it’s all about balance

Oh lovies, get ready.

But that seems to be my life as of lately.

Up. Down. Right. Left. Sideways. And all directions in between.

But I somehow found my way back for What I Ate Wednesday.

♥ ♥ ♥

I’m going to warn you, this post is no where near a healthy one.

But lately my days have been fun, carefree, and me just living.

So sometimes that’s what you get.

Matt and I have really been taking advantage of me having some days off.

And honestly, one of the things we use to always do, how we met, how we bonded, how we fell in love.

Was going out day drinking.


I’m a beer girl. I like to drink.

And I don’t care if you deem it unhealthy. As cheating. Or as bad.

Because I don’t. I like it.

If drinking some beers get’s Matt and I’s spark back in our relationship, well I’ll bite the bullet.

We have had some amazing days together, just enjoying each other and having a good time.

That is all that matters to me. Us being happy again. And falling in love again.

Oh and some of this deliciousness makes me a happy girl too.


Yup, and I even ate this after all the beer and before dinner.

But there has been another liquid lately in my life that could possible get me in some financial trouble.

This guy.

If you follow me on Instagram, you know I’ve had a bit of a Starbucks problem lately.

There is a Starbucks literally connected to the clinic I am externing at.

Yea. And when you work with a bunch of co-workers who are just as addicted to coffee as I am, it tends to turn into daily walks next door for coffee. And since I am not getting paid during my externship, well this could really turn into a problem.

It needs to stop.

But I kind of don’t want it to.

But my week hasn’t been filled with only liquids.

There have been some decently healthy meals sneaking in here and there.

I mentioned that my go to breakfasts lately have been green smoothies.

They are easy to make the night before and the more and more practice I get, the better they are tasting.

It started with my protein green lemonade smoothie that I shared with you all.

But now I am starting to get more creative.

I mean. You guys have seen my oatmeal, it’s really hard for me to eat not dressed up food.

Especially breakfast, I am always proud of my breakfast.

So I’ve played around with my toppings.

In the mix:

Baby spinach, pear, cucumber, Plant Fusion vanilla bean protein powder, lemon juice, chia seeds and NuNaturals liquid lemon stevia.

Topped with:

Click mocha protein frosting and Love Grown Granola and a cinnamon sprinkle.


I think it got better the next day.

My containers may not be pretty and well neither are the smoothies to be honest, but I can try be a bit fancy with my toppings right?

In the mix:

Baby spinach, 1/2 frozen banana, 4-5 strawberries, Fitmixer chocolate protein powder, NuNaturals liquid vanilla stevia, chia seeds cinnamon, ginger.

Topped with:

Coconut flour/BSN banana cream protein frosting and graham cereal crumblies.

So there you have it, a mix of healthy and not so healthy, but you know what it all balances out.

It always does.
I have finally realized life is too short to dwell on being 100% healthy 100% of the time, because honestly, to me healthy is living, enjoying life, enjoying food, and enjoying love.

I’m doing all of the above.

Happy Friday my loves.

I am happy to report I have survived my first week of exernship.

I am completely wiped out and a little mentally drained, but I survived.

And I am loving it.

I have been exposed to so many new things, and introduced to the world of breeders and artificial insemination’s and semen collection. It’s really no big thing and done daily at my clinic. But to me, it’s still is a little strange to look over and see my vet jacking off a dog and having a normal conversation with the owner.  Oh the world I live in now.

But I don’t think you came to hear about all that. I think you’re here for another reason.

Sprint 2 the Table

Now I am going to be honest in saying this week’s creations are not really that strange in the blog world. That happens to me quite often where I see the same concept all over the blog land and Instagram, yet when I tell a “normal” person what I am eating it may be a bit strange to them. So I say it counts.

Since my mornings are so early, breakfast is now consumed in the car and I have relied on green smoothies to be my go to breakfast. I may get brave and eat other things as I get use to this schedule, but I am whipping these up the night before so they are just ready for me to grab on my way out and I don’t have to worry about preparing anything. So it’s working for me right now.

My first green smoothie. Well, in the looks department. Epic fail.

I shared this in my last post and it seriously is so gross looking it deserves a second look.

We all know how I like to cook; throw basically everything or anything you have into a blender and hope it tastes good.

It was decent. Not the best.

Check out my last post to find out what I threw in it.

