Hi friends. Yes I exist. I can’t tell you how many times I told myself I needed to write a post and go figure I found others things to do instead. But with it being Christmas in (oh my gosh) 3 days, I think it’s safe to say we have all been a little busy.

So I thought to catch you up on what’s been going on, I would do a photo dump of a post. It’s more fun to look at pictures rather than listen to me talk, or read for that matter.

So let’s go back.

I made a very heartfelt post on Instagram the other day after I had posted this picture of a sushi dinner out with Matt.

Yes I know it is a lot of food. And yes, we did eat it all. I got a lot of comments of “oh my gosh how can you eat so much and stay skinny?” A few thoughts ran through my mind when these comments were made. One was “am I eating too much?” And then I really thought about it. I eat to enjoy food and to enjoy the moments. And I also work hard to be able to eat these meals on occasion. (and in reality, this isn’t that much food, Matt and I split this and let’s be real, I’ve eaten more) I am a firm believe in a healthy balanced lifestyle and sometimes that means one more glass of wine than I should probably have, but it also means staying on track with my fitness. So in response I made this post.

I do work hard so I can play hard.  My post basically said this was me the day after my big meal out and this is why I feel no guilt or even think twice about having a big meal. I can’t say I believe in the 80/20 rule, I just believe in living life and being healthy. And for me that’s eating clean and being active. And if I have a dinner out, I don’t even give it a second thought. It’s all about the moment, and this sushi dinner and a date with my husband. That’s what it was about. I could basically ramble forever, but basically my point is, think about your comments  before you say them. I know the comments were not made to be hurtful, but you never know how someone may interpret them.

So to my fellow wives and girlfriends, I know we always love our significant others, but do you ever go through times when you really love them? Does that make sense? I always love Matt, but I go through these times where I am just so deeply in love with him. And I love it. Too much love? Never.

(side note about this picture. this may be why i love this man so much. i had to rush out because matt had to get to work but we wanted to get coffee and breakfast, so i had no make up on, and one of the first things out of his mouth was “you are so beautiful” and i know he meant it.)

Birthday’s are fun.

Dare I say even marvelous?

When it comes to my own I basically just look at it as another day. Not because I dread getting older, I just don’t think mine is a big deal it just seems like just another day. But when it comes to celebrating others birthdays? Well I just love them!

Especially Matt’s, because let’s be real, I get to benefit from it as well!

We didn’t do a big ole celebration this year. Since last year was his 30th and we went all out with a bar crawl/scavenger hunt, we took it easy this year.

But as fun as crazy nights are, quiet quality time nights are just as good.

The birthday boy got to choose where we went for dinner and I’d be lying if I said I was disappointed with he chose True Food as his birthday dinner choice.

It had been awhile since we had been there and we have never been disappointed with a dining experience there.

This night was no different.

We of course started with birthday cocktails.

I ordered the cucumber-citrus margarita which is a favorite of mine.

For dinner I wanted to try something new, but to be honest, when I know I like something I always have a debate if I should stray from it in fears of not enjoying the new dish I ordered. I usually order the brown rice teriyaki bowl, but the shiitake and  tofu lettuce cups always sounded so good. I actually gushed about my indecision to our server and she offered to order me a half order of the brown rice bowl and then add one lettuce cup on the side. What an amazing solution! I got the best of both worlds.

I will say the lettuce cup was very good, reminded me a lot of PF Changs lettuce wraps, which I love. But I am also so glad that I also got to enjoy the brown rice bowl which I added chicken to instead of my normal tofu (I am trying to cut as much soy out of my diet as I can).

Both dishes were great and again I was so glad I got to try them both.

Matt ordered the grilled steal-head salmon which was very good as well.

We both have been obsessed with salmon lately and this salmon was cooked and seasoned amazingly.

 After our entrees when asked if we wanted dessert we quickly said yes! I exclaimed the birthday boy has to have dessert!

Matt also insisted I order my own dessert instead of sharing his.

Who am I to say no to that?

Matt ordered the lemon tart with strawberry and coconut whipped cream.

As dessert was brought out he got another surprise!

