Wednesday.

Welcome.

My work schedule has been all over the place lately, but this week I have Thursday off, so Wednesday is kind of like my little Friday. And it is more than welcome because even though short, my work week has been insane lately.

I suppose that is the life I chose in becoming a vet tech and I wouldn’t change it for the world, but sometimes it just makes for very long days.

But let me drown you in more adorable pictures, because honestly. Puppies make everything better.

But I would be lying if I said that things have been all stress and hard work. Matt has been great with spoiling me lately and maybe we’ve been going out a bit too much and might be spending a bit too much money, but I’m not complaining right now.

(I’ll save the complaining for when the bills are due)

Tuesday, Matt got a “Taco Tuesday” bug and for some reason felt that we needed to celebrate it.

I tried to be the reasonable one and suggest just making tacos at home, but he wasn’t having it and really wanted to go out.

Well. Who am I to say no to that?

We decided to go Blanco Tacos and Tequila, which is a favorite Mexican restaurant of ours.

We started with the must haves of any Taco Tuesday celebration.

For dinner I chose the Oven Roasted Chicken Burrito.

The spoiling didn’t stop there. I alluded in my last post about having ups and downs, but I am pushing through the downs.

Matt of course has been extra supportive and spoiled me again with another dinner out!

After our marvelous day out, we got a little dressed up and went out for dinner.

We went OHSO Nano Brewery which we of course love because they have a great selection of beer.

Oh look, more guacamole.
Surprise Surprise.

The guacamole was served with veggie chips which was a nice switch up from your typical chip.

For my main dish I ordered the Seared Ahi Salad.

The salad was a mix of arugula, dried cherries, and roasted red peppers served with a sweet asian dressing.

Words can not express how amazing this was. The tuna was spiced to perfection and the sweet asian dressing was the perfect addition to the tuna.

Ahi tuna has to be one of my favorite things to eat. Shocker since we know how obsessed I am with sushi.

Matt ordered the Spicy Green Chili Pulled Pork Sandwich with a side of sweet potato fries.

The sandwich was topped with a honey jalapeno coleslaw and a green chili cheese sauce and seriously…this sandwich was so good.

Matt ended up not even eating the bun because the meat and coleslaw was so good on it’s own.

After my first bite, I gave him the sad eyes for another.

I traded him for a piece of tuna, so I think it was fair.

In the end our wallets may be empty, but our tummy’s were full.

Happy Monday loves!

I am almost glad it’s Monday, well because this weekend was a whirl wind of emotions.

It definitely had it’s ups and downs. Some challenges, but I think all in all only positive things are to come.

And since Monday’s are made to be marvelous, let’s focus on the ups of the weekend.

Saturday Matt and I had made plans to have a date night in.

We made a lazy man’s dinner of pre-made ravioli with a fresh salad on the side.

Even though the ravioli was pre-made it was still fun being in the kitchen together assembling everything.

We had went to the store earlier to get fresh veggies and saw that asparagus was on sale for $0.77/lb. WHAT. Yes please.

If you remember when I had my first Chipotle experience, Matt and I had a picnic in the living room… Well we had such a great time we decided to do that again for this date night.

So to the floor we went with our wine, salads and dinner.

We had gotten two types of ravioli by Rising Moon Organics (they were buy one get one free at Sprouts) one was butternut squash and the other was hazelnut and feta. Both were really good and I would definitely get them again. It made for a nice quick easy dinner.

I am weird and like my ravioli plain with salt, but Matt made his pretty by adding some fresh tomato and shredded cheese.

It was a great little date night that ended with us both passing out in the living room (Matt on the floor, me on the couch) I think we had just a bit too much wine. But it really was nice to actually cook with him in the kitchen and spend a quiet night in.

That all changed Sunday though.

It was a gorgeous day and we had no plans for the day. After lunch I couldn’t take it anymore and told Matt we needed to go out and enjoy the day.

We started by taking Delilah to the park for a walk. We then quickly made the decision to go grab a beer at the Brat Haus which has a dog friendly patio.

