chocolate protein pudding

Hi loves. Where have I been?? I don’t even know.

I do apologize for the lack of posting and MIA status, but there has just been so much going on. Matt and I went back to Indiana last weekend for a wedding shower that my mom had for us to celebrate with some of the friends and family in Indiana that couldn’t make it out to Arizona for the wedding. Visits home are always bittersweet because it seems like there is just never enough time.  Isn’t that how it always is?  I will do a little re-cap of my visit home later, but I will say it was so lovely to see friends and family that I have not seen in a long time.

Today I bring you a little tasty treat though. Its also been a hot minute since I’ve posted a recipe it seems, and I have a fun, easy and delicious one to share with you today.

If you know me at all you know I love my protein powders. If you really know me, you also know my obsession with Growing Naturals Pea Protein. Their vanilla blast seriously holds a special place in my protein heart.

So imagine my delight and excitement when I found out they were coming out with a chocolate flavor of the pea protein. Life Changing. It may actually be kind of pathetic how excited I was.

My favorite thing to actually do with their pea proteins is to make a simple protein frosting, but when I got the chocolate I wanted to have a little fun with it.

Since I’ve been on a bit of a dairy break and not able to enjoy my delicious frozen yogurt as often, I have been experimenting which new desserts, because I seriously have to have something sweet at the end of the night. I had made a tofu pudding in the past and since I love the creaminess the pea protein adds to most mixes, I thought it would be a perfect combination.

It was.

 Adding in Enjoy Life mini chips didn’t hurt either.

I took my base recipe for the tofu pudding and then added in about 2 tablespoons of the Growing Naturals Chocolate Pea Protein.

I put the tofu pudding in the freezer after mixed for about 10-15 minutes hoping it would make it more of an ice cream texture, it ended up more like frozen yogurt which was perfect to me!

Which did I mention it tasted amazing? Because it did.

The combination of the silken tofu and pea protein was just a beautiful creamy dessert.

Chocolate Protein Tofu Pudding

Ingredients:

– 1/2 block silken tofu

– 2 tablespoon unsweetened cocoa

– 2 tablespoons chocolate pea protein (I used Growing Naturals)

* optional 1 teaspoon NuNaturals Cocoa Syrup

Directions:
-Place all ingredients in a small blender and blend until smooth.

You may need to add a liquid if too thick, but you want the consistency to be smooth and creamy.

He even wanted to plate them all pretty for the picture. I soon ruined their beauty made them more amazing by adding about half more of an avocado to mine. I don’t know what’s been going on with me lately, but I have been obsessed with avocado lately. I can’t get enough.

But that’s about it in the home cooking department. There has been a lot of eating out, but I like to say with good reason.

We got invited out for a double date and at our company’s request, sushi was on the menu.

It has actually been awhile since Matt and I have had sushi, so we didn’t hesitate to accept the offer.

We started with the most amazing tuna sashimi.

We then both ordered a sushi roll. Matt ordered the eel tempura roll and I got the salmon roll.

We usually end up sharing each others rolls which works out because both were very delicious.

There has been another reason for the lack of creative meals as in Matt has been traveling a lot and hasn’t been home. His mom has been sick and in the hospital basically since our wedding. It’s been a frustrating month of the doctors not being able to tell us what exactly is wrong and it has been a headache with poor hospital care and a total lack of communication between hospitals and staffing. It’s a long story and I could vent for hours, but I’ll save you that drama.
So with Matt on the road I have had a lot of nights and dinners alone.

Some nights were simply Whole Foods sushi, eaten on the floor.

At least I have my kitties and pup to keep me company. Other than the begging, they are pretty good dinner company. Not so great in the dinner conversation department.

When Matt returned however we thought we would have a night out to spend together.

We decided to go to True Food Kitchen which is one of our favorite restaurants. Their food is always so fresh and delicious.

We of course got cocktails to start.

For an appetizer we decided to stick with a favorite of the herb hummus.

The pita had a perfect crisp to it and as per usual I stole all the feta.

After dinner we got some gelato from an amazing gelato shop that is conveniently located next door to True Foods and headed home to veg out on the couch.

