Oh happy Wednesday my loves and happy Thanksgiving Eve!!

I don’t know about you, but I am so excited for a day full of good food, family and a day off work!

Mostly the family, but being the foodie I am, I’m not going to lie I am pretty excited about all the food!

One thing that I’m kind of worried about though is my stomach is still not completely back to normal after last’s weeks sickness.

It just goes up and down with being upset to being fine, but as long as I’m not throwing up, I can work with it.

With that being said meals have still been pretty bland and boring, but thanks to my amazing clients, I have some deliciousness to share with you still.

Let me just tell you. We have been spoiled at my clinic.

 

It started off when my co-worker made not one but two home made pies.

Apple pie and pecan pie.

I have never had pecan pie, but she raved about hers being the best, so I of course had to be the judge.

Let me tell you, I am a pecan pie convert. It was ah-mazing.

Then all the gifts from the clients started piling in.

Friends, this happened in just one day.

We have a client who brings us fresh fruit every week for boarding his dogs, it just so happened on that day we also got two boxes on See’s Chocolates, chocolate donuts, and an edible arrangement.

The chocolate arrived first and around our clinic, it’s never too early for chocolate.
So this happened.

I somehow restrained myself and only had one piece, which is a good thing considering how much more was to come.

This edible arrangement didn’t stand a chance.

Especially the chocolate covered fruit.

I immediately took a piece of the chocolate covered pineapple and thought I had died and gone to heaven. But really anything covered in chocolate is good in my book.

Which is why a chocolate covered apple was soon plucked off. Chocolate doesn’t last long in our clinic so I had to cease the opportunity.

After I put myself in a chocolate/fruit coma, I needed something to wash it all down.

Thankfully another amazing client came to visit.

I love Starbucks passion fruit tea as is, but when it’s free, it’s just that much better.

I swear I felt like I was going to explode that day, but it was all worth it.

It’s the holidays,  I’m going to take advantage of it.

My days have been slow and boring at work, I actually got to go home early yesterday, which part of me regrets volunteering to leave in regards to I will be short hours, but the other part of me loved having the day off.  Since we are going to LA this weekend, I took advantage of my day off and got a hair cut and also treated myself to a pedicure. So I may regret this day when I get my paycheck, but for now I enjoyed a nice relaxing day off.

Sprint 2 the Table

I am still so obsessed with this breakfast and love experimenting with it.

If you saw my post, you know my last batch was a little green.

I’m all about getting as many nutrients as possible in my breakfast. Since the plantain gives me my carbs, and the added protein powder and protein frosting give me extra protein, and of course my delish home made banana coconut butter gives me my fats, there’s one thing that I’m missing.

There’s no greens or vegetables in my protein plantain pizza, and since I don’t want to top my pizza with veggies, I had to get a bit creative.

Then I remembered I had a tub sitting in the back of my pantry that might solve this problem

I totally forgot I had these Incredible Greens and when scavenging the cupboard for something else, I found it tucked in a corner. Perfect solution for adding some green nutrients to my plantain protein pizza. Yes I could have just added some spinach (if I had some), but check out all the added nutrients in this powder.  There are so many other nutritional benefits in this powder, so I feel this is a great addition to the plantain bread. And other than it giving it a slightly greener hue, I didn’t notice much of a difference in the taste. I also added more cinnamon to this batch in order to achieve that.

Green Protein Plantain Pizza

Ingredients:

– 1 ripe medium plantain

– 1/2 scoop vanilla protein powder

– 1 scoop Incredible Greens powder

– 1/2 cup liquid egg whites

– 7-10 drops liquid vanilla NuNaturals Stevia

– 1 tbsp cinnamon

Directions:

– Blend all ingredients in Magic Bullet

– Bake in pre-heated oven at 350 degrees for 20-25 minutes

– Top with desired toppings (if you’re indecisive like me – 4 different ones)

I seriously love this breakfast and it is so filling and satisfying.

I typically also have some sort of fruit on the side. Because we all know I am obsessed with fruit.

