Unicorn Shakeology

I think we have all seen the hype about the new Starbucks Unicorn Frapp and I am not going to lie. I fell victim and just had to try it. Ok, so a co-worker got one and I tasted it, I knew I couldn’t commit myself to a full one, I’m at least a little bit realistic. Now I will say it was pretty, but definitely not all it lived up too. And trust me. I love unicorns.

But let’s be honest, we all don’t need that sugar bomb. Being pretty can only take you so far in life.  (I’m looking at you Jessica Simpson)

So what if I told you, you can make a beautiful unicorn drink that is also good for you?

Pretty excited huh?

Because honestly, I think we all love unicorns and glitter.

Shakeology is already the unicorn of health shakes aiding in weight loss, boosting energy, curbing junk food cravings, improving digestion, reducing inflammation, and much much more so it’s only fitting that we have a UNICORN Shakeology Recipe right?!

I thought so, so here it is loves.

Unicorn Shakeology

Ingredients 

1 scoop vanilla Shakeology – divided into thirds
1/3 cup blackberries
1/3 cup pineapple (can also added a couple of pieces of mango)
1/3 cup strawberries
12oz coconut or almond milk – divided into thirds

Directions
Blend 1/3 scoop of Shakeology + fruit + milk + ice (to desired consistency) in blender.

Then pour each in your glass creating the layer effect and if you REALLY want, top with whipped cream and sprinkles to make it look pretty! ✨
So there you have it, a HEALTHY, GUILT FREE, and beautiful unicorn shake.

I want to start off by saying I wish you all the best for the new year. I wish you good health, love, success, but most of all happiness.

I also hope you all had a wonderful New Year’s Eve, regardless of if you went out on the town and partied, or stayed home and celebrated in the comfort of your home.

My New Year’s Eve was a bit of a spur of the moment kind of night. Very random. But it turned out perfect. Just not what we had planned. But those are the best times right?

Matt and I initially had plans to go out with a few friends. Those friends ended up canceling on us so we then decided we would just stay home instead.

Well, that all changed. I wanted to at least go out for a drink kind of just to say I did, so we went downtown to a restaurant in our fashion mall area.
It was dead. But that was actually ok with us. As we were having our drink our neighbors texted us asking us to join them at the bar they were at which was at a more busy/loud part of town. We debated back and forth about what we wanted to do and finally decided to just go for it. We were already out, it was new years eve, so why not?

This is my night in a snapshot.

It ended with cheap champagne, fireworks and a kiss from the man I love.

So in my opinion it turned into a pretty great New Years Eve.

First with more waffles!

I am seriously obsessed with my waffle maker! I mean really waffles are no different than pancakes, but since I am such a texture person, I think the way the waffle bakes and gets crispy make them more appealing to me.

I am also having fun with my toppings as per usual.

As soon as I posted this picture on Instagram everyone immediately questioned the green goop of a topping. And once I mentioned what it’s base was, of course then questioned on waffles!!.

This topping is what happens when I have multiple items going very very ripe that need to be used.

They get combined.

I had a very ripe avocado, a very ripe banana, and let’s be honest, I add protein powder to everything.

So that’s how this was created.

I would type out a fancy recipe, but really the above is pretty self explanatory.

Place your avocado, banana, protein powder (I used Growing Naturals Pea Protein – Vanilla Blast), and a bit of almond milk in a small blender or magic bullet and blend. You can also mash by hand if both are ripe enough. (which is what I did because I like it chunky) I also added a few drops of liquid stevia to sweeten it up a bit, but the banana should make it sweet enough, just depends on your preference.

I don’t want to toot my own horn or anything, but this was pretty fabulous on top of my waffle.

I had been scouring Pinterest for days to find the perfect donut recipe for me to start with, and this may come as a shocker to you guys, but I did not make a protein donut.

Whaaaaaaaaat?

Don’t worry, they are next on my list.

I ended up finding a good base recipe and kind of tweaked it a bit.

The results were pretty good, but I definitely need to play around with it some more. I wanted a cake donut, but mine were still a bit too “wet” and not real cakey (side note, I totally had moist typed out, but I know that word skeeves some people out – however since I just admitted that, the word was said regardless. ha!). I either needed to bake them longer or change the flour/pumpkin ratio. Regardless a pretty tasty donut was made.

