I feel like a broken record when I say this, but I do apologize for my absence.

School. Work. Life. It is just keeping me so busy. And as much as I love blogging, I must admit, if one thing has to take the back burner, this is it. It pains me, but we gotta do what we gotta do.

What products I have been loving lately.

One thing I love about blogging is finding out about new products and companies from other people. And in return, I love to tell you about my favorite new products and companies.

One product I am so super excited about it from an amazing company that I heard of through the lovely Sarah.

Plant Fusion.

I mean seriously, this girl posted so many drool worthy prOAT creations, how could I not try the product. So I did. So glad I did.

And again in true Debbie style, I stole my first creation.

As Sarah coined it. Protein goop.

Now I’ve been making protein goop for sometime now, and to me this defines a good protein powder. If you can mix it with only water, get this wonderful consistency and still have it taste delicious. That is a true winner to me.

And trust me. This stuff was a winner.

I topped a P28 bagel with chocolate protein goop and a fresh peach.

Seriously hit the spot.

(side note, I can not believe how quickly I went through my P28 stash. This bread is seriously amazing. Check out my review on them if you haven’t heard of them, they’re products are amazing!)

I added the chocolate raspberry flavor to one of my power cakes.

Uh, hello amazing.

Not only did it take the power cake up a notch, but I don’t think the peanut butter and chocolate drizzle hurt either.

You want to take about an epic breakfast. This was one.

Protein powders are a dime a dozen these days, but I am telling you, this stuff is top notch.

Top notch enough to where I would buy it on my own. And that is saying a lot.

Another product that I found out through a fellow blogger Tina is  Nikki’s coconut butter. Um yea, me and coconut butter have a love love relationship.

Had to try it.

Again. So glad I did.

Not only was Nikki amazing because when my first delivery got damaged, she quickly sent me a replacement no questions asked.

(Remember how I salvaged some of it?)

But this stuff is seriously crack in a jar.

I ordered the Chocolate Hazelnut Brownie and Vanilla Cake Batter.

Oh my good golly. Amazing.

I couldn’t decide which one to use first.

I used both.

I heated them up in the microwave for a few seconds to get all melty, then added it to a bowl of chocolate protein oats.

Seriously. Not only is this bowl pretty to look at, but it was one of the most delicious things I have eaten in awhile.


And trust me, this stuff is amazing straight out of the jar.

Not that I would know or anything.

It was the perfect drink for after my work outs.

I didn’t drink the whole thing in one serving (seriously these bottles were huge) but split it up over a few days.

how i switched up what i ate

As you’ve noticed I’ve been a bit more MIA again. Why you ask?

Well this weekend I started working part time at my school! I am loving it! It is basically doing animal care and other miscellaneous things, basically what my life will be as a vet tech, just not clients yet, but I am loving it. I love the people I work with, it is so laid back. And finally I am bringing in a little income! The only down side is it totally takes away my weekends, but I think in in the long run it will be totally worth it. I am getting experience, I am doing what I love and it will look nice on my resume when I graduate! We’ll see how pooped I get though.

My vet tech classes have also started back up. I’m not going to lie, I loved that month off, but it’s time to get the ball rolling again!

And getting the ball rolling again means it’s time for What I Ate Wednesday!

I have had some tasty eats lately.

I made two new twists to my typical powercake. Gotta switch things up now and then!

Instead of doing my standard powercake , I made it a stuffed powercake!

Traditional Chocolate/Pumpkin PowerCake stuffed with cinnamon spiked cottage cheese whip. And of course the peanut butter drizzle.

When it comes to eating, I like to make my meals fun, pretty and have interesting combos. It just makes eating that much more fun.

So the addition of there being a creamy stuffing was awesome.

I loved it so much I made it again.

I had made some homemade banana coconut butter in my little blender, so I thought, instead of cleaning out the blender to make my whipped cottage cheese filling, why not use the left over cocnut butter to spice it up?

Best. Idea.Ever.

 Again with the peanut butter drizzle topped with some fresh peaches. (From Matt’s parents peach tree!)

I’ve always said these powercakes will never get old. They haven’t yet.

Another yummy concoction I finally decided to whip up was Laura’s Zucchini Bread Batter.

Sometimes I get nervous to try new things, but thought just do it.

I had half a zucchini sitting in the fridge that was on the brink of death, so perfect timing.

It did not disappoint.

Simple sweet and full of good stuff.

