Hi friends.

I know it’s been awhile, but my life lately always seems to be go go go.

I really feel like I barely get the chance to sit down and just relax, but honestly, sometimes I don’t know that I would want a lot of spare time. I know sometimes I complain about always being busy, but if I wasn’t busy I honestly don’t know what I would do with myself. I think I would go stir crazy. Oh Monday.

Today you are extra hard.

The Monday after Super Bowl Sunday was destined to be a rough one.

I am going to say that game was a bit of a disappointment. Not because the Bronco’s lost, but it was just a poorly played game.

I went into the game not really caring who won. I am a huge Peyton Manning fan due to being a Colt’s fan, but the Seahawks are an amazing team as well and I thought would be just as deserving to win. So on that note, congrats Seahawks.

Matt and I just went to our favorite local bar to watch the game. No big parties for us. We got invited to a few, but we really didn’t want to do the whole driving thing and since my parents had been here for the past 4 days, we wanted to be able to just kind of do our own thing, spend time together and be able to be on our own schedule.

Friday!

Oh my goodness, I don’t know about you, but this has been one of the longest weeks ever.

For me at least it is because I had Monday off and had to work the rest of the week. It was wonderful having two days off in a row, but I am telling you, it makes the rest of my week so long.  But Friday is finally here and even though I work Saturday, there is still always a little joy in it being Friday.

I haven’t participated in a few weeks basically because my eats have been on such a repeat that I haven’t made anything noteworthy.
And really this dish isn’t too strange, but a new twist on an old favorite with a new ingredient obsession.

Carob.

I swear ever since I ordered this in my Swanson Vitamin order, I have been adding it to everything.

So it may be no surprise that this happened.

Carob Plantain Bread

Topped with a mocha protein frosting using my Click mocha protein, sprinkled with coconut shreds and a local granola mix.

Ingredients:

– 1 medium ripe plantain

– 1/4 cup egg whites

– 1/4 cup vanilla almond milk (or milk of choice)*

– 2 tbsp carob powder

– 1 tbsp chocolate protein powder (I used BSN Lean Chocolate Fudge)

– 5-7 drops liquid stevia

* I’ve  been making my batter a little bit more thicker lately, it makes more of a dense bread, but feel free to add more almond milk if you need to thin out your batter.

Directions:

– Pre-heat oven to 350 degrees

– Blend all ingredients in a small blender or magic bullet

– Bake for 20-25 minutes

Mocha Protein Frosting

Ingredients:

– 1/4 cup plain greek yogurt (I used Chobani)

– 1/2 scoop Click mocha protein

– almond milk to thin (I use Silk unsweetened vanilla)

Directions:

– Mix all ingredients in small bowl until blended.

– Add almond milk in small amounts until desired consistency.

I think it can go without saying that this was amazing.

I have nothing more really to say other than if you haven’t tried carob powder, try it.

If you haven’t made plantain bread, make it.

Hello friends.

I’ve been trying to get a little bit more creative with my work day breakfasts. If I have enough time I’ll try and make something a little more involved as opposed to when I am running out the door and literally am throwing together a pb&j.

A few more healthy poptarts have been made, not as pretty as the first, but just as tasty.

It starts off being made at home.

I used my new Cellucor Cor-Fetti protein to make a protein frosting for the top. I will say I was not as huge as a fan of this flavor as I thought it would be considering all the rave it was getting, but it is slowly growing on me. Honestly, I have to add a little bit of  a different flavor protein, whether it be vanilla or chocolate, and it makes it much better.

But sometimes breakfast actually makes it into the clinic to be eaten (in the storage room – still super classy). So of course that needs to be documented.

For this healthy poptart I really was just so happy with this marshmallow mocha protein frosting. Sometimes I wish you could taste pictures so you could understand how delicious this was.

Speaking of delicious. I try and take advantage of my one day off and make a more involved breakfast.

It of course involved plantain bread. If you had any doubts.

This was a carob* infused plantain bread base (obsessed with carob powder) and topped with vanilla protein frosting and sprinkled with coconut shreds and local granola mix.

And just in case you didn’t know chocolate + coconut = amazing.

I also somehow managed to make a few amazing dinners as well. That is a rare event that happens few and far between these days.

I had some Trader Joe’s chicken strips that needed to be used and it just so happened some Trader Joes Thai Curry sauce sitting in the fridge.

I cooked up some rice (mixed with hoisin sauce) and added some of a frozen mixed veggie blend that also needed to be used and called it dinner.

Seeing a trend? Sometimes the best meals are made from cleaning out the fridge and freezer.

Monday loving. Having a blast.

Monday loving, happened so fast.

Ok, so I may like the movie Grease a bit too much.

But that doesn’t make my Monday loving any less real.

There are a few things I have been loving lately. So what a better time to share than Monday. (because honestly, I am feeling the Monday blues – weekends just aren’t long enough, especially when you work Saturday’s.)

But thanks to the beautiful Katie, I try to always find positives in my Monday’s and remember to be marvelous.

Marvelous is… new foodie finds

Being the huge sushi fan I am, and making my own nori rolls at home, I use a lot of soy sauce. Since soy sauce is usually crazy high in sodium and after hearing great things about Little Soya, I was glad to finally be able to try these cute little soy filled fishies. Even though I don’t need to be gluten free, I love gluten free products.

Marvelous is… making new creations with fun new foodie finds.

I whipped up a stir-fry-ish dish inspired by a sauce I had seen on Instagram using the little soya in the sauce. Which by the way was bomb.

For the sauce I mixed maple syrup, sriracha and little soya soy sauce. Sounds strange, but so good.

I then stir-fried some chicken, cauliflower and kale and drizzled a little more sriracha on top.

It was so good I used it again a few nights later in a different dish.

Not the prettiest dish to look at, but again, so delish.

I took roasted kabocha and topped it with tuna cooked in the spicy maple soy sauce and then tossed a few maple roasted chickpeas on top.

Again, so random, but it tasted amazing. I am loving the spicy sweet mixture.

So dark chocolate is usually my favorite, but that toffee with almonds was addicting.

I mean I’m a firm believer in balance, eating what we want/crave, but I also like to eat clean, healthy, real food and do not want to fill my body with foods that are chock full of preservatives and unpronounceable ingredients.

So when I find a snack that not only taste good, but is made of natural clean ingredients as well.