So obsessed that when I see my too ripe banana’s instead of freezing them, I make banana coconut butter.

I just mash the banana’s with coconut butter (I use this coconut butter)

A better use for them if you ask me.

I’m also still obsessed with protein frosting. But seriously, with all the protein powders I have, they never get old. I’ve started combining flavors to make new flavors. Chocolate + Vanilla. Chocolate + Cookies and Cream. Chocolate Fudge + Banana Cream. I mean really. I’ll combine anything. I also recently made a protein jam by, you guessed it, combining jam and protein powder.

Seriously what won’t I add protein powder to.

I know you guys are probably sick of seeing the same meals here, just tweaked, but like I said, I am loving this breakfast and I am loving playing around with it and adding new and different things. So until I get sick of eating it, you’ll have to deal with seeing it.

Long weeks make me actually appreciate hump day.

My days have been long, but exciting, so I guess it all evens out. My externship is giving me exposure to so many new things, and even though it’s a bit frustrating I don’t know how to do everything yet, it is also so exciting to experience it! (for example we had an emergency where a dog jumped though a window and ripped the tendons in his foot and was bleeding all over the place and then I delivered my first C-Section puppy and revived it back alive!)

But as exciting as all that is, I know that is not why you’re here. You’re here for the foodie wonderfulness that is What I Ate Wednesday.

I am going to call this the ugly, but delicious edition, because that is seriously what my meals have been.

I have come to realize there are not many ways I can make eating breakfast in the car pretty.

So I quit trying.

This is what happens when you have to eat in the car, at random stop lights, that always turn green right as you’re biting, so then your food starts to get melty because you live in Arizona and it’s already 100 degrees.

But even though it may not look super pretty, seriously, these things taste amazing.

Clearly hooked, I had another one the next morning.

This time I added some blueberries and cinnamon.

Same melty problem, but you guessed it.

Yup. Still tasted ah-mazing.

I then attempted to get creative and made a green egg wrap.

Fail.

The egg wrap totally fell apart and it quickly turned into a egg pancake in some classy tupperware topped with banana and peanut butter.

But again, still delicious.

And just so you don’t have to stare at my ugly (but delicious) breakfast creations, I was actually impressed at the breakfast one of my co-workers created.

Talk about mountain of fruit goodness. She also used Chobani greek yogurt, so I was very impressed with that as well.

We have a guy who boards his dogs with us at the clinic every Tuesday (I guess free of charge), so in return he brings us masses of fresh fruit and donuts or some baked treat. Fair trade if you ask me, and you better believe I gorge on that fruit. You guys know me and fruit. I’m obsessed.

wiaw 39 – let’s get fruity

As the title says, let’s get fruity! I am been on such a fresh fruit kick lately, it’s been a bit ridiculous.

Ridiculous in the best way possible of course.

I mean really how can you go wrong with fruit?

Now I still love my veggies, don’t get me wrong, but there is something about summer and warm weather that makes me crave everything fruit.

So since it is that time of the week. Oh yes, What I Ate Wednesday time, I thought I would show case some of my lovely meals and snacks that include fruit. Because there have been a lot of them.

I have also oddly enough been on a cereal kick as well.

I took a huge break from it, and I guess my body missed it. Craved it. I gave in to it.

But you can’t just have a plain ole bowl of cereal.

That would be boring. And we don’t like to be boring around here.

This was a yogurt mess of a cereal bowl. And topped with what? Of yes. Tons of fruit.

There was a Chobani vanilla greek yogurt in there, topped with a mix of cereals, frozen banana, fresh strawberries, raspberries and blueberries. A lovely drizzle of PB2 to top it off.

This bowl was so good, it had to be repeated a few days later.

This one was pretty tasty as well. Instead of greek yogurt, I made a cottage cheese mess. Topped with of course a mesh of cereals, frozen banana, strawberries, raspberries, and you guessed it, a peanut butter drizzle.

wiaw #32 – learning to relax

I hope everyone had a wonderful Easter holiday! Or Passover. Or if you don’t do either, I hope you had a wonderful weekend!

