I am the master of simplicity.

Breakfast use to be my favorite time to get fancy and creative, but this was before having to be at work at 6:30am.  Now breakfast is anything that is quick and portable. Not as fancy. I do miss my beautiful oatmeal bowl creations.

More than likely even on my days off my breakfasts look like this.

Peanut Butter Toast.

But I made a random genius addition of adding crumbled graham crackers on top. It was a nice added crunch and flavor.

And to be even more plain.

Bagel with Cream Cheese.

However the fact that this was a P28 bagel and that I added Growing Naturals Vanilla Blast Pea Protein to the cream cheese took this up a notch as well. But still, pretty simple.

But then one day I got the baking bug. I don’t know why, but one night I decided to actually experiment with a recipe I had seen and prep some protein muffins for my breakfasts.

I will admit in taking them out of the oven and tasting them I wasn’t too impressed.  But after one night in the fridge, they got 100x better.

So my advice to you, if you make these, which you should, wait until the next day to eat them.

 Chickpea Protein Brownie Bites

Ingredients

– 1/2 cup chickpeas

– 1 scoop chocolate protein (30g) (I used Designer Whey)

– 1/4 cup unsweetened apple sauce (could use pumpkin)

– 3 tablespoon liquid egg whites

– 1 tablespoon unsweetened cocoa

– 1/2 teaspoon baking soda

– 2 tablespoon almond milk

– 1 teaspoon vanilla

– sweetener to taste (I used NuNaturals liquid vanilla and cocoa syrup)

Directions

– Drain and rinse chickpeas.

– Blend chickpeas, applesauce, egg whites and vanilla.

– Mix in remaining ingredients until well blended.

– Pour into muffin tin or brownie molds.

– Bake at 350 degrees for 20-25 minutes.

– Let cool and eat plain or top with desired frosting. *

* As mentioned I highly recommend storing these in the fridge over night and eating the next day. Also these topped with Sweet Spreads white chocolate coconut butter was pretty much amazing. Regular peanut butter I’m sure would be equally delicious.

I love that I can just grab a few of these in the morning and be on my way. Portable breakfasts are definitely a must now. I’m also excited to play around with the flavor and use different flavor protein powders.

Whoa loves. Long time no see.
I’ve been meaning to write a post, but I’ve been one busy bee.

Work has been busy and social life has been busy. Which both are good things.

So since there seems to be a layer of dust in my kitchen due to barely being home, I thought I would do a post of snap shots of what’s been going on via Instagram. Because that seems to be more up to date on my happenings then my blog has been.

I have been loving brewing my own kombucha and actually got a co-worker hooked on it! I made her kiwi-strawberry and blackberry-raspberry flavors. She was telling me she had been having some GI problems, so I had mentioned how kombucha is a great pro-biotic and I was so happy that she was open to trying it. Especially a home brew. And even more happy that she enjoyed it.

I ended up using spelt flour and they turned out way better than I expected. Even Matt liked them, so you know they had to be decent, because he usually hates my protein baking experiments.

Well loves if you read my last post, you know how I feel about today.

But you also know there is a part of Wednesday that is a bit exciting.

You guessed it.

I actually have eaten some amazing food, no thanks to my cooking skills, but Matt and I had been invited to one of his co-workers for dinner. Since he is still new at the job and this was the first time I met them, I decided to not take any pictures.

But let me tell you. The meal was amazing.

Cowboy caviar (which is seriously crack in a bowl – heeellllooo avocados), grilled zucchini, grilled portabella mushroom topped with garlic spinach and cheese, artichokes, oven roasted potatoes, and bbq chicken. Seriously all cooked to perfection. I ate so much food, but I seriously could not stop, it was so good. It was a fun night overall and we had a great time.

But since I can’t show you any of that deliciousness, I have a few things that I can show with you.

Oatmeal has came back into my life. It tends to happen when I have these laying around.

I actually stole this jar from work.

I made a base of vanilla cinnamon overnight prOATs and topped it off with some frozen banana, local granola, shredded coconut and Enjoy Life chocolate chips. Because we all need a little chocolate in the morning.

This got me on an oatmeal kick, so I had them again the next day.

Since I was still kind of on a coconut kick I added coconut butter and shreds not only while cooking, but also another huge spoonful of Sweet Spreads cinnamon roll butter and more shredded coconut.

(side note: this was transferred into a jar for travel convenience shortly after)

It kept coming with my waffles. Since we’re not actually getting any snow in Arizona, I like the effect shredded coconut gives my food. Kinda like snow right?

Ok, maybe not at all, but we can pretend. It still tasted pretty dang delicious.

Then I started getting lazy with my breakfasts, but sometimes simple is the tastiest.

Hello my loves!

I hope everyone is having a wonderful new year so far! I mentioned in my new years re-cap post about not making resolutions or “starting over”, as I feel like life should be one long continuous journey where we are constantly trying to improve ourselves, make new goals and work on them, and try new things. I don’t think we need a new year to start that, however if it’s motivation for you, then that’s great!

My creativity, experiments and surprising successes just happen to coincide with the new year, but I really have Christmas to blame thank as I got so many fun new things to play with.  Regardless, you guys have benefited with some new tasty recipes and delish dishes.  And I’ve had some tasty new treats to eat!

And with that being said, I have another one for you!

I’ve been having a lot of fun with my new juicer, basically throwing random fruits and veggies in and hoping for a good tasting juice, but I really don’t think you can go wrong when you’re using fresh produce and most of my concoctions have been fresh and nourishing. I may or may not be obsessed with fresh juice and don’t know if I can ever go back to smoothies.

