glad I decided to pick that up as well. I’ve really enjoyed it lately.

Do you ever have days where you don’t eat any veggies? I can honestly say there is never I day I do not have veggies. If it’s not a side dish to my dinner, I am snacking of carrots or something. I seriously have an un-healthy addiction to carrots. And apples. And banana’s. And now possibly cookie butter.

When you cook do you always measure? Or do you just randomly throw in ingredients? Unless I am following a specific recipe and want it to turn out exactly like it says, I will follow a recipe. Kind of. I still honestly think I season to taste always. I mean. I’m the one eating it, so I have to like it right?

First, was a very very tasty breakfast.  Maybe not extremely special, but I haven’t made myself a nice bowl of oatmeal in awhile. So instead of my quick sandwiches I usually have to make because of school, this was a very nice change.

Kind of a simple classic breakfast, but it was so delicious and such a welcome change.

it's been awhile since i've hard fresh berries in the house so this was a nice topper. and you can't beat peanut butter. i mean seriously.

Blueberries were also suppose to make it to this bowl, but they made it straight into my mouth instead.

just a very nice return of the oats. they were so tasty.

Am I the only one who licks their bowls clean after oatmeal? I never want my bowl to be empty. Why can’t I have a magic bowl of oatmeal that never ends? That would be nice.

I know chocolate hummus isn’t completely new, but I kind if just whipped this together on a whim without really following a recipe so I was extremely happy with how delicious it turned out. And trust me. This stuff is delicious. And addicting.

Chocolate Banana Hummus


– 1 – 15oz can chickpeas

– 1/2 – 1 banana (depending on size of banana)

– 2 tbsp unsweetened cocoa

– 1 tbsp vanilla extract

– 1/2 tbsp cinnamon

– 1 tbsp agave or maple syrup


Place all ingredients in a food processor and blend until desired consistency, scraping down sides as needed.

it gets even better once it has been in the fridge for a few hours!

This stuff has seriously been on almost everything I’ve eaten. Sandwiches. With PB&J. Straight onto my finger. You name it.

Pretty amazing huh? But guess what?

Well something like that. I’m not a huge egg person, so mine had to be tweaked. Of course.

I have been in such food ruts lately I thought this would be a great chance to actually start branching out again.

Almost didn’t do it.

So glad I did.

Dessert Banana Bread Hummus Pizza

Serves 1


– 1 whole wheat tortilla

– 1 banana

– 2 tbsp banana bread hummus

Optional Toppings:

(what I used)

-drizzle of maple syrup

-sprinkle of Sun Warrior chocolate protein powder

-sprinkle of cinnamon

The possibility for toppings is endless though. I really wanted to do a peanut butter drizzle, but my tortilla heated up way quicker that I thought it would and I was super hungry, so I didn’t take the time.

Additional Topping Possibilities:

chocolate chips, shredded coconut, peanut butter, fruit, whatever your little sweet tooth desires.


– Turn broiler on and heat tortilla for 3-5 minutes

– Take tortilla out of oven and top with banana bread hummus, banana and other desired toppings

– Place back under broiler to heat for an additional 3-5 minutes

– Take out of oven and drizzle with remaining toppings of choice

It’s that simple. I promise you. And it’s soooo tasty.

I seriously have so many ideas for what I can put on this next, but the maple syrup really hit the spot today.

Maybe next time use my chocolate banana hummus? That I think would be ah-mazing.

I am still on a huge sweet kick, so even though it was lunch, it really hit the spot.

wiaw #26 – ups and downs

I first want to say Happy Valentine’s Day (I know a bit late) but I truly hope you all had someone special to spend it with.  Whether it be a significant other, or just simply family or loved ones.

i love cupcakes.

I’m not a huge Valentine’s Day person in the sense of having to have a big celebration, but I do look at it as a day of love, and that can be with anyone.

I just am lucky to have a wonderful fiance to spend it with.

