red velvet plantain bread

We all like to look at pretty food. I know I do. I may not be the best food photographer, but I do try to at least put some effort into making my meals look presentable.

Especially when What I Ate Wednesday rolls around. There are so many amazing eats being show cased and I always feel the pressure to step up my meal game.

But I made a confession on Instagram recently about how not so glamorous my meals are.

Especially when they are eaten out of tupperware in a car.

♥ ♥ ♥

7

♥ ♥ ♥

I also eat over ripe banana’s.

This was a Thomas Pumpkin English Muffin topped with a mix match of everything I could think of.

One half topped with Plant Fusion protein frosting mixed with CoCo Cardio. The other half topped with half peanut butter and half of my red velvet hummus.

Sometimes when my meals aren’t photo worthy I  like to have fun with them.

♥ ♥ ♥

♥ ♥ ♥

Banana’s in the car! Gotta keep things interesting.

I entertain myself that’s all that matters.

And remember when I told you I had a recipe I wanted to share, but the pictures were just not going to do it any justice?

♥ ♥ ♥

6

♥ ♥ ♥

This was a delicious creation, that tasted amazing, but does this picture make you want to make it?

Probably not.

But don’t you worry. I didn’t give up. I took one for the team and made this delicious creation again, just so I could take better pictures to share with you.

(ok so i may or may not be making excuses to have made it again. trust me i wasn’t complaining)

A lot of you saw this recipe coming. I’m pretty predicable what can I say.

Red Velvet Protein Frosting

– Mix all ingredients together in a small bowl

♥ ♥ ♥

3

♥ ♥ ♥

I think these pictures do it a bit more justice, don’t you?

Well I know they are making me want to make this again, so I would say so.

So loves I leave you with the promise of more dishes that are photo worthy so I don’t have to distract you with pictures like this.

♥ ♥ ♥

001-1

♥ ♥ ♥

But seriously. Who wouldn’t want to look at that face?

♥ ♥ ♥

Would you post an “ugly” picture if it meant sharing an amazing recipe?

Do you take random pictures of yourself eating? I have no shame, obviously, I mean I take pictures of me eating breakfast in my car.

vanilla chai, lemon cream pie, oh my.

Happy Sunday my loves!

I hope you are all having a wonderful weekend so far and also that you have a 3-day weekend as well and have a wonderful Labor Day!

Matt and I actually don’t have any plans, having no money kind of does that to you, but I am sure we will find some type of shenanigans to get into.

We always do.

Proof
♥ ♥ ♥
But I actually have some fun things to share with you. Some things I have been promising for quite some time.
Plantain Bread Recipes!

It’s no secret I have a bit of an obsession with plantain bread. But if you think I make the same ole bread each time, well you would be wrong. However if you follow me on Instagram, you already know that is not the case. Sometimes I just throw in random spices, protein powders and stevia flavors to get a nice base, but sometimes I have a goal in mind for a flavor profile. I would be lying if I said all my flavors come out amazing. They don’t. I have some duds (that get eaten anyways, nothing a little protein frosting can’t fix) But lately I have had some amazing successes.

First this great idea.

♥ ♥ ♥

17-1

♥ ♥ ♥

Vanilla Chai Plantain Bread

Ingredients:

– 1 medium plantain

– 3 tbsp liquid egg whites

– 2 tbsp vanilla protein powder (I used Designer Whey French Vanilla)

– 1/2 tbsp ginger

– 1/2 tbsp cinnamon

-1/2 tsp cloves

– 10 drops Sweetleaf vanilla stevia (more or less depending on your taste)

– almond milk if batter needs thinning

♥ ♥ ♥

28

♥ ♥ ♥

Directions:

– Blend all ingredients in Magic Bullet and bake at 350 degrees for 15-20 minutes.

The wonderful Heather and I had recently done a little impromptu foodie swap and she had sent me a bunch of random protein powders to try. One of them was Vega One’s Vanilla Chai. So I made a simple Vanilla Chai protein frosting to top this with.

This smelled amazing coming out of the oven. It was very hard to wait until I had decent pictures to eat this.

