Well school is back in full swing for me, so this may be short and sweet.

But I do have to take the time to do my Foodie Pen Pal Reveal!

What is Foodie Pen Pal you ask? The lovely Lindsay at the Lean Green Bean puts this little shindig on every month.

Here’s a detailed explanation of the program:

-On the 5th of the month, you will receive your pen pal pairing via email. It will be your responsibility to contact your pen pal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your pen pal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Pen pals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you can choose to write a short guest post for your pen pal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.

This month Anna sent me some goodies.

And the Humbles turned out to be amazing. Very addicting. And my hand kept going back in the bag! Again and again and again…

I’m not a big cookie person, so Matt will more than likely take charge of those!

I sent my package over to Kristen and loved hearing that she liked everything I sent her!  (She doesn’t have a Trader Joe’s, so guess who went a little TJ crazy. This girl)   I think that is the best part of this, is hearing from the person I send to, that they loved what I got them! I really do have a fun time shopping and try to find fun new things.

Well dolls, I know this is short and sweet, but this girl has some studying to do.

Oh yes. Breakfasts and snacks have turned into this again.

I hope everyone has been having a wonderful week so far. Mine hasn’t been as stressful as I thought it was be, which is great.

My vet tech classes started back up and I was kind of worried about it. Worried would I be able to get back in the swing of things, and worried because this class is kind of intense. But after going, I am really excited about it. It is a lot of hands on learning, which I love. Oh yes, I will be putting catheters in, drawing blood and giving injections. Woo-Hoo!

But let’s not forget what today is, because it’s a special day.

What I Ate Wednesday of course!

And since the theme is still sensible snacking, I wanted to take the opportunity to get some opinions.

The farther I get in my recovery, the better I do and the more “normal” I can be, I really need to start learning how to be healthy and balanced again.

In the beginning of my recovery, I was seriously told to eat when I’m hungry, eat when I’m not hungry, and always eat past full.

I know that may sound silly, but my body basically didn’t really know what it needed in the beginning.

But the farther I get, the more I can actually start to listen to my body.

I’m beginning to be able to actually learn what satisfies my body.

♥ ♥ ♥

And sometimes, big cereal messes do it.

Cottage cheese topped with a mix of cereals, fresh raspberries, strawberries and banana, drizzle of peanut butter.

Or my new obsession with Kashi 7-grain waffles.

Topped with fresh strawberries, blueberries and a massive drizzle of peanut butter.

This guy had a partner, don’t worry.

I also re-discovered my love for spaghetti squash.

Does anyone else have the problem of shoving fork fulls of spaghetti squash in their mouth as they are scooping the insides?

I always do.

I think it’s a problem.

I topped this with with a new to me Trader Joe’s organic spaghetti sauce. It was a mushroom flavored one, and typically I do not like mushrooms, but this had a really nice flavor to it.

Me likey. But really, when does Trader Joe’s let me down?

Ok so that’s a few of my new eats, but here is when your opinion comes in.

I almost always have to have a “dessert”. I just crave something sweet at the end of the night.

Lately, my desserts have been carb-tastic.

Now I am not one of those “oh carbs are bad” people.

I love carbs. I embrace carbs. And come on guys, carbs are where we get our energy from.

But what I have noticed is I am bloating up like a balloon by the end of the day.

So my question to you, if you are like me and crave something sweet at night, what is your go to “dessert”. Now dessert to me doesn’t mean it has to be ice cream, cake or cookies (although I wouldn’t say no to any of the above), but what is your late night snack?

I’m thinking cottage cheese bowls, smoothies, but I also want something maybe more protein packed.

I just know carbs satisfy me, so I’m kind of nervous. Although variety always seems to serve me well.

As the title says, let’s get fruity! I am been on such a fresh fruit kick lately, it’s been a bit ridiculous.

Ridiculous in the best way possible of course.

I mean really how can you go wrong with fruit?

Now I still love my veggies, don’t get me wrong, but there is something about summer and warm weather that makes me crave everything fruit.

So since it is that time of the week. Oh yes, What I Ate Wednesday time, I thought I would show case some of my lovely meals and snacks that include fruit. Because there have been a lot of them.

I have also oddly enough been on a cereal kick as well.

I took a huge break from it, and I guess my body missed it. Craved it. I gave in to it.

But you can’t just have a plain ole bowl of cereal.

That would be boring. And we don’t like to be boring around here.

This was a yogurt mess of a cereal bowl. And topped with what? Of yes. Tons of fruit.