I ate this with a spoon right out of the bowl.

I also dipped a piece of P28 bread in it.

Not that I would mind. I love zucchini.

Other than that meals have been kind of chill and lazy around here. Since I am getting home so late on the weekends my dinners have been quickly put together and quickly eaten.

That’s life though right?

Maybe I can convince Matt to have another one of these nights.

wiaw #48 – desserts happen

It is of course that wonderful time for What I Ate Wednesday.

We’re keeping it up with the fall into good habits theme, which I love.

I love this topic not only because good habits are worth having, but I feel like I’ve had an epiphany when it comes to my eating. I mentioned in my last WIAW post that I am done counting calories and am back to eating whole real foods. I really have been trying to be more conscious about my food and eating clean.

It kind of comes down to more simple meals with real ingredients.

One thing that has become a staple in my house are my powercakes.

My new coconut flour powercake has made more appearances.

♥ ♥ ♥

And thanks to the lovely folks at Kind Healthy Snacks, I have been enjoying some amazing granola on my classic chocolate/pumpkin powercake.

♥ ♥ ♥

I have also been switching up my desserts. I can’t help it I have to have something sweet at night, but I am trying to make it as clean and healthy as possible.

♥ ♥ ♥

My casein power mix has made a few more appearances.

♥ ♥ ♥

I also whipped up (no pun intended) a new flavor of my whipped cottage cheese.

Pumpkin Whipped Cottage Cheese

1/2 cup cottage cheese, 2 tbsp pumpkin, few drops of vanilla stevia.

Sprinkle love of cinnamon, nutmeg and pumpkin pie spice were added too.

I love my spices.

I also have been making my own tofu pudding. I didn’t know how I would feel about tofu pudding, but I like tofu on it’s own and I like basically anything sweet. So how can I go wrong with that?

I didn’t

Chocolate Tofu Pudding

I took 1/3 of a block of silken tofu, 2 tbsp unsweetened cocoa and a few drops of vanilla stevia. Blend then put in the freezer to chill for about a half hour. And you have an amazing chocolate healthy pudding.

And along with my healthy decisions, I believe we all need to indulge a bit. If you read my adventures baking with coconut oil you have seen these, but they were so good, they are worth repeating.

wiaw #47 – back to basics

I hope everyone enjoyed their Labor Day Weekend. I know I did. Because what did I do? A whole lot of nothing. And it was wonderful.

I know a lot of you are probably thinking, but it was the holiday! Why didn’t you go out and do tons of stuff? Well my answer is simple. I am typically so busy and so go go go, that to me, sitting and relaxing is way more appealing to me right now. I just came from the crazy stressful Pharmacology and my next year of classes are going to all be go go go with no breaks. So excuse me while I take this month to sit on my butt!

(Okay so I wasn’t a complete bum.  Matt and I both got hair cuts. We hung out with friends and cleaned a bit)

But on to more important things!

What I Ate Wednesday Things!

I am loving Jenn’s choice of theme for this month because seriously, I think I’ve had an epiphany when it comes to my food choices.
I’ve finally realized, finally, food is not my enemy. And eating all those low calorie alternatives, fake foods, and low fat options are just not good habits. I need to give my body real whole food. Go back to the basics. Because honestly, it just tastes better. And it makes you be creative in the kitchen. Which I forgot how much I love. Yes I’ve been a crazy mad busy women. But I’m done counting calories. Checking every stat on labels. I do however want to pay attention to what is IN my food. Real ingredients. Things I can pronounce. Like.

Sweet Potato.
One ingredient. And I can pronounce it even.
Topped with cottage cheese, peanut butter, granola and cinnamon fairy dust.
♥ ♥ ♥
I also started to re-incorporate and embrace meat back into my diet.
This was a hard one. I was a vegetarian 80% for moral/ethical reasons 20% I found out what crap goes into meat. Ok, actually after I read about the industrial farming, how food animals are raised and slaughtered, it still makes me sick. I still can’t eat red meat. I have re-introduced chicken back into my life, but I make sure it’s quality chicken. As hormone free as I can get.
I noticed a few times after eating out and ordering chicken, my body responded well to it. So I decided to listen.
And I made this amazing thing.

Peanut Chicken Stir-Fry.
Peanut Chicken over steamed veggies marinated in Braggs Liquid Amino Acids, and brown rice.
Nothing short of amazing.
♥ ♥ ♥
And am I the only weirdo who seriously is a bit obsessed with brown rice? And short grain to get more specific? I’m such a texture eater that it seriously makes me happy.
Little things make me happy.

