I recently shared with you Matt’s 30th birthday celebrations of our amazingly fun bar crawl.

The bar crawl was an amazing time and we had a great time celebrating with our friends, but I must admit I think my favorite part about celebrating our birthday’s is our alone date nights.

We typically always plan a dinner with just the two of us out, and this year was no different.

Another not so secret fact about us is we love our sushi. So when Matt said he wanted to go to one of our favorite sushi restaurants, who was I to decline him of his birthday wish.

We have become quite regulars at the Sushi Room and upon entering was quickly greeted from across the restaurant from the sushi chef.

We took our typical seats at the sushi bar and looked over the menu. Matt and I had actually talked about being a bit frugal at dinner, simply for the fact that we are both really low on funds right now. But as soon as we got there I quickly just looked at him and said “eff it! It’s your birthday!” So we decided to go all out. I mean, you only turn 30 once right?

So it started with appetizers of a seaweed salad for me and edamame for him.

Then the sushi feast began.

Like I said, when it comes to sushi with Matt and I we go all out. And it’s almost kind of embarrassing how much we order. (Our neighbor at the sushi bar actually made a comment about how much we ordered…then the fact that we ate it all. But I have no shame when it comes to my sushi eating capabilities. I’m actually quite proud.)

If you think I am over exaggerating about how much we order, let me tell you what we ordered: edamame (matt) and a seaweed salad (me), yellow tail sashimi, and 5 rolls. And we ate every.last.bite. Again, no shame.

There were a few things in our meal that deserve a spot light:

I believe this roll was called Da Bomb and it was a whole lot of spiciness. It was one Matt ordered. But after about the 10th “oh my gosh” that came out of his mouth, I finally caved and stole a piece. Oh my gosh. It was amazing.

I ordered the vegetarian roll, and even though it was just a simple roll, it was seriously amazing.  It had a variety of pickled vegetables in it and was just a really nice fresh roll.

And if we didn’t gorge ourselves enough with what we ordered, as we were sitting finishing our drinks we were presented with this fried wonder.

I actually am still not completely sure what this was. I’m pretty sure the sushi chef said it was fried salmon skin. I’m not sure what was on top of it, but what I do know is whatever it was, combined with all the amazing sauces, it was delicious. And even though we were completely stuffed, we still managed to eat it. And I enjoyed every last bit of it.

But the best part of the night?

Just spending time and celebrating with the man I love. The man who every day I am incredibly blessed to call mine and to have him love me in return.  That was the best part of the night.

And I’m ok with that.

If you had a long weekend, I hope you enjoyed it! I had to work Friday and it got kind of stressful at the end of the day (as it usually happens)  because we had an emergency hit by car come in.  Thankfully the dog seemed to be ok, but it always causes a little chaos at the end of the day, because then we are scrambling to get things done.

Some co-workers and I had made plans to grab drinks after work, which it turned out to be a perfect day for it.

Stressful day =need for blowing some steam.

It was my first time out with my co-workers and Matt ended up joining as well, but I had an awesome time with them. Kind of an affirmation that I made the right decision in taking the job, because I really do like the people I work with. And I personally think that is one of the most important factors in a job.

So since it’s Monday, and even though I have to work today, it is the time that we find the Marvelous in our days and lives.

Words can’t even describe how much I love this kid and I am so happy to be able to celebrate him getting old  his birthday.

I really wanted to give Matt a few of his birthday presents before his actual birthday, and like Matt was going to say no to gifts.

I had one of his old co-workers do a drawing of him. It turned out so much better than I could ever imagine. I told him that Matt was big on dodge ball, bow ties, and of course beer. He took it above and beyond and seriously, the similarity is a bit eerie.

So of course I got him some bow ties as well. This is why I really wanted to give him his gifts early because I wanted him to be able to wear one out on Saturday. Oh and that cheese grater? Inside joke between us. Every time I tell him I got him something, whether it be me just bringing him something or if I bring something home for him, he always says “is it a cheese grater?“, so for his birthday I of course had to actually get him one. After he opened it he had told me he hoped I had done that. We think too much a like sometimes.

For his birthday activities we had planned a bar crawl on Saturday night and it seriously was such a fun night. We created a little picture scavenger hunt for the night and we weren’t quite sure if people would actually participate, but everyone loved it and really had a blast with it. Matt made a website where people could post their pictures (although most of us forgot about it) but some good ones made it to Facebook and Instragram as well.

It was seriously such a fun night  (I’m pretty sure Matt wins for amount of photo bombs), and it was so great to have everyone together. I drank probably a bit too much, but it was his birthday, I had fun, I was with friends, and thankfully I didn’t wake up feeling too horrible. And that’s what Sunday’s are for right? To be lazy, do nothing, recover.