Carob Pumpkin Donuts

(based on this recipe)

Ingredients:

– 1/4 cup pure pumpkin

– 1/3 cup liquid egg whites

– 2 tbsp peanut flour

– 1 tbsp coconut flour

– 1 tbsp carob powder

– 1/2 tsp baking powder

– sweetener to taste  (I added a few drops of liquid stevia)

Directions:

– Pre heat your oven to 350 degrees.

– Mix all ingredients together. Batter should be wet and thick, but add more flour if it seems too wet.

– Bake in oven for 8-10 minutes or until a toothpick comes out clean.

– Let cool in pan before flipping out.

– Top with desired toppings and devour!

I made a quick little protein frosting using my Growing Naturals Vanilla Blast Pea Protein (I am obsessed with this stuff) and added a few drops of English Toffee stevia.

Since mine were a bit wet and soft, I thought maybe letting them sit overnight they would stiffen up a bit.

They didn’t.

They may or may not have fallen apart.

But still tasty none the less. And really that’s all that matters.

And while we’re on the topic of “fails” here is one more.

For those of you who own juicers I am sure are aware of the massive amount of excess pulp waste you get.

The first few juices we just threw it away, then I got to thinking there had to be ways to use these left overs.

To Pinterest I went again and discovered there are multiple ways to use the left over pulps. Crackers, breads, muffins, etc.

I chose to start with attempting to make some pulp crackers since I love crackers, I had all the ingredients, it seemed the simplest.

Wrong. At least for me. It looked really promising when I mixed everything together, but I guess my pulp was wetter than I thought because it all completely stuck to the parchment paper. I kind of salvaged some pieces and tried to second bake them to make them more crispy. They weren’t horrible by any means, but definitely not really a cracker.

Just something else to experiment with.

So maybe that should be my new years resolution. To keep experimenting and to come up with more successes.

Did you make any resolutions? I tend not to make new years resolutions because I feel like we should work on our goals constantly and regardless of the time of year. I want to be healthy, happy and successful always and don’t need a new year to start that goal. It’s a life goal.

Not that age or the number really bother me, but I just do not feel 30, can’t believe it snuck up on me so quickly and…yea ok. I can’t believe I am 30.

So this picture isn’t from my actual birthday dinner (considering it hasn’t happened yet) but funny enough, we are going to this exact sushi restaurant so I thought it seemed a bit fitting. Every year Matt asks me if I want to go somewhere new and fancy for my birthday, but honestly, sushi is always what I want. I think for the past 3 years we both have chosen sushi as our birthday dinners. It’s just so good!

If ain’t broke, don’t fix it.

But back to the title.

I know Christmas isn’t only about gifts, but the truth of the matter is, it happens regardless.

I posted this on Instagram asking for waffle recipe ideas. I knew that I was wanting to make a protein waffle since I work out first thing in the morning and my breakfast typically doubles as my recovery meal.

After getting multiple suggestions and links, browsing Pinterest for ideas and looking at enough waffle pictures to make my mouth water, I actually chose a very basic one to start with that I have seen Jazzy post multiple times. It’s a simple 3 ingredient waffle.

And let me tell you. After making my first waffle. I.am.obsessed.

Basic Protein Waffle

Ingredients

– 1/2 cup oat flour (rolled oats ground into flour)

– 1 scoop vanilla protein powder (I used Growing Naturals Vanilla Blast Pea Protein)

– 4-7 drops liquid vanilla stevia

– 1/4 cup almond milk*

Directions

– Ground rolled oats into flour

– Mix in protein powder

– Add almond milk slowly until desired consistency (batter should be thick)

* May be more or less. I had to add more almond milk due to the fact that I used a vegan protein powder which made my batter thicker. Just add milk slowly until your batter is desired consistency.

– Spread batter in heated waffle iron and cook until brown and crispy

– Add desired toppings

I topped mine with Click mocha protein frosting which got all melty on my fresh waffle.

So good.

I can not wait to experiment with different protein flavors and add ins.

Fresh Juice

Next gadget to get broken in was my new juicer.

I went to the store to stock up on juicing goodies and I guess it was pretty obvious what I was using my haul for because my cashier asked me if I got a juicer for Christmas.

Yup. I stocked up.

