almost omelet failure

It’s official.  I do not know how to make an omelet.

Well, half way at least.  I can make them taste good, but the actual cooking process, I literally am omelet dumb.

In cooking my breakfast this morning I seriously stood over the skillet thinking to myself “do i flip the whole thing like a pancake?” “do i fold it over now?”.  This resulted in an almost burned omelet, but I saved it! I also think I made the wrong choice.  I did not flip. I folded.  Which led to an uncooked middle.  Don’t worry, I just squished it all out to get cooked.  Then covered the top in salsa so you wouldn’t see my almost burnt mess!

yea i guess you can still see that i kind of burned it. but i'm not kidding when i say i literally stood there with the "omg what do i do" face and just froze.

Since I was never (still really am not) a huge egg person, I make my omelet’s pretty simple, because honestly I don’t know the rules. So do you add ingredients to the egg mix and then pour? Add everything to the skillet and then pour the eggs on top?  I’ve seen recipes to add a cheese spread in the middle, when do I do this? I just don’t know. But this morning, I added a lovely addition that really took my omelet up a notch. (I just added it to the egg mixture…I didn’t know)

i had gotten this off of opensky, as it came with two fruit jams i really wanted to try (kiwi & apricot) and this was part of the bundle. great added bonus.

This seriously added such a nice spiciness to the omelet and I am out of jalapenos’ or fresh would have went in (what can I said I like it spicy, always)

Remember my buffalo chicken salad? That I had like 3 times in a week once. I just can’t help it. My dad taught me to eat jalapenos’ out of the jar!

Anywho, back to the omelet.

So even though I don’t have the cooking method down, I do a pretty good job at hiding the eggy taste I really don’t like because I actually enjoy these breakfasts.  I’m just really trying to find different ways to get protein into my breakfasts.  I hate to say this, because as much as I love my oatmeal, adding protein powder is not keeping me full.  Even though you would think all that fiber carby goodness would, right now it is just not what my body is needing.

Although another protein filled meal that has been super tasty lately are my tofu scrambles.  Wow two things I really did not expect to really enjoy. Tofu and Eggs.

`Ok, so we all know my love for Trader Joe’s and their products. That store is seriously dangerous.  Matt and I went once for literally 3 items and walked out with a cart full.  Once I see him adding things, I just can’t help myself.  So I decided to try some new veggie burgers.  We typically do the standard Vegan Boca Burgers, if we don’t make them ourselves. (By the way we had homemade veggie burgers and grilled corn on the cob the other night and I am kicking myself for not taking pictures, because they were so delicious. Wish I remember what all I put in them because it was seriously recipe worthy) But I wanted to try a new pre-made version for quick lunches.
Boca, I’m sorry, I don’t know that I can go back to you.

The brand is Dr. Praeger’s.  I think I’ve seen people eat some of these other products, but when I was looking at the veggie burgers these just stood out to me for some reason.  I wonder if Trader Joe’s makes their own. I’ll have to check, but I had really been wanting a more veggie burger than soy burger.  I really try to not eat too many processed soy products, but sometimes when I need a quick easy lunch they work.

i served this on a small bed of romaine with some oven roasted broccoli and organic creamy tomato soup on the side. (ha. i just typo-ed and put dreamy. it's actually not the best i've had, so sorry soup you are not so dreamy.)

I was actually surprised at how…flavorful the patty was.  But then again, I am use to bland Boca patties. So this lunch was a very nice surprise.

i bet you guys were wondering where this was. don't worry. it was there.

Like I could have oven roasted broccoli without it. Pssh.  But sad times followed.

Overall I’m glad I decided to try a new brand.  I still think home made is the best way to go, but like I said, when you need a quick lunch they work!

wiaw #9 – more pumpkin more ways

I have been super slacking on taking photo’s of my food, but mainly because I am eating very ugly things.  But that is one good thing about What I Ate Wednesday’s because it encourages me to make prettier fun creative dishes.

So you think I got over my pumpkin craze? Because I haven’t.

And I found a new way to include it in my breakfast.

pumpkin tofu scramble. oh yes. half a bagel spread with pumpkin peanut butter, tofu mixed with some pumpkin on the other. side of peach.

So glad I decided to mix my pumpkin and peanut butter.  Sometimes some of my weird idea’s work. Ok sounds weird I know. But it was seriously pretty tasty.

