For it being a Monday, I am in a wonderful mood and let me tell you why.

No, nothing really spectacular happened this weekend, actually it was quite a chill weekend, but there is one thing that I have been loving lately that not only makes Monday marvelous, but life marvelous.

I would love to share everything that is going through my mind right now, but this post would be too long, probably too boring to most, and a random mess of thoughts (because that is just how my brain works).  But to make a long story short.

I have made huge steps in my recovery. I think it’s even safe to say, I crossed that last bump and finally said good bye to my ED.

I’m ready to move forward with my life, to start living again, to be healthy again.

I no longer have rules, I no longer have anxiety and honestly, I just no longer care about food.

For so long I spent countless hours thinking about my meals, counting calories, should I eat this, should I not eat that, so on and so forth. I honestly, just don’t care anymore. I eat what I want, “healthy” or not, and I don’t give it a second thought. I don’t have to eat by a certain time, wait until a certain time, and I definitely don’t have a cut off time.

I just eat.

It’s pretty refreshing, let me tell you.

One sign I knew I had crossed that bump happened Saturday.

Our friends were having a going away party and typically whenever I had a social event to attend, I use to spend the whole day being anxious about timing. “Will I have time to eat dinner before I go?” “What if I get hungry there?” “Will I be tempted to snack?”   You get the picture.

But this Saturday, I didn’t even give the evening a second thought until it was time to get ready to go.

And when it came to ordering a drink, nope didn’t over think that one either.

I had a great night with friends and honestly it wasn’t until the drive home and I looked at Matt and said “whoa. we had a normal night”. One thing Matt and I are really working on is getting back to “normal” and I feel like we’re finally doing that.

We had another fabulous night out for a friends birthday party.

Ok seriously, have you guys ever been to a Dave and Buster’s?

Funnest. Place. Ever.

I pretty much kicked Matt’s butt at the games.

But the best part of the night again was how much Matt and I enjoyed each others company, had fun with each other, played with each other.

Again, at the end of the night when it hit me…so refreshing.

I’m just so happy.

However with this happiness, there comes a sadness. With the welcome of my new healthy life, comes goodbyes to other parts of my life.

Which I will share with you later.

Because today is all about being positive, being marvelous and just being true to you.

I hope everyone had a fabulous weekend. I know I did. Which makes this particular Monday even more marvelous. So let’s get to it and get marvelous with the beautiful Katie. She is just so marvelous on her own.

A few things made this weekend pretty marvelous, but the most important part was our friends from Indiana happened to be in Arizona and made a special trip to see us. How great are they? Pretty great. It’s been about two years since we last saw them so Matt and I were more than excited.

I actually don’t have a lot of pictures because we were way too busy having fun.

They were only in town for one night, so when I got off from work we headed out to dinner at one of our local breweries Four Peaks. Whenever people visit, this is one spot we always want to take people. Great beer. Great food. And it has a really great atmosphere.

We of course started off with a beer while we waited for a table.

I ordered the peach ale, which is just my absolute favorite. As girly as I am, I don’t like my drinks super fruity. This is the perfect blend of sweet, but still has that ale/hop taste. I love it.

Sadly, no picture of the food, but we ordered their Spinach and Artichoke dip as an appetizer which is just absolutely delicious. Super cheesy, with huge chunks of artichokes, which I love. We demolished it. I then had the cajun chicken sandwich as my entree, which again was amazing. I like things spicy, and they do not skimp on the spice. Oh and their french fries I swear are the best around. I may be a bit of a french fry snob, but these are those thick cut, not too greasy perfect fries. Ok, I know they’re just fries, leave me alone, I get excited about small things.

We then hit up the store, got quite a bit more adult beverages (not an understatement, the boys got so much beer) and headed back to our place. I had to work the next morning, so I headed to bed around midnight, but the boys? They were up until 5:30am! Good golly. Boys will be boys. Me and Lina arose quite a bit earlier than them and decided to head to Starbucks to get some coffee for us, and some for the boys when they finally decided to stir.

The boys slept until right before I had to leave for work, I got my quick good-byes in, then did my normal.

I wish I could have gotten to hang out with them during the day, but some of us have to be adults right 😉

Even though it was short I had an amazing visit with them.