#foodbloggerproblems

♥ ♥ ♥

The next flavor was made because I have been on a huge lemon kick lately. And after recently winning a NuNaturals giveaway and having a fresh lemon on hand from a dinner recipe that never happened, I decided to put them both to good use.

♥ ♥ ♥

8

♥ ♥ ♥

Lemon Cream Pie Plantain Bread

– 1 medium  plantain

– 3 tbsp liquid egg whites

 – 2 tbsp vanilla protein powder (I used Designer Whey French Vanilla)

– juice of half a lemon

– 10 drops NuNaturals lemon stevia

– almond milk if batter needs thinning

♥ ♥ ♥

9

♥ ♥ ♥

Directions:

– Blend all ingredients in Magic Bullet and bake at 350 degrees for 15-20 minutes.

Topped with a lemon cream  made by mixing Chobani plain greek yogurt with 5-7 drops lemon stevia.

Optional lemon zest topping. It added a great freshness to the dish.

I am loving experimenting with new flavors, which is great fuel for my plantain bread obsession.

I think my next step needs to be making a savory version.

I’ve got some idea’s brewing…

♥ ♥ ♥

What flavor profiles are you loving lately? It’s almost fall, I’m thinking a pumpkin plantain bread will be in my near future. (hint: It happened this morning)

Oh luvs.

Happy Wednesday.
No really. Happy Wednesday. If you’re not happy now, you will be in a bit because I have some deliciousness to share with you today.

And what a better time than What I Ate Wednesday.

♥ ♥ ♥

♥ ♥ ♥

So before I share my delish dishes with you, make sure and head over and thank the beautiful Jenn for hosting and giving me the opportunity to drool over dishes I wish I could make. Thanks Jenn. ♥

♥ ♥ ♥

It’s no secret my plantain bread obsession is still going strong.

And my plethora of toppings.

One would think I have a problem.
One might be right.

♥ ♥ ♥

But for now the obsession continues and experimentation with flavors continues.

I don’t know why I didn’t think of this sooner.
One of my favorite flavors in basically anything is Mint Chocolate Chip.

So began the next amazing plantain bread creation.
Mint Chocolate Chip Plantain Bread.

Genius.

♥ ♥ ♥

1-2

Topped off with none other than a delicious protein frosting.

This my friends was amazing.

♥ ♥ ♥

I made this like I make my original protein plantain bread, but I added peppermint stevia instead of vanilla, used chocolate protein powder and of course added the chocolate chips. Which are mandatory by the way.

2013-08-11 001 015

♥ ♥ ♥

I was actually a bit nervous about this when it came out of the oven, because the smell was…off?

In taking my first bite I realized that this flavor profile might actually be better cold. I mean really when you think about mint chocolate chip flavors what comes to mind?

Mine goes to ice cream.

So I stuck this bad boy in the freezer for about 10 minutes to let it cool down, took another bite.

Heaven.

So I highly recommend if you make the bread in this flavor to eat it cold as well. Because it was ah-mazing.

♥ ♥ ♥

mint

A few notes on this:

Be sparing with your peppermint stevia (I use NuNaturals). It packs a lot of punch.

A lot of you always ask what protein powder I use for my frosting and how I make it.

I use Plant Fusion and slowly mix with almond milk until I reach my desired consistency.

I’m pretty much convinced Plant Fusion protein powder makes the best frosting

♥ ♥ ♥

You know what else it’s good in?

Something I should have made forever ago, but for some reason it took me forever to make.

Chocolate Banana Soft Serve.

3-2

I know. Nothing new to probably all of you out there. I mean really. Frozen banana, blender, it doesn’t get easier than that.

I don’t know why it took me so long to make it.

But I am glad I finally did.

♥ ♥ ♥

Well loves, if you haven’t hopped on the plantain or banana soft serve train. It’s time you did.

I was told the banana soft serve is amazing with peanut butter. But really. What isn’t amazing with peanut butter?

(The answer is nothing)

♥ ♥ ♥

Have you ever made banana soft serve?

What’s your favorite ice cream flavor?

It’s Friday! Woo!

It was nice to have the 4th off, but it just made Friday morning seem like a Monday. But I guess it it quickly followed by the weekend, so that’s a positive! Well regardless, I hope you all had a great 4th of July and if you have to work today like I do, I hope it flies by quickly! And then on to weekend fun for us all!