Ok guys seriously, he tucked himself in! He was under the sheets and the comforter. I don’t know how he does it! But I kid you not he did this all by himself!

So I know I said there were ups and downs to this weekend, but since we are focusing on the positives today, that’s what we’re sticking with. Plenty of time to get serious later.

Oh loves. Monday again.

Weekends are just never long enough, do you agree?

I know I am a broken record when I complain I have to work on Saturday, but this Saturday was extra hard, not because it was busy, crazy and insane. Oh no. Quite the opposite this Saturday. We were so dead, which to me is almost worst. Not only did my day drag on, but it really made me feel like I was wasting my Saturday away.

One of the only things that made Saturday a bit better was this.

It was one of our doctor’s birthdays, so of course that means cake!

And really.Who doesn’t love cake? No one. Unless you’re weird.

When I got home from work, Matt and I kind of just lounged around. He had a lot of free lance work to do, but as the evening rolled around I suggested a date night!
We had a Groupon for a dine in movie theater, but it only covered the movie and since dinner prices there are a little over priced we decided just to do dinner somewhere else and go see a movie.

Sushi. Shocker I know.

We ended up having an hour to kill before the movie started after dinner, so we went to a favorite pub of ours to grab a beer.

Then it was movie time!

There really weren’t any movies I really wanted to see that were playing, but we finally decided on Jack Ryan: Shadow Recruit.

It was a decent flick. And I got popcorn out of it. And honestly, what’s better than movie theater popcorn? Not much.

(well maybe popcorn that didn’t cost me $8)

I bet you’re thinking Debbie, you went out for a sushi date night and didn’t get frozen yogurt?

Well loves, I was stuffed after sushi and popcorn, but I wouldn’t let you down. Don’t worry.

Sunday I made Matt take me for frozen yogurt.

Sadly they already got rid of my beloved peanut butter.  Their flavors change almost daily, but they do have a few that stay the same and thankfully my favorites pistachio and taro are always there.

Frozen yogurt seems to be becoming a weekly thing for us. And Matt always tells me since I am still needing to gain weight, I might as well do it the fun way. And if that means I get sushi and frozen yogurt every week…well. I’m kind of ok with that.

But I have more than sushi and frozen yogurt to share with you.
If you’re on Instagram I’m sure you’ve seen this gem sweeping the scene.
And for good reason.

Have you heard of Sweet Spreads yet?

If not you need too. I am a huge lover of coconut butter to begin with. But oh good golly. Melissa took coconut butter and made the most amazing flavor creations.

I’m talking about flavors so good that when I eat this coconut butter I literally say out loud “oh my gosh”  It’s that good.

Stay tuned for more on these amazing spreads, I have a feeling they are going to pop up in my daily eats.

Speaking of that. I have been playing around in the kitchen some more and finally think I found a good base protein bread recipe.

For my What I Ate Wednesday post I debated giving you a dinner out with friends re-cap or some recent kitchen adventures and since my kitchen happenings won, it is now time to share a wonderful night out that I had recently.

 

There is a couple in our apartment complex that Matt and I always small chatted with in the courtyard as we walked our dogs.  They had gotten a new puppy a couple months ago, who is super adorable, although Delilah wants nothing to do with him (grumpy old lady).  I still love that grumpy little face though.

Well I guess Matt had chatted with the neighbor about possibly grilling out one night and they proceeded to make plans. Yea not gonna lie, we don’t have a grill, so I have no problem  with mooching off of others! Well the day we made plans I had to stay late at work due to a few emergencies, it turned into a crazy long day and I was in no mood to entertain. But instead of totally nixing plans, we decided just to meet for drinks later in the evening. Because trust me, after the day I had I needed a drink.

We had a great time with them, really hit it off and we all have a lot in common. So future dinner plans were quickly made for later in the week.

 

We decided on a favorite of Matt and I’s, but a new to them place of Blanco Taco’s and Tequilla.