In the cart was spinach, kale, cucumber, zucchini, carrots, apples, pears, kiwi, lemon, lime, oranges, and pineapple.

Later that night it was time for juicing!

Matt and I may or may not have had a bit too much fun shoving all the fruits and veggies in the juicer.

My week was a little different this week, I had yesterday off as opposed to my typical Monday off, but I think I actually like having a random day in the week off. Three day weekends are great don’t get me wrong, but it’s nice to have it switched up a bit.

Having Tuesday off actually gave me a chance to get my What I Ate Wednesday post done a little bit more on time other than just recapping on what I’ve been eating lately. Although in typical Debbie fashion, I don’t have a strict day of eats to share with you, but more or less highlights.  Gotta give you guys the good stuff right?

I’m starting to introduce and be more comfortable with sharing my weird habits with my co-workers. I’m a pretty outgoing open person to begin with and people usually figure out pretty quickly how bizarre I am. No shame.

When a co-worker was scrapping the last bit out of her huge peanut butter jar, I quickly took advantage of the situation and asked her for her empty jar. -Insert weird look-. I don’t blame her, I mean who asks for an empty peanut butter jar?

People who like to make oatmeal in a jar. I know you fellow foodies understand me.

She did give me the initial odd look, but once I explained to her what I was going to do with it, she was actually intrigued by the concept.

Since this jar was huge I did my best to make voluminous overnight oats in attempt to fill it.

I’ve been out of TVP for a few weeks now, so I feel like now when I make my oats, it is such a hodge-podge of random things I throw in, for no real rhyme or reason.

This batch had about 1/3 cup rolled oats, 1 tbsp chia seeds, 1tbsp quinoa, and 1 tbsp creamy buckwheat cereal.

See? Totally random.

I just want them to grow and plump as much as possible overnight.

I also added in about 1/2 scoop of Plant Fusion Vanilla Bean protein powder and my random spices.

I think I did a pretty good job at filling this monster.

I topped them with the usual frozen banana and granola sprinkle.

I also find it humorous that my breakfast travels in my car arm compartment.

I love to cook all my meals fresh trust me, but I have no shame eating pre-made meals either. And this Trader Joe’s general tso’s chicken dish is seriously amazing. I am always blown away by Trader Joe’s pre-made meals and have not had a bad one yet.

I’ve also been demolishing some other new to me goodies that I feel like I have to share with you guys.

I am a sucker for trying new, random products. If it is different, intrigues me, I love to at least try it once.

I don’t know why, but vegan cooking and baking has really intrigued me lately. I honestly don’t know where it came from, maybe because vegan cooking can tend to be #strangebutgood if you will, so with me, the more strange it is, the more I tend to like it.

When I came across Nacheez, I knew I had to try it. It is a non-dairy style cheese that is made from blended cashews and red bell peppers. It’s 100% vegan and definitely more healthy than your typical cheese sauce. This stuff was out.of.this.world.good. I’m telling you it tastes better than any real queso I have had. I kid you not. You can not tell it is dairy free.

I’m pretty sure I demolished half a bag of pretzels and half this jar in one sitting. Again. No joke. I am totally going to make some nachos with this stuff.

Speaking of demolishing things, I have been enjoying lots of sweet treats lately too.

I am a firm believer in balance. Healthy living to me is not eating a 100% clean diet. Yes, I like to eat healthy, but I also like to enjoy my life, never restrict myself, and never feel guilty about anything that I choose to eat or drink. Life does not revolve around food.  This is something I struggled with in the past, but have finally accepted.

With that being said. A lot of this has happened lately.

One thing I feel the most accomplished with in my life lately is being able to go with the flow, eating what I want when I want, and not giving it a second thought. It’s all about 80/20 people and I’ll be honest, sometimes my life is a little more 70/30, and I am perfectly ok with that.

It started off with date night on Friday!

We had gotten a Groupon for Studio Movie Grill forever ago (it actually had expired, but thankfully you can at least get the face value for them!) which is a movie theater where you eat dinner in it while you watch the movie. Pretty cool concept.

Matt really wanted to see Star Trek (in 3D as you can see by his silly glasses), and even though I’m not a huge Star Trek fan, I liked the last one they came out with, so I thought why not.

It was way too dark (and probably would have been incredibly rude) to take pictures of our meals, but I ordered the Ginger Mint Salad with added grilled chicken and Matt ordered the Street Tacos.

