I love being an adult don’t get me wrong.

Sure there are times when I miss my college care free days, but something about actually having responsibilities is gratifying.

And what was life before being 21? I don’t know.

No secret I love my beer.

And like I mentioned in my last post, I love Halloween, but it’s a holiday that makes me miss being young. Being able to actually enjoy the holiday, dress up, go trick or treating, or even just making fun snacks for parties. Life now is just too busy, too stressful and I am just so dang tired.

So with the holidays coming up I wish I had some fun tasty new recipes to share with you, but honestly I just don’t have the time.

So for What I Ate Wednesday you are stuck again with my mundane day to day eats.

But it’s better than nothing right?

Only having one day off work really makes my breakfasts boring. I’m not shy about the fact that sometimes I have a simple PB&J multiple times a week for breakfast.

So when the bittersweet moment of an empty nut butter jar presents itself, I get an initial wave of sadness because my beloved nut butter is gone, but it’s soon followed by the joy knowing I can make OIAJ.

I’ve been keeping my oat mixes simple lately. This batch actually had a mix of a bunch of random grains to try and bulk up the nutrition a bit.

It was a mix of rolled oats, quinoa, buckwheat and chia seeds.

I also kept the flavor profile simple by just adding some vanilla protein powder, vanilla stevia and of course my overload of cinnamon.

Topped with my mandatory frozen banana, hemp hearts, sliced almonds and a few raisins.

I got very lucky this week though in that I had two empty nut butter jars to use.

The simple fact that the oats were in a PB Crave CoCo Banana jar makes it epic enough, and thank goodness for that, because the mix inside was a little boring.

I tried to dress it up with some local farmers market granola, but the peanut butter stole the show on this one.

So after my delicious breakfast’s of OIAJ, it made me realize how sick of having sandwiches for breakfast I was.

So I decided to switch it up a bit.

I use to have my powercakes for breakfast almost every day and like most of my ruts got sick of them and moved on to a new breakfast rut.

I decided to bring the powercake back!

But with a green twist!

I added kale to my original powercake base, filled it with some melty peanut butter and Click protein frosting then rolled it up into a nice little powercake roll.

This was so good, I decided to make another one the next morning.

My first powercake roll was a bit on the thin side, so for this batch I added a little bit of coconut flour to bulk it up a bit.

Worked perfectly and was amazing topped with my homemade banana coconut butter.

Carbs. Veggies. Healthy Fats. Protein.

A very complete and delicious breakfast.

I’m still trying to make myself switch it up for dinners.  I have made some tasty meals, but they sometimes just don’t come out as pretty as they taste.

I almost don’t want to post this picture with how non appetizing it looks, but I assure you, it tasted amazing.

I’m trying to use up items I have in my pantry and saw package of the Trader Joe’s spicy seaweed salad. I am addicted to authentic seaweed salad, but this is a nice switch up when I want something a bit spicier. And cheaper.

I then took a package of tuna and used a little bit of the seaweed salad sauce and Bragg’s Liquid Aminos and cooked it in a skillet for a few minutes.

Ugly I know, but it was delicious.

This really made me want sushi though. (but when don’t I want sushi) And thanks to Jenn who just posted an amazing how to make cucumber rolls, I just had to try it myself.

I tried really hard to cut the cucumber correctly, but it just didn’t happen. I was so close.

So these turned into cucumber sushi boats.

But they were still delicious and that’s all that matters right?

I made a spicy tuna mixture of tuna, sriracha, dulse flakes and Bragg’s Liquid Aminos, added some carrot strips and then drizzled it with my spicy thai peanut sauce.

May not be in roll form, but like I said, it was delish none the less.

So even though being a busy adult makes holiday’s less fun and I can’t partake in a lot of the activities I use to, I still have all of you and internet to live vicariously though.

I just wanted to pop in real quick to spread some love with you guys.

If you follow me regularly you know when I find a product I love, I love it. And use it all the time.

I swear once I get on a kick of something, I repeat it over and over until I finally get sick of it.

Lately I’m sure you’ve noticed it’s plantain bread with protein frosting.

I’ve made so many versions of this bread it’s ridiculous, but one thing I am pretty consistent with when it comes to my toppings is one slice always has a certain protein frosting on it.

