wiaw #20 – peanut butter and jelly – oiaj style

Well loves, my vacation is finally over. Boo!

I really enjoyed my time off from school, maybe a little bit too much because I have almost no motivation to go back! I mean, of course I am going to go back, but I just hope I can quickly get back into the swing of things. I’m going to have too, because our final is this week!  I’ve been doing really well in this class I would hate to ruin it in the last week.  I’m sure I will be fine though!

So it is already that time again. What I Ate Wednesday.

I don’t know the last time I actually did a complete day of eats, but you guys I’m sure have come to not expect that.

But before I do show you some tasty eats that I have been enjoying let’s head over to the lovely Jenn’s at PeasandCrayons and thank her for being the lovely host.

As I mentioned I of course did not get a fulls day of meals, but I did however have two amazing breakfasts that deserve some spot light.
Again, my excitement for these should be little if no surprise to those of you who know me.
Two of them.
I know right.
Each special in their own little way.

OIAJ to me is always bittersweet.  Yes I love the mixture, but it means I am out of whatever deliciousness was in the jar.
I’m pretty good at keeping back-ups, this one however I did not.
I actually went to the farmer’s market specifically to get this and they were closed!
I was pretty bummed.
But I still did enjoy this breakfast.

And let me tell you, these were no ordinary oats. Oh my do I have a lovely treat for you all.

I made Strawberry Banana Protein Oats.

Strawberry Banana Protein OIAJ

In my mix:

1/2 cup rolled oats

2 tbsp chia seeds

2-3 tbsp strawberry banana protein powder (I used Spiru-tein)

1 tbsp cinnamon

1-2 tbsp maple syrup

Let me tell you. These were delicious.

might have been even more delicious with the addition of a nut butter. but then again what isn’t better with the addition of nut butter. nothing i tell you.

The combination with the left over pumpkin butter was just over all awesome.

And if you can see my oats were pink! How cute. I love pink!

Very soon after this while making Matt breakfast another great/sad thing happened.

I used all of our almond butter.

But you know what that means.

Oh yes, another OIAJ.

This one however topped the last, not because it was in a nut butter jar (although I think that would have been enough) but I took a little spin off of this recipe, but added/subtracted my own spices and obviously didn’t bake it.

I will call these Cinnamon Apple OIAJ

this by far was one of the best oiaj i have had in a bit.

Cinnamon Apple OIAJ

In the mix:

1/2 cup rolled oats

2 tbsp chia seeds

1/2 unsweetened applesauce

1 tbsp maple syrup

1-2 tbsp cinnamon

dash of either pumpkin pie spice or apple pie spice

topped with banana and a sprinkle of cinnamon

I usually keep my oats pretty plain because I feel when you add too much it really takes from the oatmeal flavor and texture which I love all by itself.  So the fact that I am so excited over how delicious this was, let’s you know it was pretty delicious.  I may have to make this into a oatmeal pancake recipe as well.

I know a lot of people have mixed emotions about OIAJ, but I love them. I just love eating out of random containers. I’m weird like that.

What is your New Years resolution?

Do you prefer your oatmeal plain? Or do you have to spice it up? For me it really depends on my mood.  Sometimes I love the plain nothing in my oatmeal taste, but sometimes when I find a right combination, I’m in love with flavor.

Thankfully this week wasn’t nearly as stressful as I thought it would be.

Since I read so much ahead of time, I actually knew most of the information before class even started and this time around my teacher is actually writing the tests and quizzes as opposed to her receiving pre-made ones by the book company. Which is a lot nicer, because what she actually talks about in class is now what is actually on the quizzes and tests.  Makes sense right? Well, sadly it wasn’t like that before.

So I am proud to report I did quite well on my quiz, practical and test. Oh yes, I basically have three tests a week.

It’s awesome.

Along with feeling more comfortable with the material I actually did not go to the library in the mornings before class.  A few of us actually met up a few days to study and review, but even when I did that I was able to spend more time at home and more time preparing a decent breakfast.

I actually had the same thing two days in a row. Can you believe it?

Oh wait, coming from someone who tends to get into ruts, I’m sure that actually isn’t too surprising huh?

What can I say, I’m predicable. 🙂

Welcome one of my true breakfast loves.

soy chocolate pudding panini. i seriously love these things and can’t get enough of them. i’m such a sweet eater it’s a bit ridiculous.