Matt and I have been there multiple times and love it.

The night of course started off with a few drinks.

I am a total beer girl, but something about fresh margarita’s always pulls me in.

One of the first signs at dinner that I realized we had made great new friends was they were totally ok with my taking pictures. I always warn new people that I have a blog and that picture taking will more than likely happen, and they were totally cool with it.

But I had to train them a bit on to wait for me to take pictures and not dig in right in.

See that smudge of guacamole? Ben got a little impatient. I punished him, by making him pose for silly pictures. He was a sport about it.

By the way, that guacamole was amazing. And the whole bowl was demolished in about 5 minutes.

I always get the same thing when I go here. I can’t help it. It’s so good.

I got my usual chicken burrito, Matt got a machaca burrito, Katie got beef enchiladas and Ben got fajitas. All looked amazing, smelled amazing, and mine of course tasted amazing. It was really funny because Ben’s fajita’s came with these mini flour tortilla’s. We all laughed at how small they were. He obviously made it work. Pretty sure he ate them all in one bite.

 

After dinner we turned out of the restaurant parking lot and I noticed we were going the wrong way. Matt and I were then informed that dessert was mandatory and they were taking us to one of their favorite ice cream shops called Sweet Republic.

Who am I to say no to ice cream. Not fro-yo kids. Real ice cream.

I got Belgium Chocolate and goodness, this stuff was so creamy and amazing. Pretty sure I was the first one finished. I typically am when it comes to ice cream. No shame.

It was really great to go out with new people. I’m all about making new friends and I think we found some good ones!

I mean, they already invited us over for grilling on Sunday for the football games. If that doesn’t make means for good friends, I don’t know what does!

Monday already?

Seems to be the story when I have to work Saturday’s.  I feel like Monday just sneaks  up on me. Good news? I don’t work today. Yay!

So Monday is kind of my Sunday, although since Matt works it kind of stinks because I am home alone all day.

But regardless, I get the day off, am able to get some things done, and at least try to be productive. (try is the key word here)

But Monday’s are still fun because the beautiful Katie reminds us to always be marvelous. So I thought I would share a marvelous moment I had recently.

Of course it’s food related, because let’s be honest, food makes me happy.

Matt and I had a planned sushi date for later in the week when he got paid, but when I went to see my nutritionist and found out I had gained twice in a row (and a significant amount at that) I thought we should move our date up early, celebrate, and also help me push a little more (I have a tendency to “back off” when I see I gain for a consistent amount).

Matt obliged and we headed off to our favorite sushi spot The Sushi Room.

Upon walking in I was actually a bit disappointed because our favorite sushi chef was not working.

Little did we know the amazing time we would have with the new sushi chef.

We started our meal with our per usual starters.

Saki bombs, seaweed salad, edamame and yellow tail sashimi.

The yellow tail had a pepper spice on it that we didn’t get last time, it was… a bit strong, but thankfully since not much was put on I just scraped it off, the yellow tail was amazing. I seriously love yellow tail.

Matt and I went back and forth on how many rolls to order.
Again, little did we know how much we would be eating that night.

One thing I love about this specific restaurant is their willingness to make me custom rolls. And just flat out their customer service.

♥ A word of advice to novice sushi goers, I highly recommend always sitting at the actual sushi bar as opposed to in the restaurant seating area (unless you’re with a group, because it’s kind of hard to talk when you’re all lined up at a bar, but if it’s just you and one other person, the sushi bar is where it’s at). It’s such a better experience and if you have great sushi chef’s like we do, it’s so much more personal, and I swear you get hooked up. ♥

The first roll I had ordered was suppose to be prepared wrapped in cucumber, my alteration was an easy one and instead of avocado I wanted to add asparagus. They said it was no problem.

They then came back to tell me that they were our of cucumber (how this is even possible I don’t know) and asked me how I would like the roll prepared. I suggested soy paper with sesame seeds. I thought that would be a nice switch up since all of our other rolls were nori/rice rolls.