I talked about wanting to use my left over pulp and have been experimenting with ways on how to use it.

I shared my fail with my pulp crackers...

I am determined to perfect these because even though they may not have turned into actual crackers per say, they still were pretty tasty. Definite potential.

But before that happened I decided to go around route with some of my pulp and try something different.

With a new mini loaf pan begging to be used back to Pinterest I went to find a good pulp bread recipe.

But let’s be real. Like I ever follow a recipe. I basically look at recipes to get the ingredient ratio’s correct and then use and substitute to what I have on hand and to my taste preference.

This time was no different. I also made the recipe to be a single serving since I hate making big portions with the risk 1. I will not like the outcome and 2. I don’t want to waste ingredients if #1 happens.

However, I was pleasantly surprised when my first attempt turned into a success.

I actually accidentally left out a few ingredients and didn’t realize it until after I had put it into the oven. So I really had no expectations for this bread. So when I opened the oven 25 minutes later I was shocked and pleasantly surprised to find that it actually raised like real bread.  For those of you who have made protein breads before, they typically are pretty flat due to not using much flour.

I don’t know if this was a fluke, an accident, a once in a lifetime thing, but I am so happy it happened. I honestly don’t even know if I re-create this if it will turn out as good, but I definitely took advantage of this success.

Protein Pulp Bread

Protein Pulp Bread

Ingredients

Instructions

  1. Pre-heat oven to 325 degrees
  2. Blend all ingredients together. Add almond milk in small amounts if batter is too thick. This will depend on how wet your pulp is. I only needed about 1tbsp
  3. Pour into mini loaf pan
  4. Bake for 25-30 minutes or until toothpick comes out clean
  5. Let cool. Top with desired toppings.

Even though I was excited to see that my bread looked like..well, bread there is always that chance that once it cools it will deflate. I think letting it cool was the hardest part.  I seriously had to distract myself to get me away from the kitchen.

15 minutes later I decided to give it the test and sliced it.

It was still firm and dense and I was so ecstatic. But would it pass the taste test?

It did!

Even Matt was pleasantly surprised that he liked it. He typically doesn’t like my protein baking experiments, so to get the thumbs up from him is a pretty big deal.

The next big decision was what to top it with.

I started with a no brainer.

Peanut Butter.

And not just any peanut butter. I used my P28 Signature Protein Spread.

Ah-mazing.

And I couldn’t stop there. You know me and my toppings.

And also another test to the bread. Would it be good the next day?

It was!

And even better topped with my Avocado Banana Protein Frosting.

This stuff is good on anything, but why not add more green to green?

I almost don’t want to try to make this again in fear it won’t be a success, but maybe if you guys make it and have the same great results I did I’ll be brave enough to try it.

And if you don’t have a juicer and don’t have juice pulp, I’m pretty sure shredded zucchini or carrot would work in place of the pulp. It’s worth playing around with.

Oh my goodness, I don’t know about you, but this has been one of the longest weeks ever.

For me at least it is because I had Monday off and had to work the rest of the week. It was wonderful having two days off in a row, but I am telling you, it makes the rest of my week so long.  But Friday is finally here and even though I work Saturday, there is still always a little joy in it being Friday.

I haven’t participated in a few weeks basically because my eats have been on such a repeat that I haven’t made anything noteworthy.
And really this dish isn’t too strange, but a new twist on an old favorite with a new ingredient obsession.

Carob.

I swear ever since I ordered this in my Swanson Vitamin order, I have been adding it to everything.

So it may be no surprise that this happened.

Carob Plantain Bread

Topped with a mocha protein frosting using my Click mocha protein, sprinkled with coconut shreds and a local granola mix.

Ingredients:

– 1 medium ripe plantain

– 1/4 cup egg whites

– 1/4 cup vanilla almond milk (or milk of choice)*

– 2 tbsp carob powder

– 1 tbsp chocolate protein powder (I used BSN Lean Chocolate Fudge)

– 5-7 drops liquid stevia

* I’ve  been making my batter a little bit more thicker lately, it makes more of a dense bread, but feel free to add more almond milk if you need to thin out your batter.

– 1/2 scoop Click mocha protein

– almond milk to thin (I use Silk unsweetened vanilla)

I used my new Cellucor Cor-Fetti protein to make a protein frosting for the top. I will say I was not as huge as a fan of this flavor as I thought it would be considering all the rave it was getting, but it is slowly growing on me. Honestly, I have to add a little bit of  a different flavor protein, whether it be vanilla or chocolate, and it makes it much better.

For this healthy poptart I really was just so happy with this marshmallow mocha protein frosting. Sometimes I wish you could taste pictures so you could understand how delicious this was.

Speaking of delicious. I try and take advantage of my one day off and make a more involved breakfast.

It of course involved plantain bread. If you had any doubts.

This was a carob* infused plantain bread base (obsessed with carob powder) and topped with vanilla protein frosting and sprinkled with coconut shreds and local granola mix.

And just in case you didn’t know chocolate + coconut = amazing.

I also somehow managed to make a few amazing dinners as well. That is a rare event that happens few and far between these days.

I had some Trader Joe’s chicken strips that needed to be used and it just so happened some Trader Joes Thai Curry sauce sitting in the fridge.

I cooked up some rice (mixed with hoisin sauce) and added some of a frozen mixed veggie blend that also needed to be used and called it dinner.

Seeing a trend? Sometimes the best meals are made from cleaning out the fridge and freezer.

As I said in my Thanksgiving re-cap, I really feel the holidays come and go way too quickly.