♥ ♥ ♥

So I feel like I am kind of cheating for this #strangebutgood, as my dish (at least to me) isn’t that strange.

Sprint 2 the Table

♥ ♥ ♥

Baking with protein powders is nothing new to me and something that I love to do. But I guess that concept can be strange to others. Well I know I get weird looks from my fiance, and as we have learned with a few past dishes, this isn’t an uncommon occurrence when it comes to my cooking/baking habits, and is usually a good sign that normal people don’t cook, bake or eat like me.

So this brings me to the tease I left you with on my What I Ate Wednesday Post.

♥ ♥ ♥

Chocolate Protein Fudgey Cake Bites

5

♥ ♥ ♥

Ingredients:

– 3/4 cup of pumpkin puree
– 1/2 cup of chocolate protein powder (I used 1/4c Plant Fusion – chocolate, 1/4 cup BSN Lean Dessert – Chocolate Fudge)
– 1/2 cup of cocoa powder
– 1 tbsp spelt flour & coconut flour each
– 1/4 cup of unsweetened vanilla almond milk

– 10-15 drops of vanilla NuNaturals stevia
– 1/2 cup liquid egg whites
– 1/2 tsp baking soda

Directions:

– Pre-heat oven to 375 degrees
– Blend all ingredients together
– Bake in brownie pan in for about 30-35 minutes, or until a toothpick comes out clean
– Let cool before cutting into squares.

(Note: I decided to add some flour to my batter because from past experiences from cooking with protein powder, my cakes always turn out very moist. I wanted to try and dense this  up a little bit. I liked the results, but you can leave out the flour if you desire.)

♥ ♥ ♥

I followed suit with Anna and made little sandwiches out of mine with a protein cream filling.

1

♥ ♥ ♥

Protein Cream Filling

Ingredients:

(per each sandwich)

– 2 tbsp plain greek yogurt (I used Chobani)
– 1 – 1.5 tbsp chocolate protein powder (I used Plant Fusion)
– 5-7 drops liquid vanilla NuNaturals stevia

Directions:

– Mix all ingredients together and spread between two cake squares.

♥ ♥ ♥

2

♥ ♥ ♥

I made each individual sandwich as I needed them and stuck them in the freezer for about 10-15 minutes after assembled.

They get melty pretty quickly and since I had been having them as a part of my breakfast I needed them to last for the car ride to work before eating them.

I stored the remainder of the cake in the refrigerator.

♥ ♥ ♥

3

♥ ♥ ♥

These have been a nice addition to my breakfasts, I won’t lie I kind of miss my protein breakfast wraps, but it’s good to switch up things once in awhile.  (i will not switch up my daily banana though. i have to have at least one daily. seriously.)

♥ ♥ ♥

6

♥ ♥ ♥

Proof.

The cake also makes great little pick me up snacks. I saved a row for random little bites for through out the day.

♥ ♥ ♥

3

♥ ♥ ♥

Bite sized goodness.

My next adventure that I have been too scared to take yet, is to experiment with a protein bread. I have found so many recipes that intrigued me, but just can’t commit to one (Anna’s broccoli protein bread is topping my list though). Who would have thought one could be such a baby when it comes to baking. Well, this girl is.

♥ ♥ ♥

Do you bake with protein powders?

Have you ever made protein bread? Know of any good recipes?

(There is still time to enter my Extend Nutrition giveaway! Head over now for your chance to win some tasty snacks!)

shake, shake, shake it up [giveaway]

Hello Hello my loves, do I have some goodies in store for you!

Remember that giveaway I recently had for Extend Nutrition?  If not, you missed out, because they have some pretty amazing products.

I was obsessed with their drizzles and now that I’m thinking about it, I totally need to order some more.

♥ ♥ ♥

022-1

♥ ♥ ♥

But tasty snacks isn’t all Extend Nutrition has to offer. In addition to their drizzles, crisps and bars they also offer nutritional shakes.

We all know how I love my protein powders, so when I was given the opportunity to try their shakes (and knowing how good their snacks were) I jumped at the chance.