That dark brown spread that appears in almost every plantain bread picture?

That would be my Click Mocha protein frosting.

I swear after the first time I tried this product I was hooked. I love coffee. I love protein powders. This product was made for me.

I took a piece of Julian Bakery Paleo Coconut Bread and made a protein frosting out of the vanilla latte flavor, spread it on top and wha-la, you have a perfect carb/protein snack.

Since I typically work out first thing in the morning, these quick snacks work great for me.

I get my carbs, I get my protein and then I also get a little espresso to get me going.

Both flavors are absolutely amazing and they even offer a decaf variety if you don’t want the espresso kick.

And if you have a little more time on your hands, it can be part of a semi-fancy breakfast.

I again took my traditional chocolate/pumpkin powercake, added Click protein powder and then I stuffed it with whipped protein cottage cheese, topped it with a peanut butter drizzle and finished it with fresh peaches.

An already amazing dish made even more amazing with the simple addition of some espresso protein. Seriously. You can’t go wrong.

Overall, I am pretty much obsessed with this product. I love when I find a good protein powder because there are so many duds out there, but this my friends is not one of them.

This is going to be another short and sweet post because as I said in my last post, I have been so unmotivated lately and nothing all that interesting has been going on in the world of Debbie.

But it is Monday, and I still feel pretty marvelous, so partaking in Katie’s Marvelous In My Monday is still a must.

Oh yes.

Normal powercake base, but I added gingerbread syrup.

And the chocolate granola didn’t hurt this breakfast either. Nope, not at all.

You know what else was marvelous? Since I had two weeks off, I actually had the opportunity to go shopping.

I seriously don’t know the last time I went to a mall to go actual clothes shopping.

We usually spend most of our time together on our butts in front of the TV or computers, so it was nice to get out with him and just spend the day with him walking around.

I hope everyone had a wonderful Thanksgiving. I know I did.

You know how I know? I didn’t take a single picture.

Ok that’s a lie. I seriously only took one picture.

It was of Matt’s mom having pie for breakfast. Because really, that’s what Thanksgiving is about.

But why the lack of pictures? I was really focusing on what I think Thanksgiving should be about. Family time. Yes food is a huge part of it, but I personally did not want to focus on it and give it more attention then it needed. Because in my world right now, food does not deserve the spotlight.

I sure did enjoy a lot of it though!

To be brief, I am so proud of myself for Thanksgiving, I did not feel an ounce of guilt for what I ate and I enjoyed every last bite of my meals. I ate food not that I thought I should eat, but food I wanted to eat. So did I have that extra crescent roll? Yes I did. And did I have that slice of pie? Absolutely.

Were my mashed potatoes and stuffing pre-packaged and pre-made? Yes there were.

And guess what. I don’t care. And neither should you.

Matt’s parents came down from their little mountain town to do some shopping at Sam’s Club.

I love that place. Sadly I had to work and didn’t join them, but Matt sure did bring home some goodies.

Including huge containers of blueberries and strawberries.

I knew what was on the menu for the morning.

I hope everyone had a wonderful weekend. Mine was nothing special as I worked all weekend, but it was an easy weekend so that is good, and I knew I had something to look forward to.

No school for a week! Woo-hoo! We get a week off for Thanksgiving which is great. I need the mental and physical break from it all!

That also means I’ll have more time to blog yay!

Part of me likes that I kind of put the blog on the back burner, but sometimes I really do miss doing it more often. So today to celebrate the lovely Katie’s Marvelous In My Monday, I thought I would do a quick little survey!

No surprise here. However I did a little spin on my powercake recently and started making them into bakes.

safe foods

What, me posting on the weekend? Crazy I know. The girl I work with on Saturday’s had a family emergency and I am basically waiting around for a phone call for when/if I need to go in. Kind of nice having the morning “off” but kind of stinks not knowing when I’m going to get called to go in. So I’m kind of stuck in the house.  Which on a positive note I finished my project for class and now I have time to write a lovely post.

There actually has been something on my mind I wanted to chat about, so I thought what a better time.