The sushi chef joked about how much trouble he was having making the roll in the soy paper and that he would do his best to make it presentable. Well this roll turned out beautiful. And tasted amazing. After about 2 pieces, Matt was actually the one to point out that the roll had avocado in it and they left out the asparagus. Now, I don’t not like avocado, I love it actually, but I love asparagus in rolls as well and just wanted a little switch up. I actually just made a joke to the sushi chef about it and he offered to make me a new roll. Who am I to say no to a free sushi roll? So I handed over the roll to Matt since I was getting a new one made me for. Win.

This roll came out just as pretty. Just as delicious. They both were amazing. Not gonna lie, happy I got two rolls.

But it didn’t end there.

And I  honestly don’t know what a visit to this place would be without some kind of surprise at the end.

We got to talking about our horrible experience trying sea urchin when we were in Los Angeles.

They were convinced we were served poor quality fish and it shouldn’t have been as disgusting as an experience as it was.

They then offered us what they thought would be an equally disgusting eat.

Now you would think we would decline, but I am always up for trying anything once.

It was called Nato and I believe it is just fermented soy beans.

They talked it up so much on how gross it was and we decided we would all eat it together.

I don’t think it was even possible to get a decent picture of this. But regardless of the horrible picture and presentation, it wasn’t nearly as bad as they were making it out to be. And not nearly as horrible as the sea urchin experience.

Overall a very marvelous date night and just another reminder why we love this place so much.  It was a perfect way to celebrate.

But really, any excuse for me to eat sushi, I’m ok with.

 I really feel like this weekend flew by, Monday’s sometimes come too soon. Does anyone else feel that way?

This weekend was pretty low key again . Money was a bit tight this paycheck (rent usually does that to us) so our activities were pretty limited.

However, since it is Monday, and it is time to get marvelous (thanks to the beautiful mommy Katie) we’ll talk about some of the fun things that did manage to happen this weekend.

Before I get to the real fun stuff, I wanted to mention just a few of the small things that have been making my days marvelous. Because sometimes it’s the little things that add up.

Breakfasts are nothing new, but I swear the Fruit Bliss dried figs I have been adding to my breakfast wraps are addicting and add such a great taste.

It’s the small things.

Also, when I’m low on fruit and my wraps are a little lacking, it’s amazing what a dip in some blueberry Chobani yogurt can do.

Can make a boring brown wrap a little more fun and tasty.

It’s the small things.

(and don’t you just love the yogurt mess on my fingers? it’s a  hard life eating in the car)

But ok, let’s get on to the more exciting stuff.

Friday we did manage to have a little fun out.  I had promised Matt a dinner out of his choosing and he decided to cash in on that offer.

And like I’m going to say no to a dinner out. Pssh.

I did however try very hard to convince him to sushi, but he wasn’t having it. I have been craving it like mad lately, but since it was his choice of the restaurant, I had to oblige to what he wanted.

Thankfully he made a pretty good choice.

He chose a local brewery called O.H.S.O. Brewery that we had had a beer at before, but have never had a meal there.

So first, let’s take a look at my awesome company. I swear I am one lucky girl.

One thing I really liked about this place was the atmosphere. That is a biggie to me and Matt when it comes to us deciding if we will go back to a place or not. Our waitress was also super fun and kind of teased me for being so indecisive on what beer I wanted to try. You all know about my indecisiveness. Hello plantain bread pizza.

It was happy hour, so we started with one of their mini appetizers of thai hummus. It was amazing. They drizzled sriracha over it and served it with cucumber and pita bread. The hummus was seriously amazing. I love hummus.

For our main dishes, in looking over the menu, and having sushi on the brain, when I saw the ahi tuna salad I was sold.

Matt decided to go with a chorizo and potato flatbread pizza.

Ok. My salad was to.die.for.

I love how it was deconstructed. The salad was amazing on it’s own and it allowed me to savor the ahi tuna, which was seasoned to perfection. And whatever the peanut sauce was that came on the side. Oh goodness. Also so amazing. I used some of the left over pita to wipe up every last bit. It was that good.

