I hope everyone had a relaxing enjoyable weekend.

Mine was kind of boring, but self-induced boring.  I had a lot of reading to do and Matt had a lot of work to do as well, so we both were boring and did our own thing. We made it out into the world a few times for some quick errands, but that was about it.

But that doesn’t mean that makes this Monday any less marvelous right?

Oh yes. Even boring can have it’s good points and times and I love taking Katie’s Marvelous In My Monday to showcase that.

Even though the actual weekend was quite uneventful, Friday we had a great night.

I had a late appointment on Matt’s work side of town, so I had suggested we meet out for dinner. I also remembered me and one of his co-workers had been trying to arrange a time we could all hang out, so I thought this would be a great opportunity. Luckily it all worked out and we all met up for dinner.

I have been craving Thai like crazy and the husband of the couple (who also works with Matt) is Vietnamese, so they love Thai food as well. Win!  I asked her for a recommendation since they went out for it more than we did and they suggested their favorite restaurant Sala Thai.

It did not disappoint.

I apologize because I only got a picture of our appetizer, by time the entrees came, as per usual, we dug right in. I really need to step up my game on this!

Vegetable Spring Rolls and Chicken Satay. The spring rolls were amazing. I really want to make my own now.

Even though I don’t have a picture, I got the Spicy Eggplant as my main dish. Now if you are familiar with Thai food you know you can order per your spicy-ness preference. I am a spice girl, but I was warned by our friends that their Thai hot, is actually Thai hot. So I ordered my meal 3 out of 5. I knew I should have went 4. I could have handled it. But my dish was still amazing. The eggplant was cooked amazing. Definitely a place I want to go back to!

After dinner we decided to go grab a drink.

We stopped at an Irish Pub and hung out for a bit.

It was so good just to hang out and catch up. Jay and Megan are two great people whose company I just really enjoy.

We actually had a conversation about “good company”. It doesn’t matter what you’re doing, going out, or sitting on a couch talking, if you’re with good company that is all that matters. And they are truly good company. Good conversations.

Now I know I said my weekend was boring and we didn’t venture out much, but mother nature had something to do with that on Saturday.

Welcome to Arizona. We have dust storms.

Matt was actually driving home from the office and saw this coming, I told him to pick up some supplies.

So don’t worry. We were prepared to stay in for the night.

It was pretty neat to see though. Some of my friends in other parts of Phoenix got some amazing pictures too!

Well my dearies it’s off to school for me. It’s the last week of this class and then it’s the dreaded Pharmacology.

This has been rumored to be the hardest class and where a lot of students fail out. I’m nervous, but confident I will do well.

I just need to keep that motivation going!

1. I am done with Radiology!! Yay!!! And I did great! I got a 93% on my final, which I am pretty OK with!

To celebrate, Matt and I did what we’re best at! Beers.

Eating sushi.

And lots of it.

Ironically one of Matt’s co-workers had invited us to dinner for sushi, and like we would have said no anyways, but another great way to celebrate. With friends!

I love getting sushi with this couple for one main reason.

They love sushi just as much as we do. And they are not afraid to order crazy amounts of it.

First off, the light was horrid. Second, I had three hungry people who did not want to wait for me to angle and take pretty pictures.

Our friends Greg and Sam are visiting from Los Angeles and it is always so nice to have them here. I haven’t known them too long, they are Matt’s friends from high school, but I can truly call Sam one of my best friends. You know when you just click with someone? That’s me and her. And she has been one of the most supportive people in  my recovery process.  She actually knows how to push me and will actually push me to challenge my ED. Tough love. It’s what I need sometimes, and she knows exactly how to do it. Today was a great example of that.

Matt and Greg wanted to go to a beer festival that is going on in Phoenix, and since Sam and I don’t really drink we decided to have a girls day out. It was exactly what I needed and I loved having the one on one time with her.

We started with pedicures.

i know you can’t really see, but i got red with glitter on top. sam got pink tips with a heart on her big toe. so cute.

