Hey friends! I know. Long time no talk.

Ironically a lot has been going on, but I have just been so busy that I haven’t had time to actually sit and write a post.

So let’s do a quick catch up on what’s been going on.

First I had a very exciting weekend, which now was a week ago.

Matt’s parents came into town as they both had eye appointments and decided to stay in town over night, so we were actually able to spend more time with them.  We met them for dinner after their appointments and decided to have an early birthday celebration for Matt.

And what’s a birthday dinner without cake?

We all split a chocolate lava cake with vanilla ice cream.

Yes this was as good as it looks.

Yummm. Up close of the warm chocolate deliciousness.

It’s a good thing we were sharing, I could have easily demolished this whole thing myself.

The next day we took Matt’s parents to one of our favorite local breakfast joints The Breakfast Club.

I ordered a 3 egg white omelet with red bell peppers and onions with broccoli, tomatoes, fresh fruit and cottage cheese on the side.

This was the perfect light breakfast to start the exciting day I had ahead of me.

However, I wasn’t prepared for how exciting it was going to be.

Since Matt’s mom was in town and we actually had more time, we decided to take advantage of it and go wedding dress shopping. Now, I really had no intentions of purchasing a wedding dress in the near future as our wedding is not until April 2015, but I thought it would be a nice opportunity to get an idea of what I liked and was looking for.

Let me tell you, the second dress I tried on.. I fell in love with.

It fit perfectly, I felt beautiful and I thought it would be perfect for the outdoor ceremony we are having. I thought I found my dress.

But I wanted to try a few others on just to see my options.

Well guess what guys. The fourth dress I tried on. It truly was the one.

I went back and forth between the two just to make sure, and yup. The fourth dress won every time. I knew it was my wedding dress.

So loves. I said yes to a dress and purchased it!!

(I however can not post the real dress as I am traditional in the sense I do not want Matt to see it!)

I can not describe how excited I was! I had texted Matt almost immedietly, but when I got home all I wanted to do was go celebrate.
So that’s what we did.

We went to a restarant called Pig and Pickle that is known for their unique drinks and meat dishes. Now, since I don’t eat a lot of meat, eating there was never too appealing to me, but the drinks sounded good and I love that they try and source everything local when they can. To drink I ordered the Stonie Bah-Lonie which was made with Hophead vodka, fresh lime, grapefruit juice, hop-grapefruit bitters, with an IPA float.  It was interesting but probably not something I would order again.

Matt got two drinks. His first was called The Landing Strip which was made with Breckenridge bourbon & Breckendridge bitters with cinzano & black cherry. I of course stole the cherry.  As we were drinking out first drinks we saw the bartender prepare this ridiculous looking drink. In asking what it was, it was their house Bloody Mary, but goodness did they know how to garnish!

Loads of pickled veggies and the kicker was a piece of their pork belly. Matt was in heaven.

To continue the celebrations we decided to go out to dinner later that evening.

We decided on a favorite of ours Blanco Tacos and Tequila.

In ordering though I was conflicted. I haven’t talked about it much on here, but I have been doing a mini elimination diet and trying to cut gluten and dairy out of my diet as I have a suspicion I may have an intolerance to one of them.

That makes going out for Mexican a bit challenging.

I did it though.

We still ordered guacamole, but I resisted on the chips. You better believe I ate the guacamole out of the bowl with the spoon. With no shame.

For dinner instead of my regular chicken burrito (which I missed dearly) I opted for a salmon salad. Ok. Now I will say it was hard going to a Mexican restaurant and not getting my burrito, but this salmon was amazing.  Matt also got salmon, but on top of a potato hash and we both agreed it was some of the best salmon we have had.

So basically that weekend was a really good one and buying my dress really makes the wedding a lot more real. It also made me realize I have a lot more to plan! But it really got Matt and I excited and motivated. And I have my wedding dress! ahh!

Gah. Loves. Monday already?

I have been way too busy for my own good. I really feel like I have no down time anymore. And when I do have down time. Well it’s not so down.

