You know what is marvelous?

Dessert. Dessert is always marvelous.

I don’t know about you guys, but I almost always have to have some sort of dessert after dinner.

And since it is so flipping hot here, ice cream has become a new obsession.

Yes I know I already have my obsession with fro-yo. That hasn’t gone anywhere.

But after being spoiled with real ice cream, sometimes fro-yo just doesn’t cut it.

I don’t think I have ever had a true ice cream parlor hot fudge sundae before and trust me, it’s all it’s knocked up to be…and more.

They did not skimp on the hot fudge and it was amazing.

(Side note: this was from Sugar Bowl – and if you’re old like me and remember the Family Circus comic, this is the same Sugar Bowl feautured in the comic. It’s pretty famous)

But eating dessert out every night can get a bit expensive. So sometimes I have to make due with at home desserts.

But I can make those pretty epic too.

Well, I loved those squares so much I had to order some more.

I’m seriously addicted to them.

Needless to say whether I am going out for ice cream or staying in. Both options have been delicious.

And with the weather getting hotter, my ice cream cravings are only getting stronger.

But I’m kind of ok with that.

What’s your favorite dessert?

no one is perfect

I want to acknowledge something, that even though may be obvious, still needs to be said.

I always try to keep things light on my blog, I love to focus on the positive, the marvelous moments, and happy times.

Truth is. My life is not perfect.

I feel like blogs sometimes always portray life as being all rainbows and butterflies, but we all have our struggles, frustrations and challenges in our lives.  Again, I’m sure this is all common knowledge, but for this Marvelous In My Monday, I really did want to focus on the positives of my weekend, because there were a few rough spots.

Even though I love Matt with all my heart and I know he feels the same, we still have issues and tiffs here and there. But rarely do we ever really fight. However, we had a very rough weekend, and I can’t even say why, we just were not communicating and were not on the same page like we normally are.  However, one thing I love about us, is we try to figure things out, communicate and solve the issue at hand. We will never give up on each other and that is how I know it is real, true love.

I even got him flowers to show him how much I love him.

We had a busy day planned that I don’t think helped our situation. A pool party at a friends house and dinner plans that almost didn’t happen, but I am so glad they did.

I think we both really wanted to be stubborn and just go home (the biggest part of the fight happened while driving to dinner), but I kind of knew if we stuck to our plans of going out to eat, it would almost force us to be civil, talk about things and hopefully solve a few issues.

It did.

And on top of that we had an amazing delicious meal.

We ended up going to a new to us restaurant called Tottie’s Asian Fusion.

It has a mix of Thai, Chinese and Vietnamese foods on the menu.

To start we shared a Dragon Roll.

I really loved that the menu offered such a wide variety of items. We all know I love my sushi and it sounded really good,  however I really wanted to take advantage of the Thai dishes. So I am glad I was able to do both.

For dinner Matt got the Tangerine Beef.

I of course had to sample his dish and it was amazing. The sauce had a really nice fresh tangerine/orange flavor to it.

For my entree I chose the Ginger Thai Grilled Salmon with steamed vegetables.

I was surprised to see the dish come out with this thick purple sauce (I swear there is salmon under there), but I was pleasantly surprised at the taste. It was delicious. The salmon was cooked perfectly and the sauce was so flavorful. I ended up covering the veggies in it as well.

 I am happy to report that the mood got much better between Matt and I. We talked a lot of things out, and even got classy dessert after dinner. In the form of McDonald’s hot fudge sundaes. Don’t judge. I really wanted a hot fudge sundae and it was the closest place that had them. Fun fact, I didn’t even know McDonald’s had hot fudge sundaes until Matt said something and I cut across 3 lanes of traffic to pull in.

So loves, I guess my main point of this is remember we are all human, we are not perfect and life is not always rainbows and butterflies, but there really is always a positive and that is what we need to focus on.

lazy dinners and delish desserts

Hello my loves.

