I know it’s been awhile and I apologize, but this girl has been busy. Well really by time I get home from work I am exhausted and sometimes blogging isn’t my first thought. I know. Bad blogger.

But I did want to pop in because I have some deliciousness to share with you.

None that I can claim my own, but a wonderful night out with Matt, that was long overdue, and that was amazing.

We had bought a Groupon for The Sushi Room and actually went out and redeemed it.

I don’t know what happened, but somehow the Groupon didn’t get redeemed and it said it was still available, even though we definitely got the discount the first time we went.  Well who am I to argue with more sushi, so we went to use it again.

This place has really good sushi, but what really made this visit great was after only one previous visit (date night #1), the sushi chef remembered us.  I love that.  He also gave us a little free bowl of a tuna mixture he had made. I love that too.

I of course had to start off with a seaweed salad. I am addicted to that stuff. And Matt always says you can’t go out for sushi without getting edamame.  Who am I to argue. it’s good stuff.

Now if you are an avid AccidentlyDelish reader, you know Matt and I love our sushi and pretty much eat our weight in it. No shame.

Matt ordered his typical soft crab roll.  I am just not a fan of the soft crab, so that one he gets all to himself.

Since the sushi chef is so amazing, there was a roll I wanted to try, but tweak a bit.  Ok, so I basically made up my own roll, but he was totally down with it and we created a wonderful roll together.

It was a tuna and asparagus roll topped with fresh salmon and a mango salsa.

Ok seriously. This roll was amazing. So fresh. The mango salsa was to die for.

Funny side note, as we were at the restaurant I had gotten on my Groupon app to see if there was any fro-yo Groupons going on. (I can’t help it, whenever we go out for dinner I always crave fro-yo for dessert) Sadly no fro-yo deals, but guess what was my first recommendation?

Oh yes, The Sushi Room. So we totally bought another Groupon for the place we were still at. I told you we’re obsessed.

Well loves, it’s that time again.

Time where we moan and groan that our weekends are over and it’s back to the daily grind of life. We call this Monday.

But thankfully the beautiful Katie gives us the opportunity to find beauty in this day with Marvelous In My Monday.

I love having my weekends off, but I actually find that they are so uneventful.

Not having money will do that to you.

I also have the laziest fiance ever who finds nothing wrong with sitting on the coach all day and watching TV.  Trust me, I like to relax just as much as the next person, but sitting around for that long drives me a little crazy.  But with this insane Arizona heat (hello 110 degree days) and not having any finances, it kind of hinders any extracurricular activities and daily outings.

We make it though and find some fun things to do.

Matt is on a soccer kick and really wanted to watch the USA vs Jamaica match on Friday, and since soccer isn’t huge out here and we don’t have cable we had to find somewhere to go watch it.  Knowing us, we can not go to a bar without ordering at least one drink, and really, it’s not too polite to take up a bar seat and not give the bartender some business. Solution? We cashed in our coin jar! Woo-hoo $25!

My new version of my Protein Plantain Bread.

It started as a blank canvas.

Ingredients:

- 1 ripe medium plantain

- 1/2 scoop vanilla protein powder

- 1 tbsp coconut flour

- 1/2 cup liquid egg whites

- 1 tsp vanilla nut extract

- 5-7 drops liquid vanilla NuNaturals Stevia

- 1/2 tbsp cinnamon

Directions:

- Blend all ingredients

- Bake in pre-heated oven at 350 degrees for 20-25 minutes

Plantain bread may have been one of the most amazing things I have discovered lately. Plantains definitely went from something I never bought, to something I will be buying a lot of in the near future. Hopefully I don’t become as addicted as I am to kabotcha squash.

Matt and I are really working on having more family meals. We got so use to eating separate meals and not cooking together anymore, and we both really want to change that. So we scoured the inter-webs for dinner ideas, both chose a few and decided to take turns cooking meals.

I went first and chose a Sweet Potato Lentil Enchiladas.

I based it off of this recipe, but instead of cooking them as enchiladas, I just cooked up the filling, pre-cooked some rice, and figured we would just make what we were feeling that night.

Matt made his into corn tortilla tostadas and I made quesadilla’s out of mine.

These turned out absolutely amazing. I used Trader Joe’s enchilada sauce, which seriously that stuff is so amazing on it’s own, that I knew it would make this dish.  But the combination of the sweet potato, lentils and veggies was so so good.

As much as I would have loved dessert, or to even be social afterwards, I was about at my limits. This girl wanted to go home, put on comfy clothes and call it a night. Matt was a sport and obliged.

So the rest of the night I spent on the couch, then quickly bed. I’m such a party animal I know.

