Hey loves! Happy Friday! Woo-Hoo!

I’m excited. Are you excited? This week has been crazy for me, yet it flew by so quickly!

I have a lot to do this weekend, and most of it is not fun stuff. I really need to keep a step ahead with this whole studying thing, so I foresee a lot of reading in my future. Yay.

Hopefully I can fit some fun in there somewhere. Knowing my ADD I will. 🙂

But I wanted to share with you guys some of my, you guessed it, Friday Favorites.

Remember when I told you guys about Enjoy Life on an earlier Friday Favorites?

If not. You should.

This company is amazing. Not only was the granola one of the tastiest granola’s ever, but afterwards they offered to let me sample their cookie line that they have out.

Ok guys. I am not a huge cookie person, but seriously. Even I demolished these in no time flat.

When I first received them, my first intentions were to have Matt be my guinea pig and try them. But after shoving a broken piece of chocolate chip cookie in my mouth it was over.

I had to have my own. Or two.


And they’re gluten, dairy and nut free for all you gluten, dairy and nut haters out there!

(kidding. about you hating. not about the cookies)

I have tried all of the flavors except Sugar Crisp. But I’m sure it’s equally amazing as the others.

How can they not be. This company has done nothing but blow me away with the quality of their products!

 These cookies have been a great addition to my desserts.

Yup. Still on the whipped cottage cheese.

Well it went into my mouth that is for sure. I really did not think texture could make such a difference, but it does.

I am hooked.

You guys are also pretty aware of my cereal mess obsession.

Wanna know whose helped me out in that department?

Nature’s Path.

They were amazing to send me all of these goodies.

First off, how cool is that box? It was like a treasure chest. There was definitely lots of treasure inside!!

As seen above I’ve made some good use out of the products. I used the Crunchy Maple Sunrise in a cereal mess (seriously for a cereal this stuff is amazing!!)

I also took the puffed cereal and made my own Luna Bars! That was fun! And they turned out amazing.

And then a little extra granola crunch added to my pumpkin “quesadilla”.

Matt also got a little goodie surprise. Granola in a panda? Can’t get better than that!

I never was a use granola person, and now I feel like I am addicted to the stuff!!

Overall, another company I have not been let down by yet. Great stuff!

And one more recent goodie for you guys.

I have seen Fit Mixer Amino drinks all over the blog land.

I was super intrigued. And I got the opportunity to try a few samples.

(Thank you Fit Mixer!)

When I got them in the mail, Matt had a dodge ball game that night. Perfect opportunity to try it out. I mean you need some amino acids before that kind of activity right?

He very willing fully obliged to trying it out.

You guys wonder why I love this guy.

He said it tasted like kool-aid. I agreed. Amino acids that taste like kool-aid? yes please.

I’m saving the mixed berry for me. He can’t have it!

wiaw #42 – short and sweet

Well loves, this might be short and sweet.

I am so over-whelmed with school right now. There is just so much information crammed into such little time. And I have become a bit of a slacker when it comes to studying. Losing my OCD habits have been amazing in my recovery world, but not so much in my school world. Sometimes I just have no motivation. I need to kick it up a notch!

♥ ♥ ♥

But it is What I Ate Wednesday, and I almost feel an obligation to do a post. My little way of checking in, and checking in on all of you!

We’re still kicking it with the fitness theme and trust me, I am loving my fitness lately.

♥ ♥ ♥

I have a few morning pick me ups, and sometimes when I don’t have time to do a full work out. This is my go-to.

This is a great warm up to any routine or a nice little pick me up on its own. When I tell myself I don’t have time for a workout, I see this and say ok, you have 10 minutes.

And oh yea. You need your Chobani to fuel you up!

(I swear I should work for Chobani I eat so much of it!)

Meals have been kind of blah and boring.

Not having as much time to prepare definitely impacts that.

I did make this tasty treat the other day.

Pumpkin “quesadilla” topped with Peanut Butter/Chocolate Protein dip/frosting and some granola.

It was quite the tasty treat.

I also had a never disappointing cereal mess.

I swear these never get old.

(By the way, frozen banana in a cereal mess = ah-mazing)

Another amazing thing that I made lately was this.

Whipped Cottage Cheese.

May not be much to look at, but good golly, why did it take me so long to try this.

