Friday!

Oh my goodness, I don’t know about you, but this has been one of the longest weeks ever.

For me at least it is because I had Monday off and had to work the rest of the week. It was wonderful having two days off in a row, but I am telling you, it makes the rest of my week so long.  But Friday is finally here and even though I work Saturday, there is still always a little joy in it being Friday.

Also with Friday comes the fun little link up of #strangebutgood eats with Laura.

I haven’t participated in a few weeks basically because my eats have been on such a repeat that I haven’t made anything noteworthy.
And really this dish isn’t too strange, but a new twist on an old favorite with a new ingredient obsession.

Carob.

I swear ever since I ordered this in my Swanson Vitamin order, I have been adding it to everything.

So it may be no surprise that this happened.

Carob Plantain Bread

Topped with a mocha protein frosting using my Click mocha protein, sprinkled with coconut shreds and a local granola mix.

Ingredients:

– 1 medium ripe plantain

– 1/4 cup egg whites

– 1/4 cup vanilla almond milk (or milk of choice)*

– 2 tbsp carob powder

– 1 tbsp chocolate protein powder (I used BSN Lean Chocolate Fudge)

– 5-7 drops liquid stevia

* I’ve  been making my batter a little bit more thicker lately, it makes more of a dense bread, but feel free to add more almond milk if you need to thin out your batter.

Directions:

– Pre-heat oven to 350 degrees

– Blend all ingredients in a small blender or magic bullet

– Bake for 20-25 minutes

Mocha Protein Frosting

Ingredients:

– 1/4 cup plain greek yogurt (I used Chobani)

– 1/2 scoop Click mocha protein

– almond milk to thin (I use Silk unsweetened vanilla)

Directions:

– Mix all ingredients in small bowl until blended.

– Add almond milk in small amounts until desired consistency.

I think it can go without saying that this was amazing.

I have nothing more really to say other than if you haven’t tried carob powder, try it.

If you haven’t made plantain bread, make it.

Hello friends.

I’ve been trying to get a little bit more creative with my work day breakfasts. If I have enough time I’ll try and make something a little more involved as opposed to when I am running out the door and literally am throwing together a pb&j.

A few more healthy poptarts have been made, not as pretty as the first, but just as tasty.

It starts off being made at home.

I used my new Cellucor Cor-Fetti protein to make a protein frosting for the top. I will say I was not as huge as a fan of this flavor as I thought it would be considering all the rave it was getting, but it is slowly growing on me. Honestly, I have to add a little bit of  a different flavor protein, whether it be vanilla or chocolate, and it makes it much better.

But sometimes breakfast actually makes it into the clinic to be eaten (in the storage room – still super classy). So of course that needs to be documented.

For this healthy poptart I really was just so happy with this marshmallow mocha protein frosting. Sometimes I wish you could taste pictures so you could understand how delicious this was.

Speaking of delicious. I try and take advantage of my one day off and make a more involved breakfast.

It of course involved plantain bread. If you had any doubts.

This was a carob* infused plantain bread base (obsessed with carob powder) and topped with vanilla protein frosting and sprinkled with coconut shreds and local granola mix.

And just in case you didn’t know chocolate + coconut = amazing.

I also somehow managed to make a few amazing dinners as well. That is a rare event that happens few and far between these days.

I had some Trader Joe’s chicken strips that needed to be used and it just so happened some Trader Joes Thai Curry sauce sitting in the fridge.

I cooked up some rice (mixed with hoisin sauce) and added some of a frozen mixed veggie blend that also needed to be used and called it dinner.

Seeing a trend? Sometimes the best meals are made from cleaning out the fridge and freezer.

christmas treats and new product obsessions

Happy Wednesday friends!

I hope you all are having a wonderful week so far. I had yesterday off, which I was so thankful for. Monday night at work about a half hour before we were closing, we got a call for an emergency surgery that was coming in. Typically we send them to an emergency clinic when it’s that late, it is kind of up to the doctor that is there if they want to do the surgery or not, but it was a rescue that we work with and they couldn’t afford what the emergency clinic was charging, so our vet told her to bring the dog to us. Yes, it was a long night, but it makes me realize why I am in this field.  We don’t have your typical 8-5 schedule and we rarely get out on time, but we save animals lives and that is totally worth the stress and exhaustion. But like I said, I am glad I had the next day off because I was indeed exhausted.

I had plans to do some Christmas shopping, but I am not going to lie, I laid around the house most of the day.

I did however finally decorate our Christmas tree!

We are huge Colts fans, but one of my best friends is a huge Bears fan and this was our Christmas gift from her a few years ago. Every year they go right next to each other!