Oh my goodness. That cake. It was so delicious and as much as I appreciated the individual size, I did not want it to end!

Overall, it was a very nice intimate birthday and as mentioned before as fun as a crazy night would have been, I think Matt really enjoyed his relaxing dinner out.

So happy 31st birthday  my love! To many more.

Monday already?

Seems to be the story when I have to work Saturday’s.  I feel like Monday just sneaks  up on me. Good news? I don’t work today. Yay!

So Monday is kind of my Sunday, although since Matt works it kind of stinks because I am home alone all day.

But regardless, I get the day off, am able to get some things done, and at least try to be productive. (try is the key word here)

But Monday’s are still fun because the beautiful Katie reminds us to always be marvelous. So I thought I would share a marvelous moment I had recently.

Of course it’s food related, because let’s be honest, food makes me happy.

Matt and I had a planned sushi date for later in the week when he got paid, but when I went to see my nutritionist and found out I had gained twice in a row (and a significant amount at that) I thought we should move our date up early, celebrate, and also help me push a little more (I have a tendency to “back off” when I see I gain for a consistent amount).

Matt obliged and we headed off to our favorite sushi spot The Sushi Room.

Upon walking in I was actually a bit disappointed because our favorite sushi chef was not working.

Little did we know the amazing time we would have with the new sushi chef.

We started our meal with our per usual starters.

Saki bombs, seaweed salad, edamame and yellow tail sashimi.

The yellow tail had a pepper spice on it that we didn’t get last time, it was… a bit strong, but thankfully since not much was put on I just scraped it off, the yellow tail was amazing. I seriously love yellow tail.

Matt and I went back and forth on how many rolls to order.
Again, little did we know how much we would be eating that night.

One thing I love about this specific restaurant is their willingness to make me custom rolls. And just flat out their customer service.

♥ A word of advice to novice sushi goers, I highly recommend always sitting at the actual sushi bar as opposed to in the restaurant seating area (unless you’re with a group, because it’s kind of hard to talk when you’re all lined up at a bar, but if it’s just you and one other person, the sushi bar is where it’s at). It’s such a better experience and if you have great sushi chef’s like we do, it’s so much more personal, and I swear you get hooked up. ♥

The first roll I had ordered was suppose to be prepared wrapped in cucumber, my alteration was an easy one and instead of avocado I wanted to add asparagus. They said it was no problem.

They then came back to tell me that they were our of cucumber (how this is even possible I don’t know) and asked me how I would like the roll prepared. I suggested soy paper with sesame seeds. I thought that would be a nice switch up since all of our other rolls were nori/rice rolls.

The sushi chef joked about how much trouble he was having making the roll in the soy paper and that he would do his best to make it presentable. Well this roll turned out beautiful. And tasted amazing. After about 2 pieces, Matt was actually the one to point out that the roll had avocado in it and they left out the asparagus. Now, I don’t not like avocado, I love it actually, but I love asparagus in rolls as well and just wanted a little switch up. I actually just made a joke to the sushi chef about it and he offered to make me a new roll. Who am I to say no to a free sushi roll? So I handed over the roll to Matt since I was getting a new one made me for. Win.

This roll came out just as pretty. Just as delicious. They both were amazing. Not gonna lie, happy I got two rolls.

But it didn’t end there.

I seriously think I have a bit of a sushi problem. I love it way too much. (is that even possible?)

And I  honestly don’t know what a visit to this place would be without some kind of surprise at the end.

We got to talking about our horrible experience trying sea urchin when we were in Los Angeles.

They were convinced we were served poor quality fish and it shouldn’t have been as disgusting as an experience as it was.

They then offered us what they thought would be an equally disgusting eat.

Now you would think we would decline, but I am always up for trying anything once.

It was called Nato and I believe it is just fermented soy beans.

They talked it up so much on how gross it was and we decided we would all eat it together.

I don’t think it was even possible to get a decent picture of this. But regardless of the horrible picture and presentation, it wasn’t nearly as bad as they were making it out to be. And not nearly as horrible as the sea urchin experience.

