life lately…as told by selfies

You can tell so much about a person by looking at the photo’s on their phones. I realized this when I was thinking about what type of post I wanted to write about. I thought “What have I been doing lately? Anything new to report? What has been on my mind?” I always look to my photo’s because that always gives me a good idea of what I have been doing.

Well I can tell you what has been taking up all my spare time. Online Coaching/Supporting my Challenge Group participants and… Selfies. Goodness. You can tell my life revolves around coffee, drinks, and random nights with Matt.

I kid you not there is not much on my phone. And for your entertainment I want to prove it to you.

This is about a weeks worth or so of photo’s from my phone.

Enjoy.

♥ ♥ ♥

Let’s begin with all the shameless selfies.

Sometimes when I have good hair days, I take coffee selfies.

♥ ♥ ♥

IMG_2344

♥ ♥ ♥

And sometimes I like to document when I actually get out in the world.

♥ ♥ ♥

IMG_2593

♥ ♥ ♥

When I don’t want to seem too vain, I make Matt selfie with me.

On our morning coffee dates.

More coffee dates (they may or may not happen daily)

And some more drinks after work. (these I promise you do not happen daily)

We also have date night in selfies.

I recruit others when possible for selfies too.

A farewell sushi dinner with two of our close friends who are both moving.

Delicious food was first had.

Sushi selfie?

♥ ♥ ♥

♥ ♥ ♥

And then real selfies happened after.

♥ ♥ ♥

2

♥ ♥ ♥

My skills of getting everyone in the photo amaze me.

I then make my pets selfie too.

But really, when Rommy loves our new dining room table more than we do, he deserves a photo shoot.

♥ ♥ ♥

5

♥ ♥ ♥

This was the first day we had it. I guess he was giving his seal of approval.

He then decided he wanted to have dinner with us.

I know a lot of you are thinking the pets shouldn’t be on the furniture… but that just doesn’t happen in this house.

And when Ra looks this stoic… I just had to give him a selfie opportunity as well.

There is still some food in my life. I won’t lie I’m so busy fancy meals don’t happen as often, but I still like to give shout outs to some of my favorite products that help make simple, quick, but delicious meals.

(side note: I just ran out of my Growing Naturals Vanilla Pea Protein which is a sad time. I literally use this stuff daily, if you need a vegan protein source – get this!)

So yea, that’s basically what my life is right now, and honestly I can’t really complain.

I’m busy, but I’m happy and content.

And I have a lot of these on my photo album too. And life is all about staying positive.

Reasons To Be Happy

What story would your photo’s tell?

Do you take a lot of selfies?

chocolate protein pudding

Hi loves. Where have I been?? I don’t even know.

I do apologize for the lack of posting and MIA status, but there has just been so much going on. Matt and I went back to Indiana last weekend for a wedding shower that my mom had for us to celebrate with some of the friends and family in Indiana that couldn’t make it out to Arizona for the wedding. Visits home are always bittersweet because it seems like there is just never enough time.  Isn’t that how it always is?  I will do a little re-cap of my visit home later, but I will say it was so lovely to see friends and family that I have not seen in a long time.

Today I bring you a little tasty treat though. Its also been a hot minute since I’ve posted a recipe it seems, and I have a fun, easy and delicious one to share with you today.

If you know me at all you know I love my protein powders. If you really know me, you also know my obsession with Growing Naturals Pea Protein. Their vanilla blast seriously holds a special place in my protein heart.

So imagine my delight and excitement when I found out they were coming out with a chocolate flavor of the pea protein. Life Changing. It may actually be kind of pathetic how excited I was.

My favorite thing to actually do with their pea proteins is to make a simple protein frosting, but when I got the chocolate I wanted to have a little fun with it.

Since I’ve been on a bit of a dairy break and not able to enjoy my delicious frozen yogurt as often, I have been experimenting which new desserts, because I seriously have to have something sweet at the end of the night. I had made a tofu pudding in the past and since I love the creaminess the pea protein adds to most mixes, I thought it would be a perfect combination.

It was.

♥ ♥ ♥

9

♥ ♥ ♥

Adding in Enjoy Life mini chips didn’t hurt either.

I took my base recipe for the tofu pudding and then added in about 2 tablespoons of the Growing Naturals Chocolate Pea Protein.