There was a Chobani vanilla greek yogurt in there, topped with a mix of cereals, frozen banana, fresh strawberries, raspberries and blueberries. A lovely drizzle of PB2 to top it off.

This bowl was so good, it had to be repeated a few days later.

This one was pretty tasty as well. Instead of greek yogurt, I made a cottage cheese mess. Topped with of course a mesh of cereals, frozen banana, strawberries, raspberries, and you guessed it, a peanut butter drizzle.

Oh hello there loves.

Let me tell you. This whole time off thing has been amazing and aggravating all at the same time.  How is this possible you ask? Well it’s been awesome because I have actually had time to get back in the kitchen and experiment. Oh how I have missed that. Unfortunately (for you) they are not really the most photogenic items. At least not the way I make them.  That however doesn’t mean that they weren’t delish. Because they were. And for that reason I am still going to share them with you. So please try and look past the horrible photography and trust me that they are worth making.

How is my time off aggravating? I am so bored. And I am not a sit on your butt kind of person.  So I’m sure you’re thinking, well Debbie, get out and enjoy your days! Go shopping! Go sit at a cafe! Go to a park! All great ideas and I thought of them all trust me. But not having a job, kind of actually limits what you can do.  When I go “window” shopping, I end up getting down because I know I can’t actually buy anything.  And all my friends are of course working, so going alone just isn’t that appealing to me. Going to a park and enjoying the weather? Hi, I live in Arizona, where we are already at 100+ degree temperatures.  Not a go out and sit and enjoy the weather.  There isn’t much enjoyment.

But alas. Only two more weeks of this and I am back on my normal schedule. So I’ll survive.

But on to the fun creations I have had time to make!

I know a lot of you have been asking about my banana bread adventure that I teased you about earlier.

It’s finally time for the recipe!

Being bored, Pinterest has been my new best friend.
Talk about ideas and inspirations!

I found a lovely recipe and of course, as per usual, tweaked it a bit to what I had on hand.

(I’ll give you the original recipe and let you know how I tweaked it, how you make it can be up to you)

Greek Yogurt Apple Cinnamon Banana Bread

Ingredients:

• 1.5 cups of whole wheat pastry flour (or you can substitute all purpose flour) + 3 Tbsp
• 1.5 tsp baking powder
• 1/4 tsp kosher salt
• 1 tsp cinnamon
• 1/2 cup brown sugar (or 1/4 cup Xagave)
• 3 large ripe bananas
• 6oz. Chobani Apple Cinnamon Greek Yogurt
• 2 eggs ( I subbed with a 6oz unsweetened applesauce cup)
• 1/4 cup milk (I used vanilla almond milk)

Directions:

1. Preheat oven to 375 degrees.  Start by combining flour, baking powder, and salt in a large mixing bowl.
2. In a separate bowl, mash bananas with a fork until they are gooey and liquid-like.
3. Add eggs, sugar, and vanilla… mix thoroughly
4. Add greek yogurt (and applesauce if subbing)
5. Whisk until everything is well combined and there are no lumps.
6. Pour the wet ingredients into the dry ingredients, and mix until just combined.
7. Pour batter into a greased loaf pan and distribute evenly.
8. Put into the oven and bake for one hour, or until the top is golden brown and a toothpick comes out clean.
9. Transfer to a cooling rack and (try to) let the bread cool for at least ten minutes before slicing.

Ok, to all of you who cook banana bread know this, but seriously. The smell this emits is heavenly.

As soon as this puppy was ready I cut off a slice. I had to. I couldn’t wait. I have no self control.

And of course since I have my stash of PB Crave, I couldn’t decide which one I wanted to top it with, so I just what any normal indecisive peanut butter lover does.

I chose two.

My other baking success?

My spin on Peas and Thank You’s gingerbread clif bars.

I actually followed her recipe really close, but I made mine into muffins. Better portion control for me!