I’m not a huge foot person myself, but someone else massaging my feet is A-OK with me. I love it.

After our pedicures, and wonderful conversation, we decided to get some lunch.

Like I said Sam is awesome at challenging me. I wasn’t too familiar with the area, but we made a deal to find a new place I had never been too. That way I had to get something different, something new. We found this really really nice outdoor mall area and found this amazing restaurant True Food. They use local, fresh, seasonal organic ingredients.  Just walking into the place was amazing. Their food prep is out in the open and the ingredients were just so fresh and amazing.

Sam also made me challenge myself in my food choice. I of course wanted the strictly veggie salad. And as amazing as the vegetables looked, I knew I would be choosing the dish just to be safe. She totally called me on it, and instead I decided to order the teriyaki rice bowl with tofu and vegetables.

  It was amazing. And so delicious and the tofu was cooked to perfection.

I had to make myself slow down I was devouring this so quickly.

I can honestly say I am so glad she made me change my meal choice. Was it a bit scarier with the rice and the fact it was pan fried? Yes. Was it delicious and worth every bite? You bet.

Sam started with one of their fresh mixed drinks. (Again all made in house and from fresh organic ingredients) It was a blood orange mix.

For her meal she opted for the fish tacos. They make them with seasonal fish, these were with grilled sea bass.

They were topped with lettuce, onions, avocado, fresh pico de galo and cheese.

After lunch we walked around the mall a bit. Most of the stores were a bit too expensive for me, but it was such a nice day and we had a great time window shopping.

Overall, I love her so much for challenging me today and knowing that she needs too. During all of this I’ve really come to realize how hard it is to find true friends, and I have truly found that in Sam.

wiaw #21 – spaghetti squash for the win

Well loves, being back in school definitely has taken it’s toll on me.  There is also some other drama going on that I’d rather not get into that has also made my life a little more hectic than wanted.  But that’s life right?

A positive side though is Matt and I had some amazing friends visit us last weekend! It is always so refreshing to have positive people around, I really feel like it helps me and my spirit.  I have been having some pretty rough days lately, I’m not going to lie, so it was nice to be able to relax with good friends.

The only thing that was sort of a bummer was I stayed behind a few times to get some studying done.  I hated being the “party pooper” but school is just so important to me right now.  They of course completely understood.  Which again shows you how great they are.

What I Ate Wednesday

As stated in my last post, breakfast’s have sort of been looking like this.

As much as I love my nut butter and jelly sandwiches (am I the only one who constantly typos but butter for nut butter? Happens way too often to me) they do get a little boring.

With the help of Chobani and their new flavors however, breakfast this morning was a little bit more exciting.

I will say it was not as cinnamon apple-ly as I thought it would be, but it was still super tasty and a nice switch up!

I also picked up a new to me product on my way to class.

I’ve tried the cinnamon flavor as well and really enjoyed it.  The grape was very good as well. I am a fan.

And I actually prepared a real dinner tonight.

I have been real lazy lately on my dinner, but made myself snack so I could wait for dinner to cook.  Something for some reason I mentally hate doing.

I decided to cut into this bad boy (and boy was it work) and make me some spaghetti squash.  I seriously love this stuff!

Simple? Yes. Delicious? Double yes.

I spiced the spaghetti squash with an onion and herb spice and also some cayenne pepper.  I definitely tasted the spice! I loved it!

That is another great thing about spaghetti squash. It yields an insane amount of filling. Leftovers for days! And I’m not complaining.

What’s your favorite quick go to meal?

Do you mind snacking before dinner is ready? This is part of my ED that I want gone. I hate it.  Right now with me being in my gaining process the fact of eating just to eat really bothers me mentally.  I’ll push through it and do it, but the after effects are sometimes so hard to deal with. I need to learn snacking is not bad.


goodbye 2011 hello 2012

Wow.  It has been a crazy week.