Remember my post where I basically was freaking out over my Pharmacology test? Well. With good reason. I mean. There was just so much. And so little time. And so much.

But I am very happy to report that all my hard work and studying paid off!

So what a great way to celebrate Katie’s Marvelous In My Monday.

What are we celebrating? Well, I surprised myself by getting a 88% on my quiz!! (most of my class actually failed this quiz and I thought I did too) I literally walked away from that quiz knowing I only 100% knew one answer. The others I truly felt I guessed on. I guess I’m a good guesser. Ha.

That night I really didn’t know how/what to study for the test the next day. I tried not to stress over it. Went over what I could. Didn’t over do it. And decided to let fate take over.

I guess that worked too, because I got a 94% on my test!!!

I seriously about peed my pants.

I off course had texted Matt right away, but when he got home I demanded celebratory fro-yo. Like he would have said no to fro-yo anyways, but he graciously obliged!.

There is a Yogurt-Land by us that we haven’t tried yet, so Yogurt-Land bound we were!!

Matt was super boring with his and only got lychee as a topping, although I was jealous of his pistachio flavor choice. I didn’t think I liked that flavor. I do now.

Mine however was chocolate heaven. Half dutch chocolate and half cocoa almond.

With some banana and the must needed graham cracker crumbs and sprinkles. Sprinkles make everything better. And we were celebrating!

Let’s just say this was devoured in no time.

On to more celebrating!

Yea I’m sorry, I’m a beer drinker. It how I like to celebrate.

We had an awesome chill tonight watching the Olympics and just hanging out. Being normal. Doing what people do.

Oh the simple things in life.

And like the grandma I am, I passed out before 11pm. I’m that awesome.

The weekend was actually a well balanced one. I had my Asian market adventure, but yes, more of this did happen.

I had a note card stealer on the loose! Ok, so he really wasn’t on the loose. And I guess he really wasn’t stealing them, but it’s a wonder why it takes me so long to study, I mean I have the most amazing study buddies. Ok, they might be more of a distraction, but they are just so cute.

Gotta love them.

Well it’s back to crazy town for me. Trust me when I say I can not wait for this class to be over.

This is going to be super short, but I wanted to of course celebrate the lovely message of Katie and her Marvelous In My Monday feature.

With everything going on, I think it is so important to stay positive regardless of the bumps in the road we all encounter.

Why so short you ask? Well my life is overcome with this again. And so was my weekend.

Oh yes. Studying. Lot’s of it.
I did not do as well as I wanted on my last test, which is totally disappointing because I actually felt prepared. I really feel like some of the questions were so out of left field. What can you do.

You can take charge and try harder.

(For those of you who follow me on instagram know that I got up mid-reading to get my pink highlighter, just because I wasn’t feeling the orange. Yes I’m weird like that.)

We don’t like to sit in the house all weekend, so a few fun things were done.

Matt’s parents came down to do some shopping since they live in a little mountain town and don’t have access to a lot of stores. I actually ended up skipping lunch with them to study. I had just found out my grade and got super upset and just got in the mode. I felt so bad, but they of course understood. I did meet them for a Sam’s Club shopping trip. Oh my Sam’s Club is dangerous.

Seriously. You gotta love shopping in bulk.

I have so much fruit now! Hopefully we can eat it all before it goes bad!

Oh yea and the random toilet bowl cleaner.

Sunday Matt wanted to watch a soccer game, but I of course was studying.

I’m to the point where I don’t even care about weird looks anymore.

Weird looks just don’t phase me anymore. My waitress did ask what I was studying for, but she said she use to bring her books all the time when she was taking classes.

So Matt got to watch his game and I didn’t have to stop studying. I was lame company, but we were still together!

wiaw #35 – jammin’ it up

A little late to the party, but better late than never.

I was going to try and bust out a post last night, but studying kind of over took my night.  It is finals week, and this week is extra crazy.  I have a huge practical that started yesterday, that I didn’t end up doing, but will today. A quiz also today, and then my final on Friday. Whew. Crazy huh?