Sadly I think my future holds more dinners on the floor or eaten out of coffee cups, but that’s just life right now. And I just have to rolls with the punches.

wedding story part five: boulder

Denver was fun, but our main honeymoon destination was Boulder, so we packed up the car and said goodbye to Denver.

It was a hard goodbye because we had such a great time in Denver.

As we rolled into Boulder we were taken aback by the beauty of the mountains. Yes we have mountains in Phoenix, but they are different mountains, it is so green in Colorado. Denver was much more city/busy, but when we got to Boulder it just seemed like a big mountain town and so much more relaxed. We drove around for a bit and just explored for awhile.

It was soon time for dinner and since one of our main goals was to hit as many breweries as possible, we decided to go to Fate Brewing Company for dinner and drinks.

Not only were the beers good, the food was delicious and the service was excellent. Again, I swear everyone is Colorado is incredibly nice.

After basically tasting every beer they had to offer I ordered the FATE Moira, which is their IPA to drink. For dinner Matt ordered the Fresh Grilled Salmon which was amazing – because like I could ever not steal a bite of his food. I ordered the Poached Pear Salad and added chicken, which was also amazing. Poached pears + goat cheese is where it’s at.

We were a bit tired that night so decided just to head back to the hotel and take a dip in the hot tub. It was a nice relaxing night.

The next morning we set out to find a spot for breakfast. Matt and I both had done some research of some local spots that we wanted to check out, but most of them were breweries and more lunch/dinner type places, so we basically just drove around and searched on Yelp for a place to eat. We found a cute little place called Walnut Cafe.

I ordered the Boulder Scramble which was tofu, spinach, tomatoes and onions and Matt ordered the Tofu Rancheros.

Again, I had a bit of food envy. My breakfast was good, but Matt’s definitely was better.

After breakfast we decided we wanted to do a little bit of hiking so we headed to Chautauqua Park which we heard had a bunch of different trails to hike.  Again, the scenery is beautiful and it was just so nice to be outside in the mountains and take in the view.

We worked up a bit of an appetite during the hike so we set off to find a place to have some lunch.

There are so many fresh and healthy restaurants in Boulder and one that was recommended to me to try was Zeal.

I was impressed upon walking into Zeal and love their concept of healthy eating using whole fresh ingredients.

For lunch I ordered the chicken lettuce wraps which were out of this world delicious. Matt did a create your own bowl with a base of cauliflower rice, chicken as his protein and the thai peanut sauce topped off with mixed vegetables. His was good, but this time I was extremely pleased with my selection.

After lunch we just walked around town, went into some shops and just explored a bit more.  There was a lot to see and a lot to do. We went into multiple shops, multiple breweries and bars and basically just wandered around all day. When it was time for dinner I actually had a bizarre, yet not bizarre request for dinner and activity. I had heard that Boulder had an amazing Whole Foods and since we’re such fans of ours, I really wanted to check theirs out. Since it was dinner time we just decided to eat there as well.

After dinner we stopped at one more bar that was close to our hotel and finished the night there with some drinks. It was overall a great day of exploring and enjoying the town.

It was a late night and when we woke up I immediately wanted coffee and food. And quick.

So since I didn’t want to take the time to research and try to find a place we actually decided to go back to Zeal for breakfast since it was so delicious for lunch the day before.

For breakfast I ordered the oatmeal and asked if they could add their home made granola. They did not skimp! I also got  side of their in house made coconut sugar syrup and local honey.

Matt ordered a fresh pressed orange juice which was basically like drinking a fresh orange, the tofu scramble and a side of the most amazing bacon I have ever had. I was seriously so impressed with this place. Everything they made was so fresh and delicious.

After breakfast it was time for some relaxation. Matt had booked us a couples massage at a spa that had gotten great reviews. After hiking the day before we were more than ready for some pampering. The massages were amazing. It was so nice to be able to relax, get pampered and spend some intimate time with my husband. It just made me realize I need to get massages more often. Much needed.

After our massages we set out for lunch.  There was a cute little place called Lyfe Kitchen we noticed across the street when we were walking to the spa, so we decided to head there for lunch.

We started out with some cocktails and the cucumber mint margarita I ordered was one of the best I’ve had. So good I had to take a picture… or am I really just taking a picture of Matt and I showing off our married status?