I hope everyone had a very relaxing weekend. This weeks work schedule has been kind of crazy for me lately and very draining. Usually I have a random day off in the week that breaks it up a little bit for me which I like, but these past two weeks I have been working so much more due to another employee quitting. It was a sudden thing, so we all are trying to fill in when we can, which leads to longer weeks with no breaks. Needless to say I am wiped and haven’t had the energy or desire to do much after work other than sit on my butt.  Which in writing that out, that is something I want to change. Yes, I work long hours, but that doesn’t mean I have to become a couch potato as soon as I get home.

Note to self: Work on that.

So I do apologize for being a bit absent.

Long days mean I have had no desire to cook.

The first night started out good and Matt actually had dinner waiting for me when I got home from work.

Grass fed hamburger topped with avocado. And what made this burger even better? We had Einsteins Bagels brought into work and I took a pretzel bagel home with me and let me tell you, that made the most amazing bun.

Yum.

Then things started to go a little down hill. Well not really, but in terms of my lack of wanting to even go home to cook.

We ate at Whole Foods 3 days for dinner in a row.

I was actually craving sushi and Matt really wasn’t feeling our normal sushi spot, so we compromised on Whole Foods so I could get sushi and he could get something else. I also got a side of broccoli and brussel spouts. Whole Foods has the best roasted brussel sprouts.

I guess the sushi really hit the spot because I wanted it again the next day. Usually Matt try’s to talk some sense into me about how we don’t need to eat out two days in a row, save money blah blah blah, but he actually very quickly gave in. (probably because I offered to pay)

And even though I had just had it the night before, I wanted more sushi.

Had they not been out of what I had the night before, I probably would have gotten the same thing, but alas they didn’t have it this time, so I decided on a different type of roll. With you guessed it, more broccoli and brussel sprouts on the side.

Ok so you think we would be done with dinner’s at Whole Foods right?

Well Saturday after I got home from work we had an appointment to go look at a potential wedding location and it just so happens a Whole Foods is close by. We really only had the intentions of going in for a quick beer, but ended up getting dinner to-go.

I think I can say though that I’ve had my fill for a little bit.

We’ll see though.

And even though work is draining me, I really can’t complain too much.

On top of delicious dinners courtesy of Whole Foods, I must admit, I’ve had some pretty tasty desserts to end my nights.

I almost always have dessert, I like to go to bed on a full satisfied belly. And let me tell you, lately it has been extremely satisfied.

I had a free coupon for Halo Top Creamery Ice Cream, but hadn’t been able to find it. Well guess what Whole Foods had it, so I finally got to try it!

I had heard good things about the Lemon Cake flavor, so I decided to try that one first.

Guys. If you haven’t had this ice cream yet, you need to, and you need to get this flavor. It is seriously amazing. I don’t care if it’s low fat, or whatever, I could eat this whole pint in one sitting (don’t worry though…it lasted for two)

Since I loved the Lemon Cake so much I decided to try the Vanilla as well.

Not too shabby.

But seriously. Lemon Cake. Go get it.

You can tell it’s getting hot in Arizona, because I am on a huge ice cream kick. And lucky for me I was able to try a new to me product that satisfies my ice cream craving.

Nada-Moo is a non dairy coconut milk ice cream and their flavors are to.die.for.

I had the ice cream delivered to my work as it is already 100 degrees here in good ole Arizona, and couldn’t wait to get home to try a flavor. The Banana’s for PB and Chocolate was calling my name and between my co-workers and I, I think we demolished at least half the pint in a mere 5 minutes.

Nada-Moo is gluten free, dairy free, egg free and sugar free product. And it taste amazing on top of that. I’m all about eating healthy, but I am not a fan of fake diet foods that have no nutrition, taste horrible and are made from questionable ingredients. Because even though a product may be low in calories and fat, that doesn’t make it healthy or good for your body.  Not a problem though when it comes to Nada-Moo.