I made mine with a chocolate twist adding some unsweetened cocoa and vanilla NuNaturals Stevia. It was nothing short of amazing.

Now I will give credit when credit is due, and I must thank the lovely Katie and Sara for introducing me to this.

Seriously. Thank you.

I stuck some fresh strawberries I got in the freezer for a few minutes (yes I might be obsessed with frozen fruit) and had a wonderful dipping agent. (yes I might be obsessed with dipping things)

This may be a normal dessert for awhile.

Until I get sick of it.

oh hello friday favorites/obsessions

I really feel like this week flew by. Which is a great thing! I have a week off from school for the 4th of July holiday! How awesome is that! I didn’t even know we had it off till the other day and got super excited. Thankfully this class is not nearly as stressful as I thought it was going to be. Yes it’s a lot, but it is a lot of hands on which I love!

I have successfully administered SQ fluids and even did an IV injection. How cool huh? Well, cool to me. But I’m a nerd like that. But if it wasn’t for nerds like me your puppies and kittens wouldn’t have anyone to take care of them!

So I thought I would do another round of Friday Favorites! It was awesome to be able to share with you guys some new food favorites and products of mine. As long as other random goodies. Cause we like random around here.

♥ ♥ ♥

First up, some more new to me products that I was able to try out.

Have you guys heard of Nature Box? They are this company that will send you healthy snacks monthly. It’s a pretty nifty idea. All of their products are free from partially hydrogenated oils, high fructose corn syrup, trans fat and all that other nasty stuff. A great way to get whole, healthy snacks in your house. And you don’t even have to waste the time debating on what to get. They choose for you. (although I think half the fun of shopping is my indecisiveness on what to buy and finally choosing something) but it’s also super fun to be surprised.

Nature Box was awesome enough to send me a little sample of their Cinnamon Spiced Almonds. Ok guys. You know the almonds you get at state fairs? This is exactly what these guys tasted like. They were amazing!!

I highly suggest checking this company out if you’re looking to get some new healthy snacks in your house. Nuts are always great to have on hand for a quick pick me up and snack before meals.

I have been grabbing a few after my work outs and before dinner time if I need a little snack. They are great.

With as good as these guys are I would be so interested to see what their other snacks were like. Looking at their website and past months packages I seriously was almost drooling.

I’m a snacker, what can I say!

Next is not a product, but a new to me concoction I finally whipped up.

And honestly. I’m mad at myself for waiting so long to try this.

I have seen “sweet” sweet potato concoctions all over the blog land. But I actually have always done savory sweet potatoes.

But I finally decided to go the sweet route. Take the plunge.

Sweet potato topped with pb/protein mix, cottage cheese spiced with maple syrup, cinnamon and topped with granola.

Holy good golly.

This thing was amazing.


I don’t know if I will ever be able to go back to savory. This ruined me. In the best way possible.

Another obsession favorite of mine.

I swear I’m currently addicted to cereal messes right now. Just so cool and refreshing in the morning.

friday favorites

This Friday is kind of bittersweet for me.

It’s my last Friday before I start my vet tech classes again.

Yes I know in previous posts I complained about how bored I was, but to be honest I loved the time off.

It was so nice to not have to stress about if I was going to have enough time to study, or being prepared for what was next. Because I had nothing next. Of course at the end and when it’s going to get crazy again is when I actually am able to appreciate it. But that’s life right?

But in this time off I’ve been able to find some new fabulous finds I want to share with you!

Let’s start with my food finds shall we? Food is by far one of my favorite things!

♥ ♥ ♥

I have been able to work with some amazing companies lately.

First is Metcalfe’s Food Company.

They are actually based in the UK, but they were still so amazing and sent me some samples.

They didn’t travel so well, 1. coming from the UK and 2. me living in 115 degree Arizona, so the product was a bit melted (insert why there will be no actual product shots), but these were still nothing short of amazing.

But can you really go wrong with anything covered in chocolate? Even Matt liked them and he is so anti-rice cake. These were a perfect little dessert.

They offer a bunch of other products, I highly suggest you check them out.

Next I was lucky enough to win a giveaway from Michael Season’s Feel Good Snacking.

Not only did I get a ridiculous amount of chips, but these things are amazing.