We went to Matt’s parents for Easter and had a wonderful relaxing weekend. Just what I needed.

Things have been so busy for Matt and I; with school for me and work for him, that sometimes it is just so nice to just sit. Relax. And be with family.

But things are back in full swing around here. School is intense. But I am loving every minute of it!

But let’s all take a break, because it’s that time. And I missed it last week, so I am super amped to not miss it this week!

Before we headed out to Matt’s parents on Saturday (PS I love that they only live a little over an hour away now. We don’t have to spend half our day driving. So nice!) we decided to hit up the farmer’s market just to spend a little time outside together. Our days have be gorgeous here! I am loving it!.
So on our bikes we hopped and took a stroll.
As much as I love my bike (totally vintage 50’s) I miss my old bike that got stolen. Stupid kids.

I always forget to take pictures at the farmer’s market (too busy sampling) but the fresh flowers always catch my eye!
If we weren’t on bikes I totally would have taken some home with me.
Or maybe someone will bring some home for me. -wink wink nudge nudge-

My meals however have been kind of blah lately.
Same ole same ole if you ask me.
Thanks to Chobani, I have been quite stocked (however that stock quickly diminishes in this house)
So breakfast’s have included a lot of these combinations.

I love dipping my fruit in my yogurt. To me it’s so much better than mixing it together. Am I the only dipping lover?

Now I know the April challenge is an extra cup of greens, trust me there are no shortage of greens in this house.

Just a little boring.

Matt and I are really trying to be more creative in the kitchen.  But with it being so hot (hello Arizona heat) sometimes we just don’t like to heat the kitchen up.

We are being stubborn and refusing to turn on our air! Although the last few nights have been pretty miserable, I might be the one to break!

But the greens have been coming in this lazy form lately.

Oh yes. Oven roasted broccoli. And yes. I dip it in ketchup. I don’t know what it is. But I love the combination.

No I am not pregnant.

 So although not super green, I made a re-creation of an amazing breakfast I hadn’t had in awhile.

We have a lot of banana’s around here lately and one went a bit ripe.

I haven’t let my banana’s go ripe lately because I have been eating them like a mad man, so this breakfast hasn’t really been an option.

We are going to Matt’s parents for Christmas so I may not be around tomorrow, so I wanted to write a quick post wishing everyone a a very safe and happy holiday!

We need to remember this is a time to spend with the ones we love.  It is not about the gifts, because the true gifts are our family and friends!

My morning breakfast was also a little bit extra special due to my wonderful friend Kimmie.

Yesterday I got a surprise delivery and found this at my doorstep.

my mouth instantly started drooling. matts hands immediately went into the peppermint eggs.

Kimmie and I have been friends since high school and I must say she has been the one person I have really kept in touch with since I’ve moved and heck even before I moved and she has always been there for me always.

Some of my best friends today, I’ve met through college and when I lived in Indianapolis, but Kimmie has always been a true friend I know I can always count on. She has been supportive through everything I have gone through in my life and continues to be. She truly reminds me of what it is to be a good person and to be a true friend and I only hope I give her half the friendship she gives me. Kimmie I love you!!

I also got a few requests for the Peanut Butter Chocolate Pie I posted about yesterday.  Here is what I put into it.

Peanut Butter Chocolate Pudding Cheesecake (Pie)

♥ ♥ ♥

For Crust:

You can most certainly make your own crust, but since I made my pie at 7am a store bought graham cracker crust was used.

For Filling:

One 8-oz. tub cream cheese, room temperature

2  Chocolate Pudding Snacks (I used soy chocolate pudding, but feel free to use whatever brand/type you like)

1/3 cup granulated sugar

2 tsp vanilla

1/2 cup cool whip

For Peanut Butter Topping:

1-1/2 cups cool whip

3-4 tbsp Nutella (feel free to use whatever nut butter you want, but I wanted to keep with the chocolate theme)

3 sheets graham crackers (crushed)

Directions:

In a medium bowl, combine  cream cheese, pudding, sugar, and vanilla extract. Using a handheld electric mixer, whisk until smooth. Fold in 1/2 cup Cool Whip.

