But I actually have some fun things to share with you. Some things I have been promising for quite some time.
Plantain Bread Recipes!

It’s no secret I have a bit of an obsession with plantain bread. But if you think I make the same ole bread each time, well you would be wrong. However if you follow me on Instagram, you already know that is not the case. Sometimes I just throw in random spices, protein powders and stevia flavors to get a nice base, but sometimes I have a goal in mind for a flavor profile. I would be lying if I said all my flavors come out amazing. They don’t. I have some duds (that get eaten anyways, nothing a little protein frosting can’t fix) But lately I have had some amazing successes.

First this great idea.

Vanilla Chai Plantain Bread

Ingredients:

– 1 medium plantain

– 3 tbsp liquid egg whites

– 2 tbsp vanilla protein powder (I used Designer Whey French Vanilla)

– 1/2 tbsp ginger

– 1/2 tbsp cinnamon

-1/2 tsp cloves

– 10 drops Sweetleaf vanilla stevia (more or less depending on your taste)

– almond milk if batter needs thinning

Directions:

– Blend all ingredients in Magic Bullet and bake at 350 degrees for 15-20 minutes.

The wonderful Heather and I had recently done a little impromptu foodie swap and she had sent me a bunch of random protein powders to try. One of them was Vega One’s Vanilla Chai. So I made a simple Vanilla Chai protein frosting to top this with.

This smelled amazing coming out of the oven. It was very hard to wait until I had decent pictures to eat this.

The next flavor was made because I have been on a huge lemon kick lately. And after recently winning a NuNaturals giveaway and having a fresh lemon on hand from a dinner recipe that never happened, I decided to put them both to good use.

Lemon Cream Pie Plantain Bread

– 1 medium  plantain

– 3 tbsp liquid egg whites

 – 2 tbsp vanilla protein powder (I used Designer Whey French Vanilla)

– juice of half a lemon

– 10 drops NuNaturals lemon stevia

– almond milk if batter needs thinning

Directions:

Topped with a lemon cream  made by mixing Chobani plain greek yogurt with 5-7 drops lemon stevia.

Optional lemon zest topping. It added a great freshness to the dish.

the small things and a date night

 I really feel like this weekend flew by, Monday’s sometimes come too soon. Does anyone else feel that way?

This weekend was pretty low key again . Money was a bit tight this paycheck (rent usually does that to us) so our activities were pretty limited.

However, since it is Monday, and it is time to get marvelous (thanks to the beautiful mommy Katie) we’ll talk about some of the fun things that did manage to happen this weekend.

Before I get to the real fun stuff, I wanted to mention just a few of the small things that have been making my days marvelous. Because sometimes it’s the little things that add up.

Breakfasts are nothing new, but I swear the Fruit Bliss dried figs I have been adding to my breakfast wraps are addicting and add such a great taste.

It’s the small things.

Also, when I’m low on fruit and my wraps are a little lacking, it’s amazing what a dip in some blueberry Chobani yogurt can do.

Can make a boring brown wrap a little more fun and tasty.

I haven’t had one of these in awhile, totally hit the spot with lunch.

But ok, let’s get on to the more exciting stuff.

Friday we did manage to have a little fun out.  I had promised Matt a dinner out of his choosing and he decided to cash in on that offer.

And like I’m going to say no to a dinner out. Pssh.

I did however try very hard to convince him to sushi, but he wasn’t having it. I have been craving it like mad lately, but since it was his choice of the restaurant, I had to oblige to what he wanted.

Thankfully he made a pretty good choice.

He chose a local brewery called O.H.S.O. Brewery that we had had a beer at before, but have never had a meal there.

So first, let’s take a look at my awesome company. I swear I am one lucky girl.

One thing I really liked about this place was the atmosphere. That is a biggie to me and Matt when it comes to us deciding if we will go back to a place or not. Our waitress was also super fun and kind of teased me for being so indecisive on what beer I wanted to try. You all know about my indecisiveness. Hello plantain bread pizza.

It was happy hour, so we started with one of their mini appetizers of thai hummus. It was amazing. They drizzled sriracha over it and served it with cucumber and pita bread. The hummus was seriously amazing. I love hummus.

For our main dishes, in looking over the menu, and having sushi on the brain, when I saw the ahi tuna salad I was sold.

Matt decided to go with a chorizo and potato flatbread pizza.

Ok. My salad was to.die.for.

I love how it was deconstructed. The salad was amazing on it’s own and it allowed me to savor the ahi tuna, which was seasoned to perfection. And whatever the peanut sauce was that came on the side. Oh goodness. Also so amazing. I used some of the left over pita to wipe up every last bit. It was that good.