I had a really hard time deciding what I was in the mood for, but ended up choosing the mahi mahi fish tacos. I mean tacos and margaritas just go together right? Well let me just tell you, they were amazing. Why don’t I order fish tacos more often?

Matt ordered a grass fed burger and a side of garlic parmesan sweet potato fries. And yes you guessed it, I stole some of his fries. They were served with a chipotle aioli which was amazing. Basically everything was amazing.

After lunch we had plans to go visit one specific place we were very excited about. But since this is getting pretty lengthy, that will be for next time.

wedding story part four: the honeymoon – denver

Well the honeymoon is over loves, back to reality I suppose.

I am loving writing these wedding story posts because it’s allowing me to relive some of the moments.  As I mentioned, my wedding was just a blur. And honestly, the honeymoon kind of was too. It was so nice to have those days off and to travel, but at the same time I think we focused so much on seeing as much as we could that we never actually took in what we were doing, what had just happened and didn’t really allow ourselves to relax.  This is kind of why I did want to go somewhere tropical and just sit on a beach all day.  But I will say I had a great time in Colorado and it was beautiful, but again time went by way too quickly.

Our wedding was Saturday and we didn’t fly out until Monday, so we had Sunday to regroup a little bit. But not too much.  Our wedding was on Easter weekend, so since my family was in town for the holiday we decided to all get together and have Easter brunch together.  After brunch Matt and I went home, tried to organize as much as we can and did our last minute honeymoon packing.  We got a decent amount done, but come dinner time we realized we didn’t have much to eat in the house as we tried not to go grocery shopping, so we did what we do best.

We went to Whole Foods for dinner.

Yes, I know. We go there way too often, but it only seemed right.

For our honeymoon we decided to visit Denver and Boulder Colorado as both were two cities we were potentially thinking about moving too in the future.  Since we couldn’t fly into Boulder, we decided to stay a night in Denver and check the city out for a day. I have only been in the Denver airport and never the actual city and have heard amazing things about it.

But before we actually got to our destination, in typical Debbie and Matt fashion we had an eventful plane ride.  I had asked the stewardess if she had any champagne that I could surprise Matt with explaining we were newlyweds and I guess when you ask for a glass you get a bottle!

Another reason why I love flying Southwest. They also announced our recent marriage, and even though they pronounced the last name wrong, it was still very nice. And really. Who doesn’t like free champagne!

Another fun moment.  Matt had ordered a gin and tonic and during the flight managed to spill it completely on me. Thanks husband.  The stewardess was nice enough to get him another, but not without precautions.

We landed in Denver around lunch time, but with the whole car renting process and the unexpected traffic, we didn’t get into town until around dinner time.  Thankfully I had packed some emergency snacks of nuts and jerky, so that was basically our lunch eaten in the car stuck in traffic. (random side note: when we had dinner at Whole Foods I randomly picked up Turkey Perky Jerky which is seriously some of the best jerky I have had!)  What a romantic first honeymoon lunch. We finally checked into our hotel, which was gorgeous, and headed out on the town to find a place for dinner. After walking around for a bit we decided on the Paramount  Cafe. We sat on the patio as the weather was beautiful.

For dinner Matt ordered the Thai Salmon with rice and vegetables which was delicious. I love salmon, but the sauce definitely stole the show.

I ordered the ahi tuna salad with a sesame ginger dressing which was also delicious.  I loved the sweet salty combination of the mandarin oranges, edamame and peanuts. It was such a refreshing salad.

I will say the best thing about this place was our service. Our waitress was super nice and when we asked her for some suggestions on local places to visit, she wrote down a list of her favorite spots. (come to find out almost everyone in Colorado is incredibly nice)

Before heading out for the night we went back to the hotel to change and freshen up. When walking in Matt said he had a random craving for a gin and tonic so we stopped at the hotel bar. Now I know hotel drinks are way over priced, but I will say this one was worth it. Not only was the bartender super nice, but he was also very knowledgeable and we had really good conversation with him.

He also made me the most amazing cocktail.

It was basically a Manhattan with extra cherries and I think it had a fresh fig juice as the sweetener. All their ingredients were local and made in house. (and just so you know how awesome this bartender was, after our long conversation about beer, when we arrived back to our room that night we had an ice bucket full of random craft beers and a congratulations note from him on our marriage. yup. he was awesome.)