Both were amazing! The movie ended up being really good as well. Lovely date night.

On Saturday Matt and I really wanted to take advantage of the gorgeous weather we’re having, so we decided to ride our bikes for a relaxing breakfast together and a trip to the farmers market!

I was beyond excited! It has been so long since I have been to (and able to go) the farmer’s market!

We decided to try a new to us place for breakfast, RnR.

The menu looked promising and in walking in, the restaurant had a nice vibe to it.

We decided to of course start our morning off with appropriate breakfast drinks.

Mimosa’s and beer!

It should have been a sign from the beginning, my mimosa was way more orange juice than champagne and not a very good orange juice at that.

No pictures of food because:

1. Matt got biscuits and gravy and even though he said they were good, biscuits and gravy just aren’t very photogenic.

2. My meal was a hot mess from the very beginning.

I ordered a create your own omelet with a side of fruit.

(Just for reference I made mine with egg whites, sun dried tomatoes, red bell peppers, onions, tomatoes, and jalapenos and a side of salsa)

Round 1: Plate comes out, no fruit, covered in cheese, what appeared to be regular eggs, and I stopped paying attention after that. I immediately told the food runner that my order was incorrect and he said he would take it back and talk to our server.

Server comes back. Apologizes. Said the kitchen made a mistake. Would bring out new order.

Since I was hungry and Matt was insisting on not eating until I had my meal, I asked if I could have my side of fruit.

The pineapple was at least good.

Round Two: Plate comes out. Salsa now gone, and not that I’m a huge food presentation snob (ok maybe a little) but my omelet looked like it was just thrown on the side of a plate. Even Matt made a comment about it. But regardless the omelet had a mish mosh of veggies in it, but I right away noticed no sun dried tomatoes or jalapenos (the two things I really wanted).

I asked for our server again. I told her I didn’t want a new omelet and that I would eat this one, but clearly this was wrong again. She agreed and said she would have my meal taken off the bill. She then offered to bring me a side of sun dried tomatoes which I thought was cute.

Here’s the kicker. My sun dried tomatoes get brought out (which turns out I guess to be by the manager) and he said, I hear you were wanting some sun dried tomatoes? Uh, yes because that’s what I ordered. Thanks. He then says he is going to buy me another mimosa for the inconvenience. Ok great, but um, I don’t want another mimosa, the first one sucked and why can you not just pay for my meal that you messed up twice? Seriously. Wtf.

Just didn’t make sense to me. Such a cop-out.  Safe to say we won’t be returning there.

(ps just a reminder for you guys, we still left our server a $10 tip regardless of the horrible experience, it wasn’t her fault. being a server, I have gotten so many bad tips when the kitchen or management are the ones providing poor customer service.)

So after the sub-par breakfast experience, we headed off to the farmers market.

We had intentions of going to get some fresh produce for dinners, but kind of decided we really didn’t need anything, and just were going to go to walk around.

Since I am getting up so early now, I am really lacking energy. I actually re-started my bad habit of energy drinks, but honestly, they work for me and I was desperate. So when I saw these Green Tara Spirulina Energy Bites, I ran over to try one. They were actually really tasty, the guy also had these spirulina “crumblies” that you could sprinkle onto/into food.  He gave us a sample on cucumber, and those were surprisingly really tasty as well.  Matt and I just figured the bites would be more convenient for us, and I kind of just want to see if they work. I’d like to get energy the most natural way as possible.

Matt also sampled these noodles and he wanted to get a few for lunches for work. The lady was local and just started her own business so we like to support local businesses. The cool thing about these were the containers are re-useable! I thought that was a neat idea.

So in the end we got some things we didn’t necessarily need, but o’well, we had a good time!

I may sound like a broken record when I talk about how excited I am about being able to work out again, and focus on fitness, but I am seriously on a high.  I’m still working on finding my balance. Sometimes I feel I’m not pushing myself enough to actually gain the muscle, but sometimes I’m scared I’m doing too much.  I’m just not sure what my body can really handle and since I haven’t really gained the last few weeks, I want to make sure I’m not being counter productive. (that and I hate being yelled at by my nutritionist for not gaining)

But I thought this challenge would be great for me, because since I am focusing on building muscle, I really have been trying to get more protein into my diet.