 ♥ ♥ ♥

11

♥ ♥ ♥

I put the tofu pudding in the freezer after mixed for about 10-15 minutes hoping it would make it more of an ice cream texture, it ended up more like frozen yogurt which was perfect to me!

Which did I mention it tasted amazing? Because it did.

The combination of the silken tofu and pea protein was just a beautiful creamy dessert.

♥ ♥ ♥

8

♥ ♥ ♥

Chocolate Protein Tofu Pudding

Ingredients:

– 1/2 block silken tofu

– 2 tablespoon unsweetened cocoa

– 2 tablespoons chocolate pea protein (I used Growing Naturals)

* optional 1 teaspoon NuNaturals Cocoa Syrup

Directions:
-Place all ingredients in a small blender and blend until smooth.

You may need to add a liquid if too thick, but you want the consistency to be smooth and creamy.

♥ ♥ ♥

10

♥ ♥ ♥

This pudding was delicious, but I am very excited to use this new protein in other dishes.

As with the vanilla blast, I am obsessed.

♥ ♥ ♥

What’s your favorite type of protein to use?

This treat was pretty marvelous, how have you  been making your days marvelous?

delicious tigernut donuts [grain free & egg free]

Happy Monday my loves.

I must admit Monday’s are not my favorite day, but sometimes the little things can make this day a little bit more manageable [and marvelous].

Like donuts. Yes I think donuts make Monday’s a bit better.

Especially when they require few ingredients, are grain free, egg free and incredibly easy to make.

♥ ♥ ♥

7

♥ ♥ ♥

I am very excited to finally share this recipe with you. I posted a few teaser pictures on Instagram and many of you were very curious to know the recipe, maybe because there is a very unique ingredient.

Remember the tigernuts I reviewed in my last post? Well there is also tigernut flour, and I was so excited to experiment with it as just as the tigernuts are a great nut free snack, the flour is great for nut free gluten free baking.

So when I went to start thinking about what I wanted to experiment with first, I remembered a post I had recently seen by the lovely ladies over at Purely Twins.  They are to blame thank for my obsession with plantains and I had seen a recipe they posted using my beloved plantains and tigernut flour. How lucky.

♥ ♥ ♥

8

♥ ♥ ♥

I did tweak the recipe a little bit, but not much considering there are so very few ingredients, but I tend to like my baked goods a little sweeter so I added in some sweetener and of course had to use my absolute favorite pea protein for the protein frosting.

Seriously guys. Growing Naturals vanilla blast pea protein makes the best protein frosting.

 Plantain Tigernut Donuts

Serves 1-2

Ingredients for Donuts:

– 6-7oz peeled plantain

– 5 tablespoons tigernut flour

– 2 tablespoons coconut oil – semi solid

– 1 teaspoon baking powder

– 2 tablespoons maple syrup (may sub honey)

♥ ♥ ♥

1

♥ ♥ ♥

Ingredients for Protein Frosting:

– 3 tablespoons protein powder (I used Growing Naturals vanilla blast pea protein)

– 4-5 tablespoons water

– a few drops of stevia if desired

♥ ♥ ♥

 2

♥ ♥ ♥

Directions for Donuts:

– Peel plantain and measure 6-7oz – chop plantain into approximately 1″ chunks and place in blender with coconut oil – puree until a smooth batter.

– Add in tigernut flour and baking power and continue to blend until smooth. You may need to add water to make smooth – add 1 tablespoon at a time. Scrap down sides as needed.

– Lightly grease your donut pan and place batter into molds. I have a mini donut pan and got 3 donuts out of the batter.

– Bake at 350 degrees for 13-15 minutes.

♥ ♥ ♥

3

♥ ♥ ♥

While the donuts are cooling, make your protein frosting.

Directions for Protein Frosting:

– Mix together protein powder, water and stevia if using. May need to add more water until desired consistency is reached.

Once the donuts are cooled top with your protein frosting.

♥ ♥ ♥

4

♥ ♥ ♥

You may also sprinkle with any additional toppings that strikes your fancy. Granola, chocolate chips, coconut shreds are all great options.

♥ ♥ ♥

6

♥ ♥ ♥

These can be enjoyed warm straight from the oven, warmed up in the microwave or toaster oven or even cold from the refrigerator.  They last about 3-4 days in a tightly sealed container.

I was so pleased with how these donuts turned out. I love baking with plantains and love the flavor they give to baked goods, but as mentioned above if you do want a more sweeter donut it is so easy to add and adjust the flavor.