I have been on such a chip kick lately. Once I pop I can’t stop!

If you can find these in your stores I highly recommend picking them up! Matt and I finished a bag in one day. They were that good.

Another great company that was kind enough to send me samples was Enjoy Life.

Again Arizona did me in with the heat.  I was sent their double chocolate crunch granola and chocolate mega chunks.

Unfortunately the mega chunks did not travel well. It was a big bag of chocolate melty-ness.

Don’t worry. It went into the freezer and I’m hoping to salvage it in some sort of baking way. I’ll make it happen.

The granola was a bit melted, but that did not change the fact that it was one of the most absolute delicious things I have eaten in awhile.
Now granted, I love chocolate, have one of the biggest sweet tooth’s, so there really was going no wrong with this.

On top of a cereal mess, or straight out of the bag. This stuff is a winner!

And for the one Friday love that is not food related is My Barre 3.

wiaw 39 – let’s get fruity

As the title says, let’s get fruity! I am been on such a fresh fruit kick lately, it’s been a bit ridiculous.

Ridiculous in the best way possible of course.

I mean really how can you go wrong with fruit?

Now I still love my veggies, don’t get me wrong, but there is something about summer and warm weather that makes me crave everything fruit.

So since it is that time of the week. Oh yes, What I Ate Wednesday time, I thought I would show case some of my lovely meals and snacks that include fruit. Because there have been a lot of them.

I have also oddly enough been on a cereal kick as well.

I took a huge break from it, and I guess my body missed it. Craved it. I gave in to it.

But you can’t just have a plain ole bowl of cereal.

That would be boring. And we don’t like to be boring around here.

This was a yogurt mess of a cereal bowl. And topped with what? Of yes. Tons of fruit.

There was a Chobani vanilla greek yogurt in there, topped with a mix of cereals, frozen banana, fresh strawberries, raspberries and blueberries. A lovely drizzle of PB2 to top it off.

This bowl was so good, it had to be repeated a few days later.

This one was pretty tasty as well. Instead of greek yogurt, I made a cottage cheese mess. Topped with of course a mesh of cereals, frozen banana, strawberries, raspberries, and you guessed it, a peanut butter drizzle.

Sorry again for being so MIA lately. I really feel like I fail you and I actually really miss blogging.  But with school and all the other drama going on right now, I am finding it hard to have the motivation to blog.  Especially when I really don’t have much to show you!  Meals have been kind of blah, because honestly, I have been kind of blah. But hello Wednesday, I missed What I Ate Wednesday last week due to not having internet and just could not have that happen again. It was weird how odd it felt not having a post ready, but it just simply couldn’t happen. So since Jenn is going green for March, and it was just St. Patrick’s Day, let’s do a little recap.

Breakfasts have kind of been looking like this.

Lately I have been doing english muffins with toppings including nut butters, Chobani greek yogurt, my banana bread hummus and of course my variety of jams. Because let’s be real, I have a lot of them.

When I’m kind of rushed in the morning it just seems to work for me.

I did however have an extra special St. Patrick’s Day Chobani breakfast.

It was a green morning! I just had to do it! Totally the shirt I wore that night too. Love it.

Lunch was a random bowl of cereal. I haven’t had cereal in forever. I was just craving it.

A more natural golden grahams with less sugar? Um, yes please.

I had actually been craving golden grahams for awhile, so when I saw Mom’s Best Naturals offered this (and it was on sale) it was a no brainer. And it was pretty tasty.

Good choice.

For dinner we did what most normal people do on St. Patrick’s Day.

We got sushi.

I had been craving it. And I know not very Irish. Wait. Not Irish at all.

Since we just moved we wanted to try out a new place by us.
We chose Pearl Sushi.

it was a bit windy, but we still decided to sit at the outside bar.

Insert bad blogger alert. Only my appetizer got photographed. We were so hungry by the time the rest of the food came it just didn’t happen!

A green sake bomb was consumed as well!

I’ve really come to love seaweed salads. Maybe seaweed in general. I don’t know. Getting my iodine in though!

Matt said he wasn’t too impressed with the sushi (we are sushi snobs) but I thought it was decent. Service could have been better, so I don’t know if we will go back. Lucky for us there are plenty more to choose from!