But alas, again I was a bit rushed this morning. I actually can’t believe I took the time to photograph it, because it was actually consumed in the kitchen, standing up, while making/packing my lunch.  Not to say it wasn’t enjoyed, how could I not, just again rushed.

i used the pumpkin butter again and of course you have the apple/pudding/and some cinnamon love meshed all in there. grilled to perfection.

I try and tell myself that since the apple is in there this is an acceptable breakfast and that pudding for breakfast is ok.

That’s what I tell myself.  It seems to be working.

and of course paired with the remainder of my apple and pudding on the side for some extra dipping.

Not gonna lie, as soon as the photo’s were taken the apple went right into that pudding.

And then into my mouth.

Another frequent visitor came back for an appearance on the breakfast menu.

i know i said i was getting egg sandwiched out, but not having it for a few days brought back my craving for it. although i think i crave the jam component more than the egg component.

By the way, I’m not sure if any of you have tried this (although some of you told me you did and that made me super excited!) but it is a very very messy breakfast.  At least for me. Maybe I’m just messy. That’s always a possibility.

i even took the time to pair this with a delicious mini greek yogurt mess. i ended up adding a bit of my apricot preserves to the yogurt to sweeten it up a bit (which was amazing) and topped it with some cherries and pineapple and a light sprinkle of my maple cereal.

I haven’t had cereal in awhile (I was told by my therapist that it was one of the top binge foods, so that kind of freaked me out) so I try and use it sparingly now.

Although I did just finish my big tub of Fage greek yogurt, and we do have some dark chocolate almond milk. And with the addition to cereal in that tub…is kind of amazing.  So it may need to make a comeback. Just a quick one though.

I’m actually starting to worry that I eat a bit too much jam/jelly.  One the sugar issue kind of crosses my mind and two I need to stop making the excuse “oh I need to gain it’s ok”  Because when I don’t need to gain anymore.  These habits may be hard to break. And may cause restriction due to me wanting to “cut back”.  Both not good options.

Although that may be a complete eating disorder thought.

I don’t even know anymore.

Even though I haven’t been too stressed out and going to the library in the morning (trust me my after school/appointments/nightly sessions are still happening) I have been doing a lot more studying at home.  I’ve mentioned before how great Matt has been with helping me study, but the other night I had another study buddy.

Now when I say study buddy you would think I mean someone who is helping me study. But I think this one had other motives.

oh he looks soooo super cute doesn’t he. i swear this guy wants nothing to do with me, unless i’m laying on the couch, trying to do something else.

I swear this cat when I try to pet and love on him he wants nothing to do with me.

But oh, mom is laying on the couch. She looks busy. I think I’ll go lay on her now.

i mean seriously. look at that face.

Now what a great study buddy you think right? I mean. He’s just sitting there all supportive.

Then this happens.

Of course.

But Matt’s parents are driving down to do some shopping (they moved to Payson, AZ which is a small mountain town that does not have some of the stores they like) so that is always a good time to see them.  And then let’s pray the Colt’s actually win a game.

I just wish I could give more right now!

WIAW #8 – presentation

If you’ve read my recent posts I am having to be a little more creative with what I’m eating.  Not only are we on a very tight budget and not as many ingredients are available to me, but in aiding in my recovery I was told a little variety would be good for me.

So let’s just say I’ve gotten creative. In more ways than one.  Not only are my meals different, but well, the way I serve them has been a bit different as well.  Let’s recap.

i know we've seen tons of OIAJ, but this one was in my jar of peach butter that i got at our local farmers market. oh my. it was good.

topped with Cville clusters, strawberries and a dab of banana peanut butter. even better.

Cville clusters = new crack oatmeal topping. Seriously amazing.

Ok so maybe oats in a jelly jar isn’t that abnormal. Sure is delicious though.

what about a cottage cheese container? this was a delicious buckwheat bowl topped with chocolate and regular coconut butter, and some banana slices.

Almost every time I finish a container of something I think of what I can put in it. I have to be economical and use every last bit! And this cottage cheese is just that good to where I don’t want to waste any bit of it.  Although as good as this cottage cheese is, I don’t think I’m a cottage cheese and oats person.  Maybe because it was chocolate? I don’t know. Next time I run out I’ll just lick the container instead.

ok another OIAJ but again so delicious. Nuttzo makes amazing peanut butters and this was heaven in a jar. topped with raspberries and bananas. all mixed in, ah-mazing.