But as I mentioned in my previous post, Memorial Day isn’t for us to celebrate having an extra day off, it’s a day to remember the brave ones that gave their lives for us.

I truly believe this holiday is one of the most overlooked and under appreciated, so I really want to take a moment for us all to stop and remember that so many lives were lost for our freedom. All the small things we take for granted others fought for and died for so we could have. So remember; they died for us, so we need to live for them.

I’m not going to lie though, the thought of having a 4-day weekend (yes mine was 4 days because I get Fridays off!!) got me a bit excited. I was just happy I was going to be able to relax. Little did I know there was going to be a little snag in my plans.

First there was the fact that I forgot Matt was attending Phoenix Comicon  (yes i know i’m dating a nerd, even though he went for work, i’m sure he would have went on his own if he had the opportunity) However, I am a bit of a Sci-Fi nerd myself and was a bit jealous he got to see this guy. I mean seriously. That’s one sexy captain.

Anywho, since Matt was gone all day I was incredibly bored, but I managed to run a few errands to keep me occupied.

My first stop was Market on the Move.

It’s this awesome program where basically you go and donate $10 and you get to load up on a lot of fresh produce that they have that day. Other than the long lines (and it being 100 degrees) it was a pretty cool concept.

I actually probably had double this amount, but my main reason for going was actually for a co-worker. She was wanting tomatoes for canning, so I loaded up on tomatoes for her and of course the acorn squash for me! I see a lot of mug cakes in squash in my future!

After that, I relaxed a bit, had some lunch and decided to do a little grocery shopping. Am I the only only who seriously loves to grocery shop? Even if I only need a few items, I love just walking around.

The next snag in my weekend plans was me getting sick. I never get sick. Seriously, Matt got the flu, me nothing. About half my classmates and instructors got the flu, nope I was still good. And then randomly when no one else is sick, I get sick. Matt and I had planned for a Sunday Funday and then dinner on Memorial Day, so it really bummed me out.

Don’t worry guys. Day Quill works miracles and both happened.

We actually ended up just walking downtown and Matt remembered of a pretty cool pub he had went to for a friends bachelor party. We were actually the only ones in the bar and got pretty chatty with the bartender. Girl hooked us up with free shots! (not sure I needed those shots, but hey they were free) Which led to an impromptu photo shoot of Matt and I.

It started off with date night on Friday!

We had gotten a Groupon for Studio Movie Grill forever ago (it actually had expired, but thankfully you can at least get the face value for them!) which is a movie theater where you eat dinner in it while you watch the movie. Pretty cool concept.

Matt really wanted to see Star Trek (in 3D as you can see by his silly glasses), and even though I’m not a huge Star Trek fan, I liked the last one they came out with, so I thought why not.

It was way too dark (and probably would have been incredibly rude) to take pictures of our meals, but I ordered the Ginger Mint Salad with added grilled chicken and Matt ordered the Street Tacos.

Both were amazing! The movie ended up being really good as well. Lovely date night.

On Saturday Matt and I really wanted to take advantage of the gorgeous weather we’re having, so we decided to ride our bikes for a relaxing breakfast together and a trip to the farmers market!

I was beyond excited! It has been so long since I have been to (and able to go) the farmer’s market!

The menu looked promising and in walking in, the restaurant had a nice vibe to it.

We decided to of course start our morning off with appropriate breakfast drinks.

Mimosa’s and beer!

It should have been a sign from the beginning, my mimosa was way more orange juice than champagne and not a very good orange juice at that.

No pictures of food because:

1. Matt got biscuits and gravy and even though he said they were good, biscuits and gravy just aren’t very photogenic.

2. My meal was a hot mess from the very beginning.

I ordered a create your own omelet with a side of fruit.

(Just for reference I made mine with egg whites, sun dried tomatoes, red bell peppers, onions, tomatoes, and jalapenos and a side of salsa)

Round 1: Plate comes out, no fruit, covered in cheese, what appeared to be regular eggs, and I stopped paying attention after that. I immediately told the food runner that my order was incorrect and he said he would take it back and talk to our server.

Server comes back. Apologizes. Said the kitchen made a mistake. Would bring out new order.

Since I was hungry and Matt was insisting on not eating until I had my meal, I asked if I could have my side of fruit.

The pineapple was at least good.

Round Two: Plate comes out. Salsa now gone, and not that I’m a huge food presentation snob (ok maybe a little) but my omelet looked like it was just thrown on the side of a plate. Even Matt made a comment about it. But regardless the omelet had a mish mosh of veggies in it, but I right away noticed no sun dried tomatoes or jalapenos (the two things I really wanted).

I asked for our server again. I told her I didn’t want a new omelet and that I would eat this one, but clearly this was wrong again. She agreed and said she would have my meal taken off the bill. She then offered to bring me a side of sun dried tomatoes which I thought was cute.