Gingerbread Protein Muffins

• 1/2 c. oat flour (or old-fashioned oats, ground into a flour)
• 1/2 c. old-fashioned oats
• 1/2 c. vanilla protein powder
• 1 T. baking powder
• 1/2 t. salt
• 2 t. cinnamon
• 2 t. ginger
• 1/2 t. nutmeg
• 1/2 c. unsweetened applesauce
• 1/4 c. molasses ( I only used about half this amount)
• 1 t. vanilla
• 1/2 c. non-dairy or organic milk + additional 1-2 T. for icing (I didn’t make the icing)
• stevia to taste (optional)

Directions:

1. Preheat oven to 350 degrees.  Lightly grease or spray an 8×8 pan with cooking spray and set aside. (or muffin pan)

2. In a large bowl, combine oat flour, oats, protein powder, baking powder, salt, cinnamon, ginger and nutmeg.

3. In a smaller bowl, combine applesauce, molasses, vanilla and milk.

4. Add applesauce mixture to oat mixture and stir until just combined.  Add stevia to taste, if desired.

I had made these once before using the full amount of molasses and used chocolate protein powder.

I must admit, this round, way better.

I also liked how perfectly portioned they were for me! An awesome post/pre workout snack.

I did a post about doing a random act of kindness everyday. I think it’s a great idea. Big or small, you never know how your actions impact another’s life.  You taking that extra second to hold open the door could totally change a person’s mood from sour to sweet.  Picking up what someone dropped and letting them know (I did that with a lady’s sunglasses in line at the supermarket and I can’t tell you how thankful she was, seriously, it was just her sunglasses).  Regardless of what it is, taking that extra second can make you feel better as well.

Hello loves.

It has been so lovely not having to study and read 24/7. I almost don’t know what to do with all my spare time. It’s funny how when you’re go go go all you want to do is relax.  And when you’re able to relax, it’s like, well now what do I do with myself.  But it has been nice to actually be able to get some cooking and baking done.

The party we call What I Ate Wednesday.

As I mentioned before, I have a general class this month, which I am actually auditing so it doesn’t even count, but that means I am back to 7am classes. Yay. (note sarcasm).

I really don’t mind getting up that early, but it totally messes with my schedule.

But I learned last time I had an early class of what works for me.

Smoothies for the ride in! I can’t have a full breakfast that early, it just doesn’t work for me, but a smoothie tides me over until I can have a proper breakfast.

Monday Matt and I made a Trader Joe’s run and I made sure to stock up on some frozen berries! And a few other things of course.

I seriously can walk into that store for one thing and come out with 20. It always happens.

(For example all those pizza making ingredients. Not on the list. O’well. Worse things could happen.)

This morning’s smoothie was a lovely one. I missed smoothies.

In the mix:

1 cup vanilla almond milk

1/2 cup frozen mixed berries

1/2 cup frozen strawberries

huge handful of spinach

1 scoop chocolate protein powder

2 tbsp oats

a generous scoop of PB Crave Coco Bananas peanut butter

Oh my was this thing delish.

But adding peanut butter to anything really does the trick.

My smoothies always looks gross, but I promise you they are super tasty.

I guess I was missing my normal breakfast’s because for lunch I had breakfast.

Egg white sandwich with lots and lots of blueberry jam.

Oh, you didn’t know I was obsessed with jam?

Now you do.

And dinner.

Oh loves, I have been doing so well with challenging myself.

I actually made the decision to go out. And no, I didn’t choose my safe sushi.

I chose Mexican food.

After my first challenge with my nutritionist, I remembered how much I loved Mexican food. And yes, I can make 100′s of Mexican recipes at home, but honestly, as good as a cook as I like to think I am, nothing beats going out.

So that’s what I did.

Like normal people right? Right.

And I did not regret it at all.

We had decided to try a new to us Mexican restaurant, Blanco Tacos & Tequila. I actually got a coupon for 25% off for Memorial Day.  The company owns multiple restaurants in our area and I had been to another one (True Food Kitchen) before, which was amazing, so I had high hopes for this one. It did not disappoint.  One thing the company prides itself on is using natural, fresh ingredients.

On the way to the restaurant Matt and I had both gotten a text from a mutual friend. With good news. Her boyfriend had proposed and they just got engaged!  We are both so excited for them, they are both amazing people.

There was a short wait when we arrived, so we ordered a few drinks and then sent this to our friend.

For as busy as the restaurant was, I was super surprised at the quickness of service.  I really think we got our food 10-15 minutes after we ordered.

Didn’t even really have the chance to enjoy these bad boys.

For dinner, I chose the chicken burrito.

Served with a side of rice and vegetarian black beans.

I don’t know what sauce they cooked the chicken in, but this thing was ah-mazing. I had to make sure I paced myself because I was shoveling this in my mouth.  The beans were also really good.

Matt ordered the carnitas tacos.

Served with a side of rice and he opted for the pinto beans. (We both agreed my black beans were better)

But everything was so good. So glad I made the decision to be a bad American and get Mexican on Memorial Day!