I have so many open jars of nut butter that it takes me forever to finish one, but when I do, seriously OIAJ is amazing. I know some people say they don’t like them, and I get the whole scrapping thing, but totally worth it to me!

And one of my latest and surprising most delicious combinations.

cereal in a chobani greek yogurt container. the left over yogurt and the addition of chocolate almond milk was amazing. and anything with puffins is pretty great.

the simplest things tend to satisfy me the most because i was one happy girl after this bowl of cereal.

Not only is it just a little bit fun to eat out of these containers, but it saves me on doing the dishes too! How great is that!

WIAW #6 – breakfast all day

Good morning loves.

Another wonderful Wednesday, which means another wonderful par-tay hosted by the beautiful Jenn at PeasandCrayons.

So I think the title says it all. I had breakfast for every single meal.

I did it. I’m not ashamed.

I have been on such a sweet kick lately it’s ridiculous.

Soy chocolate panini obsessed anyone? Although sometimes that feels like dessert. Again. No shame.

Ruts are becoming my trend, but I don’t like to look at them as ruts, just listening to my cravings. So what if I had breakfast for all my meals.  Whose to say a specific food is “breakfast” food anyways.  Why so obsessed with labels? With that being said, here is my day of breakfast. (and trust me, I enjoyed every bite)

My real breakfast was OIAJ. One of the best ways to start a day.

i find it kind of funny that my coffee mug is bigger than my jar of oats. what can i say. i like my coffee.

This was the first almond butter I tried and has been the best I’ve had. And I’ve tried quite a few others.  I don’t know what it is about it, but it is amazing.  The only bad/good thing was I don’t think I mixed it well enough in the beginning so it got dry towards the bottom.  Which was bad when I was trying to spread it, but it was good when it came time for the OIAJ because there was a lot left over on the bottom.  And that was great!

It is always a great day when it’s started off with OIAJ. Why is everything better with nut butter? Seriously. If I had a nut allergy, I would be a sad sad girl.  All of you who are, my apologies and condolences.

On to lunch breakfast #2

what can i say when i'm in the mood for oats i'm in the mood for oats. chocolate protein oats topped with banana and crumbled cinnamon puffins. mini yogurt mess on the side with a shot of a cantaloupe smoothie, which was NOT good by the way. i love cantaloupe, i added about 1/4 of a frozen banana, but i don't know. it was not tasty and it was not finished.

i'm either going to turn into oatmeal or a banana i consume so much of the two. puffins would be a close third. possibly pudding. let's just say i eat a lot.

I recently did a post of eating what you crave, and I am still a firm believer in that.  I am definitely in a sweet/breakfast rut.  (an un-pictured bowl of cereal was consumed as a snack as well) And I think that’s ok.  I still make sure I get my proteins and fats in, but thankfully nut butters are awesome for that!

And just when you thought I would get sick of oats.

Dinner. Breakfast #3

I seriously put protein frosting on everything now.  It’s like crack. I bought a few sample packs of Spiru-Tein in chocolate, vanilla, cappuccino and cookies and cream.  I’ve used the chocolate which is really really good and today was the first time I used the cappuccino.  I’m a fan.  I’m super excited to use the cookies and cream! They have a chocolate peanut butter flavor as well, but didn’t have it in the sample pack, and I didn’t want to buy a huge container unless I knew I liked it.  Although peanut butter flavored anything you can’t really go wrong with.

Maybe tomorrow I’ll be done with my breakfast rut. Maybe not. I’ve noticed I tend to this do this, get comfortable with a certain meal and make it over and over, but in the end I move on to something new and different.  I see this one as being no different, so I have faith I’ll move on…Eventually.  But until then. I’m happy.

to fructose or not to fructose

I try to lead a healthy lifestyle.