Overall a very marvelous date night and just another reminder why we love this place so much.  It was a perfect way to celebrate.

But really, any excuse for me to eat sushi, I’m ok with.

 I really feel like this weekend flew by, Monday’s sometimes come too soon. Does anyone else feel that way?

This weekend was pretty low key again . Money was a bit tight this paycheck (rent usually does that to us) so our activities were pretty limited.

However, since it is Monday, and it is time to get marvelous (thanks to the beautiful mommy Katie) we’ll talk about some of the fun things that did manage to happen this weekend.

Before I get to the real fun stuff, I wanted to mention just a few of the small things that have been making my days marvelous. Because sometimes it’s the little things that add up.

Breakfasts are nothing new, but I swear the Fruit Bliss dried figs I have been adding to my breakfast wraps are addicting and add such a great taste.

It’s the small things.

Also, when I’m low on fruit and my wraps are a little lacking, it’s amazing what a dip in some blueberry Chobani yogurt can do.

Can make a boring brown wrap a little more fun and tasty.

(and don’t you just love the yogurt mess on my fingers? it’s a  hard life eating in the car)

But ok, let’s get on to the more exciting stuff.

Friday we did manage to have a little fun out.  I had promised Matt a dinner out of his choosing and he decided to cash in on that offer.

And like I’m going to say no to a dinner out. Pssh.

I did however try very hard to convince him to sushi, but he wasn’t having it. I have been craving it like mad lately, but since it was his choice of the restaurant, I had to oblige to what he wanted.

Thankfully he made a pretty good choice.

He chose a local brewery called O.H.S.O. Brewery that we had had a beer at before, but have never had a meal there.

So first, let’s take a look at my awesome company. I swear I am one lucky girl.

One thing I really liked about this place was the atmosphere. That is a biggie to me and Matt when it comes to us deciding if we will go back to a place or not. Our waitress was also super fun and kind of teased me for being so indecisive on what beer I wanted to try. You all know about my indecisiveness. Hello plantain bread pizza.

It was happy hour, so we started with one of their mini appetizers of thai hummus. It was amazing. They drizzled sriracha over it and served it with cucumber and pita bread. The hummus was seriously amazing. I love hummus.

For our main dishes, in looking over the menu, and having sushi on the brain, when I saw the ahi tuna salad I was sold.

Matt decided to go with a chorizo and potato flatbread pizza.

Ok. My salad was to.die.for.

I love how it was deconstructed. The salad was amazing on it’s own and it allowed me to savor the ahi tuna, which was seasoned to perfection. And whatever the peanut sauce was that came on the side. Oh goodness. Also so amazing. I used some of the left over pita to wipe up every last bit. It was that good.

I also stole a few bites of Matt’s pizza (how could I not) and it was really good as well. The chorizo was spicy, but not too spicy. But you really can’t go wrong with pizza.

It was a great little date night and I’m glad we decided to try some place new. It is defiantly a place we will be going too again.

The rest of the weekend was spent just being lazy and lounging, but you know what, when you’re with good company, then really it’s ok.

And really. Look at this face. Pretty good company if you ask me.

Hello and happy Monday my loves.

Let me say my weekend was bor-ing.

Sorry, no real shenanigans to share.

Why you ask?

Well Saturday I had to work (lame) and Sunday Matt had a dodgeball tournament, which left me home alone all day.

I probably could have been productive and cleaned or something. Maybe even baked. But I had no motivation to clean or bake, or being productive in any sense.  So I guess I am the one to blame for the lack of activities.

But even though my weekend was not the most exciting, I still love to find the small things that can make a day marvelous.

For Matt’s birthday I had purchased him tickets to the LA Galaxy vs. Madrid soccer match. He is obsessed with soccer at the moment, so I thought it would be fun for us to go to a match together. Little did I know what a big deal this match actually was. I guess the LA team is the only US team to participate in this league and the fact that they were even playing in Arizona was a huge deal too. I had to work that day, but left early in what I thought would be enough time to get across town to the stadium. We planned ahead and Matt picked up dinner for me to eat in the car.