Snackage was super fun today, because I used my new Halloween goodies that I had gotten at Target.

I have been having more simple lunches lately.  Trying to find combinations that keep me full.  Which is still very hard for me and very frustrating.

I find the addition of the soup actually fills me up a bit more. I’ve never had butternut squash soup and am so glad I decided to try it. So good.

the kale chips weren't as crispy as they normally were, but i burnt the first batch i made with this kale and i think i was just nervous i was going to do it again. but none the less they were good.

Dinner, was ugly ugly ugly, but so so good.

I made kind of an upside down vegetarian shepherd’s pie to give it a name if I have to.

i later added some vegan gravy. everything is just better with gravy.

I’ve noticed my meals have kind of become a hodge podge of items, anything to keep me full.  I’m not sure if that’s a good or bad thing, but I am so sick of not being full or satisfied after a “normal” meal.

i mean seriously, this was a lunch, but i'm trying really hard to get proteins, fats and carbs into my meals.

Random combinations, but so tasty.  I don’t think just because something is classified as a “breakfast” food or “lunch” food should determine the time of day I can eat something.  My body clearly doesn’t know the difference. Food is food.

cupboard cleaning

Happy Monday loves ♥

I hope everyone had a great weekend.

I know my last post was kind of a rant and negative which I hate when I get in those moods. But as I said sometimes you just need to vent and even though it wasn’t a happy topic, I felt better.  But in all I do not want to be a negative person, I need to focus on the positives.  Because being angry, bitter and sad all the time is no way to live.

So on to more positive things. And this morning had a few of them!

And then I remembered I had this in the cupboard.

my empty jar of cashew cookie batter butter. oh yes.

Excuse my lack of toppings as my fruit supply has depleted. I’m out of banana’s and actually thought I might go crazy.  But I topped these with Cocoa Cherry Pie Bear granola that the wonderful Sam sent me from across the pond and a little more peanut butter.

why can't we get stuff like this in the US? just not fair. delicious.

And then I made this little plate to complete breakfast.

I think my body is finally starting to level out and actually get full.  Now I have to figure out what a “normal” meal for me is.  I’m so use to consuming so much food, at the time needing to, I don’t know where my normal is right now.  I definitely don’t want to over eat.

I mentioned I have been trying very hard to add variety to my meals, not eat the same things, experiment more.  Matt and I are really starting to struggle money wise and even though that is not a good thing, it has made me be more creative in creating a balanced meal as we can’t get as many groceries or go as often.  So I guess if you want to try and see the positives in all situations that’s one.  But I have ended up making some pretty tasty creations!

These pizza’s have basically turned into whatever veggies I have in the fridge are going on top.

This one is not pretty, but was really tasty.

Another cupboard cleaning meal. You can tell I’m running out of veggies as my salads are usually loaded, and I’ve had the can of fire roasted tomato’s for forever and finally decided to put them to use. You gotta do what you gotta do.

And yet one more not so pretty but extremely tasty meal with some really random ingredients.

I know this is just a bump in Matt and I’s road and I have full faith we’ll get through this.  I hate having money issues, because money always causes fights, and right now those extra petty fights are not needed.  We have so many other things going on that we need to worry about.  I just hope we can remember to appreciate and love each other and I have faith we’ll get through this.  And hey, I kind of like making hodge podge meals.

WIAW #6 – breakfast all day

Good morning loves.

Another wonderful Wednesday, which means another wonderful par-tay hosted by the beautiful Jenn at PeasandCrayons.

So I think the title says it all. I had breakfast for every single meal.

I did it. I’m not ashamed.

I have been on such a sweet kick lately it’s ridiculous.

Soy chocolate panini obsessed anyone? Although sometimes that feels like dessert. Again. No shame.

Ruts are becoming my trend, but I don’t like to look at them as ruts, just listening to my cravings. So what if I had breakfast for all my meals.  Whose to say a specific food is “breakfast” food anyways.  Why so obsessed with labels? With that being said, here is my day of breakfast. (and trust me, I enjoyed every bite)

My real breakfast was OIAJ. One of the best ways to start a day.

i find it kind of funny that my coffee mug is bigger than my jar of oats. what can i say. i like my coffee.

This was the first almond butter I tried and has been the best I’ve had. And I’ve tried quite a few others.  I don’t know what it is about it, but it is amazing.  The only bad/good thing was I don’t think I mixed it well enough in the beginning so it got dry towards the bottom.  Which was bad when I was trying to spread it, but it was good when it came time for the OIAJ because there was a lot left over on the bottom.  And that was great!