But thankfully, my next class is an audit class which technically I don’t get credit for because all my previous core classes transferred.  But for attendance reasons I still have to go. I know. Silly. I am going to a class (at 7am mind you) for no credit.  But o’well. Even though I have to attend class I still kind of get a break because I don’t have to do any of the work.  Let’s look at the positives shall we!

So I have actually switched up my eats quite a bit last week! Challenged myself multiple times. I’m serious. I am totally almost over my hill on this eating disorder! I can feel it! I am doing so good lately!  Yes I am starting to have those thoughts of “oh my gosh my thighs are so huge” but you know what. They’re not.  I am suppose to have fat there. It’s normal. It’s healthy. And guess what. It’s beautiful. Ok, I may not believe that last one whole heartedly yet, but I have faith one day I will.

♥ ♥ ♥

So let’s get on to the eats shall we?

First up. Breakfast was super good because of a little jewel I whipped up.

I saw a recipe on Powercakes and STUFT Mama for a chia jam and had to make some. I had bought a bunch of fresh raspberries and blueberries so I thought perfect!

And it was.

I took about half a cup, maybe a little bit more of fresh berries and stuck them in the microwave for a minute.

Mashed them up and put about 1 tablespoon of chia seeds in. I used white chia seeds.

I also added a few drop of NuNaturals Vanilla Stevia.

Let it sit in the fridge for about 30+ minutes to gel. And wha-la. Instant deliciousness.

Enjoyed on top of a Rudi’s English Muffin.

This stuff was tasty. Totally.

So on to a few challenges I gave myself. I had an amazing weekend full of them.  Matt and I went to the farmers market on Saturday and spontaneously I decided I wanted gelato.

Demolished. And delicious.

Sunday we ran a few errands and while we were out, I got hungry. Normally I high-tail it home for lunch. Nope. Not today.

Beers and appetizers with my babes! What normal people do.

(By the way, we went to a local brewery and they have the most amazing Peach Ale. I love it.)

Dinner? Yes challenges there too.

Yes friends. Chicken Alfredo.

Now this did come in the packaged variety, which was an extra challenge for me. I did not make it. I could not “healthify” it, if you will. Nope. White pasta and all that creamy goodness. And it was good. And I ate it all!

♥ ♥ ♥

It feels so awesome to talk back to my ED and to win. I just want so bad to get back to that normal. To eat just to eat. Not worry about every little thing that goes into my mouth. Not pretend that my “healthy” habits are to be healthy and not ED related. Guess what, more than likely they are. People don’t go raw, do juice detoxes, eliminate carbs from their diets for 100% health reasons.  It’s that little voice telling them they need to. Carbs are bad. Processed food is evil (ok I stay away from a lot of processed foods, but not the main point).  I am also not saying everyone who leads a healthy eating lifestyle has an eating disorder either, but we are so influenced by society and what’s considered beautiful, that I think it does underlie in a lot of people.

But anywho. On to happier things. Like this huge practical I should be studying for instead of sitting on the computer. But I just love and miss you guys so much! And thankfully with my “break” next month I will be around a lot more. Muahahah. Be prepared.

wiaw #31 – incredibly green

This week has flown by so far. It’s technically only Tuesday night, but I feel like this month has just gone by in a flash!

But I will tell you what time it is and a time I won’t forget.

What I Ate Wednesday.

It’s the last week for the Going Green and I did in a random way.

But first let’s head over to Jenn’s at PeasandCrayons and thank the lovely lady for being our host every week.

The lovely Heather at Kiss My Broccoli was wayyyy too kind to me lately.

I cried like a baby when I found out my Trader Joe’s was all out of pumpkin butter for the season. And by my Trader Joe’s I mean all 4 in my vicinity. Heather was kind enough that the next time she was there she saw that her’s still carried it. Tweeted to me if I wanted any/how many and I immediately tweeted back!

In the middle of class by the way, and cell phones in our classrooms are big no-no’s. I didn’t care. This was pumpkin butter we were talking about.

But no, this girl could not only send me the pumpkin butter, she sent along a few other goodies.

One very questionable one.

Ironically it was the first thing I used.

Well after immediately dipping my finger, er I mean cracker into the pumpkin butter. I had to make sure it traveled well right?