Let’s start out with how excited I was to get this package. I texted this picture to quite a few people to brag.

This was the Cookie Nookie.  And there was a party in my mouth.  I was so excited about it, as soon as Matt walked in the door he got one too.

He didn’t complain. We had a Cookie Nookie night. (Keep your mind out of the gutters) (Or don’t)

Here’s the dish of what I personally think of the flavors.

Cookie Nookie

I was surprised, but not in a bad way with this one. I think I was expecting like a Trader Joe’s Cookie Butter taste, but instead I got a peanut butter with a hint of cookie mixed in. Which I liked. It wasn’t too over-powering and you still had that amazing peanut butter taste.  I am a huge fan of plain o’simple peanut butter, so this was a good thing to me.  It’s all about balance.  A win if you ask me.

Coco Bananas

By far my favorite! Go figure. I mean honestly, I could turn into a banana I eat so many of them.  Two of my favorite things mixed together.  The banana taste in this one is actually really strong which kind of surprised me.  Again, not in a bad way. I really really enjoyed this one. Double win.

Choco Choco

I don’t even know what to say about this one. I mean come on guys. Peanut butter and chocolate. Do I even need to tell you how amazing it was? I don’t think I do. I will just leave it at that. If you don’t like chocolate and peanut butter mixed together you can go ahead and stop reading my blog. Ok. No. Don’t stop. I’m sorry. Everyone has their own tastes right? But seriously. If you do like chocolate and peanut butter (and I still think you’re crazy if you don’t) then you will love this flavor.

Razzle Dazzle

Ok, Hannah will call me crazy, but this one was the least of my favorites.  Now it’s good, don’t get me wrong, but I almost feel like the raspberry taste in this one is a little…too raspberry and a little too fake?  I don’t know that fake is the right word, but I love raspberries. Love them.  So I wanted like that fresh raspberry taste mixed in with peanut butter.  Maybe I am being too hard on it and I will totally give it another try, but everyone else loved it. So maybe it’s my crazy taste huh? Way to eat my own words.

I was also a very nice school mate and decided to share with my girls.  It was Friday, the day of our final, so we all deserved a treat right?

I quickly texted all three of them to see what flavors they would like. (They are totally use to me bringing them snacks) Usually when I text all of them, it takes a while to get responses from all of them.

All I had to do was send them the above picture and I seriously almost instantly got responses from each of them saying what flavor they wanted.

I laughed a little.

Jessica and Anna wanted Cookie Nookie and little miss Hannah wanted Razzle Dazzle (she loved it, so maybe I’m just crazy)

You know what’s great about bringing snacks like this to friends? I get to lick the knife.

And stick my finger in the jar.  Let’s be real. Who can resist.

Hannah seriously scarfed hers down before we remembered we wanted to take pictures.  Thankfully Anna and Jessica stayed behind a bit to help the teacher, so by time they got theirs I remembered.

It’s the end of April and what does that mean? Other than this year is going by crazy fast! I’ve been in school for 6 months already, can you believe that! Oh my gosh, has it flown by!

-The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month. 
-Foodie Penplas is open to US & Canadian residents.  Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa.

This month, oh man did I get lucky.

The lovely Sarah at The Smart Kitchen was who was sending a package to me.

Ok. I follow this girls blog anyways, and let me tell you, I have seen some of the goodies she whips up.

I knew (or shall I say hoped) I was in store for some delicious home made goodies.

I was right. So right. And so happy.

I have everything shipped to Matt’s work and sometimes it’s torture when he tells me I got a package and I have to wait until he gets home to open it.

Remember my last Foodie Pen Pal when I couldn’t even wait and opened it at his work?

Yea, I’m like a 5 year old.

But let me tell you and soon as he walked in the door I grabbed the box and ripped it open.

It was hard to take the time to photograph everything, because I wanted to dig in to so many things.

(It didn’t help it was dinner time too)

But I actually had some restraint.

Here is what the lovely and very generous lady sent to me.

Oh my gosh. Drool.

But the fun doesn’t end there.

Ok seriously? This girl speaks my language.

We all know my obsession with jam. Fig and Strawberry preserves? Yes please.

I have been dying to try the Biscoff spread. New addiction? Thanks Sarah.

It didn’t last long.

It started with this.

Then it quickly progressed to this.

These cookies are dangerous.

And were gone.

Quickly.

We obviously hated the cookies.