After dinner, we had plans to go see Flogging Molly. I had bought the tickets for Matt for Christmas. I have had a very hard emotional week, not only with school and my grandma, but with my body as well.  I have been doing an amazing job lately pushing myself with food. Making myself eat more even if I don’t want it, making myself eat new things and it really took a toll on me physically and mentally.  When I feel the physical progress it automatically triggers my mental issues.  ED still obviously plays a huge part in my life because you would think progress (weight gain) = good, but that scares my ED.  I’m getting through it though.

So instead of the show we decided to actually meet up with a few friends at an Irish Pub (Our favorite actually. It’s where we went after we got engaged!). I figured being around people, especially people I know care about me, would be better for me. And it was. And Matt and I ended up having a great night out together!  Flogging Molly will always be here next year!

wiaw #25 – green smoothie

Things have been kind of crazy around here.  I am trying to get use to my new school schedule (getting up at 5am is a total change from being able to sleep in until 9am) but I am working on it.  It’s really not the fact that I have to get up so early, because I am honestly a morning person and don’t mind it.  But it is also switching around my eating times that I find the hardest to get use to.  I am not use to eating at 5am and really can not make myself eat a full meal.  But we’ll get on to that later. Because it is of course What I Ate Wednesday time!

But before we get started, we all know I make you guys go thank Jenn at PeasandCrayons for hosting this event.  Without her, this wouldn’t be possible and I wouldn’t be able to drool over all of your delicious looking eats and be extremely jealous of what I’m not eating.  But it just gives me ideas right?

And how ironic that Jenn had the idea of veggies February, because the star of my breakfast, yes I said breakfast, includes veggies!

So as I said my meals have kind of had to change. It went from me having time to prepare breakfast, even if I went to the library to me being rushed out the door.  As I said I just can’t bring myself to eating a full heavy breakfast at 5am. So breakfast have been looking like this lately.

I was actually kind of excited because I am a weirdo and really really like green smoothies.  When Matt and I were out I made sure to stop by the store real quick and get some spinach.

In my mix was:

2 heaping handfuls of baby spinach

1/2 frozen banana

1/2 cup frozen cherries

a handful of blueberries that we had leftover

1 scoop Sun Warrior Chocolate protein powder

~1tbsp raw agave

This thing was pretty tasty.

I however do not enjoy scenes like these.

6:00am. cold. not happy.

Please excuse the messy car. I think a good detail is in order. I really do look like a pig by the looks of this. I swear my house doesn’t look this way…all the time.

Ok, you caught me. I’m a bit messy. Secret revealed.

But really my meals have been kind of boring. I just really can’t seem to get back in the swing of things of preparing exciting fun new meals.

Something that I did have recently that got me excited.

I haven’t had cereal in forever and was totally craving it.  And I also re-united with a long lost cereal love. Cinnamon Puffins.  I’ve had a box of peanut butter Puffin’s laying around for awhile and they just don’t do it for me.  I know everyone seems to be obsessed with them and are the flavor of choice, but not for this girl. So the box has been sitting and sitting. Since I don’t eat a lot of cereal I just never picked the cinnamon ones up, but the last time I went to the store I just had a calling for them. So glad I went with it.  Now, I know cereal is cereal, but this bowl of  cereal was amazing.  There was also some corn flakes and an organic cinnamon crunch in there.  But I’m telling you the cinnamon Puffins Mixed with the left over Chobani and chocolate almond milk. It was one tasty breakfast.

In my mix went strawberry greek yogurt, topped with cinnamon Puffins!! And also some strawberries. Although I do love my strawberries I can not wait for berry season again.  These were good, just not as soon as when they are in season.

With my new schedule I really want to work on having better meals.  But lately I have not been doing so well mentally with my eating.  I think I, or at least ED, secretly liked that I was so busy through out the day and had smaller meals.  I totally used school as an excuse.  Now that I actually have time and am home for more meals, I am finding myself upset at myself and scared that I am eating too big of meals.  I look in the mirror and know I need to gain. I am no where near where I need to be, but why does the actual process scare me so much????

It is so frustrating and I get so down on myself, and with everything else going on it just all is really piling up.

I feel an emotional breakdown coming. Fingers crossed I’m wrong.

I am actually multi-tasking right now.

I have a huge test tomorrow and I should be studying.