She sent me a little baggie of Incredible Greens. She actually just did a review post on it, so you should head over to her site and check it out, because this stuff is pretty interesting.

After reading her review, and knowing I was having eggs the next morning (yes I plan my breakfast the night before. I get a little too excited over breakfast) I decided I would add a bit to them to see how it went.

It went pretty well. And yes, for being a powdered green. It is pretty tasty. I do however like greens taste.

I didn’t add that much because I was a bit skeptical about how strong the flavor would be, but the amount I did add didn’t really alter the flavor at all that much. Just the color. But again, I like the greens taste, so I think next time I will add a bit more.

I also tasted a bit on it’s own mixed with some almond milk and again, I really liked the taste.

I ended up contacting Jonathan at Incredible Greens and he is going to send me a bottle and let me do a giveaway for the product, so make sure you check back for that! If you’re looking for an easy/tasty way to get your greens in I highly recommend this product!

Greens are of course always in my daily meals.

A special green made it in due to a fun trip Matt and I took to the farmers market.

We recently moved to a different part of town and one of the great things is 1. it’s in a super nice area. definitely the nicer part of Phoenix. A bit more posh and more to do. 2. we are in bike riding distance to “Old Town Scottsdale” which is where one of my favorite farmer’s markets is held. So Saturday we took a bike ride down and enjoyed our day.

While shopping for produce, I really didn’t need any fruit, but oh goodness, these pears were so aromatic. We had to get some.

I don’t know if it’s a mind thing, but I swear organic fresh fruit just tastes SO much better. I also got an organic gala apple that was the sweetest, best apple I have tasted in awhile. I loved it.

After the farmer’s market we stopped by a local sports bar and grabbed a few drinks. Well, Matt drank most of it, but I love that kid tipsy. He is so fun. And so cute.

After drinks we stopped by Sunflower Market, which is in the same plaza. We seriously went in for one thing, but once we spotted this. It was on.


First. I love the brewery Rogue. Second, pink bottle. Yes. Third. Bacon Maple Beer.

And yes, it tasted like bacon. And maple. I couldn’t believe it. My mouth was confused. It was amazing.

Well loves that’s about it with me. Things have actually been going good around here. Kinda getting back to normal.

I’m not nearly as stressed. I’m challenging myself and dealing with that. And I’m loving the extra time I’m getting with Matt.

Things are looking up!

a sigh of relief

I hope everyone is having a great weekend!  Mine has been extremely great! Good news all around!  One thing I can not make public yet, but as soon as I can I will be sure to fill you in! It is super exciting and I smile just thinking about it!

But what I can share with you is Matt and I found a new apartment!!


I know it may not seem like a huge deal, but we have been looking for sometime now and nothing just seemed to fit.  Unfortunately, our budget is way lower than it was, due to me not working and going back to school, and the area we were looking is the “fancier side of town” if you will.  But we are moving in order to be closer to Matt’s work and get me a bit closer to school, because gas prices are just killing us.  It doesn’t help that Matt drives a truck!  So we kind of needed to look in that area.  Well we finally found a great place, tons of space and the price was so much lower than everything else we had been looking at.  Also, one of Matt’s co-workers lives there, and she has been happy with the place, so that is a bit re-assuring as well.

I’m kind of bummed to be going back to the apartment living though.  We definitely got spoiled with our townhouse and our amazing landlords. But again, these times just call for us to do things we don’t really want to do, and it won’t be forever and I think this place will be nice for the time being.  I love moving and making new spaces my own! So I am excited for that at least!

The day of apartment hunting was a long one! I had to volunteer that morning at the animal clinic and  was going to meet Matt at the apartment right after.

I knew my morning was going to be long, so I did what any normal person does.

Make the most random breakfast ever.

english muffin with the most random combination toppings ever.

I’m not indecisive or anything.  Sometimes when I can’t decide what sounds good, or make up my mind on what I want, it all ends up on my plate.

This started with a Rudi’s english muffin half topped with Trader Joe’s fig butter, topped with Chobani blueberry greek yogurt.

The other half ended up being topped with cranberry/blueberry preserves that my foodie pen pal got me (amazing) topped with my banana bread hummus.

Ok this batch of banana bread hummus was one of the best I have made. I sort of started “winging” it and found a few great combinations.