After reading multiple books including The China Study, Jillian Michaels – Master Your Metabolism, Skinny Bitch, The Kind Diet and many more, it really influenced me to cut certain things out of my diet and to only put clean healthy foods into my body.  At first it seemed like a great idea, and honestly after reading some of the information and facts certain things just flat out disgusted me.  With Matt already being a vegetarian I rarely ate meat to begin with as it was a hassle to cook two meals, so I typically just ate meatless meals.  I would only really eat meat when we went out to eat.  Which wasn’t too often either.  I never really put the title vegetarian on myself (as I could NEVER give up sushi) but other than that meat very rarely was consumed in our household. But after reading some of these books and learning more about industrial farming, meat just really wasn’t appealing to me anymore.  It disgusted me to read the details on not only how the animals were treated (although that would have been enough) but also the lack of regulations in the industry, the corruption, and some of the shit (literally) that ended up in the meat. It also gave me a new view on things like high fructose corn syrup, hydrogenated fats and oils, refined grains, and artificial sweeteners.  The more I read, the more information I learned the more I cut out of my diet.  But now looking back…I’m beginning to think that all this “being healthy” was really just fueling my eating disorder.

Now I am a firm believer in not eating overly processed foods, and I think that cooking from raw real foods is the best and healthiest way to cook/eat, and I definitely don’t buy into that whole high fructose corn syrup “is made from corn and the body can’t tell the difference”, but should I not buy any product because it had HFCS in it? Or because it had a small amount of partially hydrogenated oil in it?

Here was my dilemma.  Matt and I are very tight on money right now.  With me now seeing a nutritionist, therapist, and doctor regularly, and with me also not having a job, the bills really add up. Very quickly.  So grocery shopping at Whole Foods had to stop and shopping at our more chain supermarkets had to begin.  Which for someone who was buying all organic is a big change.  Thankfully SafeWay has really expanded on being more health conscience and even have their own Organics brand.  But today’s situation was in the cereal isle.  I typically buy organic cereals, I make sure they are whole grain, low in sugar and no additional preservatives or additives (ie. HFCS) but they are also $5 or more a box.  The same type of cereal, but generic is on sale for 2/$5. No brainer right? Good deal.  Except I of course look at the ingredients and see that there is HFCS in it.  And I just could not bring myself to buying it.  Matt told me I was being incredibly silly and that I obsessed way too much over this. So is it just a mental thing? Yes, probably.  It is one cereal, one that I will not even eat everyday. It will not kill me overnight or ruin my overall health.  But the idea that HFCS is such a horrible thing (again maybe driven by ED?) I did not buy it.

So my question is.  Is all this hype worth it?  Worth the extra $50/week you may spend in groceries to get organic cereal and organic this, organic that.  I definitely thought so. And part of me still does.  I still want to put whole, healthy, clean foods in my body.  But if you were on a tight budget with limited income, would you switch to lower quality products?  I feel like sacrifices have to be made right now, they have to.  The money just isn’t there to buy all organic anymore.  And I have to think.  I use to not care at all about ingredients, and I was healthy then.  Am I really healthier now?

I know a huge part of this for me is my ED driven thoughts, the fact that I can ONLY eat healthy clean foods and if not, I need to restrict them, but I am curious on what other clean eaters think about this topic and if you dissect the ingredients like I do.  Also what you would do in the situation of cutting your budget and needing to save money.

For this weeks WIAW I decided not to do a complete day of eats, but what some of my favorite meals have been and some of the products that are the reasons why they are so tasty. Because let’s be honest, without amazing products we can not make the amazing meals we eat.

This looks like a simple bowl of cereal with an english muffin on the side. Well I mean it is a bowl of cereal with an english muffin on the side, but there are a few things that make this breakfast extra tasty and worth repeating. No, it's not the cute little monkey plate. I mean, he is super cute and all. All peeking through saying hello.

First off Nature’s Path Crunchy Maple Sunrise is a great cereal.  Not only does it use natural ingredients, the touch of maple is just sweet enough to satisfy my sweet tooth without being super sugary. And let’s not pretend that I just use regular milk in this cereal. Oh no.  It’s a mix of Trader Joe’s Pomegranate Kefir and Silk Dark Chocolate Almond milk.  I can’t tell you how amazing it makes just a ‘plain ole bowl of cereal’.