I also stole a few bites of Matt’s pizza (how could I not) and it was really good as well. The chorizo was spicy, but not too spicy. But you really can’t go wrong with pizza.

It was a great little date night and I’m glad we decided to try some place new. It is defiantly a place we will be going too again.

The rest of the weekend was spent just being lazy and lounging, but you know what, when you’re with good company, then really it’s ok.

And really. Look at this face. Pretty good company if you ask me.

This week my schedule was switched up at work and I actually got Tuesday and Wednesday off.

Um. I like it.

It’s nice having two random days off where I can relax and get stuff done around the house while Matt is at work.

It worked out extra good this week, because we are pup sitting for a friend while she is out of town.

My friend Kelli broke the sad news to me that she is moving to North Carolina. It is something I kind of knew was coming because we had talked about her wanting to leave and wanting to go more back east and closer to home. (she was one of my college roommates in Indiana), but none the less I was still so sad when she told me she was leaving. But I am incredibly happy for her, I know it’s something she has been wanting to do, and thankfully everything seems to be falling into place with her, and she already has a new job.

Things are moving fast, and she is actually moving next week, so a congratulations/goodbye dinner was definitely in order.

We decided to go to Fajitas’, which is a restaurant that her and I always seemed to meet at. I actually don’t think I have been there since the last time I met her there when her family was in town over a year ago.

I haven’t seen Kelli in a few months, so I was so excited to see her, but also super sad that she is leaving me!

As soon as the food arrived there were plenty of happy faces though!

Fajitas’ is obviously known for their fajita’s. They are amazing!

The show stealer though is their home made tortillas.. They are freshly made to order in house and more thicker than your typical flour tortilla. It seriously makes the dish.

Another spot light is their grilled zucchini. Amazing.

And really, what’s a mexican meal without guacamole. Love the stuff and I’m pretty sure I ate that whole ramekin.

No shame.

We left full and with tons of left overs.  We hung out for a little bit longer before heading home and thankfully since we have her pup I’ll get to see her one more time before she moves. I’m pretty sure I’m going to cry. I’m going to miss her so much! Good friends are hard to come by and she has defiantly been one.

On a lighter note, I also wanted to share with you guys a tasty snack I have been eating lately.
I almost always have to have a night time snack. I don’t like going to bed on an empty tummy, and full heartedly don’t fall for or believe that whole don’t eat before bed business.

I also always crave carbs, but seriously, when don’t I crave carbs. Lately my night time snack has included this gem that I discovered.

These Fiber Gourmet crackers are awesome. And let’s be real, peanut butter makes everything more awesome. Always. Especially Peanut Butter & Co. cinnamon raisin swirl. Love.

I also whipped up a protein lemon greek yogurt mix (Chobani plain greek yogurt, vanilla protein powder and lemon Stevia) that I topped with a local seed mix. Also pretty tasty and amazing.

Perfect night time snack.

Obviously QuestBars have swept over blog land, so of course I had to jump on. First it was just eating the bars (like a normal person would), then the baking of QuestBars became the new thing (I must admit they are way better warmed up), but then things got crazy.

I first thought about eating it plain and simple. Then a protein yogurt mix was added on top. Well if that wasn’t enough chocolate, I made my healthy chocolate sauce and drizzled that on as well.

Much better success with this one. Will be making this again.

I have so much to share with you today.

As I mentioned in my last post, I knew I was going to be a bit MIA these last few days because Matt and I were off in Los Angeles visiting two three amazing people.

Our dear friends Greg and Sam just had a beautiful baby boy and we finally were able to go out and visit them and meet the little man himself.

But as much as I would love to swoon over this precious angel, it is Wednesday and all, so I figured since I not only got to spend time with some amazing people, I also got to enjoy some amazing LA food.

So for today’s What I Ate Wednesday, I am going to do What I Ate In Los Angeles.

I know you guys are probably thinking and questioning, did I go safe this visit? Or did I use it as a challenge for myself.
That answer should be pretty obvious.
I always use these situations as a challenge for myself.
However, now I am really trying to not look at them as challenges. Because honestly that gives my ED way more attention than it deserves. The fact is I was going to visit friends and spend time with them. That’s it. I was just living life.
And let me tell you. Living life was pretty delicious this weekend.

LA is a six hour drive from us, so Matt and I got up at the crack of dawn and were on the road by 6am. So breakfast was pre-made pb&j’s that I had prepared the night before. Not photo worthy in the slightest.
We arrived in LA around 1pm and trust me we were hungry! Thankfully Greg and Sam had some grilling foods ready for us!