Matt and I decided to do a low key Valentine’s Day as we typically do. We went to one of our favorite vegan restaurants, The Green Restaurant.  Matt is not vegetarian anymore, but he was kind enough to take me there.  Their food is so good, even if you aren’t a vegetarian I think you would enjoy it. I will be doing a Valentine’s Day update post tomorrow, so check back to see how my day went!

We had met Matt’s parents for lunch and we got an early Valentine’s Day gift. All I can say is yum! Clearly I couldn’t wait to take a picture before this happened.

But since this is What I Ate Wednesday, and I have actually switched things up a bit, I thought I would share with you some new eats.

So what’s with the title you ask?  Well. Things have been good and bad around here. I’m pretty open about my life on here, so if you follow me, even just occasionally, you know that I am in my recovery process from an eating disorder.  Things were really hard in the beginning, but I pushed through and made great progress. I started school and then things just kind of. Tapered off.  I think I let myself use school as an excuse to not push as hard, and got to a comfortable spot.  Well, let’s just say my therapist and nutritionist were not happy with my stagnant stand still and have really been getting on my case about my lack of weight gain.  Also the fact that I was eating pretty much the same foods everyday.  Ruts anyone? But I have recently really started to push myself again. To remind myself that I need to gain weight.  And that I will not become overweight over night.  My nutritionist is amazing and flat out tells me she will never let me be overweight. I trust her to recognize if I get in bad habits or patterns. So lately I’ve done the work.  Am I a bit uncomfortable? You bet. But it is what I need to do to beat this, and I will do what it takes.

So let me show you some fun new eats I have had lately.

I had seen a picture on Food Gawker and I just couldn’t get this simple lunch out of my head.  I finally made my own little version.

simple little sandwich.

The original recipe was for a chive spread, but I didn’t really have anything to make it with, but I did have a laughing cow swiss cheese wedge that I used as my base. Topped with alfalfa sprouts and some tomato.  So simple, but seriously so tasty. I used Ezekial sprouted bread which I am obsessed with. I am totally a carb girl, so good bread gets me really excited and really makes a difference when it comes to simple sandwiches.

I’ve been seeing these guys all over the blog world and on my last trip to Trader Joe’s I decided to give in and buy a bag! I had been wanting to switch up my fruits anyways, I feel like all I eat are banana’s and apples. I could probably become one! I forgot how much I liked oranges. And so pretty too!

Another new and simple recipe came at dinner time.

i made my own mushroom noodle casserole.

Again, super simple. I haven’t used canned condensed soups in forever. And for good reasons. Some of the stuff they put in there. Meh. But again, I saw a recipe for this and thought hey why not. I need to start challenging myself and eating things I’m not 100% comfortable with, because sometimes I really think the whole “healthy eating” is just a cover up and an excuse for restricting. Not all, and not everyone. But some. And a few preservatives now and then won’t kill me!  So I put some garlic infused cream of mushroom soup with some linguini and added some peas. Baked this bad boy up for a bit and enjoyed!

it was actually pretty tasty. and i enjoyed it more than i thought i would.

I really am working hard on trying to add a little variety to my diet. Even if it’s not a fancy meal, something different is still good.

Again, it was super simple, but a nice change from what I had been eating.


No really. I love peas. I love almost any veggie though. I’m weird. I know.

Another challenge that I’m pretty proud of happened a few days ago.

I had been  craving fro-yo lately. (Heather I totally blame you) and I saw a Groupon for a place near Matt’s work that we hadn’t tried. Talk about impulse buy! Come to find out it was one where you had to use it that day! No backing out for me, I was not wasting my money. So I drove out to surprise Matt and really pushed myself to make a normal sized cup. Not a eating disordered portion. And you better believe I devoured it all!


I enjoyed every last bite of this! Oatmeal cookie and thin mint yogurt topped with strawberries, pineapple, graham cracker crumbs, cotton candy sprinkles and a few marshmellows.

I don’t even remember what all went into Matt’s. Like five different flavors. I did get a bite of his red velvet cake and that was pretty tasty as well!

So I was very proud of myself because I finished my whole cup. No guilt. No hard feelings. I just simply enjoyed it!