Speaking of adjusting the flavor, I do believe a chocolate version is in my near future. Because when I decided to top my last donut with a drizzle of a cocoa drizzle, I knew a chocolate donut would be just divine.

♥ ♥ ♥

9

♥ ♥ ♥

Maybe with a peanut butter frosting?

I’m already drooling over the idea.

♥ ♥ ♥

Notes*:

– Can’t find tigernut flour? Check out Organic Gemini and TigerNuts USA to purchase online.

– If you want to add a protein boost to this recipe feel free to substitute 1:1 ratio of flour with a protein powder of your choice.

i like to selfie

According to Instagram I really like to selfie.

I was in the process of editing pictures for a future post and in going through all my pictures I couldn’t help but laugh and notice how much I like apparently to selfie.
So while I am in the process of writing and editing future posts, I thought I would entertain you and show you the many selfies of Instagram.

I don’t get glammed up often, so as we saw with my Rocksbox review (FYI my code darobertsxoxo still gets you one month free!) I make sure to document it.

♥ ♥ ♥

7

♥ ♥ ♥

Most of my selfies happen out with Matt though. He is such sport in taking about 5 pictures before I get the right angle.

Sunday Fundays usually include a selfie.

♥ ♥ ♥

IMG_4830

♥ ♥ ♥

Our morning coffee dates can’t go with out one either.

Especially Monday’s where I make the “I hate Monday” face.

♥ ♥ ♥

IMG_5138

♥ ♥ ♥

If we happen to go out for dinner, a selfie typically happens as well.

♥ ♥ ♥

IMG_5029

♥ ♥ ♥

You know it’s love, because I don’t know who else would love those duck lips.

And if a friend comes to visit me at work, well of course a selfie has to be snuck in to the visit.

♥ ♥ ♥

3

♥ ♥ ♥

And my poor patients get sucked into my selfie obsession…

♥ ♥ ♥

IMG_4961

♥ ♥ ♥

This little guy didn’t even see it coming.

I can’t even give a dog a bath without succumbing to the selfie addiction.

♥ ♥ ♥

She is clearly loving the bath… and her selfie.

Sometimes I give the spotlight to the patient.

♥ ♥ ♥

IMG_5074

♥ ♥ ♥

When you’re this cute, you deserve it.

♥ ♥ ♥

IMG_4923

Because really…puppies make everything better.

I also like to give shout outs to my favorite companies.

But it’s really just another reason to selfie.

So as you can see. I love to selfie. And if you want more, just follow me on Instagram. I promise to keep them coming.

Do you selfie?

chickpea protein brownie bites

I am the master of simplicity.

Breakfast use to be my favorite time to get fancy and creative, but this was before having to be at work at 6:30am.  Now breakfast is anything that is quick and portable. Not as fancy. I do miss my beautiful oatmeal bowl creations.

♥ ♥ ♥

iPhone 553

♥ ♥ ♥

But long gone are those days.

More than likely even on my days off my breakfasts look like this.

♥ ♥ ♥

10

♥ ♥ ♥

Peanut Butter Toast.

But I made a random genius addition of adding crumbled graham crackers on top. It was a nice added crunch and flavor.

And to be even more plain.

Bagel with Cream Cheese.

♥ ♥ ♥

9

♥ ♥ ♥

However the fact that this was a P28 bagel and that I added Growing Naturals Vanilla Blast Pea Protein to the cream cheese took this up a notch as well. But still, pretty simple.

But then one day I got the baking bug. I don’t know why, but one night I decided to actually experiment with a recipe I had seen and prep some protein muffins for my breakfasts.

I will admit in taking them out of the oven and tasting them I wasn’t too impressed.  But after one night in the fridge, they got 100x better.

So my advice to you, if you make these, which you should, wait until the next day to eat them.

 Chickpea Protein Brownie Bites

♥ ♥ ♥

7

♥ ♥ ♥

Ingredients

– 1/2 cup chickpeas

– 1 scoop chocolate protein (30g) (I used Designer Whey)

– 1/4 cup unsweetened apple sauce (could use pumpkin)

– 3 tablespoon liquid egg whites

– 1 tablespoon unsweetened cocoa

– 1/2 teaspoon baking soda

– 2 tablespoon almond milk

– 1 teaspoon vanilla

– sweetener to taste (I used NuNaturals liquid vanilla and cocoa syrup)

♥ ♥ ♥

8

♥ ♥ ♥

Directions

– Drain and rinse chickpeas.