We had plans to go out for dinner tonight for his true birthday, but I forgot I had to work today, so we may post pone. But don’t you worry, you will get a re-cap when it does happen, because let’s be real, when Matt and I go out to celebrate, we eat our little hearts out.

Today is just automatically marvelous because the beautiful host Katie finally welcomed Baby G Baby Rocco into the world! I have been waiting anxiously for her to “pop” and was so happy to see she finally had her baby boy.  I am now so excited to see the updates on him! So congrats Katie and I know Rocco will have so much love in his life and is truly one lucky little boy.

But let’s look at some marvelous scenes from my weekend.

I survived my first “real” week of work.  Not much has really changed other than the fact that I now get paid, but I do feel like the expectations are higher and I really want to prove myself.  Everyday I swear I am reminded why I chose this field.  Since my clinic works with a lot with breeders we do a lot of c-section deliveries.  The feeling of bringing little lives into the world never gets old.

Another perk with my job is we have some amazing clients who know the way to tech’s hearts. Typically as thank you’s we get Starbucks gift cards (because we are connected to a Starbucks and a lot of our clients know we’re addicted) or with food.

We had performed a pretty serious surgery on him after he was misdiagnosed by his previous vet and the owner was incredibly thankful, so thankful she brought us the most evil delicious cheesecake ever.

It was the end of the day and we literally were just waiting for this little guy’s mom to pick him up, so we were all pretty anxious to go home, but I swear as soon as we saw the cheesecake, time didn’t matter and we all stayed to eat some. Yeah, 5 of us girls basically demolished at least half of this.  So just a hint, if you ever want to say thank you to your vet staff (which I think you should) food is always appreciated.

Saturday I decided to do a pamper Debbie day.

I went and got my nails filled and well while I was there I might as well get a pedicure too right? That’s what I thought.

I debated forever on if I should paint the tips on my nails or keep them plain. I am so indecisive when it comes to making any decision it seems. I finally just decided to go for it (after tons of Instagram support and opinions). I love them and am so glad I decided to go for it.

Well loves other than that the weekend was pretty low key, which I am ok with.  I love actually being able to relax and not have to rush around to get my errands done.  I will more than likely also have Monday’s off, so I get to enjoy a wonderful 3-day weekend.

I think I can get use to this.

I have a lot to share with you, but I will warn you it is not all food related. Actually most of it is not food related, but just some of the happenings around here.

As I mentioned my grandma had recently passed away.  As much as I did not want to, I took my mother’s offer of flying me out there for the funeral.  The reason I did not want to take her up on this, was again as briefly mentioned, me and my parents do not have the best of relationships, especially when it comes to money.  My mother does not let me forget when she gives me money or does something for me.  But I really wanted to say goodbye to my grandma properly and have that closure.  And even though it was the longest 2-day visit, I really do think it was worth it and I am so glad I got to say good bye to my grandma and see her one more time.

My flight was at 7am, meaning a 4:30am wake up call, so bright and early Matt and I headed to the airport. I always hate leaving him.

Oh funny story. The guy in front of me ordered an iced chai tea, they gave him a hot one instead.  So of course I asked if they were just going to throw it away, the barista actually offered me the whole coffee, which I declined, but not before I poured some into my Americano. Oh the perks of being so random and forward it kills me sometimes. But it made my Americano much better and much creamier!

When I arrived in Chicago, my friend Natalie picked me up from the airport. Since I haven’t seen her in awhile and as a little thank you for picking me up (and the fact I was really anxious/nervous about seeing my parents and grandma) we stopped for lunch and a drink.  I of course sent Matt a picture to make him jealous. (he was stuck at work and all)

It was so great to catch up with her. And enjoy a good beer of course.

But I had to face reality and go to meet my parents at the funeral home. Well regardless of our past, I had a decent visit, had some good conversations with my parents in the short amount of time we had and the highlight of my trip, I got to see my niece!!

Sometimes tragedy brings us together and I am so glad that I got to go back, say goodbye to my grandma, and spend some time with my family.

Overall a good visit. However I am completely exhausted and don’t know when, if ever, I will catch up on sleep.

It definitely wasn’t the next day. Oh no. It was graduation day!

I contemplated not going to the ceremony because I was seriously a zombie walking that day.  I had a celebratory lunch with Matt’s parents and talked with them about possibly not going.  They talked sense into me and told me that I should go and I would more than likely regret it later if I didn’t.

Well let me tell you, they were right.  In looking at the program (as I was sitting waiting to get my diploma) I noticed something. I was valedictorian of my class!  I didn’t even know! I even got to go up on stage and receive a plaque from the school’s president. Kind of cool. On top of that I also made the school’s academic excellence list and was inducted into their honor society.  So needless to say, I am glad I went.  And it was good to see some of my classmates as well!

Of course the ceremony was long, and we didn’t get home to late, but the next day being Saturday I would get to at least sleep in right?

Wrong.