The english muffin is Rudi’s – Harvested Seed, these muffins are amazing.  I’ve had a few english muffins in my days and especially being gluten free these really hit the spot.  But the star of the show? Artisana Organic Cacao Bliss.  This stuff is absolutely amazing and I put it on almost everything now. It’s basically chocolate coconut butter. I have never been a huge coconut fan, but I honestly am obsessed with this stuff.  Maybe because it’s chocolate?  I mean, I have always been a fan of chocolate. On the other half,  this jam in blueberry.  It is fabulous.  I’ve tried some of the other flavors, but blueberry by far tops them all.

so what, i like to play with my food ok? I made my english muffin halves face off!

I can’t take credit for the original concept of this lunch, Tori was my true inspiration.

This lunch is not for the faint of (sweet)hearts. I add so much sweetness (yea I’m pretty sweet) to this meal that it makes me write horrible puns.  But this lunch was so good, it was repeated at least 3 times. Each time improving on the last. And the last, oh the last one is worth writing home about. (I don’t really know that my mom would care about my lunch, so I’ll just write on here about it, I know you care)

Load it up. Soy chocolate pudding, cream cheese, banana bread hummus, half an apple, dash-o-cinnamon. sides? yes please. cottage cheese topped with blueberry jam, rest of soy chocolate pudding, other half of apple for dippins'.

Take a look at that setup.  And what did I use to make this sandwich happen and special.  It might be the soy chocolate pudding by ZenSoy. It’s pretty fantastic.  And I’m not gonna lie; Kalona Super Natural organic cottage cheese, is seriously probably by far the best cottage cheese I’ve had.  I know not everyone is cottage cheese crazy like me, but I love the stuff, and this stuff tops the cottage cheese charts. And what made this particular sandwich better than the rest?  The addition of the banana bread hummus. This sandwich will satisfy anyone’s sweet tooth. Guaranteed.

ooey gooey chocolate goodness. in my mouth. should be in yours too. go make one. don't be shy. it will be messy, you will enjoy it.

I seriously can’t get enough of this sandwich and you can add anything you want to it, add some soy pepper-jack cheese like I did when I made it earlier in the week, you can add banana, chocolate chips, nut butter, jam, go crazy.  That’s the amazing thing about sandwiches and panini’s you can put whatever your little heart desires on them. I won’t judge you.

I think we have all figured out that I like to throw random things together and call it a meal.

Some on my tastiest meals are made that way and there are a few things I always have on hand that make it possible for me to make these random concoctions.  Whole wheat tortilla pizza’s are one of my favorite things to experiment with and they are so easy to make. The tortilla is like a blank canvas just waiting to be drawn on.

whole wheat tortilla, layer of pumpkin, layer of garlic hummus, topped with some baby spinach, yellow bell pepper, red onion, zucchini, tomato, soy crumbles and a sprinkle of basil love.

And of course there were some staple go to products that made this delicious pizza possible.

First is the pumpkin. I use Farmer’s Market organic pumpkin, it’s pretty tasty. We all know I ordered a whole case of it. The garlic hummus is from whole foods, now when I make my pizza’s I usually just use whatever hummus I have available, but for this specific pizza I used Cedar’s. I’ve tried multiple flavors and they are all pretty tasty.

The tortilla is actually a local tortilla that I get at my supermarket and I will say the tortilla matters so much in the overall taste of the pizza.  Not sure if it’s available to everyone, but the brand I use is Alejandro’s, they are made in a mexican restaurant in Tucson, AZ. But seriously, they are amazing.

And last but not least we simply can not forget about all the snackage. Because let’s be real, there’s a lot of it.

one of my prettiest yogurt messes, although this one wasn't much of a mess, but it was one of the best snacks i've had. love me some plain greek yogurt with a mess of toppings. cereal crunch and berry sweetness.

But there are plenty more snacks that make repeating appearances.  What can I say when I find something I like, I eat it until I don’t like it anymore.  I know everyone needs a little variety in their life, but why mess with a good thing?

Yogurt obsessed? Maybe, I buy a different kind each time I go to the store. Gotta find my favorites, and there have been a few duds (goats milk yogurt? not a win in my book. bleh. but i just had to try it).  But I can always count on my greek yogurt.  Chobani  and Fage plain greek yogurt are my main go to yogurts. They never let me down.  Add a side of Barabara’s Snackimals and you have the best late night snack ever. What add some blueberries? Ok. A little PB&J sushi? Looks cute, tastes better. Thank Jenn at Peas and Crayons for that one. English muffin halves, can’t make up my mind. Synergy get’s me going, love probiotics.  Cottage cheese and jam on a kamut puff cake? Good morning OR good night. You decide.