I am happy to report that I think I got better with practice and after finding Brittany’s recipe for her Green Lemonade Smoothie I had new inspiration.
And kids for once other than adding protein powder and tweaking a few other things, I pretty much followed the recipe.

Here is what went into my spin off.

Green Lemonade Protein Smoothie

– 1 heaping handful baby spinach

-1 scoop Plant Fusion Vanilla Bean protein powder

– 1 small pear

– 1/2 frozen banana

– 1/2 cucumber

– juice of 1/2 lemon

– 5-7 drops Lemon Liquid Stevia

– water until smoothie reaches your desired consistency

Mine was a little watery, so I added some chia seeds to let soak overnight. Thicker smoothie, and added nutrients.

I am happy to report this smoothie was amazing. I know it’s risky, but I am loving throwing random things into my smoothies. It’s like my oatmeal, flavor combinations are endless.

I’m really wanting to get some fresh ginger and do a spin with that.

I am obsessed with ginger.

Disclaimer: Be prepared for boring boring meals. I started my externship and even though I am happy to report I have survived my first few days, I am not happy to report that since two of my three meals are eaten either in the car or at work, they are not exciting nor photo worthy. And I’ll be honest after 11 hour work days I don’t have much motivation to make dinner presentable.

You were warned.

I did however want to make sure I participated in this week’s What I Ate Wednesday because as mentioned above, I have no idea if my meals will be worth mentioning anytime soon. Maybe since I won’t be eating breakfast or lunch at home, it will force me to be more creative at dinner time. I can’t make any promises though.

But before that happens, let’s first head over to Jenn’s at Peas and Crayons and say thank you and check out everyone’s tasty eats, and then let’s look at what might be my last artfully put together meals.

I first want to prove my point of non photo worthy breakfasts.

This breakfast was so ugly, I felt like I just had to share it.
Even though it looks like absolute garbage, it was still pretty tasty.
In the mix:
1 heaping handful of organic baby spinach
1/2 frozen banana
1/2 cup Trader Joes frozen Berry Blend
– 1 tbsp Cinnamon Raisin Swirl Peanut Butter
1 scoop Plant Fusion chocolate protein powder
5-7 drops of  liquid vanilla Stevia
dash of cinnamon, ginger
and to bulk it up a bit I added a sprinkle of chia seeds and rolled oats.
I actually made this the night before to let it all absorb and hopefully get a bit thicker (I think I added too much liquid when making it)

So let me redeem myself and show you my last photo worthy breakfast I made before I started externship.

 This was my last relaxing morning breakfast I plan on having for awhile. I enjoyed it very very slowly and savored every last bite.

Everyone always says oatmeal is boring. Not around here. I love oatmeal, you can seriously flavor it so many ways, and put endless toppings on it. You just have to be creative. How is that boring?

This delicious looking bowl was

Chai Overnight TVP/prOATs.

In my mix:

1/4 cup rolled oats

1/3 cup TVP

1 scoop Plant Fusion vanilla protein powder (stirred in at end)

1 cup almond milk (I use Silk vanilla)

1/2 tbsp cinnamon

1 tsp ginger

1 tsp cloves

7-9 drops vanilla Stevia

Topped with my typical mish mosh of frozen banana, fresh strawberries, and a local granola for the crunch. I gotta have that crunch.

Maybe not as pretty, but worth mentioning, I have been snacking on some pretty tasty things lately.

I have a new favorite post work out snack. Gotta re-fuel with those proteins and carbs!

Well I guess technically it’s dairy free, but I love Silk almond milk, so when I saw they have a yogurt out I had to try it.

It was pretty tasty, after a quick stir I would even say you can’t even tell it’s dairy free.

Matt and I got this bottle of wine from our favorite local winery I honestly want to say about 2 years ago.

I had braces at the time and didn’t drink red wine due to not wanting to stain my teeth.

We decided it would be our celebratory wine when I got my braces off.

Yea, that never happened.

I figured my first day of externship, first 11 hour day of many to come, finally called for a little red wine celebration.

So with that being said, I am off to be a grandma and go to bed early.

I hope to have something worth showing you next week, but if not don’t hold it against me!

I know green smoothies are a dime a dozen these days, but I love how you can basically just throw whatever you have on hand, toss in a couple handfuls of spinach and you have a wonderful green nutrient packed beverage.

wiaw #36 – return of the smoothie

Hello loves.