Matt was a huge fan of this as well. He is pretty easy to please when it comes to ice cream, but the first time I gave him a bowl of it not telling him what it was his response was “what is this and where can we get more of it”.

Do you ever look at the date or day of the week and think to yourself “where has time gone?” Because that’s how I feel right about now. Time is just flying.

My life has been busy and on top of that emotionally stressful lately. A lot of feelings I am trying to deal with and honestly with all that going on, I haven’t had the time nor the desire for much else. But alas, I feel I need to check in with you lovelies because even with all the stress and the crazy I know I need to stay positive and keep trucking on!

So with that being said what a great time to focus of the marvelous things that have been happening.

It seems most things that make me happy these days are food, beers and my love.

 Nothing wrong with that though right?

Matt and I had sushi plans with a friend who ended up canceling on us, bummer. Even though we re-scheduled for later in the week, Matt told me that he was craving sushi so bad that he still wanted to get some.  So we thought we would save money and meet at Whole Foods and just get sushi from there.

Well friends, I’m not sure we ended up saving money.

It’s not my fault, I was like a kid in a candy store with this selection. I think my eyes were bigger than my stomach and I got a bit carried away. And failed to look at the prices on top of that.

Yup friends, I spent $60 on sushi. Whoops. It was delicious though, so I guess it was worth it, but next time I think I’ll pay a little more attention to the price tags.  Matt and I were stuffed, but since we spent so much we forced ourselves to eat it. Tough life.

Two short days later we had our re-scheduled sushi date with our friend. You would think we would get sick of sushi, but we don’t.

We met at Sakana which we hadn’t been to in awhile and again forgot how huge their sushi rolls were and may have ordered a bit more than we should have.

We started with tuna tataki, which oh my goodness was amazing.

Yup. massive rolls. I think this is one of the few times we have not been able to finish everything we ordered.

I have never taken sushi to-go so when our waitress asked if we wanted a box I asked her if she personally had ever had left over sushi and if it keeps. She said she had, but only for the next day. I didn’t want to waste sushi so I decided to take it home and would just see if it was good the next day.

I had intentions of having it for lunch, but Matt’s parents come into town for an early Mother’s Day and we ended up having lunch with them at Olive Garden. Our service was less than stellar and I ended up taking some soup home with me from lunch.  It was still a great afternoon with Matt’s parents, as we took them to look at a possible wedding location. There was actally a wedding going on that day so it was great to see the spot set up for the occasion so we got a better idea of what it would look like. And it just made me super excited for my wedding!!

Since we were so busy through out the day, I was actually thankful for leftovers. I didn’t want to take the time to cook so it turned into a left over dinner kind of night.

Happy Cinco De Mayo!

I can almost guarantee you that I will not be celebrating as I would like, which would be with beer and yummy Mexican food, but life has been way too busy for me even to attempt to plan something, have time to do something, or make something at home.

Sometimes I really hate this whole being an adult thing and all this responsibility stuff like going to work, paying bills, keeping a clean house. Remember when we were kids and couldn’t wait to grow up? If I only knew!

So since I can’t give you any Cinco De Mayo fun, it is still Monday and that means I can give you some other marvelous things that have been going on.

Matt and I have found some time to get out and enjoy our days.

Last weekend he participated in a Pinewood Derby, which I didn’t even know they hosted events like this…for adults and I didn’t think it would be all that fun in all honesty.  He really wanted me to come out though to watch, so after I got out of work I headed out to meet him.

First off, it was a really cool event and a lot more people were there than I thought.  It was at a cute little bar downtown and they had a food truck and everything set up for the event. I couldn’t stay long because I actually had to go back to work, but I got to watch one of his races (which he won!) and had a quick beer with him.

I actually wish I could have stayed longer. He is trying real hard to get me to participate next year. I’ll pass on the actual racing, but I’m all about showing up for support.