I also stole a few bites of Matt’s pizza (how could I not) and it was really good as well. The chorizo was spicy, but not too spicy. But you really can’t go wrong with pizza.

It was a great little date night and I’m glad we decided to try some place new. It is defiantly a place we will be going too again.

The rest of the weekend was spent just being lazy and lounging, but you know what, when you’re with good company, then really it’s ok.

And really. Look at this face. Pretty good company if you ask me.

Hello and happy Monday my loves.

Let me say my weekend was bor-ing.

Sorry, no real shenanigans to share.

Why you ask?

Well Saturday I had to work (lame) and Sunday Matt had a dodgeball tournament, which left me home alone all day.

I probably could have been productive and cleaned or something. Maybe even baked. But I had no motivation to clean or bake, or being productive in any sense.  So I guess I am the one to blame for the lack of activities.

But even though my weekend was not the most exciting, I still love to find the small things that can make a day marvelous.

For Matt’s birthday I had purchased him tickets to the LA Galaxy vs. Madrid soccer match. He is obsessed with soccer at the moment, so I thought it would be fun for us to go to a match together. Little did I know what a big deal this match actually was. I guess the LA team is the only US team to participate in this league and the fact that they were even playing in Arizona was a huge deal too. I had to work that day, but left early in what I thought would be enough time to get across town to the stadium. We planned ahead and Matt picked up dinner for me to eat in the car.

Yes I ate sushi in the car, and yes I still used chopsticks.

And yes, I made a huge mess. But it was delicious none the less.

So once we were on our way, we were quickly greeted with ridiculous traffic. Not only was it normal rush hour traffic, but the game was adding additional back up. We were not happy about being stuck in it.

It probably took us double the amount of time it should have, but we finally made it. And after waiting in line for an additional half hour at will call to pick up my tickets, and then the fact that we entered the gate of course on the complete opposite side of the stadium, we finally made it to our seats. But not before grabbing a beer.

We had a great time at the game and I am so glad that Matt was able to finally go to a match and it was just an overall great date night for us.

I had to work the next day (Matt was lucky enough to have the day off) and let me tell you I was exhausted. But sometimes it’s the small things that get me through my day.

I finally got a hold of the new white chocolate raspberry QuestBar. I am a fan.

Although I think the chocolate chip cookie dough is still my favorite.

It was so nice to have Monday off and even though I was sick, Matt and I did still enjoy our planned date night.

Because I am convinced Starbucks and Mexican food can cure any sickness.

I will call this What I Ate on Memorial Day.

Because really, what’s more American than Mexican food…wait a minute..

I receive coupons for Fox Restaurants (owner of our favorite True Foods Kitchen) and they usually send out a discount for holiday’s that typically people wouldn’t go out for.  Matt and I like to take advantage of them and as soon as I told him I had gotten one he immediately  (and enthusiastically) requested we go to Blanco’s Tacos and Tequilla.

Who am I to say no to that?

So sickness and all I managed to make myself look halfway decent for the occassion.

So of course when you’re sick the first thing you do is order a drink right?

I figured if anything a margarita would help clear things up.

Chips and salsa also are a great remedy as well.

For dinner even though my hunger wasn’t completely there, I knew I would regret it if I didn’t get my usual chicken burrito. Because honestly, I don’t know what they put in it, but it’s ah-mazing.

For not having any “appetite” I demolished the whole thing.

I’m pretty sure his plate was clean before I even finished half my burrito. So I can only assume that they were good.

As much as I would have loved dessert, or to even be social afterwards, I was about at my limits. This girl wanted to go home, put on comfy clothes and call it a night. Matt was a sport and obliged.

So the rest of the night I spent on the couch, then quickly bed. I’m such a party animal I know.

But as I mentioned in my previous post, Memorial Day isn’t for us to celebrate having an extra day off, it’s a day to remember the brave ones that gave their lives for us.
