Friday! Yay!

I actually had a long work week, so I am super excited today is Friday. I get this weekend off, so I am looking forward to some relaxation time!

I can almost guarantee nothing productive will happen and I am totally ok with that.

Sprint 2 the Table

I love participating in Laura’s #stangebutgood, but I swear almost everything I eat is a little strange, and a lot of good, but when I have new to me idea’s those are the ones I like to share!

And I just so happen to have one of those.

I have been loving sweet potatoes lately.

I sometimes like to keep it simple.

Simply roasted in coconut oil and sprinkled with cinnamon, then topped with a new obsession of protein coconut flour fluff.

For the fluff just mixed coconut flour, vanilla protein powder, almond milk, and liquid vanilla stevia drops until a cookie dough consistency is reached. So simple. So delish.

But then I decided to get a bit creative one day with my sweet potato.

It started off simple by making a protein sweet potato frosting and using it to top a P28 flat bread.

Sweet Potato Protein Frosting

– 1/2 small cooked sweet potato

– 1-2 tbsp vanilla protein powder ( I used Plant Fusion Vanilla Bean)

– 5-7 drop liquid vanilla stevia (I used SweetLeaf Sweet Drops)

– cinnamon

– 2-3 tbsp almond milk

Put everything into a magic bullet, or if you don’t have one you could mash by hand. Add more almond milk if needed to reach desired consistency. Spread frosting on a P28 flat bread and broil in oven until flat bread is crispy (about 5-10 minutes)

I drizzled mine with peanut flour mixed with almond milk.

Sweet Potato Protein Nachos.

I’ve made savory sweet potato nachos before, but since I am still on this huge sweet kick and a probably not so healthy obsession with adding protein powder to everything (I really blame that 5+ tubs I have that I just want to get rid of), I decided to make sweet protein pumped nachos.

I cut my sweet potato into chips and baked them in a pre-heated oven until crispy. I topped them with a protein whipped cottage cheese (cottage cheese+vanilla protein powder+vanilla stevia+cinnamon).

To complete the dish I finished with a chocolate protein frosting drizzle, a little local seed mix sprinkle and a dollop of crunchy peanut butter.

These bad boys were amazing.

I don’t know how long this sweet tooth trend is going to continue, I really do kind of miss savory dishes, and enjoy them when I go out to eat, but for some reason when I think about what I want to cook at home, sweet always wins.

But with creations like these, I’m completely ok with that.

I am obsessed with protein frosting lately.

It’s especially tasty in the cookies and cream variety.

So thick and creamy all on it’s own. And P28 bagels make a pretty amazing base if I do say so myself.

I think I say this almost every week, but is anyone else’s weeks just fly by? Having surgeries in class really makes my time fly by even quicker, which is good and bad. My days are exciting, class time is no longer sitting taking notes, but assisting in surgeries, but then at the same time, another week is gone in the blink of an eye.

But I still find time for the important things in life.

Things like What I Ate Wednesday.

That’s super important right? I think Jenn would say yes.

I do have one more pretty epic oatmeal bowl to share with you and then I actually have new lunch/dinner AND dessert creations to share.
Oh my gosh. Who am I? I know.
I typically only put effort into my breakfast for some reason, so I am a bit surprised at how much I branched out with other meal ideas. I’m telling you, this not having to read as much is starting to take effect. What’s it going to be like when I’m done with school and working like a normal person?
We’ll deal with that when the time comes.
But first that epic breakfast I was telling you about.

I am addicted to loving my overnight TVP prOATs.
I make them doughy style by adding 1/2 a frozen banana in the morning and giving it a little whirl in my magic bullet.
Doughy and yummy.
And then of course topped with amazing-ness.

Other half of frozen banana, berries, Love Grown Crack Granola and this bowl got a sprinkle love from peanut flour and acai powder.
Who says oatmeal is boring? Not this girl.

But on to the fun stuff. New sandwiches!
So I’m assuming most of you know what tempeh is and it’s a food I always forget how much I love.
I mean, I could eat this stuff straight from the package.
And I did.

With the simple addition of blueberry jam, this sandwich was  going to be my #strangebutgood contribution, but then I made something more strange and more good, but this sandwich none the less was amazing.
But I didn’t stop there. Because as great as it was raw and cold, I am a firm believer anything is better when made into a panini.
So I did that too.

Both sandwiches were made with P28 bread and this was actually the first time I toasted or used this bread on the panini maker.
This bread is even better toasted! I actually like the chewy texture of it cold, but it get’s so crispy when toasted. It took this sandwich up a notch.
Am I the only one who likes to mix sweet and savory? I swear I could put jam on anything.

And last but not least we come to dessert.
I typically always have like to have something sweet before bed.
Yogurt bowls are a common occurrence.
This one was extra delish.

Wednesday already? And on top of that the end of February. Seriously where does time go. I know I sound like a broken record when I say that, but it never ceases to amaze me how quickly time flies. Just to put that into perspective, I have two, yes you heard me, two classes left until I go onto my externship and then graduate.