Funny side note. I’ve noticed almost every selfie Matt and I take I make the same face. Always open mouthed. Someone on Instagram commented that it was the “invisible sandwich” face. Love it!

Have you guys heard of Buff Bake?

They make these cute little protein muffins called Buffins and just recently came out with a new Buff Butter.  The really awesome thing about their products is their ingredients. They use high quality organic ingredients which I love. They make a great post workout snack.  Since I work out first thing in the morning, but don’t eat breakfast until I get to work, I always have to have a snack at home before I leave. These have been great for that…which is why they are already gone!

I only got to try the Buffins, which I loved, but I am dying to try the Buff Butters. I mean we all know my obsession with nut butters as is.

a very marvelous easter

Hello my loves and happy Monday!

I hope everyone had a wonderful Easter and enjoyed some quality time with your loved ones.

Easter really snuck up on me this year, but I am just so busy with work I seriously forget when holiday’s are coming up.

Matt and I had initial plans of going up to his parents Saturday night, but I had to work all day and by time I got home I was beat and really just wanted to relax at home. Since I was so tired and had no desire to do a thing, I also convinced Matt to meet me for dinner. A new Whole Foods opened by my work and as hard as it is to believe considering I am in love with that store, I have never eaten from their hot bar.  Yes loves, I was a brown box virgin.  Well Saturday night that all changed.

I went all out and got two brown boxes, one with a salad which was a mix of greens, herb tofu, curry tofu, edamame and then a prepared citrus kale salad with cranberries and almonds.

I wish I had just gotten all of the prepared kale salad, because it was amazing. The herb tofu was a little disappointing, kind of bland, but the curry tofu was really good.

I say hot in quotations because honestly everything was luke warm at most. Kind of disappointing. I got a ton of roasted veggies and then also a cajun seasoned fish.  I think it all would have tasted a lot better had it been hot and fresh. So since this was my first time eating from the hot bar, I’m not sure if this is normal or not.

Matt got a Chinese dish from one of the food stations and I will admit I was a bit jealous. Only because his food was actually hot and freshly made.  Lesson learned I suppose.  It was still a nice dinner as our Whole Foods also has a bar in it, so we ate there and enjoyed a beer with our meal.

Our Whole foods also happens to have a gelato stand, so on our way out we made sure to get some ice cream to go.

We had wanted to leave decently early for Matt’s parents the next morning.  Since I pretty much forgot Easter was even coming up, I didn’t think Matt and I would really do anything other than celebrate with his parents.  Well he one upped me and surprised me with a cute little Easter basket.

We also hid a few Easter eggs around the house, but since we were in such a hurry to get out the door we didn’t really look for them all. I’m sure we’ll be finding random ones the next few days!

Since the visit to Matt’s parents was kind of a short one I was really focused on spending as much time with them as possible and didn’t take many pictures.

Holiday dinner’s are pretty standard: Ham, turkey, mashed potatoes, stuffing, rolls. The usual.

Every holiday however I am in charge of one thing and that’s making the salads.

With fulls bellies Matt and I were quickly back on the road to head home.  It was a very short visit, but any time spent with family is worth it.

Gah. Loves. Monday already?

I have been way too busy for my own good. I really feel like I have no down time anymore. And when I do have down time. Well it’s not so down.

Matt has been sick the past few days, so I of course always take the mother hen approach and want to take care of him and make sure his needs are taken care of. But that’s what love is right? I have absolutely no problem doing it because I know he would do the same for me.

But since it is Monday and we all need to remember that life is marvelous, I will give you a little insight of what’s been going on lately.

My weekend of course started with work. Even though Saturday’s are half days, I still wish I could have an actual real weekend and have both days off.  But things aren’t as bad when the doctor brings you breakfast.

We all know this carb loving girl loves her bagels (and just in case you were wondering that’s a chocolate chip bagel, yes they exist!), and Einstein’s honey almond smear is ah-mazing. You better believe I slathered that stuff on. It made working Saturday just a bit better.