Matt has been sick the past few days, so I of course always take the mother hen approach and want to take care of him and make sure his needs are taken care of. But that’s what love is right? I have absolutely no problem doing it because I know he would do the same for me.

But since it is Monday and we all need to remember that life is marvelous, I will give you a little insight of what’s been going on lately.

My weekend of course started with work. Even though Saturday’s are half days, I still wish I could have an actual real weekend and have both days off.  But things aren’t as bad when the doctor brings you breakfast.

We all know this carb loving girl loves her bagels (and just in case you were wondering that’s a chocolate chip bagel, yes they exist!), and Einstein’s honey almond smear is ah-mazing. You better believe I slathered that stuff on. It made working Saturday just a bit better.

This makes work a little bit better too.

Puppies!

Seriously puppies make everything better.

And while were on the topic of puppies, I’ve got some exciting, maybe even marvelous, news to share.

We all know I love to bake. And we all know I love my pootches. But what a lot of people don’t know is one dream I have always had is to combine the two. It has been a career dream of mine to open my own doggy bakery. I don’t know if that dream will ever come true, but I  have decided to finally take baby steps into making it happen. We all have to start somewhere and I figure since I work at an animal hospital and know a lot of people in the field, I can start by having a home business and start by making and selling treats from home through my clients and friends. We’ll see where it goes from there! I will definitely keep you guys posted. (and if you’re interested in home made dog treats made from natural ingredients, feel free to contact me!)

But before that even happens, I need to test some recipes and find the perfect treats! This weekend I finally decided to start experimenting!

And thus my first home made dog treats were born! I started with a simple pumpkin peanut butter biscuit, but I am excited to experiment with different ingredients and recipes! Now I know they look cute, but did they pass the pup taste test?

And she ate it! But honestly, I’m pretty sure she would eat anything, so I don’t know how good of a judge she is, so I am going to recruit some of my friends pups for more taste testing!

Other than that the weekend was pretty low key. Since Matt was sick we didn’t venture much out into the world, however Sunday since it was so gorgeous out, I thought it might be good for him to get out of the house for a bit. I know when I’m sick, sometimes sitting inside all day almost makes it worse.

I had some grocery shopping I needed to do, I needed to pick up some ingredients for a few recipes I will be testing from The Purely Twins new No Flour Cracker and Flatbread cookbook (be on the look out for a review in the near future!), so I dragged him with me.  I’m glad I did, because he ended up feeling a bit better. So much better on our way home we stopped by OHSO Brewery for this.

I have been wanting to see Frozen for some time now and I will say this is one movie that is worth the hype. We both really enjoyed it.

So a perfect way to end my weekend if you ask me.

But alas, it is now Monday, so back to the drawing board.

This post is coming to you much later than anticipated.

1. I am working on getting more sleep after discussing and realizing how important it is, so I not only went to bed earlier than normal, but since today is my day off, I also took advantage of sleeping in! However sleeping in to me is 7:30am, but compared to 5:00am that’s wonderful for me!

I had all the intentions of writing my What I Ate Wednesday post last night, but before passing out early, I was too busy shoving my face with this wonderfulness.

I briefly touch on my recovery here and there and let’s just assume I am always in the need to gain.  Matt has been super supportive and really helping me push lately that he demanded we go to Dairy Queen last night since he knows I have been having stressful days at work. It seems to correlate when I am stressed at work, I am stressed with my eating and health goals, so I really appreciated him stepping up and making me keep pushing. And really. Who can say no to Dairy Queen? Not this girl.

On top of that Matt also treated me to a fancy date night out.

Yes I eat a lot of sushi. That’s a fact.

But to stay in our budget we usually go to a smaller sushi joint that is less expensive. The best sushi out there? No. Good for the money? Absolutely.  But when we decided we wanted sushi one night, Matt suggested we actually treat ourselves to a nicer restaurant that is in our neighborhood.