I feel like my first week off from school went by so slow, but I actually got to enjoy it.  This week has been so jammed pack, that it has flown by!

I mean, tomorrow is New Year’s Eve!! I can’t believe it.  More I can’t believe this year is almost over. I don’t know where my time goes anymore.

I know everyone is doing their recaps on the previous year and goals for next year, but so much has happened with me, I wouldn’t even know where to start

My life has been insane this year.  If I went back a year looking at what I thought this year would have been, this is not it.  Both positive and negative.

Quitting my job and being diagnosed with an eating disorder really hit me hard.  I was in such unfamiliar territory and thought my world was coming to an end.

I’m still kind of in that “how did I get here” mind frame, but I am trying so hard to stay positive.

Deciding to go back to school to pursue being a vet tech was one of the most accomplishing feelings I have had though in awhile.  I am doing something for me.  Which was something I had not done is a very very long time.  And I’m succeeding.  And I know the end goal will be me being way more happy in life, and actually feeling like I have a purpose.

So since my last year has been a mix of emotions, I thought I would just focus on how crazy this past week has been, and maybe some positive thoughts for the future!

Christmas was a great time!  I’ve mentioned it briefly, but I have been having some family problems.  My parents have not been the most supportive through out my recovery process and that has been very hard on me.  This was the first year I have not gone home to celebrate Christmas with them.  It was hard, but I got to spend my Christmas with Matt’s parents who are extremely supportive. In the long run, it was the best decision for me and was so refreshing to be with a family that loves me unconditionally.  They truly are my real family.

Some more activity this week was my birthday!

My actual birthday was pretty uneventful.  Matt had to work and I just kind of bummed around the house.  We were going to go to dinner that night, but just decided to save it for the weekend. I actually told Matt, and I can’t believe I did, that he can pick where we go.  I want to kind of use it as a challenge for myself.  I’m not going to lie, I’m pretty nervous.  Eating out is still a huge fear for me.

But last night, two of Matt’s co-workers hosted a birthday party for me!  The husband  is originally from Laos so he cooked up a bunch of Thai food.  I made sure to go to the party hungry because I wanted to challenge myself and eat what he cooked.  So glad I did.  It was all amazing!  And I enjoyed every bite!  It felt so good to be around friends again!

I didn’t get a lot of pictures because I was too busy mingling.

One of the biggest surprises of my night was when these guys showed up.

It had been so long since I had seen them, and I didn’t know they were coming.  Needless to say when I opened the door and saw them I was a bit excited!!

And they got me a Trader Joe’s gift card. Um yea. That made Debbie one happy girl!

Tiffany, one of Matt’s bosses wife (who is the craftiest person I know!) made me some hand made gifts!

She also made the headband I am wearing at the moment and in my lap is an apron she made me. All super cute. I love it all!

Overall it was a pretty fantastic night! Good food, good friends, good times!

With all this activity though has come some hard times.  I know I am gaining weight, I mean, my eating has increased so much over the last two weeks.   And especially with me being off from school I am nibbling so much more.  I know I need to gain, but it’s just really messing with my emotions.  Gah, that silly need to be in control. I hate it!

So some of my goals for next year?  Obviously continuing to get better and healthier.  I want to rid of these thoughts.  I need to work on staying positive and keep my mind set on the end goal.  Yes, I will gain weight, but I’m hoping when I gain all I need my mind will be in a better place and I will have self-acceptance.  That would be wonderful!

We are going to Matt’s parents for Christmas so I may not be around tomorrow, so I wanted to write a quick post wishing everyone a a very safe and happy holiday!

We need to remember this is a time to spend with the ones we love.  It is not about the gifts, because the true gifts are our family and friends!

Kimmie and I have been friends since high school and I must say she has been the one person I have really kept in touch with since I’ve moved and heck even before I moved and she has always been there for me always.