Yes I ate sushi in the car, and yes I still used chopsticks.

And yes, I made a huge mess. But it was delicious none the less.

So once we were on our way, we were quickly greeted with ridiculous traffic. Not only was it normal rush hour traffic, but the game was adding additional back up. We were not happy about being stuck in it.

It probably took us double the amount of time it should have, but we finally made it. And after waiting in line for an additional half hour at will call to pick up my tickets, and then the fact that we entered the gate of course on the complete opposite side of the stadium, we finally made it to our seats. We had a great time at the game and I am so glad that Matt was able to finally go to a match and it was just an overall great date night for us.

I had to work the next day (Matt was lucky enough to have the day off) and let me tell you I was exhausted. But sometimes it’s the small things that get me through my day.

I have so much to share with you today.

As I mentioned in my last post, I knew I was going to be a bit MIA these last few days because Matt and I were off in Los Angeles visiting two three amazing people.

Our dear friends Greg and Sam just had a beautiful baby boy and we finally were able to go out and visit them and meet the little man himself.

But as much as I would love to swoon over this precious angel, it is Wednesday and all, so I figured since I not only got to spend time with some amazing people, I also got to enjoy some amazing LA food.

So for today’s What I Ate Wednesday, I am going to do What I Ate In Los Angeles.

I know you guys are probably thinking and questioning, did I go safe this visit? Or did I use it as a challenge for myself.
That answer should be pretty obvious.
I always use these situations as a challenge for myself.
However, now I am really trying to not look at them as challenges. Because honestly that gives my ED way more attention than it deserves. The fact is I was going to visit friends and spend time with them. That’s it. I was just living life.
And let me tell you. Living life was pretty delicious this weekend.

LA is a six hour drive from us, so Matt and I got up at the crack of dawn and were on the road by 6am. So breakfast was pre-made pb&j’s that I had prepared the night before. Not photo worthy in the slightest.
We arrived in LA around 1pm and trust me we were hungry! Thankfully Greg and Sam had some grilling foods ready for us!

If you’re like me, one of the first things that you’re probably thinking is “why are the hotdogs cut like that?”. Greg found some crazy thing online stating that if you spirialize your hot dogs before you grill them it helps them cook better and are more crispy and evenly cooked. We took his word for it. I didn’t have one, but Matt seemed to think they were pretty fantastic.  I have a feeling if we ever grill hotdogs now he is going to want to do this. Not gonna lie, they look pretty cool.
I did however have three four of those chicken kabobs. And those were ah-mazing. I don’t know what it is, but grilled pineapple is one of the best things ever.

After lunch we hung out with the little man for awhile, but then quickly got ready for our night plans. One of the main things we had wanted to do while we were in Los Angeles was to do a little brewery tour. You all know Matt and I love our beer and we love visiting different breweries as we travel. The breweries we visited were Monkish Brewing Co., Strand Brewing Co., and Smog City Brewing Co. We had intentions of going to one more, but after multiple beer tastings drinkings, we all got hungry and decided to go have dinner instead.  We went to a near by hot spot called Rock & Brews.

After all the beer I had consumed, it was an under statement to say I needed some food.
I got an in house made veggie burger that was made with eggplant, white and black beans, vegetables and raw oats.
It was inhaled and it was delicious.
And for some reason when I drink, dessert is always a must.
Enter ice cream sundae.
No explanation needed for that one.

The next morning we were all pretty slow to rise, but a baby can quickly change that. After we all had our morning coffee, we decided to head out for breakfast at one of Greg and Sam’s favorite breakfast joints; The Yellow Vase.

I wish I could claim that amazing looking waffle as mine, but it was Matt’s.
(but don’t think that amazing up close bite shot didn’t go straight into my mouth)
I got an omelet stuffed with spinach, mushrooms, asparagus and sun dried tomatoes.
After dousing it with salsa, this thing was demolished. Along with a side whole banana and strawberries.
This girl can eat. No shame.

After breakfast we decided to head down to a local farmers market.
I am so jealous of their farmers markets. So much fresh produce and fruit. I wanted it all.