Matt and I had an amazing night out in Denver, we went to a few local bars and ended up at a pizza joint of one of Matt’s old friends who was having a show there that night. Even though it was late and we were full we couldn’t say no to the free pizza that was presented to us. It was just the perfect end to our night in Denver.

The next morning we set out to get some breakfast. We actually initially had plans to have breakfast at a vegan restaurant that Matt had been to once before, but upon arriving found out they did not open until 11am. We ended up just walking around and found another breakfast spot called The Delectable Egg.

I ordered the Green Door Omelet which was filled with tomatoes, onions, bell peppers and I also added some grilled zucchini. It was served with a side of sliced tomatoes and an english muffin.

I give that kid kudos for being able to eat that heavy in the morning, but I am not going to lie, I did steal a few bites and dipped my omelet in his gravy, because that stuff was good.

 After breakfast we just lounged around a bit after our showers and packed up as we were just heading up to Boulder after walking around Denver a bit more. We ended up staying in town a little later and decided to have lunch in Denver and then start driving north.  Since we didn’t get to go to the vegan restaurant for breakfast we decided to stop by for lunch.

Now, this was an awesome and sad experience all in one. Upon sitting I was so torn on what to order because honestly everything looked amazing.

The Water Course had an amazing atmosphere that I immediately loved. As I studied the menu I ordered a lemon ginger kombucha that they had on tap. Kombucha on tap?
Amazing.

I went back and forth between so many things, but I ended up creating my own salad and topped it with tempeh sausage crumbles. Matt ordered the tofu scramble breakfast burrito and couldn’t decide if he wanted it topped with the vegan sausage gravy or the green chili sauce… so he got half and half.

Now the sad part. My salad was huge, topped with fresh ingredients, and the salad dressing it was served with was amazing. However, the tempeh crumbles were basically lost in the salad and I really felt like I was just eating a huge plate of raw vegetables. What made it worse was Matt’s burrito was amazing. That sausage gravy…I really wish I could have taken a bottle of it home with me. It was the worst case of food envy I have ever had. Thankfully for me his burrito was huge and I basically split it with him.  It was just one of those moments where I actually regretted what I ordered, but as mentioned, Matt’s portion was so huge I was able to enjoy his food. Hey, we’re married now right? What’s yours is mine?

After lunch we packed up and headed to Boulder…

 I mean our wedding was craft beer themed and one of our points in visiting Colorado were the breweries, so it was only right we stopped for a beer before we left Denver.

We have been long time fans of Great Divide so it was nice to be able to stop in their tap room. I ordered the Chocolate Oak Aged Yeti.

snacks i’m loving

Hello my loves.

I hope you all have had a wonderful weekend. It’s so hard for me to concept a weekend anymore since I work every Saturday, my weekends fly by a lot quicker when I only have one day to really relax.  And not that I don’t miss him, but Matt was at a design conference all weekend, so I actually had some quiet time to myself. But I’m not going to lie, it can get a little boring.

I probably should have worked on more wedding things, as I feel like it is quickly creeping up on me, and I still have so much to do, but I took the quiet time to actually just relax and chill out. I try to keep my stress levels low, but when you finish addressing all your save the dates only to notice at the very end that there was a typo on the date and the wrong year was printed… kind of hard not to freak out a bit.

It doesn’t help that on top of it all Matt and I have both been sick for the past few days, so I haven’t had much motivation or energy to do more than lay on the couch in my spare moments.

But I did of course want to check in with you lovelies and share a few goodies.

Since I’ve been sick, my appetite has of course been a bit off. I find myself snacking a lot more as I don’t have as big of a hunger for big meals.  But I’ve never had problems with being a snacker and thankfully I have had some tasty treats showing up at the house.

When I know I need to get some energy in me and don’t have the appetite for a huge meal, nuts are always a go to for me.

I was most blown away by the Tahitian Vanilla Coco Creme Walnuts, as I love walnuts to begin with, but the exotic vanilla flavor was amazing. I ate these straight from the bag, but also topped my yogurt and ice cream with them. Such a nice sweet crunch.