It has been so lovely not having to study and read 24/7. I almost don’t know what to do with all my spare time. It’s funny how when you’re go go go all you want to do is relax.  And when you’re able to relax, it’s like, well now what do I do with myself.  But it has been nice to actually be able to get some cooking and baking done.

But that will be at a later date. Now it is time for the party.

The party we call What I Ate Wednesday.

As I mentioned before, I have a general class this month, which I am actually auditing so it doesn’t even count, but that means I am back to 7am classes. Yay. (note sarcasm).

I really don’t mind getting up that early, but it totally messes with my schedule.

But I learned last time I had an early class of what works for me.

Smoothies for the ride in! I can’t have a full breakfast that early, it just doesn’t work for me, but a smoothie tides me over until I can have a proper breakfast.

Monday Matt and I made a Trader Joe’s run and I made sure to stock up on some frozen berries! And a few other things of course.

I seriously can walk into that store for one thing and come out with 20. It always happens.

(For example all those pizza making ingredients. Not on the list. O’well. Worse things could happen.)

This morning’s smoothie was a lovely one. I missed smoothies.

In the mix:

1 cup vanilla almond milk

1/2 cup frozen mixed berries

1/2 cup frozen strawberries

huge handful of spinach

1 scoop chocolate protein powder

2 tbsp oats

a generous scoop of PB Crave Coco Bananas peanut butter

Oh my was this thing delish.

But adding peanut butter to anything really does the trick.

My smoothies always looks gross, but I promise you they are super tasty.

I guess I was missing my normal breakfast’s because for lunch I had breakfast.

Oh, you didn’t know I was obsessed with jam?

Now you do.

And dinner.

Oh loves, I have been doing so well with challenging myself.

I actually made the decision to go out. And no, I didn’t choose my safe sushi.

I chose Mexican food.

After my first challenge with my nutritionist, I remembered how much I loved Mexican food. And yes, I can make 100’s of Mexican recipes at home, but honestly, as good as a cook as I like to think I am, nothing beats going out.

So that’s what I did.

Like normal people right? Right.

And I did not regret it at all.

We had decided to try a new to us Mexican restaurant, Blanco Tacos & Tequila. I actually got a coupon for 25% off for Memorial Day.  The company owns multiple restaurants in our area and I had been to another one (True Food Kitchen) before, which was amazing, so I had high hopes for this one. It did not disappoint.  One thing the company prides itself on is using natural, fresh ingredients.

On the way to the restaurant Matt and I had both gotten a text from a mutual friend. With good news. Her boyfriend had proposed and they just got engaged!  We are both so excited for them, they are both amazing people.

There was a short wait when we arrived, so we ordered a few drinks and then sent this to our friend.

For as busy as the restaurant was, I was super surprised at the quickness of service.  I really think we got our food 10-15 minutes after we ordered.

Didn’t even really have the chance to enjoy these bad boys.

For dinner, I chose the chicken burrito.

Served with a side of rice and vegetarian black beans.

I don’t know what sauce they cooked the chicken in, but this thing was ah-mazing. I had to make sure I paced myself because I was shoveling this in my mouth.  The beans were also really good.

Matt ordered the carnitas tacos.

Served with a side of rice and he opted for the pinto beans. (We both agreed my black beans were better)

But everything was so good. So glad I made the decision to be a bad American and get Mexican on Memorial Day!

I hope everyone is having a wonderful week so far!

Mine are of course is busy busy busy.

But after a relaxing weekend, I suppose its ok.

The weekend ended with this.

i seriously bought this wine strictly by the label design. i’m such a sucker for pretty bottles and designs.

The night was not planned to end with wine. It was actually quite a relaxing Sunday. Matt and I lounged around for a bit. Hung a few pictures in the new place, and then we decided we each would have a pamper day. I got a pedicure (obsessed ♥) and he went to a local bar and grabbed a few beers to wait for me. After my pedicure I met him at the bar and we sat outside and enjoyed the gorgeous weather. His tummy started to rumble, so he ordered a small order of their sweet potato fries (which are amazing) and I of course had to have a side of BBQ. Well let’s say Matt may have had a few too many beers while waiting for me, because the day ended with my water spilled onto my phone and me wearing the BBQ sauce.