I had to work at 7am. But it was at least an easy day and I got great news.

My externship was technically over on Tuesday and today they offered me a job!

So I am officially a paid employee now! I am so excited.

So instead of coming home, maybe taking a nap, this is how I spent the rest of my afternoon.

I know it’s been awhile and I apologize, but this girl has been busy. Well really by time I get home from work I am exhausted and sometimes blogging isn’t my first thought. I know. Bad blogger.

But I did want to pop in because I have some deliciousness to share with you.

None that I can claim my own, but a wonderful night out with Matt, that was long overdue, and that was amazing.

We had bought a Groupon for The Sushi Room and actually went out and redeemed it.

I don’t know what happened, but somehow the Groupon didn’t get redeemed and it said it was still available, even though we definitely got the discount the first time we went.  Well who am I to argue with more sushi, so we went to use it again.

This place has really good sushi, but what really made this visit great was after only one previous visit (date night #1), the sushi chef remembered us.  I love that.  He also gave us a little free bowl of a tuna mixture he had made. I love that too.

I of course had to start off with a seaweed salad. I am addicted to that stuff. And Matt always says you can’t go out for sushi without getting edamame.  Who am I to argue. it’s good stuff.

Since the sushi chef is so amazing, there was a roll I wanted to try, but tweak a bit.  Ok, so I basically made up my own roll, but he was totally down with it and we created a wonderful roll together.

Oh yes, The Sushi Room. So we totally bought another Groupon for the place we were still at. I told you we’re obsessed.

Time where we moan and groan that our weekends are over and it’s back to the daily grind of life. We call this Monday.

But thankfully the beautiful Katie gives us the opportunity to find beauty in this day with Marvelous In My Monday.

I love having my weekends off, but I actually find that they are so uneventful.

Not having money will do that to you.

I also have the laziest fiance ever who finds nothing wrong with sitting on the coach all day and watching TV.  Trust me, I like to relax just as much as the next person, but sitting around for that long drives me a little crazy.  But with this insane Arizona heat (hello 110 degree days) and not having any finances, it kind of hinders any extracurricular activities and daily outings.

We make it though and find some fun things to do.

Matt is on a soccer kick and really wanted to watch the USA vs Jamaica match on Friday, and since soccer isn’t huge out here and we don’t have cable we had to find somewhere to go watch it.  Knowing us, we can not go to a bar without ordering at least one drink, and really, it’s not too polite to take up a bar seat and not give the bartender some business. Solution? We cashed in our coin jar! Woo-hoo $25!

My new version of my Protein Plantain Bread.

It started as a blank canvas.

Ingredients:

– 1 ripe medium plantain

– 1/2 scoop vanilla protein powder

– 1 tbsp coconut flour

– 1/2 cup liquid egg whites

– 1 tsp vanilla nut extract

– 5-7 drops liquid vanilla NuNaturals Stevia

– 1/2 tbsp cinnamon

Directions:

– Blend all ingredients

– Bake in pre-heated oven at 350 degrees for 20-25 minutes

– Become incredibly indecisive on which toppings to use

Plantain bread may have been one of the most amazing things I have discovered lately. Plantains definitely went from something I never bought, to something I will be buying a lot of in the near future. Hopefully I don’t become as addicted as I am to kabotcha squash.

But on to other new creations.

Matt and I are really working on having more family meals. We got so use to eating separate meals and not cooking together anymore, and we both really want to change that. So we scoured the inter-webs for dinner ideas, both chose a few and decided to take turns cooking meals.

I went first and chose a Sweet Potato Lentil Enchiladas.

I based it off of this recipe, but instead of cooking them as enchiladas, I just cooked up the filling, pre-cooked some rice, and figured we would just make what we were feeling that night.

Matt made his into corn tortilla tostadas and I made quesadilla’s out of mine.

These turned out absolutely amazing. I used Trader Joe’s enchilada sauce, which seriously that stuff is so amazing on it’s own, that I knew it would make this dish.  But the combination of the sweet potato, lentils and veggies was so so good.

I receive coupons for Fox Restaurants (owner of our favorite True Foods Kitchen) and they usually send out a discount for holiday’s that typically people wouldn’t go out for.  Matt and I like to take advantage of them and as soon as I told him I had gotten one he immediately  (and enthusiastically) requested we go to Blanco’s Tacos and Tequilla.

I’m pretty sure his plate was clean before I even finished half my burrito. So I can only assume that they were good.

As much as I would have loved dessert, or to even be social afterwards, I was about at my limits. This girl wanted to go home, put on comfy clothes and call it a night. Matt was a sport and obliged.

So the rest of the night I spent on the couch, then quickly bed. I’m such a party animal I know.

But as I mentioned in my previous post, Memorial Day isn’t for us to celebrate having an extra day off, it’s a day to remember the brave ones that gave their lives for us.