The Vegan Cheezy Almonds were another favorite and these were a great addition to my salads.  Again a nice added crunch.

I recently reviewed the new Quest Nutrition protein chips and I am still loving those.

Perfect little protein snack and I highly recommend if you have any left over guacamole from Chipotle like I did, they go amazing together.

Marvelous is wedding cake tasting!

Yes, at Whole Foods.  I love the high standards Whole Foods has on their food items and it’s no exception with their cakes. The baker kept informing us of the all natural ingredients that are used and the fact that the ingredient list is not only short, but you can recognize every ingredient used.

He had randomly made us the spice cake because it was his seasonal favorite, but he mentioned since we were having an April wedding we may not want it… After tasting it we decided that it was going to be the top tier of the wedding cake just for the wedding party. It was one of the most delicious cakes I have ever tasted. For the other two tiers we chose chocolate cake with a chocolate butter cream frosting filling and then the bottom tier will be vanilla cake with a Chantilly frosting and raspberry compote filling.

It’s going to be amazing and delicious.

And the last small marvelous thing is actually baking and creating something delicious.

I made a mini batch of protein chickpea brownie bites that even though the recipe may still need a little bit of tweaking, topped with Sweet Spreads coconut butter made them a kitchen success.

But I feel like in order for you to connect to my posts, you have to connect to me. And you can’t connect to a person without knowing who they really are.  So many blogs I feel the writer will try and portray who they want to be, or who they think their readers want them to be. I guess if you are trying to make a profit off your blog maybe you have to do that. But I don’t. And I don’t think I ever will.

I’m me. I’m honest. I’m real.

So with that being said, I was looking through some pictures and just wanted to show you what my life really is.

I don’t talk a lot about it anymore because it really isn’t a main focus in my life anymore, but it is still present.

Yes, I am still in the process of gaining. It’s been a slow process, to the point to where my nutritionist actually thinks I may have a mal-absorption problem and would like me to see an endocrinologist, but financially I just can’t do that right now.

But until then, if you follow me on Instagram you know my life consists of a lot of desserts.

And with my previous mention of my current need to gain, this may be a good thing, but  I have been so lazy lately when it comes to cooking and have been eating out way too much. Not in the sense that eating out is bad, but spending way too much money.

I know I talk about Matt a lot on here. I mean he is a huge part of my life. But one great thing about him..

He’s great at posing for pictures. He is always a sport when it comes to me promoting products and asking him to “model”.

He may make fun of me… but he still does it.

Snacking. I do it a lot.

Sometimes I wish I didn’t, but sometimes I am so glad I do.

Because when you have delicious things to snack on. Well that’s pretty marvelous.

Awhile back I tried Barnana in their original and chocolate chewy bites. You guys know me and I love my banana’s and basically anything banana related. Their products were no different.

Barnana contacted me to let me know they had recently came out with two new flavors. Two flavors that happen to be some of my favorites as well. Peanut Butter and Coconut.

Since I knew how much I liked the original flavors, I had no doubt that I would also enjoy these two new flavors.
I was right.

Unfortunately due to living in Arizona and us having stupid hot weather, the peanut butter Barnana bites were a bit melted and kind of formed one big chunk. Now this may sound like a problem and maybe in the sense of having to review the product and try to make it look appealing, well that might be an issue, but really a big chunk of peanut butter wasn’t a bad thing in my opinion.  And after talking with my contact at Barnana, she informed me that sticking them in the fridge helped.

So that is what I did and just broke off little chunks as I wanted them. Again, maybe not as photogenic, but still tasty!

The coconut flavor traveled a bit better and they really reminded me a lot of the original bites in taste, but one thing I really liked about these was the texture. They almost reminded me of the Navitas Naturals energy bites that I love.

I have been on a huge coconut kick lately, so the combination of coconut and banana was an interesting one. In a good way.

I also love how these bites are organic, gluten free and have no GMOs. If I am going to snack, I like to make sure they are as natural and healthy as possible. It is so easy to just grab granola bars or other snacks that are full of sugar and unnatural ingredients.

And honestly, these are just really dang good.

And to all of you, if you haven’t tried their products yet, I highly recommend you do. Any of their flavors are great, but if you’re like me chocolate or peanut butter would be my first picks!