♥ ♥ ♥

extend

♥ ♥ ♥

The powders kind of reminded me of Carnation Instant Breakfasts and yes I could have just mixed them with milk like directed to make a shake, but we all know me and I don’t walk down the beaten path. I of course had to be a little bit more creative.

♥ ♥ ♥

Wanna guess what was one of the first things I tried with it?

You guessed it.

Protein Frosting.

♥ ♥ ♥

13

♥ ♥ ♥

Since I am still on the Protein Plantain Pizza kick (and don’t plan getting off it any time soon) I decided to use the chocolate as one of my toppings. It mixes quite well and didn’t need much liquid to make the frosting, a huge plus in my book.

So since the chocolate worked so well, I decided I needed a little pink in my morning.

♥ ♥ ♥

IMG_0524

♥ ♥ ♥

What? Another Protein Plantain Pizza? Yes. But the frosting stole the show.

Not only was this actually quite tasty, but seriously, I love anything pink.

♥ ♥ ♥

I had to experiment more with the shakes and I am known for adding protein powder to almost…well almost everything.

The next thing I added the Extend shake too was my night time snack.

♥ ♥ ♥

10

♥ ♥ ♥

Strawberry Greek yogurt with a healthy chocolate drizzle.

I took 1/2 packet of the strawberry Extend nutritional shake and mixed it in with plain Chobani Greek yogurt.  I spread the yogurt mix over a Wasa Multi Grain Crispbread and I then made my healthy chocolate sauce (unsweetened cocoa+almond milk+stevia) and drizzled it on top.

Oh my was this delish. Chocolate strawberry goodness. I do believe this combination will happen again.

♥ ♥ ♥

And then we all know my love for overnight prOATs. So what did I decide to add to a recent bowl?

You guessed it, the Extend nutritional shake.
I used the vanilla and in addition to vanilla nut extract and a sprinkle down pour of cinnamon I had a delicious bowl of oats waiting for me for breakfast.

♥ ♥ ♥

oatmeal

♥ ♥ ♥

Topped with the traditional frozen banana, granola sprinkle and some raisins for good measure.

Since these shakes could be used as a meal replacement,  and even though I didn’t use a full serving, it was amazing how much more filling this bowl of oats was.

Another win in my book.

♥ ♥ ♥

I plan on experimenting more with the shakes, I’m curious to how it would do in baking.

Oh the endless possibilities.

♥ ♥ ♥

Oh, I forgot to mention something.

Extend Nutrition is pretty much amazing and is letting me host another giveaway for you Accidently Delish readers.

berry lemonade overnight oats

Oh Happy Monday my loves!

Not going to lie, I have a case of the Monday Blues.

You wouldn’t think one could get so lazy in just two days, but I’m telling you, I’m liking this whole weekends off thing and being lazy.

This weekend was particularly dull, it’s a very tight pay check for Matt and I (ever notice how all bills seem to be due at the same time?) so there was really no extracurricular activity going on.

I did however manage to find some marvelous things to share with you, because Monday’s are a must to get Marvelous with the beautiful (and almost ready to pop!) Katie.

♥ ♥ ♥

♥ ♥ ♥

One thing I love about the weekends, I don’t have to eat breakfast in the car!

Always a plus right? I find I try to make a little more effort in making my meals presentable (really with only the blog in mind because I know I need something to share with you guys)  on the weekends.

The past few breakfasts have really been made with the thought: I have all this fruit I need to use before it goes bad, so I better shove as much as I can into breakfast.

Example 1:

004-1

Jamming an empty jar of Trader Joe’s pumpkin butter with fruit worked for me. I mean really, that stuff is so good (and out of season) that I have to savor every last smear.

By the way does anyone else find frozen grapes to be 2983232x more amazing? I do.

♥ ♥ ♥

Example 2:

012-1

Fruit is always a must on my overnight oats, but this bowl got an extra dose.

Berry Lemonade Overnight TVP/PrOATs

– 1/4 cup rolled oats

– 1/4 cup TVP

– 1/2 cup almond milk (I use Silk vanilla)

– 7-9 drops NuNaturals Liquid Lemon Stevia

– dash of ginger and cinnamon

– 1/2 scoop vanilla protein powder – stirred in at end (I used Plant Fusion – vanilla bean)

Topped with every berry imaginable.