Well, I am actually.  Matt is reading my notes to me as we speak.  What a guy huh? But it helps because look at this.

This is not only a 100%, but it’s my second 100% this week!

I think I’ve mentioned, oh probably 18927312 times, how fast paced this program is.  We have a quiz every Wednesday, a practical every Thursday and a test every Friday.  In other words we have three tests a week.  Wednesday I got a 100% on my quiz and today I got this bad boy!  Needless to say, I’m pretty proud of myself.  This week has been a bit easier though because we are only covering one chapter when usually we do at least 2-3, but still, I’ll take it!  Test today and then one more week of Anatomy and Physiology and then hopefully I will have a less stressful month.  My next class is a core class.  I had to take Ecology and I’ve heard it’s pretty easy as long as you do the reading, which let’s be real, I do.

I have noticed with me getting home late I have definitely been getting in some food ruts that I need to get out of.  I’ve been having a hard time mentally though with my weight gaining process.  I’ll do well one week and gain and then automatically freak out about the fact that I did gain and I see myself going back to “safe” meals.  It’s like I know I need to gain, but I don’t want to.  Since I’ve gotten to my mid-way point, I’m just comfortable with where I am and am afraid of “going too far” or “gaining too much”.  I look at myself and sometimes don’t see a problem with my weight and where I’m at.  Yet, I think I know I still have more to gain.  I guess that just proves my ED is a little bit more present than I want to admit.

So I have no problem getting my vegetables in, but almost nightly it’s been in the same form of oven roasted broccoli and cauliflower.  So the other night I wanted to switch things up. I added a bit of color to my dinner!

Matt has got his cooking bug back (yay!) and the last time we went to the store we stocked up on a bunch of produce.  With me doing quicker lunches and dinners I wasn’t using as much produce as I did when I wasn’t working or going to school, so we stopped buying the things that went bad quickly or that we didn’t use that often.

I forgot how much I actually enjoyed a nice fresh salad. It was quite tasty.

Let’s be honest. ED eating days are gone and tiny meals don’t cut it anymore. I don’t care how big you make a salad. It’s not filling. Or enough.

Next is the exciting part.  My breakfast yesterday.

I took the idea from Katie and of course tweaked it a bit, and in the end, had an amazing breakfast.

I love breakfast and love trying new things, but sometimes am a little disappointed. Not today.

Pumpkin Bread In A Bowl

Serves 1


1/3 cup canned pumpkin

3/4 cup milk (I used almond)

1 cup flake cereal – (here is where I switched it up a bit. I had corn flakes on hand, but to add a little sweetness I did 1/2 cup corn flakes 1/2 cup fiber one honey squares)

1/2 tsp vanilla

1/2 tsp cinnamon

sweetener of your choice (I used maple syrup, but you could use stevia, sugar, honey, agave)


Blend all ingredients together. The cereal will have a thin consistency at first, but if you leave it in the fridge (after blending) for even just 10 minutes, it starts to get really thick!

i was honestly not expecting this to taste as good as it did. The addition of the maple syrup made it just sweet enough and I really think using the fiber one cereal in the mix helped sweetened it up a bit too.

There are also endless additions and toppings you could add to this. Granola, pecans, chocolate chips, peanut butter, the list goes on. I added this wonderful granola that I had left over that the lovely Sam had sent me from over the pond.

I’m usually not a huge granola person, but this stuff, I couldn’t keep out of my mouth!

And now that I think about it, adding pumpkin butter to this might make it even more amazing. Next time maybe?

I have a lot of reading to do this weekend and I am volunteering all day Saturday, so hopefully I’ll have some time to cook up more tasty dishes. Matt getting his cooking bug back has gotten me wanting to spend more time in the kitchen too! So let’s all hope for some future tasty meals that I can share.

Do you get your daily fruits/vegetables in? I never seem to have a problem getting my fruits and veggie’s in.  I love almost all fruits and veggies and always make sure I have something in the house!

What’s your favorite veggie? Fruit?  Fruit for me. Banana’s. Duh. Apple’s are a close second and I’ve been loving pears lately too. Veggie for me, as I stated I am in a roasted broccoli and cauliflower rut.  I’ve also started roasting eggplant again.  Add some liquid smoke and smoked paprika on top. Ah-mazing.