Let me tell you, I forgot what high quality sushi tasted like. It was amazing.

I started with a seaweed salad, and in first bite I noticed the difference between a freshly made seaweed salad and probably packaged seaweed salad I have been eating at the other sushi spot.

We also got yellow tail sashimi to share and again, the difference in the quality of fish was instantly noticed. It tasted amazing. I love good fresh high quality sashimi.

We ordered four rolls to share for our main meal.

Salmon wrapped in cucumber, fire dragon roll, special spicy roll and spicy tuna roll.

Yes. We like it spicy. And like the rest of our meal, all was fresh and delicious.

Now, our bill was probably 3x as much as what we spend at the other place, but totally worth it.

It was also great to have a nice date night out with Matt. Much needed.

Home meals however have not been as fancy.  I have been having really long days at work and have been getting out late that by time I get home Matt has already eaten and I have no desire to cook anything fancy in my own kitchen.

Hello friends, happy Wednesday!

I hope the week has been treating you all well!

Things are just as crazy as usual over here, but I am starting to accept that that is just my normal.

But once in a while we all need to just slow down, relax, take a deep breathe and take in all that is beautiful around us. Because there is too much beauty in the world to be constantly go go go.

With that being said, for What I Ate Wednesday I wanted to spot light some of the moments that I was able to just relax, have fun, and enjoy life.

With work being so busy, sometimes I just want to go home, change into sweat pants and not leave the couch.  And lucky for me I have a agreeable fiance who gives in to my wishes. Matt get’s off work before me and after a particularly rough day at work I requested if we could have a movie date night in.  For some reason I had been really wanting to watch Despicable Me 2 and he was such a sweet heart and went to a Red Box and got it for me for that night.  My other request during the movie?

Frozen Yogurt.

We are so lucky to live within a block from Yogurt Land, so we ran down real quick, got our frozen yogurt and settled in to watch the movie.

It was a perfect relaxing night on the couch, in my sweat pants, with my love and frozen yogurt…

Even though I worked Saturday Matt and I made the most of our weekend by staying pretty active.  We had the intentions of going to a spring training game since the season was ending, but the ticket prices + food + drinks, well it just wasn’t in our budget.  So instead we decided to do lunch out and a little day drinking (to be honest we probably ended up spending just as much as we would have had we gone to the game, but owell.  We still had a good day together)

One of Matt’s co-workers had suggest a burger joint called Rehab Burger in our neighborhood that we had never been to, so we decided to start there for lunch.

We stayed classy and had PBR’s with lunch. Be jealous.

For lunch I ordered the chicken sandwich which came with lettuce, tomato, onion, sprouts, Havarti cheese, avocado and I added a pineapple BBQ sauce.

Holy mountain of goodness. This thing was huge. And delicious.

After lunch we walked around a bit to help our food babies digest and in wandering around town we found a new bar that we didn’t even know existed.  All I have to say is it had skeeball games in it. I was sold.

They also had this amazing grapefruit Hefeweizen beer that I just fell in love with.

And I probably had a few too many of them.

Let’s just say this day ended with Matt and I passed out, and dinner was a pb&j, because that’s about all I had the energy or coherency to put together.

No shame. We had a great day together.

Because even though 99% of the time my life is high stress and go go go, I really embrace that 1% and enjoy every moment I can. Life is too short and sometimes I need to remind myself to enjoy all the small moments. Because they matter the most.

Wednesday.

Welcome.

My work schedule has been all over the place lately, but this week I have Thursday off, so Wednesday is kind of like my little Friday. And it is more than welcome because even though short, my work week has been insane lately.

I suppose that is the life I chose in becoming a vet tech and I wouldn’t change it for the world, but sometimes it just makes for very long days.

Tuesday, Matt got a “Taco Tuesday” bug and for some reason felt that we needed to celebrate it.

Well. Who am I to say no to that?

We decided to go Blanco Tacos and Tequila, which is a favorite Mexican restaurant of ours.