♥ ♥ ♥

015-1

♥ ♥ ♥

I’m usually pretty consistent with my oatmeal add ins. Usually chocolate protein powder, usually an over abundance of cinnamon, but I saw someone post the whole “lemon” idea in oats, so I thought I would give it a shot.

Holy goodness. These oats were amazing and I will be doing this flavor profile again!

♥ ♥ ♥

So even though we are on a budget, Sunday I got a little stir crazy.

Matt’s birthday is coming up and he is currently obsessed with bow-ties (I blame him being Dr. Who for Halloween). There is a local business called Dapper & Dash that sells bow ties that are recycled from the creators grandfathers old ties. It’s a pretty cool concept and I like to support local businesses, so I decided to take Matt shopping. We unfortunately did not find one that he really loved and left empty handed.  So what do you do after an unsuccessful shopping trip?
If you’re Debbie and Matt you stop by your favorite pub and have a beer.

♥ ♥ ♥

064-1

♥ ♥ ♥

Made sense to us. Matt also got to watch a little soccer, so it was a win-win if you ask me.

But then it was back to being lazy at home. We are dog sitting, so really we had some great company.

♥ ♥ ♥

065-1

I mean look at that face.

♥ ♥ ♥

Well loves, I will leave you with that cuteness. Oh and a little teaser for some deliciousness that is to come.

Remember my protein plantain pizza I posted about?

♥ ♥ ♥

plantainbread-1

♥ ♥ ♥

I made another version that was oh so amazing.

♥ ♥ ♥

plantainbread

This is just a sneak peek at my blank canvas, you’ll have to come back to find out how my indecisive self topped it.

Have a wonderful week my luvs!

♥ ♥ ♥

Have you tried frozen grapes? If not, you should. They make an amazing snack as well.

What do you think about bow ties on men?

it’s all about balance

Oh lovies, get ready.

This post is going to be here there and everywhere.

But that seems to be my life as of lately.

Up. Down. Right. Left. Sideways. And all directions in between.

♥ ♥ ♥

But I somehow found my way back for What I Ate Wednesday.

♥ ♥ ♥

I’m going to warn you, this post is no where near a healthy one.

But lately my days have been fun, carefree, and me just living.

So sometimes that’s what you get.

Matt and I have really been taking advantage of me having some days off.

And honestly, one of the things we use to always do, how we met, how we bonded, how we fell in love.

Was going out day drinking.

#sorryimnotsorry

I’m a beer girl. I like to drink.

And I don’t care if you deem it unhealthy. As cheating. Or as bad.

Because I don’t. I like it.

♥ ♥ ♥

beer

♥ ♥ ♥

Proof.

If drinking some beers get’s Matt and I’s spark back in our relationship, well I’ll bite the bullet.

We have had some amazing days together, just enjoying each other and having a good time.

That is all that matters to me. Us being happy again. And falling in love again.

♥ ♥ ♥

Oh and some of this deliciousness makes me a happy girl too.

027

Yup, and I even ate this after all the beer and before dinner.

♥ ♥ ♥

But there has been another liquid lately in my life that could possible get me in some financial trouble.

This guy.

♥ ♥ ♥

coffee

♥ ♥ ♥

If you follow me on Instagram, you know I’ve had a bit of a Starbucks problem lately.

There is a Starbucks literally connected to the clinic I am externing at.

Yea. And when you work with a bunch of co-workers who are just as addicted to coffee as I am, it tends to turn into daily walks next door for coffee. And since I am not getting paid during my externship, well this could really turn into a problem.

It needs to stop.

But I kind of don’t want it to.

♥ ♥ ♥

But my week hasn’t been filled with only liquids.

There have been some decently healthy meals sneaking in here and there.

I mentioned that my go to breakfasts lately have been green smoothies.

They are easy to make the night before and the more and more practice I get, the better they are tasting.

It started with my protein green lemonade smoothie that I shared with you all.

♥ ♥ ♥

017

♥ ♥ ♥

But now I am starting to get more creative.

I mean. You guys have seen my oatmeal, it’s really hard for me to eat not dressed up food.

Especially breakfast, I am always proud of my breakfast.