Insert bottle of wine.  I actually found the situation quite funny (only because my phone was ok) and I told him we should walk over to the market and get a bottle of wine for me. I deserved it. We then enjoyed the rest of the evening at home watching Burn Notice on Netflix.

A great way to end my night if you ask me.

I first did a taste test on its own.
I actually did two glasses. One with just water. And one with almond milk.
Obviously the almond milk was the tastier one, it added a nice creaminess, but I will say water alone was not to shabby either.
I mentioned previously that I actually like the “greens” taste, but some can be really nasty.
This one actually was not.
But if I am to just drink it, I think I will typically opt for the almond milk route. But to each their own.

I added it to a few other typical dishes. Didn’t change the flavor much which I liked. Most of them you couldn’t even tell it was in there.

All were delicious and I could barely, if at all, taste the greens! Win!

I also used the last of my plain Chobani greek yogurt and made a little dip!

wiaw #29 – going green

Good morning loves.

First I want to apologize for being so MIA. Things have been really crazy around here.  I went back to Indiana last weekend to visit my grandma.  She has recently been diagnosed with cancer and recently started her chemotherapy. Why an 84 year old chose to do chemotherapy, I’ll never know, but I’ll keep my true opinions to myself.

♥ ♥ ♥

If you follow my blog you know that my parents have been extremely un-supportive when it comes to my eating disorder and my recovery. I do believe my father told me that I’m 28 and I should just take responsibility for my problems, stop blaming others, and get on with my life. Then later admitted him and my mother had both had body image problems and obsessions while we were growing up. Yet they see no correlation between the two? Amazing. I never blame anyone for my eating disorder, what I try to explain is their personal body images issues influenced me as a child. I mean seriously. How could it not.

♥ ♥ ♥

Anywho. Not my point. But the weekend was. Good? Good in the fact that I got to spend some quality time with my grandmother.  I bit my tongue when it came to my parents. And this somehow made my mother think we were okay and things were good again.  Another realization she is so out of it and just doesn’t get it.

I also got to spend some quality time with my friend Kimmie, who was so giving and let me stay at her house while I was visiting. This girl is seriously amazing and deserves her own post on how much she has supported me and showed me what a true friend really is. Unconditional love. She is amazing. Enough said.

I also got to see my sister, who just recently told me she is pregnant!! I am so excited to be an aunt and wish I could be closer, but I am super excited none the less!!

It was really great to be able to spend some time with her, and we had a real good conversation. I think she kind of “gets” it a little bit more with what is going on with me. I would never want to tarnish her relationship with my parents, but I also think she needs to be aware of what’s really going on and how they treat me. Because honestly, they are very very cruel to me.

But I’ve also been trying to stay real positive about things. I need to focus on me and getting better and if my parents do not want, or can’t, be a part of that right now, then they just simply won’t be in my life right now. Does that hurt? Of course. They’re my parents. But I’ve realized I need to do what’s best for me right now.

I also have started my vet tech classes again. So overwhelming. It is my sanitation and nutrition class and we actually do a lot of hands on with the animals at the school. A lot to learn in a short amount of time, but I am excited to actually be working with the animals.

But those are my excuses for being so absent, but I of course had to come around for What I Ate Wednesday.

Since I had not been home to really cook my meals, I thought I would showcase some of my favorite ways to cook and eat green foods.

Because let’s be real. I eat a lot.

I eat it in stir fry’s.

And even raw in delicious fresh salads.

We have been in the process of packing for our move and I am also flying back to Indiana this weekend, so it has been kind of a crazy few days.

But don’t you worry I remember what time it is, and that is What I Ate Wednesday time.

So I’ll admit it. Sometimes I don’t follow rules. Call me a rebel, call me what you will, but I tend to march to the beat of my own drum.

Well this time I got called out on it. Whoops.

Jenn was a little bummed that my last post didn’t really include any veggies, for veggie loving February.  Truth is, I eat a lot of veggies. But they tend to look like this most of the time.

Now, these things are delicious. And dipped in Trader Joe’s ketchup? Yes please. (yes I dip my broccoli in ketchup, trust me though I do weirder things than that)

Although delicious. Kind of boring. I know. And I’m pretty sure people would get sick of seeing a bunch of broccoli or other miscellaneous veggies I throw in the oven.

See. I bet you’re already sick of looking at this stuff.