Some of my best friends today, I’ve met through college and when I lived in Indianapolis, but Kimmie has always been a true friend I know I can always count on. She has been supportive through everything I have gone through in my life and continues to be. She truly reminds me of what it is to be a good person and to be a true friend and I only hope I give her half the friendship she gives me. Kimmie I love you!!

I also got a few requests for the Peanut Butter Chocolate Pie I posted about yesterday.  Here is what I put into it.

Peanut Butter Chocolate Pudding Cheesecake (Pie)

For Crust:

You can most certainly make your own crust, but since I made my pie at 7am a store bought graham cracker crust was used.

For Filling:

One 8-oz. tub cream cheese, room temperature

2  Chocolate Pudding Snacks (I used soy chocolate pudding, but feel free to use whatever brand/type you like)

1/3 cup granulated sugar

2 tsp vanilla

1/2 cup cool whip

For Peanut Butter Topping:

1-1/2 cups cool whip

3-4 tbsp Nutella (feel free to use whatever nut butter you want, but I wanted to keep with the chocolate theme)

3 sheets graham crackers (crushed)


In a medium bowl, combine  cream cheese, pudding, sugar, and vanilla extract. Using a handheld electric mixer, whisk until smooth. Fold in 1/2 cup Cool Whip.

Transfer mixture to a large pie pan and set aside.

In a medium bowl, combine remaining 1 1/2 cups Cool Whip with peanut butter. Whisk until smooth and uniform in color. Spread over the “pie.”

Cover and refrigerate until chilled and slightly firm, about 2 hours. Meanwhile, crush  graham crackers into fine crumbs, and set aside.

Once ready to serve, top pie with crushed cookies/graham crackers.

Enjoy with a spoon, fork, fingers, however you like!

great friends and great food make great nights

I think that title kind of sums everything up.

I had a great night with some great friends and definitely enjoyed some great food.

I have kind of been slacking on the whole challenging myself and ED lately and I think I am using school and being busy as an excuse.  Even though it may seem like an excuse I really am insanely busy with school.

My mom also was just out here, and let’s just say that added some extra stress.

I don’t want to get into too much detail because it’s not something I want to really share with the world, but my parents/family have not been the most supportive group in my recovery.  My mom has her own issues she needs to work on and is just, not really able to be there for me.  One word. Denial.

Thank God or whatever higher being you believe in that I have Matt and his parents.  I really do not know what I would do without their support.

Or the support of my amazing friends.  And the people who I didn’t think would be supportive are more than I could ever imagine, but also on the flip side, the ones I thought would be super supportive are no where to be found.  It is amazing how others true colors come out in these situations.  And maybe some just don’t know how to react or how to be supportive, and that’s ok.  But I will just say I have been surprised, pleasantly and not so pleasantly in this whole experience so far.

But let’s stick with the pleasant shall we?

Because I had an amazing night and that’s what we shall talk about.

One of Matt’s co-workers had texted me one night and I decided to try and make dinner plans with her and her boyfriend.  When I make plans it makes me stick to them, and I also just really wanted to hang out with them.  They are some great people.

I had asked them if they wanted to grab sushi with Matt and I, as we were already trying to plan a night because Matt had bought a Groupon for a new place we haven’t been too yet. Ironically they had gotten the same Groupon!

Again Matt and I had been trying to plan a night out for awhile, but I ED kept putting it off.  So again, I knew if I made plans with others I would have to follow through with them.

It’s really good how much I love sushi though, because going out for it is just a bit easier because I know how much I am going to enjoy it. And boy, did I enjoy it.

We ordered so much food between the four of us! Seriously they just kept on bringing out plate after plate after plate.  I didn’t even get pictures of everything, because it was so much through out the night.  That is the one thing I like about sushi places, it typically does not come out all at once, but through out the meal.

But here are a few highlights of things I did get pictures of.