So I’ve played around with my toppings.

♥ ♥ ♥

002-1

♥ ♥ ♥

In the mix:

Baby spinach, pear, cucumber, Plant Fusion vanilla bean protein powder, lemon juice, chia seeds and NuNaturals liquid lemon stevia.

Topped with:

Click mocha protein frosting and Love Grown Granola and a cinnamon sprinkle.

Delish.

I think it got better the next day.

♥ ♥ ♥

002-1

♥ ♥ ♥

My containers may not be pretty and well neither are the smoothies to be honest, but I can try be a bit fancy with my toppings right?

In the mix:

Baby spinach, 1/2 frozen banana, 4-5 strawberries, Fitmixer chocolate protein powder, NuNaturals liquid vanilla stevia, chia seeds cinnamon, ginger.

Topped with:

Coconut flour/BSN banana cream protein frosting and graham cereal crumblies.

♥ ♥ ♥

So there you have it, a mix of healthy and not so healthy, but you know what it all balances out.

It always does.
I have finally realized life is too short to dwell on being 100% healthy 100% of the time, because honestly, to me healthy is living, enjoying life, enjoying food, and enjoying love.

I’m doing all of the above.

Are you?

♥ ♥ ♥

What’s your definition of healthy?
Do you enjoy a healthy balance in life?

♥ ♥ ♥

(There’s still time to grab some Recharge Freebies! Check it out!)

green protein lemonade smoothie

Happy Friday my loves.

I am happy to report I have survived my first week of exernship.

I am completely wiped out and a little mentally drained, but I survived.

And I am loving it.

I have been exposed to so many new things, and introduced to the world of breeders and artificial insemination’s and semen collection. It’s really no big thing and done daily at my clinic. But to me, it’s still is a little strange to look over and see my vet jacking off a dog and having a normal conversation with the owner.  Oh the world I live in now.

♥ ♥ ♥

But I don’t think you came to hear about all that. I think you’re here for another reason.

A #strangebutgood reason.

♥ ♥ ♥

Sprint 2 the Table

♥ ♥ ♥

Now I am going to be honest in saying this week’s creations are not really that strange in the blog world. That happens to me quite often where I see the same concept all over the blog land and Instagram, yet when I tell a “normal” person what I am eating it may be a bit strange to them. So I say it counts.

♥ ♥ ♥

Since my mornings are so early, breakfast is now consumed in the car and I have relied on green smoothies to be my go to breakfast. I may get brave and eat other things as I get use to this schedule, but I am whipping these up the night before so they are just ready for me to grab on my way out and I don’t have to worry about preparing anything. So it’s working for me right now.

My first green smoothie. Well, in the looks department. Epic fail.

♥ ♥ ♥

002-1

♥ ♥ ♥

I shared this in my last post and it seriously is so gross looking it deserves a second look.

We all know how I like to cook; throw basically everything or anything you have into a blender and hope it tastes good.

It was decent. Not the best.

Check out my last post to find out what I threw in it.

♥ ♥ ♥

I am happy to report that I think I got better with practice and after finding Brittany’s recipe for her Green Lemonade Smoothie I had new inspiration.
And kids for once other than adding protein powder and tweaking a few other things, I pretty much followed the recipe.

♥ ♥ ♥

017

♥ ♥ ♥

Here is what went into my spin off.

Green Lemonade Protein Smoothie

– 1 heaping handful baby spinach

-1 scoop Plant Fusion Vanilla Bean protein powder

– 1 small pear

– 1/2 frozen banana

– 1/2 cucumber

– juice of 1/2 lemon

– 5-7 drops Lemon Liquid Stevia

– water until smoothie reaches your desired consistency

Mine was a little watery, so I added some chia seeds to let soak overnight. Thicker smoothie, and added nutrients.

♥ ♥ ♥

016-1

♥ ♥ ♥

I am happy to report this smoothie was amazing. I know it’s risky, but I am loving throwing random things into my smoothies. It’s like my oatmeal, flavor combinations are endless.

I’m really wanting to get some fresh ginger and do a spin with that.

I am obsessed with ginger.

♥ ♥ ♥

Do you have a favorite smoothie recipe?

Do you just throw random things in and hope for the best?