If you’re like me, one of the first things that you’re probably thinking is “why are the hotdogs cut like that?”. Greg found some crazy thing online stating that if you spirialize your hot dogs before you grill them it helps them cook better and are more crispy and evenly cooked. We took his word for it. I didn’t have one, but Matt seemed to think they were pretty fantastic.  I have a feeling if we ever grill hotdogs now he is going to want to do this. Not gonna lie, they look pretty cool.
I did however have three four of those chicken kabobs. And those were ah-mazing. I don’t know what it is, but grilled pineapple is one of the best things ever.

After lunch we hung out with the little man for awhile, but then quickly got ready for our night plans. One of the main things we had wanted to do while we were in Los Angeles was to do a little brewery tour. You all know Matt and I love our beer and we love visiting different breweries as we travel. The breweries we visited were Monkish Brewing Co., Strand Brewing Co., and Smog City Brewing Co. We had intentions of going to one more, but after multiple beer tastings drinkings, we all got hungry and decided to go have dinner instead.  We went to a near by hot spot called Rock & Brews.

After all the beer I had consumed, it was an under statement to say I needed some food.
I got an in house made veggie burger that was made with eggplant, white and black beans, vegetables and raw oats.
It was inhaled and it was delicious.
And for some reason when I drink, dessert is always a must.
Enter ice cream sundae.
No explanation needed for that one.

The next morning we were all pretty slow to rise, but a baby can quickly change that. After we all had our morning coffee, we decided to head out for breakfast at one of Greg and Sam’s favorite breakfast joints; The Yellow Vase.

I wish I could claim that amazing looking waffle as mine, but it was Matt’s.
(but don’t think that amazing up close bite shot didn’t go straight into my mouth)
I got an omelet stuffed with spinach, mushrooms, asparagus and sun dried tomatoes.
After dousing it with salsa, this thing was demolished. Along with a side whole banana and strawberries.
This girl can eat. No shame.

After breakfast we decided to head down to a local farmers market.
I am so jealous of their farmers markets. So much fresh produce and fruit. I wanted it all.

I really wish we went before breakfast because there were so many free samples, but I was just too stuffed  to eat more. Even though I wanted to. Really bad.
We did end up buying a few goodies. ButterRum Cake (oh my gosh the best cake I have eaten in a long time), High Fiber Whole Grain Carrot Bread, and Whole Wheat Cinnamon Raisin Bread. You guys know me and my carbs. Love them.

We had a small lunch at the house, but around 4pm Sam and I got the frozen yogurt itch. It was National Ice Cream Day, so we decided frozen yogurt was necessary. But let’s be real, we would have gotten it anyways.

My new favorite combination of mint and fudge brownie is hidden under there. Oh, and little swirl of Pecan Pralines. Because I can never make up my mind.

Dinner that night was another shared favorite of ours.
Sushi.
When I travel I do like to try and eat at places I can’t eat at home, but really, who would I be if I turned down sushi.
A crazy person that’s who. So I didn’t.
We went to one of their favorite restaurants, Fusion Sushi.

All of it was delicious, but I think my favorite was the cucumber roll I got. I believe it was filled with crab, salmon and tuna. But it was one of the best cucumber rolls I have ever had. One of those things you wish didn’t end, and get really sad when it’s gone.
But let me tell you the one part of dinner I did not enjoy.
I like to be pretty adventurous with my eats and always say I will try anything once.

We had to leave the next day, but in true Greg and Sam fashion, they sent us off with full bellies.

I personally don’t like egg yolks, but Sam’s plate was just too pretty not to photograph.
Underneath were amazing home made biscuits and sausage gravy.  I had some of my new carrot bread topped with Trader Joe’s cocoa almond spread and a pear Chobani.
We had an amazing time, but of course wish we could have stayed longer, but life was calling back in Arizona, so back on the road we went!

Those Trader Joe’s chocolate banana’s were eaten at the house, but seriously, these things are amazing. I think I ate half their box of them. Whoops.
The Good Bean chickpeas, Quest bars and Peanut Butter filled Pretzels were great travel snacks and for a quick lunch we stopped at Subway.
So my loves, as you can see I had a weekend full of great eats.
I was one stuffed happy girl.

It doesn’t.
When we got back into town it was around dinner time. I will admit I was a bit over whelmed mentally with the weekend. It was a big push for me. And I’m not going to lie, on the drive home I was planning my “safe” dinner. I knew I was doing it. So what did I do? Fought back. I told Matt how I was feeling and we both came up with the same solution.
We wanted to end the weekend with a bang.