I’m not going to lie, fried food still kind of freaks me out, but I challenged myself a bit and had a piece of asparagus.  It was delish.  There is a steak house we went to once and we got the tempura asparagus and I just loved it.  The dipping sauce was amazing as well.

we also got an order of edamame. i seriously can not go to a sushi place and not get this. so good.

i don't even actually know what fish this was, but it was topped with fresh jalapenos. i snagged the last piece. it was pretty good!

ok this is one that doesn't look all that appetizing, but i think it was the best roll i had all night. the one in front was...oh goodness. now i don't even remember, but it was topped with spicy tuna (or salmon) with a drizzle of some sauce. wow i'm helpful in my descriptions. the back roll, i don't know at all what it is. caitlin and ryan ordered it, but it was consumed quickly so i know it was good!

I love fresh fish and I love the rolls that come with extra on top.

these were all amazing and we might just leave it at that.

we seriously ordered so much food i have no recollection of what anything was. i really just remember it all tasted delicious.

So I keep saying how much food we ordered.


Matt made the promise that whatever no one ate he would finish. He kept his word. The kid is a bottomless pit when it comes to sushi, but I truly believe sushi is one of those foods that doesn’t fill you up till the end. Then bam. You’re stuffed.

Caitlin and Ryan came over to our place after dinner where we enjoyed a few more beers and The Walking Dead.

There is nothing like good company and I had such a great night.

Again, great people make it totally worth it!

Do you have  a favorite style of food that you like to eat when you go out? I seriously love sushi. I really love all Asian foods.  We went to a Vietnamese restaurant with a few friends and it was so good. Sadly they didn’t have too many vegetarian options, but it was still really really good of what we got.  I am also a huge Thai fan. Love it.

Do you have great friends you can rely on? Seriously don’t know what I would do without mine.

eating my words. and loving it.

I’ll eat my words. I have no problem doing it. However, the words I am about to eat, I’m not completely at fault.

Or at least I will tell myself that.

A few days ago I made this post regarding my refusal to eat pumpkin until our temperatures cooled down.

I can guarantee you, our temperatures have not gone down.

But I can also tell you…

I had pumpkin oats for breakfast.

pumpkin oats in all their glory. coconut butter glob? yes please, sprinkle of brown sugar and cinnamon. check! and yes i think a spoonful of chocolate coconut butter also made a later appearance, because i dont think i can go a meal without adding it to something.

I really can’t be to blame here.

Not fair Ashley. Not fair. I mean just look at how tasty those things look.

Then the fact that I had company who loves pumpkin.

And we all remember my case of pumpkin that stares me down from the corner?

i mean look at how menacing this thing is.

And I didn’t want to be rude when all the requests for a pumpkin breakfast were made. Seriously, I mean, you just can’t deny your guests what they want.  So a big batch of pumpkin oats was made.  And I’m not sad about it at all.  I’ll eat my words and my oats thank you. -chomp chomp-

the coconut butter is a must on this pumpkin gooey lovelyness of pumpkin magic. i found a new lover and his name is coco-nut.

So I figured well. If I’m breaking my pumpkin strike, might as well finish the can right? I had been wanting to make muffins for a few days and Nicky had suggested her maple pumpkin muffins, so why not right? I have the day off,  the friends had left for their trek home, the house was already a mess. Muffin making it is!

 These turned out ah-mazing. The only change I made was I left out the oil and used unsweetened applesauce instead. But oh my gosh.  These things were delicious.  As soon as I tasted the batter I knew I was in trouble.  In trouble meaning it was going to be very hard not to eat them all in one sitting.

I really am starting to love baking. It really is a totally different experience than cooking. I’m not too educated on the different flours and how everything works together, but I am very eager and excited to learn.  I feel the more baking recipes I try and the more successes I have the more my passion for it comes out.

I am so excited to experiment with new recipes and may even buy some new flours! I know it may seem like I am a bit too excited over this, but for someone who really didn’t have a lot of passions in her life, finding something that you really enjoy and feel great doing is very freeing.  Even if it’s just cooking and baking.  But I really am happy to find something I love doing so much. Culinary school anyone? Maybe. It’s something I may start looking into.