It is always a great day when it’s started off with OIAJ. Why is everything better with nut butter? Seriously. If I had a nut allergy, I would be a sad sad girl.  All of you who are, my apologies and condolences.

On to lunch breakfast #2

what can i say when i'm in the mood for oats i'm in the mood for oats. chocolate protein oats topped with banana and crumbled cinnamon puffins. mini yogurt mess on the side with a shot of a cantaloupe smoothie, which was NOT good by the way. i love cantaloupe, i added about 1/4 of a frozen banana, but i don't know. it was not tasty and it was not finished.

i'm either going to turn into oatmeal or a banana i consume so much of the two. puffins would be a close third. possibly pudding. let's just say i eat a lot.

I recently did a post of eating what you crave, and I am still a firm believer in that.  I am definitely in a sweet/breakfast rut.  (an un-pictured bowl of cereal was consumed as a snack as well) And I think that’s ok.  I still make sure I get my proteins and fats in, but thankfully nut butters are awesome for that!

And just when you thought I would get sick of oats.

Dinner. Breakfast #3

I seriously put protein frosting on everything now.  It’s like crack. I bought a few sample packs of Spiru-Tein in chocolate, vanilla, cappuccino and cookies and cream.  I’ve used the chocolate which is really really good and today was the first time I used the cappuccino.  I’m a fan.  I’m super excited to use the cookies and cream! They have a chocolate peanut butter flavor as well, but didn’t have it in the sample pack, and I didn’t want to buy a huge container unless I knew I liked it.  Although peanut butter flavored anything you can’t really go wrong with.

just proof that you can eat oats for every meal and still get your protein in.

Maybe tomorrow I’ll be done with my breakfast rut. Maybe not. I’ve noticed I tend to this do this, get comfortable with a certain meal and make it over and over, but in the end I move on to something new and different.  I see this one as being no different, so I have faith I’ll move on…Eventually.  But until then. I’m happy.

Although I tend to eat the same foods I always try and at least mix up the way it’s served. Take my oats.

I thought I was actually over oats for awhile.  I got on a huge cereal and kefir kick and was REALLY enjoying them.  What can I say, I’m simple and love cereal.  Thankfully when my friends came to visit and requested pumpkin oats, I realized that I did in fact miss my dear oats.  Oats are just so much more fun to dress up.  You can’t really dress up cereal.

this little temptress is the first pumpkin i had since my "strike" against pumpkin. i was being silly really, i don't know why i would ever strike pumpkin. this was also the first time i've had coconut butter. oh. my. goodness. is that stuff good in pumpkin oats.

So once my love for pumpkin and oats were re-ignited it was of course oats again for breakfast the next morning.  This time I added some chocolate protein and a bit of unsweetened cocoa as well to make chocolate pumpkin oats.

I actually had all intentions of having oats again this morning, but thanks to miss Katie at Healthy Diva Eats posted an amazing picture of a pumpkin spice pancake and just like that my breakfast plans had changed.  I didn’t have oat bran so I just used oatmeal instead, but it still came out pretty tasty.  Here is her recipe.

and i finally figured out how to make protein frosting and omg did it make the difference. I used Spiru-Tein in chocolate. I was nervous about not using nut butter because i typically ALWAYS use nut butter in my breakfast, but this was amazing. really hit the spot. topped with a bit of kashi go lean.

I was so excited about making it that I took a mid eating picture and tweeted it to Katie.  I just had to let her know how delicious my morning was.  Oh if I only had a pumpkin spice latte to go with it. -le sigh-

But there is always tomorrow for my latte, but I now have the dilemma of I have no idea of what I want for breakfast.  And I am one of those crazy people that I can not go to bed without knowing what I am going to have the next morning.  Is that weird?  Breakfast obsessed? Possibly. It is my favorite meal of the day.

What is on your bed right now? Two sleeping kittehs.  Even though I am home all day the cats want nothing to do with me between the hours of when Matt leaves for work and when Matt comes home from work. Now the pup on the other hand won’t leave my side. Other then when she’s passed out (which is about 5-6 hours of the day).  But I do love my pup so I don’t mind her company.