The spoiling didn’t stop there. I alluded in my last post about having ups and downs, but I am pushing through the downs.

Matt of course has been extra supportive and spoiled me again with another dinner out!

After our marvelous day out, we got a little dressed up and went out for dinner.

We went OHSO Nano Brewery which we of course love because they have a great selection of beer.

The guacamole was served with veggie chips which was a nice switch up from your typical chip.

For my main dish I ordered the Seared Ahi Salad.

The salad was a mix of arugula, dried cherries, and roasted red peppers served with a sweet asian dressing.

Words can not express how amazing this was. The tuna was spiced to perfection and the sweet asian dressing was the perfect addition to the tuna.

Ahi tuna has to be one of my favorite things to eat. Shocker since we know how obsessed I am with sushi.

Matt ordered the Spicy Green Chili Pulled Pork Sandwich with a side of sweet potato fries.

The sandwich was topped with a honey jalapeno coleslaw and a green chili cheese sauce and seriously…this sandwich was so good.

Matt ended up not even eating the bun because the meat and coleslaw was so good on it’s own.

After my first bite, I gave him the sad eyes for another.

I traded him for a piece of tuna, so I think it was fair.

In the end our wallets may be empty, but our tummy’s were full.

I hope you all had a wonderful relaxing weekend. For some reason I feel like a lot happened in the short few days, but it might be due to the fact that I had Friday off this week, which is not common for me. So other than working Saturday (which was a short easy day), I had a lot of down time.
Which was just fine with me.

Marvelous Is… Introducing co-workers to my obsessions.

1. Sushi.

It’s no secret that I eat a lot of sushi. I have one particular co-worker who always tells me I am going to become a fish I eat so much of it.  She also really had never eaten sushi, but wasn’t opposed to it. We both actually had Friday off, so I asked her if she would like to go have sushi with me for dinner.

Guess what. She loved it. And yes. She ate it with her fingers. I laughed and said I was sure they had a fork she could use (that or get the child chopsticks!). She opted for the fork.

2. Frozen Yogurt

I figured since I introduced her to one of my obsessions it was only fair to take her for the other.So after dinner we went to our favorite frozen yogurt spot.

I was dumb-struck to find out she had never been to a self serve frozen yogurt place, so she had a blast trying all the flavors! It was nice to be able to introduce her to two new things she had never done and I have a feeling we may be having more sushi and fro-yo dates in the future!

Marvelous Is… Actually following a recipe!

I know seems like an impossible statement coming from this girl, but I was very lucky to have been given the opportunity to try some products from Manitoba Harvest including their hemp protein.

For the longest time I have been wanting to make The Purely Twins chocolate hemp protein english muffin, and I know I probably could have subbed the hemp protein for another protein or even flour, but I just never did.  Well since I actually now had some hemp protein I finally decided to give it a try. And the kicker, I followed their recipe exactly.

Not my best presentation, but I will say I was very happy with how this came out.

I topped it with some maple whipped cottage cheese and as you can tell from the couch background, I didn’t initially have intentions of taking picture of it. But since I was so happy with how it turned out, of course I wanted to share my success!

Marvelous Is… Getting fun surprises from amazing companies.

I love working with companies that truly care about their consumers and really appreciate the promotion and opinions given for their products from bloggers. The Great Low Carb Bread Company is one of those companies.

I have proclaimed my love for their squares that I had the opportunity to sample.

And it was great to hear that the winners of my giveaway loved them just as much as me! I passed this information on to the company and they were amazing and offered to send me some new products they were releasing. (they also were even more amazing and included more of the squares – see what I mean about great companies?)

The new product they sent were their newly released crackers.

We all know I am a huge cracker lover, and these were interesting to say the least. First off they’re huge.I tried the nacho cheese flavor first and I honestly loved them.

I’m thinking these would be pretty amazing made into nachos or dipped in salsa. I’m excited to play around with them! Or I may just eat them all plain. Who knows!