I mean seriously. It seems like only yesterday when I started school. Oh how things and my life have changed since then!

Sometimes I look back at old posts and think, who was that girl? There have been ups and downs, but things have definitely changed for the better and I am in such a better place now.

One thing that hasn’t changed is my participation in What I Ate Wednesday.


Well the food and presentation has changed, but as always, we need to thank the lovely Jenn for hosting all this delicious-ness.

(and if you didn’t know because I just found out, she is expecting!! ahhh so exciting! babies are taking over blog land and I love it!)

Another thing that hasn’t changed, and probably never will, is I can never do a standard What I Ate Wednesday. It’s always a pish posh of random goodies I have been enjoying lately.

I know I have been pretty MIA lately, but honestly it is because life has been pretty boring.

So I thought I would make a little appearance for What I Ate Wednesday, because maybe my meals aren’t completely exciting, but I have had a few tasty treats lately.

I do apologize for the lack of creativity, but eating on a tight budget has  made my meals turn into quite simple ones.

My breakfast’s have been pretty repetitive, although I did whip up a very tasty spin on a recent obsession of mine.

This may look like a pretty typical P28 bagel breakfast topped with my obsession whipped cottage cheese, but I assure you this was a little bit special.

This is a mint chocolate protein whipped cottage cheese.

I added Fitmixer chocolate protein and added a few drops of NuNaturals liquid peppermint.

This post is being written late in the afternoon, but hey, it’s still Friday and still time to celebrate! Although Friday’s are bittersweet for me, because yes it’s the end of the week and I don’t have class for two days, but I work on the weekends. At the school. And we just got a bunch of new animals in. And as super cute as they are, they are full of diseases and a handful to take care of.

(I know it sounds bad saying they all have diseases, but we get them from the humane society, and they don’t always vaccinate them, so it’s not uncommon. But that’s what we are here for, we make them all better and adopt them out!)

So in addition to this being late, it will probably also be short. But I didn’t want to miss out of all the #strangebutgood excitement happening over at Laura’s. So I had to at least make an appearance.

Ok first example. To us foodies kabocha squash is not strange, to my fiance, kaboch-awha?

Second. Burning roasted veggies to most would be a trip to the garbage can. Not in foodie land. Burnt veggies are sometimes even done on purpose. (guilty)

Ok, I know, horrible picture. Shame on me, but after 6pm when the sun goes down so does any hopes of a decent picture in my apartment.

This little guy was topped with a drizzle of maple syrup and then whipped cottage cheese (odd look for fiance), peanut butter (an are you serious look), finished with an insane amount of cinnamon (did you do that on purpose look).

Again, to foodies, this may not be a weird dish. To my fiance, well I think he is questioning my sanity.

But I keep telling myself this is a good thing. I am building muscle, and my body needs more fuel, which equals food. And since I am still in my gaining process, this is extra good for me.

I’m taking a break from studying because well I promised you an amazing cookie recipe, and a girl has to have priorities right. Posting about delicious cookies > studying. I think so anyways.

But first, the star of the show.

I had mentioned in my last post, that these were kind of an accident. I of course found a recipe, took it as a starter, and kind of threw random things in. Something that typically isn’t a smart thing to do when baking, but it seemed to work this time.

So some measurements might be an estimate or best guess to what actually went in.

Chai Oatmeal Raisin White Chocolate Cookies

(yup I know it’s a mouthful)

Ingredients

– 1 cup butter

– 1/2 cup granulated sugar

– 1/3 cup honey (original recipe calls for 1/2c dark brown sugar & 1/3c white sugar, but I couldn’t find my brown sugar, so I used all natural clover honey instead)

– 2 large eggs

– 1-1/2 cups four

– 3-1/2 cups old fashioned oats

– 1 tsp baking soda

-1/2 tsp salt

– 1 tbsp vanilla

– 1/2 tbsp cinnamon

– 1 tsp ginger

-1 tsp cloves

– 1/2 cup raisins

– 1/2 cup white chocolate chips

– 1 chai tea bag

– 2 cups boiling water

Directions:

– Let chai tea steep in boiling water for 5 minutes. Discard teabag. Let raisins seep in chai tea for 15 minutes, then drain.

– In a large bowl, cream together butter, sugar and honey for about 3 minutes. Beat in eggs and vanilla.

– In a medium bowl, combine flour, baking soda, salt, and spices. Add flour mixture to sugar mixture.  Stir in oats, raisins and white chocolate chips.

– Preheat oven to 350°F. Line two baking sheets with parchment paper. Drop dough in rounded tablespoons onto baking sheet. Bake until golden brown, 10-12 minutes.

These delicious babies were the result. And oh my gosh were they delicious.

When they came out of the oven they smelled amazing, but smells can be deceiving.

Matt and I took bites at the same time.

And both had the same reaction.

“Oh my gosh these are great!”

I made these specifically for my Foodie Pen Pal (I probably just ruined the surprise for her) and sent off some extras to Matt’s work.

He said his co-workers played the “what’s in this?” game.

But they loved them too!