– Blend chickpeas, applesauce, egg whites and vanilla.

– Mix in remaining ingredients until well blended.

– Pour into muffin tin or brownie molds.

– Bake at 350 degrees for 20-25 minutes.

– Let cool and eat plain or top with desired frosting. *

* As mentioned I highly recommend storing these in the fridge over night and eating the next day. Also these topped with Sweet Spreads white chocolate coconut butter was pretty much amazing. Regular peanut butter I’m sure would be equally delicious.

I love that I can just grab a few of these in the morning and be on my way. Portable breakfasts are definitely a must now. I’m also excited to play around with the flavor and use different flavor protein powders.

♥ ♥ ♥

What are you favorite portable meals?

Peas and Crayons

sweet and savory [two recipes]

Hello my loves!

I hope everyone is having a great week. I come to you today with some fun new recipes. Yes I said recipes. I know I have been slacking in that department lately, but my cooking lately has basically been throwing random things together and calling it breakfast, lunch and dinner.

But with that being said I am trying to create new and different things. Basically because I was getting bored with my same ole meals I had been having. Yes I am a creature of ruts and convenience, but this girl needs some variety!

So I have a a little sweet and a little savory to share.

First the sweet! A new breakfast for me.

Nothing too new and nothing too fancy, but those are the best sometimes.

Banana Protein Pancake

3

♥ ♥ ♥

I see protein pancakes all over Instagram and always want to make them, but honestly, I have never been a huge pancake person.

I mean don’t get me wrong, the impressive pancakes stacks people post get me drooling.

I finally decided to cave in and started with a pretty simple pancake recipe.

♥ ♥ ♥

Ingredients

(serves 1)

– 1/2 banana (mashed)

– 1/2 scoop vanilla protein powder (I used Growing Naturals Pea Protein – Vanilla Blast)

– 1 tbsp coconut flour

– 1/3 cup liquid egg whites

– 1 tsp ground flax seed

– 1/2 tsp baking powder

– cinnamon and vanilla stevia to taste

♥ ♥ ♥

4

♥ ♥ ♥

Directions:

– Blend all ingredients together – allow batter to sit for a few minutes

– Cook on heated skillet over medium heat for approximately 2 minutes per side

– Top with desired toppings

I topped mine with a lemon spiked greek yogurt, trail mix and coconut chips.

♥ ♥ ♥

6

♥ ♥ ♥

I loved the banana in this pancake and since I love the Growing Naturals pea protein so much, the combination was pretty much meant to be in my opinion. Am I a pancake convert? Jury is still out, but this was definitely a nice switch up!

Next up is the savory.

Since I have nixed the sandwiches for lunch I have been having a lot more salads. Salads can be boring, but they don’t have to be!

I made this delish little combination to help me get some protein into my salads and also add some more flavor!

This can be used as a side dish, a dip for chips or a topping for a salad!

♥ ♥ ♥

Balsamic Black Bean Salad

2

♥ ♥ ♥

Ingredients

– 1 can drained and rinsed black beans (can use kidney, garbanzo, pinto or a combination)

– 1/2 red onion – diced

– 1 red/yellow/green pepper – diced

– 2 cloves garlic – minced

– 4-5 cherry tomatoes – chopped

– 1 handful cilantro

– 1/2 cup balsamic vinegar

– 1/2 tsp chili powder

– 1/2 tsp paprika

– Optional red chili flakes

– salt and pepper to taste

♥ ♥ ♥

1

♥ ♥ ♥

Directions

– Prep first 5 ingredients and combine in a large bowl.

– Whisk together remaining ingredients to make marinade and pour over bean mixture

– Serve immediately or store in fridge to allow flavors to blend and marinate.

Can be served warm or chilled.

♥ ♥ ♥

4

♥ ♥ ♥

I tend to think that these types of dishes taste better after allowing the flavors to marinate, the longer the better!

As mentioned I used this on top of my salads, it’s a great way to not only add protein to the salad, but I also didn’t need to use any dressing due to all the flavor in the bean salad.

It also makes an amazing chip dip as well!

♥ ♥ ♥

3

♥ ♥ ♥

This black bean salad really has endless uses, Matt also used it on top of nachos one night! With that being said it would be a great taco or burrito filling! Or really a spoonful straight from the container works too!