So that’s why veggie’s typically don’t make it to my posts.  Since I’m in school, I eat a lot of random, boring sandwiches so dinner is really only the fully prepared meal. Which even then, by time I’m done with appointments, errands, studying, those get whipped together pretty quickly too.  But I tried to make an effort this time to get more veggies in! And in more fun ways.

Breakfast this morning was a green smoothie.  And a good one I might add.  I had seen on someone’s blog that they added some oats to the mix. I thought hey why not. I also got the idea that I would put everything in the blender the night before, let the oats soak up the liquid and it would be more of a blended oatmeal.  Sounded good to me.

And it was good.

Into my mix went

1 frozen banana

1 heaping handful of spinach

1 cup almond milk

3 tbsp roll oats

1 scoop chocolate protein powder

dash or two of cinnamon

Blended this bad boy in the morning and I had a pretty tasty treat!

Adding the oats gave it a totally different texture. But I liked it. It was like it made it thick without needing to add ice or anything. A win in my book. This may be repeated tomorrow.

Lunch unfortunately was a quick pb&j, but hey I’m really not complaining because it was made with two new to me products.

hello best thing ever

Side story. So I had seen/heard so many good things about this stuff. I saw it in the store a few times, but just never picked it up. I don’t know why.  Then one day I decided to make cookies for Matt’s work. I think it was Christmas actually. I found a recipe for cookie butter cookies. Perfect excuse for me getting it! (Matt’s typical response when I grabbed the jar to examine it was always “babe you have 5 jars of nut butter at home already” Didn’t he know this was something completely different? Boys. So it never made it home with me.) I head off to Trader Joe’s to get my supplies for the cookies and what do you know. I can’t find the cookie butter anywhere. So I asked a worker if they had any. They were sold out. So I call around to a few other Trader Joe’s in my area. They were all sold out. And they didn’t know when they would be re-stocking.  I guess they weren’t expecting it to be such a huge hit. I waited. And waited for it’s return. So when I went to Trader Joe’s (by myself mind you) the last time and saw this. It quickly went into my cart! And I can guarantee you I will be stocking up on this stuff. It was seriously the best thing that I have tasted in a long time.

The other amazing part of this sandwich? Check out my post from my February foodie pen pal, because my pen pal got me the most amazing cranberry/blueberry jam. Delicious jam + delicious butter = the most amazing pb&j ever.

Dinner however, was another new creation that I whipped up. And it was amazing.

And full of veggies.

I have been seeing recipes for stir fry’s everywhere lately.

I just so happened to have some left over rice sitting in my fridge. And trust me, there is never a shortage of veggies in my fridge. Unless it’s at the end of the two weeks and we need to go shopping.  Then sometimes it’s pretty sparse.

One thing I need to do in my recovery is challenge myself. Eat new things. Have a variety. That is one thing I struggle with. I tend to stay with safe familiar foods. But you know what. Different is good. And it was good to actually cook and prepare a meal.

If you know me at all you know measuring doesn’t typically happen in my kitchen, but I will try to give you an idea of what went into this, because it’s worth trying to re-create on your own!

Spicy Tofu Stir Fry

Stir Fry:

2 medium sized carrots

1/2 cup onion

1/2 cup broccoli

1/2 red bell pepper

1/3 yellow squash

tofu (amount would depend on you. I always just cut a decent chunk off my block)

brown rice


(ok here’s where it gets tricky)

I seriously just pour, dab, shake random amounts into the pan while the veggies are cooking.

Main base though was hoisin sauce, soy sauce, and sriracha.

I wish I could give you more than that, but I really did it all to taste.

I can tell you however, that whatever combination I came up with. Was amazing and delicious. Actually almost wish I added more sriracha. I love the spice!

I also hadn’t had tofu in awhile and glad I decided to pick that up as well. I’ve really enjoyed it lately.

Do you ever have days where you don’t eat any veggies? I can honestly say there is never I day I do not have veggies. If it’s not a side dish to my dinner, I am snacking of carrots or something. I seriously have an un-healthy addiction to carrots. And apples. And banana’s. And now possibly cookie butter.

When you cook do you always measure? Or do you just randomly throw in ingredients? Unless I am following a specific recipe and want it to turn out exactly like it says, I will follow a recipe. Kind of. I still honestly think I season to taste always. I mean. I’m the one eating it, so I have to like it right?