I had stocked up on a few items I know I love like the Bragg’s Liquid Aminos and PB2, but I also got a few new to me items I had been wanting to try. Carob Powder and Tahini being two of the biggest. Which by the way I am already addicted to both of them. I also got a new peanut powder with cacao and english toffee sweet drops.

I of course had to use them ASAP and incorporated a few into my breakfast the next day.

I made a carob powder infused plantain bread and topped it with the cacao peanut powder.

It was ah-mazing.

I seriously think I am obsessed with carob powder already.

I also mixed a little tahini with vanilla protein powder (inspiration from the genius twins – i need to add banana next time…) and spread it on another slice. Not pictured because I was way too hungry and really wanted to eat this deliciousness.

And believe me, it was delicious.

And since I was stocked up on some of my favorites, I was able to make this amazingly flavorful dinner.

There were so many things I have been craving that I hadn’t been able to make, so since I was stocked what did I do? Make everything.

I finally was able to make my spicy peanut sauce again now that I had more liquid aminos and peanut flour.

That went on top of the chicken.

Ah-mazing.

I made a carob engish toffee infused whipped cottage cheese mixture that I topped my perfectly roasted kabocha squash with.

And I of course topped my burnt roasted brussel sprouts with a drizzle of organic mustard.

Everything on this plate was pretty much amazing.

And when I’m not eating deliciousness at home, I’m eating tons of goodies at work.

Oh hello loves.

This week has already seemed like a very long one, but because of very unwelcome reasons.

I believe I had gotten food poisoning over the weekend, and with trying to spare you the very gross details, I have never felt that sick, been in that much pain, and thrown up that much in a very long time. You know those pains where you just cry because it hurts so much and there is nothing you can do about it?

Yup. That was me.

I have no idea what could have caused it, however I have a few suspects in mind, but I will say those were the longest 3 days of my life.

Thankfully I feel like I have overcome it and even though my stomach is not 100%, I definitely have my appetite back, but I am playing it safe and sticking to bland foods.

So with that being said, I bet you are wondering how this What I Ate Wednesday is going to work this week.

Well for once I can actually give you a look at a days worth of eats, but still keep it themed.

What I Ate Recovering From Food Poisoning

After I was done emptying all the toxins from my body it took awhile for me to even begin to think about eating.

I woke up feeling decent, and made the mistake of having a normal breakfast.

Since it was one of my only days off, I almost always feel like I need to make plantain bread because I don’t get the opportunity that often.

Well big mistake. my tummy was not up for all that and I’m sure all the protein frosting didn’t help either.

Let’s just say I was in a lot of pain that morning and paid for my mistake.

When lunch time rolled around, my body knew it was hungry, but I had absolutely no appetite or desire to eat.  I also had no intentions of getting off the couch.

Insert best fiance ever.

He cooked me up some soup served with fancy saltine crackers on the side.

Amy’s Organic Vegetable Barley Soup is one of my favorites, but sadly I could only eat about half of it before my stomach started to fight back.

I did however finish the saltines. Those seemed to help soothe the belly a bit.

I basically avoided food like it was the plague the rest of the day and after eating what I thought would be stomach friendly foods and failing, that night I took a risk.

Back when I was in college when I had horrible hang overs and was nauseous my secret cure was Taco Bell.  I can’t explain it, but it was the only thing I could eat when I was sick. Well, I didn’t really want Taco Bell, but I thought greasy food might actually be worth a shot.

So yes kids, we ordered pizza.

I kept my toppings light though, I did half with feta cheese and half with green peppers.

I played it smart and even though I was starving I ate one piece just to see how my stomach would react.

Things started off good, but about 10 minutes after I ate it, the tummy started talking again.

It may have only been 8pm, but I just went to bed. I was sick of feeling sick and sleep was really the only way to avoid it.

I ended up calling off work the next day which I hate to do, but if I was going to be in any shape as I had been the last two days, I would have been worthless anyways.

That morning I felt a lot better than I had the previous days, but I still decided to play it safe.

Breakfast was simple toast topped with Earth Balance spread and a drizzle of local honey.

It was so simple, and so delicious.

I didn’t take a picture because it just wasn’t that photogenic, but instead of risking eating dairy (and me being the habitual dipper I am) instead of my yogurt I whipped up a chocolate banana soft serve. Which was ah-mazing.

Finally around lunch time on day 3 I started to get my appetite back. Oddly though I was craving simple and for some reason veggies have seemed repulsive to me. Which for me is odd, because I always crave veggies.

So for dinner, I went with a craving and had a simple dinner of roasted kabocha squash.