Marvelous Is… Random dates with my love

I decided kind of spur of the moment on Sunday to have a mini date with Matt. We had been talking awhile about going to see a movie, so I told him he had 20 minutes to get ready to leave and we were going for a surprise.

We ended up seeing Lego (yes we’re 5) and had a nice little mini date.

Sometimes I really feel like a broken record.

Mondays = Ugh, it’s already Monday?

Wednesdays = Is it Friday yet?

At least on those days I have things to look forward to in regards to the blog world.

Matt and I originally had plans to go to the same restaurant we had gone to the past two years. But something in me just wanted to try something new. I actually nonchalantly threw out the suggestion of a new restaurant Matt and I had been wanting to try as an option and Matt took it upon himself to make reservations for us (big deal for this kid – he typically doesn’t plan ahead) So I was super excited knowing I didn’t have to handle the plans and it was all taken care of.

Friday ended up being a crazy day at work for me, so needless to say when I finally got home I was so ready for a relaxing date night.

The day however was made a bit brighter by a lovely delivery of these to the clinic…

My co-worker makes probably the best banana bread cake I have ever had. And the addition of Valentine’s chocolate chips? Let’s just say I ate my emotions away with banana cake. And I was pretty ok with that.

When I got home, I made a quick change of clothes as we didn’t have much time before our reservation.

There however was time for a mini photo shoot.

The restaurant we decided to try was Nourish.

All their dishes are gluten free, soy free and dairy free and they also offer many vegan, vegetarian and raw dishes.

All of their meat is locally sourced, natural grass fed products. I love the concept of such fresh food.

The ambiance of the restaurant was great. Very feng-shui if you will. They surprisingly weren’t that busy yet, but that was so nice, Matt and I were able to have a quiet intimate dining experience.

To start we both of course got a drink and ordered the Duck Springrolls.

I had looked up the menu online before hand and knew this was one item I really wanted to try.

I had never had duck before, so I was excited to try these.

It was served with an apricot dipping sauce that was amazing. The rolls were very fresh, but I will admit I didn’t taste the duck all that much due to there being so many veggies, but overall they were a nice fresh start to the meal.

For our main course I had a really had time deciding. Everything looked so good and were items that I had never tried before so I wish I could have tried multiple things! It was a hard choice!

I ended up deciding on the Raw Veggie Burger with a side of a Raw Vegetable Salad.

The burger was a lot dryer than I anticipated, but since there was no meat or beans in it, that was to be expected. It was still very tasty. I will say the home made pesto it was served with. Ah-mazing. I seriously used my finger to get every last bit of it.

Matt ordered the Teriyaki Wild Rice Bowl and chose the roasted duck as his protein.

Talk about food envy.

His meal trumped mine x1000. The duck was cooked and seasoned to perfection and the teriyaki sauce was amazing.

If when we go back, I will more than likely choose this dish.

Overall, our experience at Nourish was a great one and it made for a very nice Valentine’s Day.  It is definitely a place I want to frequent more often and I am so glad we decided to switch up our plans and try somewhere new.

Oh and in case you were wondering. Dessert happened in the form of fro-yo.

I mean. It was in walking distance from the restaurant. We took a nice romantic walk under the full moon, ate our classy frozen yogurt and ended our wonderful date night.

well it’s official. i’m 30.

Get comfortable loves. It’s that time.

Time for the 30th birthday re-cap!

And even though I still have a few mixed emotions about finally being 30, it is Monday, so that means it’s time to get marvelous with the beautiful Katie, so I guess I will look at the positives of being 30.

I mean 30 is the new 25 right?

I had to work on my birthday, but thankfully since it was a Saturday it was only a half day.
I haven’t worked at my clinic for that long, so I really wasn’t expecting anything real special from my co-workers for my birthday. We don’t do much anyways, but for a few of the other birthdays, food was brought in or something like that, but since mine was on a Saturday and we typically don’t have lunch at the clinic I didn’t know if anything would happen.
I had actually told the girls I would bring my new waffle iron in and make us birthday waffles.
Well, when one of my co-workers disappeared to the store, I knew something was up.
This is what she came back with.