It’s been awhile since I have updated on everyone on my status in my eating disorder recovery. I have been so busy with school and work, it kind of gets put on the back burner. In writing about it and in real life. I have been told multiple times that “I am stuck”.  I am still at a point where I need to gain, I need to challenge myself, but it just hasn’t been happening. I have basically found a new “safe zone”. Now does this mean I am not making progress? No, absolutely not. I have come incredibly far since the beginning.

But one of my new challenges and something I wanted to acknowledge are “safe foods”.  It’s a classic sign of an eating disorder and it’s one of the trickiest.

We all eat what we think tastes good, but one of the down falls with eating disorders is it tells us what to like and what not to like and convinces us that we are making these decisions on our own.

It’s kind of hard for me to actually admit that, because I am a full believer I would not eat something that I didn’t enjoy. And I don’t. The point is there are other things that I do/might enjoy that I do not eat for one reason or another. “not healthy” “too many calories” “too processed” “too high in sugar”

I mean you could make a million excuses on why you choose not to eat something.

But sometimes you have to think about why you really aren’t eating it.

For example. I really like sweet potatoes. And I like making my sweet potatoes sweet.

Yes, I did enjoy this meal, but would I have enjoyed say a regular baked potato with sour cream and cheese? Maybe some chili on top? Yes, it probably would have tasted good, but I decided to choose a lower calorie choice of adding cottage cheese and PB2 as my toppings instead.

See what I mean? I did enjoy this meal. It did taste good, but so would have other options. I resorted to my safe foods.

♥ ♥ ♥

As much as I hate to say this, another example are my powercakes. (this is no way means I’m going to stop eating them, because I freaking love them)

But let’s look at it.

Egg whites. Super low calorie. Super low fat.

I will give myself credit though in terms of having a full complete breakfast. Yes this is a lower calorie option, but I make sure to accompany it with fruit and some sort of carb. The point is of almost all food groups, I choose the lower calorie option. But I won’t ignore the progress of my health I know I need to keep.

Spaghetti squash instead of real pasta?

Yes again, I like the way spaghetti squash tastes, I also use to really like to eat pasta. But let’s be real. Carbs scare eating disorders.

So in conclusion? The whole point behind me challenging my safe foods isn’t completely cutting them out of my diet, but it’s to eat other foods, scary foods. My first reaction was, “well I don’t want to eat a bunch of pre-packaged crap” and what I am continuously told is, they are not telling me I have to eat that food every night, but if I do happen to have it once in awhile, it’s to be ok with it. Which is definitely something I struggle with. I kind of hate how people call these days “cheat days”. You’re not cheating. You’re eating what you like, and if it happens to be a frozen pizza one night, then ok, it’s a frozen pizza. And it’s one night. And if people judge you on that, forget them.

Katie made an awesome Instragram post about wanting the new Burger King treats. And the fact that people even acknowledged that it was “ok” “for her to “give in” or “indulge” or “they know she doesn’t always eat that way“. Who cares if she did? I mean, would she still not be the sweetest person ever if she did have a Burger King item everyday? Pretty sure she would still be the amazing person she is today. (love you girl!) Why do we have to judge what others eat? And how does that define who they are as a person? It doesn’t.

So my point in all this. Yes, I still struggle, but I am working on it. Working on accepting food for what it is. Food. Fuel. Life. And I need to be ok with eating outside my “safe foods“.

And I think I got a pretty good start last night. I mean a whole lot of this happened.

And I mean a whole lot. And I didn’t think twice about it.

I mean. I was with this guy and everything, so how could I care.

I’m doing the best I can to balance and yes I am super busy, but not overly stressed, so that is a good thing at least.

First let’s look at the amazing breakfast I had over the weekend when we met Matt’s parents.
Matt and I have been dying to try this local breakfast/brunch spot called The Breakfast Club.
It gets all the rave. We’ve been meaning to go for some time now, but never seem to have the time. Perfect excuse when the in-laws are in town!

We started with some fresh squeezed orange juice and tea.

I loved how they served their tea!

For breakfast I chose an egg white scramble which I added jalapenos to, fresh fruit, broccoli, tomatoes and a side of cottage cheese.

I had to work so I only got to have breakfast with them, but when it comes to Matt’s parents any time I get with them is worth it!!