I loved the slight spiciness of this salad and it gave me the idea to make a sweeter version of it by adding fruit…

So be on the look out for more fun creations and variations.

What’s your favorite breakfast food?

Do you prefer sweet or spicy?

bacon binge

Happy Friday loves!

This has been such a long week that I am so glad that Friday is finally here. There still is that simple pleasure of Friday even though I know I work Saturday and I know how crazy our schedule is. But still, there is just something about Friday’s that makes things a little bit better.

What else makes Friday’s great? It’s time for #strangebutgood eats with Laura.

♥ ♥ ♥

Sprint 2 the Table

♥ ♥ ♥

We all know I have made some interesting food combinations.

This week is no different.

The last few days  I seem to have been on a bacon binge. I know. This past vegetarian now loves her bacon.

Well turkey bacon, but baby steps.

But let’s be honest. I can’t just do you standard typical bacon and eggs. Oh no. I have to make #strangebutgood bacon creations.

♥ ♥ ♥

8

♥ ♥ ♥

The first strange component: Sweet eggs. I know not too strange in the foodie world, but I love making my eggs sweet.

I took one egg + one egg white added some Growing Naturals vanilla pea protein powder, vanilla stevia and cinnamon and cooked it up in a skillet like an omlette.

I toasted an O’Doughs gluten free bagel and topped half with my sweet eggs and turkey bacon.

The second strange component: Cream cheese + blueberry jam.

♥ ♥ ♥

7

♥ ♥ ♥

And the strangest part is combining it all together.

I can’t explain it, but it worked.

All with a nectarine on the side.

The bacon #strangebutgood creations didn’t end there.

Next came the waffle bacon sandwich.

♥ ♥ ♥

9

♥ ♥ ♥

I took a Van’s gluten free waffle and filled it with more sweet eggs and turkey bacon.

And what’s a waffle without maple syrup?

Not a waffle worth eating.

♥ ♥ ♥

10

♥ ♥ ♥

It was a sweet and salty sandwich of delicious.

Again, another combination that maybe shouldn’t have worked, but it did.

And the cherries on the side completed the meal. I love that it’s cherry season. There is something about when fruit is in season, it just seems to taste better. For obvious reasons I suppose.

So how long will this bacon obsession last? Who knows, but I sure am enjoying it for now.

♥ ♥ ♥

Do you like sweet/salty combinations?

What’s your favorite bacon dish?

coconut mocha energy bites

Ohhh Wednesday.
What a tease. Not quite the beginning of the week, but not yet the end.

However, I have been so tired lately it really doesn’t matter day of the week it is. I’m still tired regardless.

So what’s a girl to do when she has no energy?

Make protein energy bites of course!

And thankfully I have my favorite protein powders there to help the cause.

♥ ♥ ♥

Coconut Mocha Energy Bites

1

♥ ♥ ♥

Ingredients:

– 102g combined Drink Click Mocha protein powder + Growing Naturals chocolate rice protein powder (or proteins of choice)

– 3/4 cup almond flour

– 2 tbsp banana flour (or coconut flour)

– 1 tsp baking soda

– 2 tbsp coconut butter (I used Sweet Spreads Vanilla Cupcake)

– 1 tbsp honey

– 15-20 drops coconut stevia

1/4 cup vanilla almond milk (or coconut milk)

– more protein powder or cocoa powder for dusting

♥ ♥ ♥

3

♥ ♥ ♥

Directions:

– Whisk together dry ingredients until there are no lumps

– Add in your wet ingredients

– Mix until well incorporated and dough is formed

– Roll into desired sized balls

– Roll balls in protein powder or cocoa powder (or other desired toppings)

– Store in sealed tupperware in refrigerator

Makes approximately 18-20 balls depending on size

♥ ♥ ♥

4

♥ ♥ ♥

These make a great pre or post work out snack. I sometimes grab a few while heading out the door to work before I have my actual breakfast. I love using the Click protein as it has the added caffeine for a nice energy boost. And I love the mocha flavor in the bites themselves.

♥ ♥ ♥

5

♥ ♥ ♥

And let’s be honest, I need all the energy help I can get.

So loves, if you find yourself needing some help in the energy department as well, these little bites might be the answer.

Or at least help a little bit, and if not, they at least taste delicious. So it’s really a win win situation.

♥ ♥ ♥

How do you stay energized through out the day?