I really wish we went before breakfast because there were so many free samples, but I was just too stuffed  to eat more. Even though I wanted to. Really bad.
We did end up buying a few goodies. ButterRum Cake (oh my gosh the best cake I have eaten in a long time), High Fiber Whole Grain Carrot Bread, and Whole Wheat Cinnamon Raisin Bread. You guys know me and my carbs. Love them.

We had a small lunch at the house, but around 4pm Sam and I got the frozen yogurt itch. It was National Ice Cream Day, so we decided frozen yogurt was necessary. But let’s be real, we would have gotten it anyways.

My new favorite combination of mint and fudge brownie is hidden under there. Oh, and little swirl of Pecan Pralines. Because I can never make up my mind.

Dinner that night was another shared favorite of ours.
Sushi.
When I travel I do like to try and eat at places I can’t eat at home, but really, who would I be if I turned down sushi.
A crazy person that’s who. So I didn’t.
We went to one of their favorite restaurants, Fusion Sushi.

All of it was delicious, but I think my favorite was the cucumber roll I got. I believe it was filled with crab, salmon and tuna. But it was one of the best cucumber rolls I have ever had. One of those things you wish didn’t end, and get really sad when it’s gone.
But let me tell you the one part of dinner I did not enjoy.
I like to be pretty adventurous with my eats and always say I will try anything once.

I personally don’t like egg yolks, but Sam’s plate was just too pretty not to photograph.
Underneath were amazing home made biscuits and sausage gravy.  I had some of my new carrot bread topped with Trader Joe’s cocoa almond spread and a pear Chobani.
We had an amazing time, but of course wish we could have stayed longer, but life was calling back in Arizona, so back on the road we went!

Those Trader Joe’s chocolate banana’s were eaten at the house, but seriously, these things are amazing. I think I ate half their box of them. Whoops.
The Good Bean chickpeas, Quest bars and Peanut Butter filled Pretzels were great travel snacks and for a quick lunch we stopped at Subway.
So my loves, as you can see I had a weekend full of great eats.
I was one stuffed happy girl.

It doesn’t.
When we got back into town it was around dinner time. I will admit I was a bit over whelmed mentally with the weekend. It was a big push for me. And I’m not going to lie, on the drive home I was planning my “safe” dinner. I knew I was doing it. So what did I do? Fought back. I told Matt how I was feeling and we both came up with the same solution.
We wanted to end the weekend with a bang.

These were the sad faces as we left LA, but we made them happy faces by stopping at one of our favorite local Mexican spots for dinner and stuffing them with margarita’s and chicken burrito’s.

I had an amazing weekend and did not want to go back to the reality of work and life, but I suppose that’s what being an adult is all about.
So loves, that’s all I have for you, but as you can see, my weekend was a pretty amazing one and was full of delicious eats, adorable babies, and amazing friends.

getting back to normal

We’re going to shake things up a bit for this What I Ate Wednesday so get ready.

I know you’re expecting repetitive pictures of my breakfasts like my delicious, yet repetitive and boring protein breakfast wraps.

I am obsessed with blackberries at the moment. I really didn’t even think I liked them as much as I do. But the pint that I recently got, well I’m lucky that these few made it into the wrap, because the rest made it straight into my mouth.

But as mouth-watering as those blackberries are, I have something even more mouth watering to share with you.

I haven’t really talked about my status in my ED recovery on here lately. Basically because nothing new is really happening. I still need to gain. I’m not really gaining. But on a positive note I am doing amazing in terms of the mental aspect. I am way more accepting of the fact that food is food, I no longer feel guilty if I don’t eat 100% healthy, and I let myself enjoy food for what it is.

One thing however that I really need to and want to work on though is my dinners.  And it’s not really the food aspect of my dinners, but I really want to get back to cooking dinners with Matt, not for Matt. We use to cook together all the time, but those of you with eating disordered tendencies know we have to have complete control when it comes to our meals. (and this is why you constantly see us eating different and separate meals than our significant others or family)

So I actually thought of a great way for me to actually work on this (since half the time Matt drops the ball and shows no enthusiasm for pushing me to do this), I decided I would have my nutritionist give me a recipe once a week that I had to make, and I would then have to send her a picture to prove that I actually made it. She of course loved this idea.