This batch was:

-1 large ripe banana

-1 – 15oz can chickpeas (rinsed)

– approx 1 tbsp vanilla extract

– approx 1 tsp almond extract

– 1 squirt maple syrup (yes I measure in squirts, totally acceptable)

– sprinkle or two of cinnamon (again, totally acceptable form of measurement)

Blend, blend, blend.

This batch was seriously amazing. The almond really adds to the taste, just have to be careful not to overdo it because it can become over-powering very quickly.

So after signing the paperwork for our new place (!!!), Matt and I did a quick lunch at Subway. I was going to take a picture, but the guy basically demolish my sub and it was just not as photogenic. But it was tasty. Sometimes Subway just hits the spot for me. Today was one of those days!

Matt and I then headed to Total Wine and More (may or may not have done some free wine tasting) and picked up a build your own 6-pack for celebration.

So the couch. My love. Some good beer. And relaxation that our house hunt is over is where I’m headed tonight.

Today has been good. Long. But good.

I hope everyone had a safe and fun New Year’s Eve.  Mine was actually great.

Guys, if there was any better way to start my new year, I don’t know what it would be.  Let me give you some details.

As I stated in my last post, Matt and I decided to do my birthday dinner on Saturday.  I actually wasn’t aware at the time it was New Year’s Eve, but it really didn’t interfere with anything so we decided to go with it.  I had told him that he could pick the restaurant we went out to.  This kind of scared me.  As I have stated before going out to eat is still a big fear for me.  Not being in that control of preparing my own meal and knowing exactly what goes into it, still scares me.  It also bothers me because I feel like sometimes I still choose the “safe” dishes over maybe another dish that I might have actually enjoyed more.  But I really wanted to challenge myself.  I was also nervous because Matt is real big on challenging me, sometimes kind of unaware of the pressure and the anxiety it gives me.  So I was worried he was going to pick like a hole in the wall Chinese place and make me get fried food.  (something I actually use to love and actually hope to be able to eat again, I mean really..crappy Chinese food is the best) But sorry, just not there yet.  But he was very respectful and choose a place that he thought I would be comfortable with and we would be able to have a good time.

He chose a  new sushi place that we had heard very good things about.  Sushi is one thing I will never say no too.  My ED has no control over that, haha, I could eat sushi probably everyday.

The restaurant he chose was Blue Wasabi.

We almost went to our favorite sushi place that we always go to, but wanted to try something new.  I’m glad we did.  They had a lot of interesting rolls to choose from.

Oh and they really do have blue wasabi.

We of course started with edamame.  It’s a must.

Also a starter must for Matt was one of these.

We then got a yellow tail sashimi. I love sashimi and yellow tail always seems to be a favorite.


Matt and I typically just share a bunch of rolls, but he did get one tempura roll, which I am still not brave enough to try.

The rest of the rolls we did share. My favorite was the Marilyn Monroe.  It was ah-mazing!

and it was pretty to look at.

It makes me want it again just by looking at it!

Next was my choice.

I loved it, but Matt wasn’t too found of the cucumber wrapping.  I’m obsessed with cucumbers so I thought it was great.

And the last roll we got was Red Hot Chili Pepper

This was the one I was originally most excited about, but it wasn’t as good as I was hoping.  Now it was good, but I think after having the Marilyn Monroe, anything after had pretty high standards to follow.

Overall, it was all really good though.  Challenge complete.  I actually felt completely fine eating everything and after wards as we were walking around (the restaurant is in an outside mall type of area) I even stopped in and got a tasting of my very first gelato! I was too full to actually get a full serving, but I was proud of myself for at least doing a few flavor samplings.  I’m really finding the obsessive thoughts I use to have and fear of anything extra are really starting to go away. It’s great!

We walked over to Total Wine and More and picked up a build your own six-pack and headed home.  We originally had plans to go out to a friends, but decided since we had such a good night together we just wanted to go home, veg on the couch, and bring in the new year together. In comfy pants.  We did bust out a little bit of this though!

i mean what’s new years without a little champagne? asti is by far my favorite!

We watched some White Collar on Netflix till it got close to the count down then celebrated the new years, quiet, together, happy.