Here’s the kicker. My sun dried tomatoes get brought out (which turns out I guess to be by the manager) and he said, I hear you were wanting some sun dried tomatoes? Uh, yes because that’s what I ordered. Thanks. He then says he is going to buy me another mimosa for the inconvenience. Ok great, but um, I don’t want another mimosa, the first one sucked and why can you not just pay for my meal that you messed up twice? Seriously. Wtf.

Just didn’t make sense to me. Such a cop-out.  Safe to say we won’t be returning there.

(ps just a reminder for you guys, we still left our server a $10 tip regardless of the horrible experience, it wasn’t her fault. being a server, I have gotten so many bad tips when the kitchen or management are the ones providing poor customer service.)

So after the sub-par breakfast experience, we headed off to the farmers market.

We had intentions of going to get some fresh produce for dinners, but kind of decided we really didn’t need anything, and just were going to go to walk around.

Since I am getting up so early now, I am really lacking energy. I actually re-started my bad habit of energy drinks, but honestly, they work for me and I was desperate. So when I saw these Green Tara Spirulina Energy Bites, I ran over to try one. They were actually really tasty, the guy also had these spirulina “crumblies” that you could sprinkle onto/into food.  He gave us a sample on cucumber, and those were surprisingly really tasty as well.  Matt and I just figured the bites would be more convenient for us, and I kind of just want to see if they work. I’d like to get energy the most natural way as possible.

Matt also sampled these noodles and he wanted to get a few for lunches for work. The lady was local and just started her own business so we like to support local businesses. The cool thing about these were the containers are re-useable! I thought that was a neat idea.

So in the end we got some things we didn’t necessarily need, but o’well, we had a good time!

I will warn you right off the bat, this post may be a little bi-polar.

I had an amazing experience that I want to share, but I also want to be completely honest and not make life seem all rainbows and butterflies.

However, about 90% of my life is pretty much rainbows and butterflies lately, but we all have our ups and downs, and with every positive, sometimes there is a negative. It’s just how we handle that negative, do we dwell on it? Or do we move on?

And lately in my case, I have learned how to move on, find the positives, and not dwell on the past.

So if you’ve been reading lately, you know I have had a few amazing steps in my recovery lately.

Multiple frozen yogurt trips.

My sushi date out with friends.

My celebration dinner with Matt.

I seriously feel like I am making huge strides in becoming normal again, eating normal again, losing the obsessiveness I had with food. I thought I figured out this is just what I need to do right now to get healthy. And yes, for me that means gaining weight. But I figured out I needed to stop looking at is as gaining weight, but getting healthy, getting my life back. It was an amazing freeing feeling and I was on cloud 9.

Then I saw how much I gained, and yes a little bit of me freaked out. Well a little bit of my ED freaked out. I wouldn’t say I pulled back per say, but I was a bit more anxious. One thing I am very proud of, is I never restrict anymore. So after my trip to my nutritionist, there was a part of me that was automatically planning my “safe” meal. When I have thoughts like these the one thing I try to do is challenge it. If I have an ED thought, I will counteract it. And then some.

So what did I do?

I called Matt up and said meet me out for a drink.

A nice cold beer is what I needed to calm my nerves. This not only challenged my eating disorder with not going home to “be safe”, but also oh my gosh how many calories were in that beer? Who cares. I was with Matt, I had comfort, half the anxiety was gone.

But with it still being early, I still had time to choose to go home and make dinner.

And I almost did.

Then I brought up to Matt eating dinner out. Half the battle was won. But when we started talking about restaurant options, the ED started to sneak back in. I will be honest in saying I was trying to think of the safest restaurant I could. We both couldn’t agree on a place and since we were in a shopping area, I suggested just walking around to see if we could find a place that sounded good to both of us. We turned onto a street we both had never been down and there were two restaurants. Sauce (pizza) and Zoe’s Kitchen. (semi-healthy sandwiches).

Automatically out of my mouth came, “oh, let’s try Zoe’s Kitchen”.

I then thought about why I was choosing that restaurant, looked at Matt and said (pardon my french) fuck it, let’s get pizza.

So that’s what we did.

Guys, it has been a long time since I have had pizza out.

You want to talk about fear food, this cheesy masterpiece was one of them.

I am happy though to report that I ate 2/3 of it. All by myself.

I left comfortably full, satisfied, and back on cloud 9. I knew I had beat ED.

And if that wasn’t enough, we had plans to meet a friend who was in town for more drinks.

Yup. Beer. Pizza. More beer.

But with these rainbows came some rain.