What is on your bed right now? Two sleeping kittehs.  Even though I am home all day the cats want nothing to do with me between the hours of when Matt leaves for work and when Matt comes home from work. Now the pup on the other hand won’t leave my side. Other then when she’s passed out (which is about 5-6 hours of the day).  But I do love my pup so I don’t mind her company.

What were you doing 30 minutes ago? Had some breakfast, watched some of the news and read a little bit of Water for Elephants.  I am loving the book! But I mistakenly leave my laptop open, so when tweets and e-mails pop up I am quickly distracted.  I’m not even sure how I got to doing this survey. So easily distracted.

breakfast was a mish mash of cereals. organic corn flakes, honey-o's, cinnamon puffins. on the side a frozen berry smoothie made with 1/2 frozen banana, strawberries and blackberries.

What are you wearing right now? Black tank top. Boring. Plain. Black gym shorts. More yawn. More boring.

What was the last sporting event you watched? I don’t really watch a lot of sports on TV. Never have been a huge fan, but I am now obsessed with NFL football. GO COLTS. I can not wait for the official season to start! Oh, and you can take me to a Cubs game at Wrigley any day. That place is magical.

i mean who doesn't like Peyton Manning? come on, i mean the guy is just so nice!

Things to do for fun: When it’s not 100+ degrees out I’ve been known to do some hiking. Love those mountains. Love the fresh air (if it even really exists in Phoenix) the solitude, and tranquility. It’s so refreshing to be “on top of the world” (have I ever mentioned I was proposed to on TOP of a mountain. My fiance knows me so well) And some bike riding. No really. I ride my bike everywhere.

lunch was a roasted veggie panini. on the sandwich was roasted red bell peppers, zucchini, eggplant bacon and cream cheese. on the side cottage cheese with trader joes pineapple salsa and barbara's chocolate chip snackimals (yum!).

What was your favorite toy as a child? My little pony’s. I think those are still one of my favorite toys. They are so cute.  I also had this toy dump truck that I pushed around the house everywhere. I remember my grandma and I use to play a game called “disappearing pear”.  She would cut up a pear then I would push my Tonka truck over to her and she would put the slice on the back of the truck and I would push it away and eat it and always say “grandma the pear disappeared!”  and then repeat. What a way to get a kid to eat her fruit! I was also easily entertained.

What pair of shoes do you wear most often? Toms. I own too many pairs for my own good. Oh, and I want these. Really bad. Someone should probably get them for me 😉

What is your favorite breakfast meal? Oats. Oats. Oats. I can not get enough oats.  That and fresh fruit. What about oats WITH fresh fruit. whoa. Did I just blow your mind?

What is your favorite food your mom makes? This is a tough one.  My mom makes the BEST tacos. She always told me that I didn’t want to know what went into them, and to this day I don’t.  But they would have to cook and simmer all day and my sister and I could NEVER wait till dinner.  They made the house smell so delicious.  She also makes an amazing pumpkin roll. Seriously to die for.  If she doesn’t bring it to family functions she is scolded. Matt also requests one when we go home for Christmas. And yes, my mom make a whole extra one just for him. She is so sweet.

How often do you cook for yourself? Everyday. And I love it.  I didn’t use to enjoy or experiment with cooking as much as I do now, but during my recovery process and the discovery of this blog community, I have really started to explore again in the kitchen. And I love it. It is so much fun (and tasty to boot) inventing and experimenting with new ingredients and new dishes.

Do you enjoy eating fruits and vegetables? Oh my yes and yes. Fruits have been making a lot of morning appearances and veggies tend to come out to play later in the day.  I was never a huge fruit OR veggie person growing up, so it still blows my mind a little that I did a complete 180 and basically can’t find a fruit of veggie that i don’t like. I mean really, I make green smoothies now. NEVER saw that one coming.  Current fruit obsession = frozen grapes. Current veggie obsession = zucchini (i put it in everything).