I had an amazing weekend and did not want to go back to the reality of work and life, but I suppose that’s what being an adult is all about.
So loves, that’s all I have for you, but as you can see, my weekend was a pretty amazing one and was full of delicious eats, adorable babies, and amazing friends.

chocolate protein fudgey cake bites

It’s Friday! Woo!

It was nice to have the 4th off, but it just made Friday morning seem like a Monday. But I guess it it quickly followed by the weekend, so that’s a positive! Well regardless, I hope you all had a great 4th of July and if you have to work today like I do, I hope it flies by quickly! And then on to weekend fun for us all!

So I feel like I am kind of cheating for this #strangebutgood, as my dish (at least to me) isn’t that strange.

Sprint 2 the Table

Baking with protein powders is nothing new to me and something that I love to do. But I guess that concept can be strange to others. Well I know I get weird looks from my fiance, and as we have learned with a few past dishes, this isn’t an uncommon occurrence when it comes to my cooking/baking habits, and is usually a good sign that normal people don’t cook, bake or eat like me.

So this brings me to the tease I left you with on my What I Ate Wednesday Post.

Chocolate Protein Fudgey Cake Bites

Ingredients:

– 3/4 cup of pumpkin puree
– 1/2 cup of chocolate protein powder (I used 1/4c Plant Fusion – chocolate, 1/4 cup BSN Lean Dessert – Chocolate Fudge)
– 1/2 cup of cocoa powder
– 1 tbsp spelt flour & coconut flour each
– 1/4 cup of unsweetened vanilla almond milk

– 10-15 drops of vanilla NuNaturals stevia
– 1/2 cup liquid egg whites
– 1/2 tsp baking soda

Directions:

– Pre-heat oven to 375 degrees
– Blend all ingredients together
– Bake in brownie pan in for about 30-35 minutes, or until a toothpick comes out clean
– Let cool before cutting into squares.

(Note: I decided to add some flour to my batter because from past experiences from cooking with protein powder, my cakes always turn out very moist. I wanted to try and dense this  up a little bit. I liked the results, but you can leave out the flour if you desire.)

I followed suit with Anna and made little sandwiches out of mine with a protein cream filling.

Protein Cream Filling

Ingredients:

(per each sandwich)

– 2 tbsp plain greek yogurt (I used Chobani)
– 1 – 1.5 tbsp chocolate protein powder (I used Plant Fusion)
– 5-7 drops liquid vanilla NuNaturals stevia

Directions:

– Mix all ingredients together and spread between two cake squares.

I made each individual sandwich as I needed them and stuck them in the freezer for about 10-15 minutes after assembled.

They get melty pretty quickly and since I had been having them as a part of my breakfast I needed them to last for the car ride to work before eating them.

I stored the remainder of the cake in the refrigerator.

My next adventure that I have been too scared to take yet, is to experiment with a protein bread. I have found so many recipes that intrigued me, but just can’t commit to one (Anna’s broccoli protein bread is topping my list though). Who would have thought one could be such a baby when it comes to baking. Well, this girl is.

The powders kind of reminded me of Carnation Instant Breakfasts and yes I could have just mixed them with milk like directed to make a shake, but we all know me and I don’t walk down the beaten path. I of course had to be a little bit more creative.

Since I am still on the Protein Plantain Pizza kick (and don’t plan getting off it any time soon) I decided to use the chocolate as one of my toppings. It mixes quite well and didn’t need much liquid to make the frosting, a huge plus in my book.

So since the chocolate worked so well, I decided I needed a little pink in my morning.

What? Another Protein Plantain Pizza? Yes. But the frosting stole the show.

Not only was this actually quite tasty, but seriously, I love anything pink.

I had to experiment more with the shakes and I am known for adding protein powder to almost…well almost everything.

The next thing I added the Extend shake too was my night time snack.

Strawberry Greek yogurt with a healthy chocolate drizzle.

I took 1/2 packet of the strawberry Extend nutritional shake and mixed it in with plain Chobani Greek yogurt.  I spread the yogurt mix over a Wasa Multi Grain Crispbread and I then made my healthy chocolate sauce (unsweetened cocoa+almond milk+stevia) and drizzled it on top.

Oh my was this delish. Chocolate strawberry goodness. I do believe this combination will happen again.

And then we all know my love for overnight prOATs. So what did I decide to add to a recent bowl?

You guessed it, the Extend nutritional shake.
I used the vanilla and in addition to vanilla nut extract and a sprinkle down pour of cinnamon I had a delicious bowl of oats waiting for me for breakfast.

Topped with the traditional frozen banana, granola sprinkle and some raisins for good measure.