Working at an animal facility, there is a huge scale available to weigh the dogs. I take advantage of that, because a long time ago I threw away my scale at home. So when I stepped on that scale, saw the number, I freaked. I know better than to weigh myself. It’s on the top of the my nutritionists’ list of things not to do. But sometimes I go against my better judgement and I do it anyways. I don’t know, it’s really just self-sabotage, but this is just a part of me that isn’t recovered yet. But again, I am getting really good at fighting my ED thoughts. I walked away thinking “Debbie, this is a good thing. This is getting healthy. This is what you need to do.” Because let’s be honest, if I want to be a successful vet tech, I can’t weigh what I weigh. And what, did I go to school just to not be able to perform at my job? No. I didn’t.

So even though I battled my disordered thoughts. Got through them. Talked sense into myself, I did want to be honest that I still do have these thoughts. And even though I like to document the achievements and high moments, there are still low moments. But again it’s how we fight and counteract them.

I teased you guys earlier in my WIAW post about this tasty treat, and lemme tell you, it was tasty.

We were walking back to the car from the bar and walked past Sparky’s Old Town Creamery, which is kind of like a Cold Stone, but better.

After sampling probably every flavor, we decided to get Chocolate Fudge Brownie. You also get one free add in and I decided on chocolate chips. Seriously, something about chocolate chips in my ice cream I am obsessed with. Matt insisted we get it in a chocolate covered cone, we were informed that the cone was actually a topper because the ice cream doesn’t fit in it. Works for me!

This was so good. And so worth it.

Overall though I will say I think I have accepted what I need to do.

I have seen the positives of challenging my ED and the negatives of falling victim to the thoughts.

So loves, yes I still have my challenges, but I have decided to fight them, battle ED, and I will win.

marvelous new beginnings

I can’t believe it’s already Monday, my weekend just seemed to have flew by. I am also such a mix of emotions right now. I actually just sent an e-mail to my potential externship site to set up a finalized schedule with them. I am so nervous about actually starting to work, but also so excited to be actually starting to work! Funny how one experience can give you multiple emotions. The clinic I choose I think will offer me a lot though in terms of a learning experience and exposing me to a wide range of client and animal care experiences. The doctor was very honest in saying some of their clients are somewhat “difficult”, this being because they kind of cater to the breeding/show dog community, so the owners can be a bit “demanding” if you will.

But the doctor along with the staff seemed really laid back and easy to get along with, so I think that will balance out the needy/challenging clients. Another thing I’m worried about? My schedule will be 7am-6pm. Oh yes, I have 11 hour days in my future. And considering I am a bit OCD when it comes to schedule, this scares me. But in the big picture I think this will be good for me. Because let’s be honest, my fears are: 1. I won’t have time to exercise (eating disordered fear that needs to be addressed) 2. I won’t be able to plan my meals, I may have to eat what they order in (eating disordered fear that needs to be challenged) 3. I won’t know what time I will be home and I will be exhausted (this fear is legit).

So I actually think this schedule will be good for me in the long run for my recovery. I will not get to work out everyday (which my nutritionist has been begging me not to do for some time now), I will be forced to eat uncomfortable foods (foods that are normal to eat and I shouldn’t have a problem with anyways). It will force me to face issues I have been hiding from. So, I’m scared, yes, but ready for the challenge. My end goal is to get better and not have eating disordered thoughts, so let’s go big or go home!

My weekend was full of fun times. I knew it would be my last Friday off for awhile so Matt and I took advantage of it. The weather here has been absolutely gorgeous, so I told him day drinking was in order. We even made a lunch date and went to a local taco stand  that he raved about.

I had only heard of this wonderful contraption and it was my first time using a flavor machine.

I chose Cherry Vanilla Coke Zero.

It was pretty tasty! And fun!

I am sorry to say though that the burrito I ordered was meh. Nothing special.

Thank goodness we had started with this.

The guacamole and salsa were amazing! This pretty much saved my burrito. I smothered that bad boy with the guacamole.

I like guacamole more than a normal person probably should.

Sunday was pretty fun as well. While all you crazy kids were out celebrating Cinco de Mayo, I was stuck at work. Thankfully next weekend will be my last weekend (there is no way I’m working 11 hour days and working the weekend). I did  however sneak away on my break and met Matt  at a local brewery for a quick drink.

And yes I know it was Cinco de Mayo and maybe I should have gotten a margarita, or maybe a Corona in tribute, but this beer snob doesn’t roll like that. I got an amazing IPA that was way better than any margarita.

I know you’re probably thinking, you drank on your break?? Ok truth. I probably only drank 1/3 of that beer and left the rest for Matt. He happily obliged. Like that kid would ever turn beer down.

Other than that my weekend has been pretty quiet. But there’s always a calm before the storm right?