A few reasons why some of these seemingly simple items mean a bit more to me.
1. The ice cream cake. I had told my co-worker that Matt usually got me an ice cream cake for my birthday, but has dropped the ball the last few years. So I thought it was super cute that she got me one. (i texted matt about it and felt kind of bad, i guess he actually remembered this year and was kind of hurt that i thought he would forget and told him not to worry about it. he soon got over it though when I brought him home a slice.)
2. The banana’s. We have a client who brings us fruit every Tuesday and me and one of my co-workers always “fight” over the banana’s because we both love them. So again, I thought it was super cute she got me some.
3. Flavored water. Whenever she goes to the store I always end up texting her asking her to pick me up a flavored water. So she got me the flavor I typically ask for.
4. Pancake mix, syrup, whipped cream. Since she knew I was bringing in my waffle iron, she picked up all the fixings.
With me it’s the small things that make the best gifts, and the fact that she got me little things that she knew I would like made them that much more special.
So since I was stocked with waffle making ingredients it was time to get cooking!
I felt a little funny making waffles in the clinic, but everyone was excited about them, and they turned out delicious!

Seriously waffles are the best thing ever.
The rest of the day thankfully went by pretty smoothly and soon I was on my way home.
And what a cute little surprise to come home to.

Oh I love my fiance. He is so cute.
Again, it’s the small things. And seriously, are those cut outs not adorable?
As per my request, we just lounged around for the afternoon. We had big plans for the night, so I wanted to relax and rest up a bit.
Soon it was dinner time, so Matt and I prettied ourselves up and got ready for the night.

Every year for our birthday’s, obviously the birthday person get’s to pick where they want to go for dinner, and honestly I think for the past 3 years Matt and I have both chosen sushi for our birthday dinners. This year a friend and I had also planned a joint birthday get together at a favorite bar, and even though my sushi restaurant of choice was kind of out of the way, it was totally worth it.
I chose our current favorite sushi joint The Sushi Room.
We honestly have never had a bad experience there and have gotten to know the sushi chefs, so I knew it was a good choice. This visit was no different.
As we sat down at the sushi bar, I of course proclaimed that it was my 30th birthday. The guy sitting next to us at the bar quickly took the opportunity to offer to buy our first round of drinks. I thought that was so kind and Matt and I decided just to share a sake bomb.
It was a very nice gesture and we really appreciated it.

To start I had my favorite and always mandatory seaweed salad (it was huge that night!) and Matt and I shared some yellowtail sashimi.
So good.
We then ordered a selection of rolls.

I got a new to me roll called the Spicy Chandler which had spicy tuna, spicy crab, avocado, masago, romaine lettuce, wrapped in soy paper with spicy aioli.

Oh my goodness. Ah-mazing. A new favorite for sure.
I also got the Kappa which was a cucumber wrapped tuna, salmon, crab, avocado roll served with a ponzu sauce.
I also snagged a piece of another new to us roll that Matt ordered called the Boom Boom Roll which had crab, avocado, cucumber, tempura crunchies, and was topped with baked scallops, veggies, potato strings & eel sauce.

I’m not a huge fan of scallops, but other then that, this roll was great. I love eel sauce, it really makes everything better.
After dinner it was time to party!
We were having an ugly Christmas sweater theme and Matt and I had bought kits and made our own.
I was pretty happy with the outcome!

I had an awesome night and got to celebrate with great friends.
And if all that birthday fun wasn’t enough the next night Matt took me out for one more birthday gift.
Fro-yo!
We were going to go after dinner on my actual birthday, but we were both so stuffed with sushi we decided to post pone so we could actually enjoying the fro-yo.
And that we did.

But honestly, fro-yo is always amazing. Especially if there are sprinkles involved.
So loves, I am finally 30. And honestly. I feel the same. Not that one day magically changes you, but I have high expectations for my 30’s and plan to make them amazing.