Transfer mixture to a large pie pan and set aside.

In a medium bowl, combine remaining 1 1/2 cups Cool Whip with peanut butter. Whisk until smooth and uniform in color. Spread over the “pie.”

Cover and refrigerate until chilled and slightly firm, about 2 hours. Meanwhile, crush  graham crackers into fine crumbs, and set aside.

Once ready to serve, top pie with crushed cookies/graham crackers.

Enjoy with a spoon, fork, fingers, however you like!

I hope everyone is having a wonderful week so far!

Mine has actually not been too stressful! I hope I don’t jinx myself in saying that.
The great thing about me being a bit obsessive about school and studying is I get ahead. Yes, I am that person who goes to the library Friday…Saturday…oh wait and yes Sunday.  But I read what we will be doing the next week, that at least get’s me familiar with the material, so when when we “go over” it in class I kind of already know what’s going on. Less stress for me. Me likey.

But unfortunately, I still am busy, and meals haven’t been as pretty. And still quick.  I really wanted to do an update post on my challenges for this week, but it just hasn’t been able to happen.

Yes breakfast’s look like this again.

is that a quick sandwich? a trader joes yogurt? and textbook? yes kids you guessed it. this girl had breakfast at the library again.

But I will do an update post on how I did on challenging my dinner eating trends and new meals.

But for this week’s What I Ate Wednesday I thought I would do a flash back of when I actually had time to prepare my meals! They were sooo much prettier.  Maybe it can be inspiration for me (and maybe you!) to switch things up a bit more.  There is nothing wrong with snacking a bit before dinner, that way I’m not so ravenous and can actually prepare a better and more complete meal for myself.

Here are some of my favorite meals that I have made in the past.

this really makes me miss berry season. oh the days when i had time to prepare my breakfast. these were chocolate oats topped with chocolate soy pudding, fresh banana, strawberries and a little crumble of peanut butter puffins. you want to talk about a delicious breakfast? this was one of them.

I swear I am so proud of that bowl of oatmeal. It’s like a work of art. And trust me. It was super tasty too.

this here creation was my pumpkin quesadilla. sans cheese. i believe it had pumpkin, apple, and cinnamon in it. on the side cottage cheese with trader joes pineapple salsa and a tiny yogurt mess topped with puffins and ... some other cereal. looks possibly like fiber one.

Ok. I can’t believe I am going to say this, because this point in my recovery was kind of. um hell. But sometimes I miss the days when I could eat huge meals and it not matter. At that point in my recovery I had to eat huge meals. I was never satisfied. Which in an eating disordered mind is hell. Consuming that much food. But let me tell you, it was a lot more fun.

(ps it’s good…and bad that I look back at some of these meals and still see my eating disordered eating. Fiber One? Seriously? No one REALLY likes that stuff, but it’s super low calories.)

The quesadilla was super good though. Random? Yes. Tasty? Also yes.

ok another bowl of oats, but this was an introduction to two very delicious things. pumpkin oats and coconut butter.

If you followed my blog at all you would know I got obsessed with the Cacoa Bliss chocolate coconut butter. And if it wasn’t so expensive and I didn’t have to buy it online I would still probably be using it daily. But regular coconut butter (on top of peanut butter of course) over pumpkin oats. Was.To.Die.For.

ok are we seeing an oatmeal pattern here? can't help it. i love them. every which way and form.

I believe one of my first oatmeal pancakes topped with chocolate protein frosting. Delish.

oh i use to make so many whole wheat tortilla hummus pizza's. this one i think actually has trader joes black bean dip as the "sauce" topped with baby spinach, yellow bell pepper, red bell pepper, zuchinni, and cherry tomatoes.

I’ve also made these with pumpkin as my base. Hummus, pumpkin, black bean dip. All amazing.

oh my. my tofu scramble addiction time. again really makes me miss fresh fruit. ah fresh farmers market peaches and tomatoes. i miss you guys! salsa tofu scramble on a bagel with fresh tomato slice and fresh strawberries and peach on the side.