What were you doing 30 minutes ago? Had some breakfast, watched some of the news and read a little bit of Water for Elephants.  I am loving the book! But I mistakenly leave my laptop open, so when tweets and e-mails pop up I am quickly distracted.  I’m not even sure how I got to doing this survey. So easily distracted.

breakfast was a mish mash of cereals. organic corn flakes, honey-o's, cinnamon puffins. on the side a frozen berry smoothie made with 1/2 frozen banana, strawberries and blackberries.

What are you wearing right now? Black tank top. Boring. Plain. Black gym shorts. More yawn. More boring.

What was the last sporting event you watched? I don’t really watch a lot of sports on TV. Never have been a huge fan, but I am now obsessed with NFL football. GO COLTS. I can not wait for the official season to start! Oh, and you can take me to a Cubs game at Wrigley any day. That place is magical.

Things to do for fun: When it’s not 100+ degrees out I’ve been known to do some hiking. Love those mountains. Love the fresh air (if it even really exists in Phoenix) the solitude, and tranquility. It’s so refreshing to be “on top of the world” (have I ever mentioned I was proposed to on TOP of a mountain. My fiance knows me so well) And some bike riding. No really. I ride my bike everywhere.

lunch was a roasted veggie panini. on the sandwich was roasted red bell peppers, zucchini, eggplant bacon and cream cheese. on the side cottage cheese with trader joes pineapple salsa and barbara's chocolate chip snackimals (yum!).

What was your favorite toy as a child? My little pony’s. I think those are still one of my favorite toys. They are so cute.  I also had this toy dump truck that I pushed around the house everywhere. I remember my grandma and I use to play a game called “disappearing pear”.  She would cut up a pear then I would push my Tonka truck over to her and she would put the slice on the back of the truck and I would push it away and eat it and always say “grandma the pear disappeared!”  and then repeat. What a way to get a kid to eat her fruit! I was also easily entertained.

What pair of shoes do you wear most often? Toms. I own too many pairs for my own good. Oh, and I want these. Really bad. Someone should probably get them for me 😉

What is your favorite breakfast meal? Oats. Oats. Oats. I can not get enough oats.  That and fresh fruit. What about oats WITH fresh fruit. whoa. Did I just blow your mind?

What is your favorite food your mom makes? This is a tough one.  My mom makes the BEST tacos. She always told me that I didn’t want to know what went into them, and to this day I don’t.  But they would have to cook and simmer all day and my sister and I could NEVER wait till dinner.  They made the house smell so delicious.  She also makes an amazing pumpkin roll. Seriously to die for.  If she doesn’t bring it to family functions she is scolded. Matt also requests one when we go home for Christmas. And yes, my mom make a whole extra one just for him. She is so sweet.

How often do you cook for yourself? Everyday. And I love it.  I didn’t use to enjoy or experiment with cooking as much as I do now, but during my recovery process and the discovery of this blog community, I have really started to explore again in the kitchen. And I love it. It is so much fun (and tasty to boot) inventing and experimenting with new ingredients and new dishes.

Do you enjoy eating fruits and vegetables? Oh my yes and yes. Fruits have been making a lot of morning appearances and veggies tend to come out to play later in the day.  I was never a huge fruit OR veggie person growing up, so it still blows my mind a little that I did a complete 180 and basically can’t find a fruit of veggie that i don’t like. I mean really, I make green smoothies now. NEVER saw that one coming.  Current fruit obsession = frozen grapes. Current veggie obsession = zucchini (i put it in everything).

What is the last thing you purchased? Food. Surprised?  I had two things on my shopping list when I walked into Whole Foods today; raw cashews because I want to try and make Ashley’s cake batter cashew butter again and dates because I am making Nicky’s banana bread hummus.  This is what happens:

organic baby cheese puffs (for me. no baby) kamut puff cakes, creamy peanut butter for matt, creamy almond butter for me, spaghetti noodles

raspberry and fruits of the forest jam, salsa, raw cashews, chobani greek yogurt

tofu, vegan pepperjack cheese, soy yogurt, a peach, an apple, 3 dates and my very first fig (not a fan btw)

Yup. All that with two things on my list. I can NOT walk into that store and not spend triple what I intended too.

How did u get one of your scars? Which one, because I have like 9343294 on my legs/knees/ankles from the many years of softball.  My most recent one is from the oven though. Too lazy to pull the rack out, I like to try and grab things, throw things in with as minimal effort as possible. I love cooking and I love my food, but I’m probably one of the laziest cookers out there.  If there’ a short cut to anything I’ll take it.