It was all I wanted. So I went with it.

Brushed with coconut oil, sprinkled with cinnamon and roasted. Then topped with my coconut cookie dough.

Nothing fancy, but it hit the spot and I didn’t get sick. Yay!

And with that I am happy to report I believe I am almost back to normal, and let me tell you how happy I am for that, because not having an appetite is no fun for this food loving girl.

You guys know I am a huge snacker and cracker lover, so when I saw these Exotic Rice Toast I had to try them.

They are amazing plain, but I of course added a secret not so secret ingredient topper.

I definitely want to put some cheese or savory dip on these crackers since the sesame flavor is so strong.

I have been seeing so many recipes using coconut that I have been dying to make, but before I dove into all that, I made my own creation.

Instructions

  1. Preheat oven to 350 degrees.
  2. Blend all ingredients in magic bullet or small blender.
  3. Bake in oven for 20-25 minutes.
  4. For cinnamon swirl: sprinkle cinnamon on top of batter before baking.

Notes

If not using a liquid sweetener you may need to increase the amount of egg whites or use almond milk to thin out batter.

This bread came out so much thicker. I loved it!

I of course had to sprinkle more shredded coconut on top.

I really loved everything about this plantain bread and couldn’t have been happier with the results.

I can’t wait to try the coconut in more recipes, but I really think I’m just going to make this bread again.

Hello my loves.

I hope you all are having a wonderful weekend! I of course worked on Saturday which is never fun, but I am looking forward to having today to relax a little bit.

I really wish I had something fun and exciting like a new recipe or adventure to share with you, but I just don’t.  So I thought instead I would share with you some of my Instagram highlights.

It’s better than nothing right?

I guess that’s yet to be determined.

Since I rarely have a morning off I rarely have time to make fun breakfasts. But on my one day off this week I made sure to make my plantain bread as I was having huge withdrawals, but the show stealer of the breakfast wasn’t the bread (even though it was amazing) it was a new topping. You guys may have noticed recently I have a huge CocoCardio obsession, adding it to almost everything including my red velvet hummus and red velvet plantain bread, but I recently added it to my chocolate peanut butter tofu (basically replacing the cocoa with the cococardio) and topped my plantain bread with the new spread.

I actually usually have a huge issue with making kale chips, I either burn them or don’t cook them long enough. Lately I have been spot on. It’s been pretty amazing.

More good things that have been happening? I’ve been spoiled by friends.

First the neighbors sent me a text telling me they had cupcakes for me.

We all like to look at pretty food. I know I do. I may not be the best food photographer, but I do try to at least put some effort into making my meals look presentable.

Especially when What I Ate Wednesday rolls around. There are so many amazing eats being show cased and I always feel the pressure to step up my meal game.

But I made a confession on Instagram recently about how not so glamorous my meals are.

Especially when they are eaten out of tupperware in a car.

This was a Thomas Pumpkin English Muffin topped with a mix match of everything I could think of.

One half topped with Plant Fusion protein frosting mixed with CoCo Cardio. The other half topped with half peanut butter and half of my red velvet hummus.

Sometimes when my meals aren’t photo worthy I  like to have fun with them.

Thankfully this week seemed to go by a bit quicker than last week did. The weekends still seem to go by too quickly, but whoa is life right?

But since it is Friday, that means it’s time to get strange.

I have so many shocking things to share with you guys today.

And I say that with the utmost amount of sarcasm.

My #strangebutgood contribution is anything, but a surprise.

I had a bunch of banana’s go super ripe on me super quick. I hate when that happens.

I don’t have time to go to the store every few days to get banana’s (because honestly I have to have at least one banana a day) so I try to buy greener ones so they have time to ripen. But sometimes with the weather and the humidity in the apartment, they just ripen faster than I expect.  I freeze some, but others I like to make banana mash dips with.

I’ve made banana/nut butter spreads and sometimes just plain banana mash, but I decided to get a bit creative one morning when creating a new sandwich topper and filling.

Thus the creation of Banana Cream Cheese.

Just another simple mix.

Ingredients:

– 2 tbsp cream cheese

– 1/2 very ripe banana

– 2-5 drops vanilla SweetLeaf drops

Directions:

– Place ingredients in small blender/mixer – mix until well blended

I first topped a simple piece of Silver Hills Bakery Hemptation toast with it and sprinkled a little cinnamon on top.
Because honestly, cinnamon makes everything better.

Staying classy, eating in the car, but look at that up close ooey gooey cream cheese sandwich goodness.

I’m clearly excited about it.

It was early, I was tired, this is what happens.