And while we’re on the topic.

a pumpkin tofu scramble made with my homemade pumpkin peanut butter. basically just mix pumpkin with peanut butter, but it was amazing.

I’m pretty much convinced anything mixed with peanut butter is amazing. And pumpkin is always good. Duh.

And last but not least. Something I have not made in forever that I need to.

So those are some of my old favorite meals. Looking back at them really makes me want to experiment more in the kitchen again. I feel like at the beginning I did that a lot, and yes I had more time, but I also wanted to. I feel like I am getting into that comfort zone again and eating the same things, because they are safe. But I am getting to the actual weight gain part of my recovery and that scares the crap out of me.  But that’s what I need to do. I need to scare my ED, because if I don’t, it will always win.

I’ve actually done really well so far this week. Eating new things. “Higher fat” meals. And yes I feel horrible sometimes afterwards or the next day, but I need to do it.

Because in reality, in order to be a successful veterinary technician, I can’t be underweight.  So that’s some motivation for me as well.

Do you ever look back on old meals to get inspiration?

One real good thing about blogging is I can look back for inspiration.  Otherwise I might forget about all the tasty meals I’ve made.

What happens when you feel like you get in a food rut? Do you stay in it or try and switch it up?

I’ve always said if you’re in a rut, go with it if it’s something you enjoy eating.  But eating the same meals constantly in reality I’ve learned is not good.  You need variety. It really does help in keeping you satisfied as well.

I spotted this bad boy about to happen when I was making Matt and I dessert one night. Let’s just say I was pretty excited about it.

i had a frozen banana that has been in my fridge for...way too long lets put it that way. its amazing that a frozen banana can last so long!! but it was very nice in my hot oats. i loved having the cold little chew randomly in there. and i love banana's. duh.

I know it seems like I eat a lot of OIAJ, but I really don’t.  I think when I do have them I make sure to take pictures because it’s always a great occasion.  And lately since I’ve been so busy I’m not taking as many pictures of my meals.  They just aren’t as pretty anymore. Sad times.

and even though this may not be the prettiest dish, i mean honestly it's oats in a jar, i still think it's mighty nice to look at.

I had another pretty great breakfast the other day too. Now Even though I’m busy and more rushed sometimes I still find the time to make my egg sandwiches. Which now I am obsessed with putting jelly on it instead of salsa.

But one thing I haven’t been taking the time to do is making my little side greek yogurt messes.  Now it usually is just me eating a single serving cup.  But not this day!!

this was a pretty satisfying breakfast. lightly toasted english muffin with egg whites on one half blueberry jam on the other and my little greek yogurt mess.

Again let’s all take the time to recognize my huge pile of jam.

Hey, I still need to gain, might as well take advantage of it!

yup. victoria secrets catalog. now i don't know that i've ever ordered anything, but i sure do love looking at all the clothes. oh and my cup of coffee. one of many i'm sure.

Having some time off from school and actually being able to make breakfast’s have made it kind of hard actually.  Hard in the fact I can’t decide what I want.  Sometimes I just want to do the quick nut butter sandwiches I have to do when I’m running out the door, yet I know next week I will be running out the door again so I will have plenty of opportunity to make them. Sometimes I seriously wish I could eat breakfast all day because honestly, I love breakfast foods.  But what makes a food breakfast anyways? I definitely use to have my days where I think I had oatmeal for every meal.

So my week off is coming to an end and let me tell you I am a little sad about it, but also excited to get back in the grind of things.  It has been hard not having the mid day distraction and I feel like my hunger is totally out of whack.  I don’t know if it is because I am sitting around more and able to think about it again, or if I truly am hungry.  I do know it has been messing with my emotions as well though as I had a freak out moment in the library.

I am so ready to find my balance. I still feel like ED has some control over me and definitely wants me to restrict and it’s very hard not to listen.  Sadly restricting is easier than giving in.

But I am a fighter and I will fight back.  Because I will never balance out if I don’t.