Since these shakes could be used as a meal replacement,  and even though I didn’t use a full serving, it was amazing how much more filling this bowl of oats was.

Another win in my book.

I plan on experimenting more with the shakes, I’m curious to how it would do in baking.

ugly and delicious eats

Hello my luffs.

It’s Wednesday yay!!!

Long weeks make me actually appreciate hump day.

My days have been long, but exciting, so I guess it all evens out. My externship is giving me exposure to so many new things, and even though it’s a bit frustrating I don’t know how to do everything yet, it is also so exciting to experience it! (for example we had an emergency where a dog jumped though a window and ripped the tendons in his foot and was bleeding all over the place and then I delivered my first C-Section puppy and revived it back alive!)

But as exciting as all that is, I know that is not why you’re here. You’re here for the foodie wonderfulness that is What I Ate Wednesday.

I am going to call this the ugly, but delicious edition, because that is seriously what my meals have been.

I have come to realize there are not many ways I can make eating breakfast in the car pretty.

So I quit trying.

But a new breakfast obsession that I have come to love?

Breakfast Protein Wraps

Banana, peanut butter and chocolate fudge protein frosting.

Then things got ugly.

This is what happens when you have to eat in the car, at random stop lights, that always turn green right as you’re biting, so then your food starts to get melty because you live in Arizona and it’s already 100 degrees.

But even though it may not look super pretty, seriously, these things taste amazing.

Clearly hooked, I had another one the next morning.

This time I added some blueberries and cinnamon.

Same melty problem, but you guessed it.

Yup. Still tasted ah-mazing.

I then attempted to get creative and made a green egg wrap.

Fail.

The egg wrap totally fell apart and it quickly turned into a egg pancake in some classy tupperware topped with banana and peanut butter.

But again, still delicious.

And just so you don’t have to stare at my ugly (but delicious) breakfast creations, I was actually impressed at the breakfast one of my co-workers created.

Talk about mountain of fruit goodness. She also used Chobani greek yogurt, so I was very impressed with that as well.

We have a guy who boards his dogs with us at the clinic every Tuesday (I guess free of charge), so in return he brings us masses of fresh fruit and donuts or some baked treat. Fair trade if you ask me, and you better believe I gorge on that fruit. You guys know me and fruit. I’m obsessed.

I think I say this almost every week, but is anyone else’s weeks just fly by? Having surgeries in class really makes my time fly by even quicker, which is good and bad. My days are exciting, class time is no longer sitting taking notes, but assisting in surgeries, but then at the same time, another week is gone in the blink of an eye.

But I still find time for the important things in life.

Things like What I Ate Wednesday.

That’s super important right? I think Jenn would say yes.

I do have one more pretty epic oatmeal bowl to share with you and then I actually have new lunch/dinner AND dessert creations to share.
Oh my gosh. Who am I? I know.
I typically only put effort into my breakfast for some reason, so I am a bit surprised at how much I branched out with other meal ideas. I’m telling you, this not having to read as much is starting to take effect. What’s it going to be like when I’m done with school and working like a normal person?
We’ll deal with that when the time comes.
But first that epic breakfast I was telling you about.

I am addicted to loving my overnight TVP prOATs.
I make them doughy style by adding 1/2 a frozen banana in the morning and giving it a little whirl in my magic bullet.
Doughy and yummy.
And then of course topped with amazing-ness.

Other half of frozen banana, berries, Love Grown Crack Granola and this bowl got a sprinkle love from peanut flour and acai powder.
Who says oatmeal is boring? Not this girl.

But on to the fun stuff. New sandwiches!
So I’m assuming most of you know what tempeh is and it’s a food I always forget how much I love.
I mean, I could eat this stuff straight from the package.
And I did.

With the simple addition of blueberry jam, this sandwich was  going to be my #strangebutgood contribution, but then I made something more strange and more good, but this sandwich none the less was amazing.
But I didn’t stop there. Because as great as it was raw and cold, I am a firm believer anything is better when made into a panini.
So I did that too.

Both sandwiches were made with P28 bread and this was actually the first time I toasted or used this bread on the panini maker.
This bread is even better toasted! I actually like the chewy texture of it cold, but it get’s so crispy when toasted. It took this sandwich up a notch.
Am I the only one who likes to mix sweet and savory? I swear I could put jam on anything.

And last but not least we come to dessert.
I typically always have like to have something sweet before bed.
Yogurt bowls are a common occurrence.
This one was extra delish.

Sprinkled with hershey’s special dark chocolate, peanut flour, #cereal dust, and a few Figamajigs made it into there too.