The first dish she picked out for me was Chicken and Broccoli Casserole. And lucky for me Janetha had a great recipe just waiting for me to try.

So loves, the big surprise for you, I have a dinner recipe to share.

Chicken Broccoli Casserole

(Adapted from this recipe)

Ingredients:

  • 1 lb chicken breasts, diced into 1” cubes
  • 1 medium onion (I used white)
  • 2.5 cups chopped broccoli
  • 1.5 cups (cooked) brown rice
  • 2- 10 oz can cream of chicken soup
  • 1 cup 0% plain greek yogurt (I used Fage)
  • 3/4 shredded cheese (I used monterey jack & mild cheddar)
  • salt, pepper, &  garlic powder (to taste)

Directions:

  1. Cook rice.
  2. Steam broccoli.
  3. In a saute pan cook chicken and onion until brown.
  4. Combine cooked chicken, onions, broccoli, rice and remaining ingredients in mixing bowl. mix well.
  5. Pour mixture into casserole dish. sprinkle with cheese.
  6. Bake at 350 degrees, uncovered, until warmed through, about 15-20 minutes.

Or if you’re like me and have to prep meals the night before, leave in the oven for about 25-30 minutes or until warm and bubbly.

Seriously guys, this was amazing.

For some reason I had been avoiding cheese (I’m sure some silly ED rule), but I will tell you I enjoyed every last bite of this dish guilt free.

It was that good.

This dinner really gave me a realization of how silly my ED rules are, because in all honesty this is a pretty healthy dish. But since I still have the thought process of “good” foods, “bad” foods, I wasn’t allowing myself to eat dishes like this.

So I’m hoping in continuing with the challenge on making dishes like these for dinner, and actually cooking them with Matt and giving up some of that control, it can become my normal again.

Because that’s what normal is, eating the same meals as your loved ones, sharing the cooking process, and not always having control over what’s for dinner.

That is normal.

marvelous weekend scenes [giveaway winner]

Monday Funday!

Well, not if you have to go back to work today. Which I don’t.

But even if you do, there is always positives in our lives.

That’s why I love celebrating Marvelous In My Monday with the beautiful Katie. It reminds me to stay positive, not focus on the negatives and to live life to it’s fullest.

So let’s recap some positive moments from the weekend. There were a few.

Starting with my Saturday breakfast.

Last weekend our cupboards were pretty bare, so I seriously think I had pb&j for breakfast and lunch 2 days in a row.

But with as many nut butters and jams that I have, this actually wasn’t as boring as it sounds.

Or not so classic Rudi’s english muffin topped with homemade banana coconut butter, more banana and blueberries.

So even though this may look simple and a bit plain, with as much as I love nut butter and jam, this meal to me was not boring and was quite satisfying.

But this weekend I was craving some change and something different. So I made a special trip to the store for one ingredient to satisfy that craving.

Plantains.

Yes, surprise surprise, I missed my protein plantain pizza.

And one of the best toppings ever was my home made banana almond butter. So good.

I stick this back in the oven for a few more minutes after I add the toppings and oh my the melty banana goodness that results is amazing.

But there were more fun happenings this weekend other then my breakfast.

Matt’s parents came down to visit to celebrate Matt’s birthday with him since they didn’t get to see him on his actual birthday.

We met at one of our usual Mexican Restaurants for lunch.

Let’s just say lots of good food happened. And of course Matt’s dad told the waiter it was his birthday, so a sombrero and sopapillas also happened. The staff sang a little song and as soon as they left Matt quickly proclaimed “get this hat off of me it smells funny”. It was a fun afternoon and I love any time we get to spend with Matt’s parents.

Other marvelous scenes from the weekend were drinks with friends,easily amused moments and the discovery of a little liquor store with the most amazing beer selection ever.

Needless to say, I had a pretty marvelous weekend, and the fact that I have today off of work, well that makes my Monday pretty marvelous as well.