Puppies!

Seriously puppies make everything better.

And while were on the topic of puppies, I’ve got some exciting, maybe even marvelous, news to share.

We all know I love to bake. And we all know I love my pootches. But what a lot of people don’t know is one dream I have always had is to combine the two. It has been a career dream of mine to open my own doggy bakery. I don’t know if that dream will ever come true, but I  have decided to finally take baby steps into making it happen. We all have to start somewhere and I figure since I work at an animal hospital and know a lot of people in the field, I can start by having a home business and start by making and selling treats from home through my clients and friends. We’ll see where it goes from there! I will definitely keep you guys posted. (and if you’re interested in home made dog treats made from natural ingredients, feel free to contact me!)

But before that even happens, I need to test some recipes and find the perfect treats! This weekend I finally decided to start experimenting!

Other than that the weekend was pretty low key. Since Matt was sick we didn’t venture much out into the world, however Sunday since it was so gorgeous out, I thought it might be good for him to get out of the house for a bit. I know when I’m sick, sometimes sitting inside all day almost makes it worse.

I had some grocery shopping I needed to do, I needed to pick up some ingredients for a few recipes I will be testing from The Purely Twins new No Flour Cracker and Flatbread cookbook (be on the look out for a review in the near future!), so I dragged him with me.  I’m glad I did, because he ended up feeling a bit better. So much better on our way home we stopped by OHSO Brewery for this.

I have been wanting to see Frozen for some time now and I will say this is one movie that is worth the hype. We both really enjoyed it.

So a perfect way to end my weekend if you ask me.

But alas, it is now Monday, so back to the drawing board.

Happy Monday loves!

I am almost glad it’s Monday, well because this weekend was a whirl wind of emotions.

It definitely had it’s ups and downs. Some challenges, but I think all in all only positive things are to come.

And since Monday’s are made to be marvelous, let’s focus on the ups of the weekend.

Saturday Matt and I had made plans to have a date night in.

We made a lazy man’s dinner of pre-made ravioli with a fresh salad on the side.

Even though the ravioli was pre-made it was still fun being in the kitchen together assembling everything.

We had went to the store earlier to get fresh veggies and saw that asparagus was on sale for $0.77/lb. WHAT. Yes please.

If you remember when I had my first Chipotle experience, Matt and I had a picnic in the living room… Well we had such a great time we decided to do that again for this date night.

So to the floor we went with our wine, salads and dinner.

Delilah decided to she wanted to be part of the picnic too. The more the merrier.

We had gotten two types of ravioli by Rising Moon Organics (they were buy one get one free at Sprouts) one was butternut squash and the other was hazelnut and feta. Both were really good and I would definitely get them again. It made for a nice quick easy dinner.

I am weird and like my ravioli plain with salt, but Matt made his pretty by adding some fresh tomato and shredded cheese.

It was a great little date night that ended with us both passing out in the living room (Matt on the floor, me on the couch) I think we had just a bit too much wine. But it really was nice to actually cook with him in the kitchen and spend a quiet night in.

That all changed Sunday though.

It was a gorgeous day and we had no plans for the day. After lunch I couldn’t take it anymore and told Matt we needed to go out and enjoy the day.

We started by taking Delilah to the park for a walk. We then quickly made the decision to go grab a beer at the Brat Haus which has a dog friendly patio.

Even though we had just had lunch we couldn’t pass up a pretzel and cheese. They are just so good!

After our beers and pretzel we decided to head home.

Upon walking into my bedroom this is what I saw…

Ok guys seriously, he tucked himself in! He was under the sheets and the comforter. I don’t know how he does it! But I kid you not he did this all by himself!

So I know I said there were ups and downs to this weekend, but since we are focusing on the positives today, that’s what we’re sticking with. Plenty of time to get serious later.