So I thought for my PowerMeal A Week feature, I would show you some of my protein pumped meals.

I think it’s only fair to start with the lovely hosts inspiration for my breakfast.

Peanut Butter Chocolate inspired PowerCake.

Topped with slime Green Protein Chia Frosting and homemade mixed berry jam.

So tasty.

I also amped up my sweet potato with some protein power.

Usually I do savory sweet potatoes, but this was my first sweet and I honestly don’t think I can go back.

Topped with cottage cheese and protein/peanut butter frosting.

Hello protein.

I also decided to protein-up my late night snacks.

Chocolate Pumpkin Protein Dip.

I could eat so much of this. Seriously so good.

I am really trying to learn to listen to my body and it seems to be responding well to more protein.  Now I really need to focus on getting my healthy fats in, but sometimes I get into such food ruts.

But thankfully I have all these challenges to give me inspiration.

How do you get protein into your diet?

Do you eat differently when you know you’re working out? Or always eat the same? I’m still at that point to the days I don’t strength train, I question if I need as much protein. I’m sure I do. 😉

Not going to lie, mine is going to be pretty boring.  Matt has to work and I have the day week off from school, so not much has been going on.

We do plan to have a little date night of drinks and fireworks though!

I’ve heard good things about this wine so I am excited to try it. And I got the red just because I can! Why so excited about red wine you ask? Well I had the clear braces for over a year and a half and could not drink red wine due to the possibility of it staining the braces/bands. But now that I am no longer a brace face, I decided it was time to red wine it up! So I’m pretty excited about it.

But since this is still What I Ate Wednesday and all let’s get to some eats.

The lovely Jenn did it again and gave us another fun theme to follow.
I’m kind of excited about this one and I will tell you why in a minute.

Me and fitness have a love hate relationship.
See fitness kind of got me in trouble in the past. Well, I guess it really wasn’t fitness’ fault, it was my own obsessive fault. But when things started to get bad with my eating disorder, I had a real bad relationship with fitness. I worked out to work off what I felt I over ate on. What I didn’t need. The extra. The bad.
Not a good reason to work out.

Fitness to me now is to be healthy. Not to work off that “extra bite of cookie” or “piece of cake”. Because let’s be honest. Neither of those will not make me gain 10 pounds over night. Not even a piece of cake everyday will do that.  We’re suppose to enjoy food, not dwell and punish ourselves for eating it.
But I am happy to report, recently actually, I have been given the go ahead to start strength training! Woo-Hoo!
I am finally at a healthy body fat percentage to where my nutritionist wants me to focus on building muscle.

I was nervous at first. Me and fitness haven’t spoken for awhile and I wasn’t sure I could have a healthy relationship with it, but I am happy to report so far so good!
I now don’t focus on cardio and burning calories. I am focusing on strength training. Getting toned and building muscle. It’s a total new experience for me and I love it.
Me and Fitness Blender have a real nice relationship too.  It’s getting pretty serious. They offer so many great videos and I love the variety.

This morning I did a little warm up and some free weights/resistance bands on my own, then followed up with this guy.
10 minutes, yes. Kicked my butt abs. Yes. Love it.
I really want to get a gym membership soon, however, finances right now won’t allow it. So online video’s will have to suffice for now. But again, I’m just happy to be able to do this.

So since I am trying to build muscle and all I am trying to incorporate more protein in my diet.
Kasey at PowerCakes has some amazing recipes. Obviously famous for her powercakes. These were something I had always wanted to try, but I didn’t know if I actually needed that much protein in the morning as I was leading a pretty sedentary lifestyle at the time.
I decided it was time to finally try one.
(Disclaimer. These are photo’s from her site as my first powercake did not turn out pretty. I couldn’t salvage it, but it was tasty enough that I really wanted to share it with you guys.)
I more or less followed the recipe for her Chocolate PB & J Powercake.
With a few changes, of course, we all know who we’re talking to here, like I could ever follow a recipe 100%.
Mine may not have been this pretty, but I will tell you it was pretty tasty.
I see PowerCakes in my future again!

For lunch an old favorite made an appearance.
Soy Chocolate Vanilla Pudding Panini.
Yup switched it up with the vanilla, and I also used Ezekial Cinnamon Raisin bread. Totally made the sandwich!