What was the last thing you received in the mail?  Well, I can tell you the last thing I didn’t receive in the mail. My Keurig coffee maker!! Do you know why I did not receive my Keurig coffee maker, because some stupid kids stole it off my patio when it was delivered!! I was at a doctors appointment, came home, a few minutes later I get a knock on my door.  It’s my neighbor from across the street. She informs me she saw a girl and boy on bikes take two packages off my patio!  I quickly rack my brain for what was to be delivered and almost cried when I found out it was the coffee maker.  My friend had actually ordered it, so she had to go through the process of calling the company, but long story short, I have another one coming to me. And you better believe I am tracking that thing until it is on my doorstep.  I hate thieves.  It is just uncalled for!

It’s official. I am a bottomless pit.

Because lately I can not stay full. And on top of that all I have been craving lately is carbs.  Nothing else seems to keep me full.  Well actually, nothing is keeping me full.  Again, I know my body needs the food. Craves the food and maybe this is part of the recovery process, maybe my body is finally saying “hey food yay, I want more”  But I feel like I already went through that part.  That now I should start being able to be satisfied.  But I am still getting hungry every 1-2 hours, no matter what I eat. And then it seems a negative domino effect happens.  The more bloated I feel from eating all the time, the smaller I tend to make my meals.  Which common sense would tell us, the smaller the meal, the less satisfied you will be.  But tell my mind that, he doesn’t seem to get it.

But craving carbs hasn’t been all that bad.  I mean. I do love my oatmeal.

Cake batter overnight oats two days in a row? Yes please.

Other than feeling completely bloated ALL the time, I’m really not bothered by my carb obsession right now. That and I’ve becoming obsessed with nut butter as well.  Not only do I already have 5 different kinds in my cupboard, I have an OpenSky order placed for 3 jars of Justin’s peanut butter and I just placed an order for more Chocolate Coconut Butter.

Do you ever impulse buy online? Lately I’ve found myself to be doing this a lot.  I think it’s because I’m home all day now and get bored and shop online. Sadly it’s typically food!

Do you make a grocery list when you go to the store? Do you stick to it? I typically always go with a list, but 99.9% of the time come out with double of what was on that list. This girl likes her food.

Do you ever get in food ruts? Eating the same thing everyday either due to ease of preparation, you have all the ingredients, or simply because you like the meal? Well obviously I do. (my nutritionist agrees with me!) There are certain foods and meals that I tend to fall back on when I either can’t think of what I want, or simply because it always sounds good.

Now I don’t think a food rut is bad all the time. As long as your not eating twinkies and ding dongs everyday, I see no problem in having a repeating meal.  Goodness knows I have plenty.

Rut #1 Oatmeal

hazelnut chocolate oats topped with fresh blueberries, strawberries, banana and a big glob of Nuttzo peanut butter.

There are so many ways to dress up oatmeal, you could probably eat a different bowl for a year, two years, three years!

Why not even make your oats a piece of art?

vanilla latte chocolate overnight oats. topped with soy chocolate pudding, fresh strawberries, banana and pb puffins for the crunch.

And let’s not pretend you have to eat oats only out of a bowl. Oats in a jar anyone?

cinnamon vanilla overnight oats in a strawberry rhubarb jam jar topped with cinnamon crunchies and a spoonful of almond butter. iced soy chai tea for a little side refreshment.

And let’s not stop at just a change of location. You can bake these bad boys too.

Rut #2 greek yogurt topped with fresh fruit

plain greek yogurt mixed with unsweetened cocoa. topped with fresh peach, blueberries, banana, pineapple, cherries and cinnamon puffins for the crunch. sprinkle of cinnamon love.

kid themed greek yogurt fruit mess. strawberry greek yogurt topped with fresh kiwi, blueberries, cherries, banana, golden raspberries. oh and some organic baby puffs.

The fruit just keeps on coming.

Rut #3 Salad Beasts

i'm not even going to pretend like i remember all i put into these!

 My point is yes variety in your diet is great and I believe necessary, but I also believe if you like something, it satisfies you, then it shouldn’t matter if you eat it everyday. Twice a day even.  Because why change and just be left unsatisfied and probably end up eating more. Or making the dish for a later meal. (story of my oatless mornings)