What is the last thing you purchased? Food. Surprised?  I had two things on my shopping list when I walked into Whole Foods today; raw cashews because I want to try and make Ashley’s cake batter cashew butter again and dates because I am making Nicky’s banana bread hummus.  This is what happens:

organic baby cheese puffs (for me. no baby) kamut puff cakes, creamy peanut butter for matt, creamy almond butter for me, spaghetti noodles

raspberry and fruits of the forest jam, salsa, raw cashews, chobani greek yogurt

tofu, vegan pepperjack cheese, soy yogurt, a peach, an apple, 3 dates and my very first fig (not a fan btw)

Yup. All that with two things on my list. I can NOT walk into that store and not spend triple what I intended too.

How did u get one of your scars? Which one, because I have like 9343294 on my legs/knees/ankles from the many years of softball.  My most recent one is from the oven though. Too lazy to pull the rack out, I like to try and grab things, throw things in with as minimal effort as possible. I love cooking and I love my food, but I’m probably one of the laziest cookers out there.  If there’ a short cut to anything I’ll take it.

What was the last thing you received in the mail?  Well, I can tell you the last thing I didn’t receive in the mail. My Keurig coffee maker!! Do you know why I did not receive my Keurig coffee maker, because some stupid kids stole it off my patio when it was delivered!! I was at a doctors appointment, came home, a few minutes later I get a knock on my door.  It’s my neighbor from across the street. She informs me she saw a girl and boy on bikes take two packages off my patio!  I quickly rack my brain for what was to be delivered and almost cried when I found out it was the coffee maker.  My friend had actually ordered it, so she had to go through the process of calling the company, but long story short, I have another one coming to me. And you better believe I am tracking that thing until it is on my doorstep.  I hate thieves.  It is just uncalled for!

So this week has been quite a bore.

I am so ready for this Arizona heat to be gone.  I do not even want to step outside the heat is still so unbearable! I love our winters, but I forget how horrible our summers are. This summer has been extra hot and humid to boot! This is why I moved from Indiana to get away from the humidity. Although in December when I am sitting on my patio in a t-shirt, I will try to remind myself that the 4 months of unbearable death are worth it. I mean really:

i mean look at that forecast! insane i tell you INSANE. lock your doors and crank down the air, this girl is NOT going outside.

But on to more important things. My eats.

If you read about my current carb obsession and my inability to stay full you should have a pretty good idea of what my eats are going to look like.


ok so not my prettiest bowl, it's a bit of a mess. but tasty none the less (whoa another rhyme) chocolate protein overnight oats topped with trader joe's mocha yogurt, fresh strawberries, banana. and for the crunch; kashi go lean honey almond.

i'm pretty sure those are some nice tongue swipes on the spoon from me not being able to resist from eating half the container of yogurt before it went on the oats. as pretty as i try to make my breakfast, do you know how hard it is to have to wait and photograph your breakfast on a very rumbly tummy? Of course you do, i'm sure you go through same thing.


i don't even know what to call this. maybe the why would you even think of putting that in there quesadilla. it's kind of a spin off of the hummus pumpkin quesadilla i made before. let's just get to it. roasted red pepper hummus, pumpkin spiked with cinnamon and a dash of cayenne, caramelized onions and half a pear. yes. a pear. and yes. it was delicious.

By the way is pumpkin and cinnamon not one of the best tasting things ever?

wow an english muffin with almond butter? surprise surprise. half with apple butter. sometimes i can't decide what i want on it. (wow nice crumbs on the fingers debbie. stay classy)


-chomp chomp- ahh my snack is eating my puppeh. oh. i am so lame. i know. i couldn't resist. she really wanted a bite (and ended up getting one) but she posed just oh so well.


Prepared to be shocked (or not at all) but I tried a spin off of a recipe I found.

I took the concept of Liz’s @ I <3 Vegetables Vegan Mac and Cheese, made some adjustments and kind of made a pish posh of a mess.  But a delicious mess none the least.  And that’s the fun of cooking isn’t it? Throwing the random ingredients you have available and making a delicious mess?


i made a few changes from Liz's. i had left over brown rice so i used that instead of quinoa and i added some tofu that i cooked with some onion to give me some protein and make it more filling . a sprinkle more of nutritional yeast on top and wa-la. it was very tasty.

There you have it. My day of eats. I’m off now to catch up on Warehouse 13, I had a very bad upset stomach last night and ended up going to bed around 9:00pm.  I know, I am such a party animal, but I missed the new episodes of Warehouse 13 and Eureka.  I’m probably the only dork on here that watches Sci-Fi, but I love those shows!