I also got a little experimental with my powercakes. Now I love my original powercake. But I finally caved and bought coconut flour (insert new obsession) and knew I had to incorporate it into my powercake. I did. And it was wonderful.
This thing was delish! Coconut/Pumpkin Spice powercake.
Topped with coconut/peanut butter frosting and some granola sprinkle love.

I also have a new favorite dessert. Since I am actually strength training now and trying to build muscle I am trying to steer clear of my late night carbs. No, I am not cutting carbs. Carbs are amazing for energy and let’s be honest. I’m a bread girl. But it’s not fun going to bed with a bloated carb belly.
Insert, oh wait yes, another coconut flour concoction.

wiaw #46 – sprinkle love and peanut butter goodness

Ok I feel like I have been way super chipper lately, but I really can’t help it.

Not only did I become an aunt, but I am also in an audit class and do not have the stress of school. It is so relaxing I can’t even describe.

If you’ve read a few of my other posts, you know how crazy stressed I was about school. So glad to be able to let my brain relax.

Along with the relaxation time, this girl has gotten back into the kitchen!

So let’s get on to What I Ate Wednesday

And for once I can actually show you some complete eats!

Breakfast started out pretty epic.

I took my new gorgeous PowerCake and added a little celebratory goodness.

Everything is better with sprinkles right?

I think so.

I’m not going to lie, these PowerCakes do not get old. And now I keep adding to the goodness. I do think I need to branch out and maybe try some new flavor combo’s. Now that I have the time the possibilities could be endless!

And I actually  got a little creative with dinner. It is so nice not having to rush the dinner process so it doesn’t cut into my studying time. What has my life become?

I took a spin off of Meg’s Peanut Chicken and made this amazing dinner.

I had bought a pack of yam noodles at the Asian market and have been dying to try them. They are similar to the tofu noodles I’ve had before so to cook them I threw them in the steamer with my broccoli and cauliflower. I marinated it all with some Braggs Amino Acids and crushed red pepper.

♥ ♥ ♥

Here is what I put into my peanut sauce.

Spicy Peanut Chicken Sauce

-2 tbsp peanut flour

2 tbsp water

-sprinkle of cinnamon

-squirt of sriracha

-sprinkle of sweetener of choice

(don’t you guys know sprinkles and squirts are legit measurements?)

Basically season to taste.

I cooked the chicken and at the end poured on the peanut sauce and cooked for a few more minutes to thicken.

It was amazing.

Matt had dodge ball that night, so he was home late, but as soon as he let me know he was on his way home, I quickly informed him I would have dinner waiting for him. Yes, he got the same thing. No, he was not disappointed.  This is a dish that will be repeated.

I am thinking next time I want to either make it with tempeh or tofu. I have been craving tempeh lately!

First off, let me get this off my chest.

Pharmacology is over!

And guess what. Not to toot my own horn -toot toot- but I passed the class with a 94%!!

I am incredibly proud of myself, not only because I got an A is one of the hardest classes, but I got an A in one of the most hardest classes!

I can not explain how incredibly relieved I am for this class to be over and for me have done so well.

♥ ♥ ♥

Going in to the final I wanted to get a good breakfast in. And boy did I get a tasty one in.

One of the most delicious powercakes I have made to date! And one of the prettiest I might add.

It was a special day, I deserved a special breakfast.

It was my typical powercake mix topped with fresh banana, strawberries, peanut butter and chocolate drizzle.


A great way to start my day let me tell you.

One of the bad things about my classes is even on the last day of class we have to stay for the whole class. Which means my teacher waits until the end of the class for us to take our final. Do you know how hard it is to sit through nonsense all day when all you want to do is take your final and be done. The teacher gave us some “study time” which is so pointless because the whole class basically sits there talking about how nervous we all are about the final.

I took the time to fuel up some more brain power.

The topper to my day was our teacher had calculated all of our grades up to the final and how many points we needed to get on the final to pass the class. I guess a lot of people were at risk for failing, so she wanted to give everyone a heads up on what they needed.  Good and bad idea if you ask me. That could put a lot more pressure on people. I went up there and do you know how many points I needed to pass the class. Zero. Yup, I could have not taken the final and still passed the class. Yay for me, really made me just want to go home.  Not that I could ever really do that, it was nice to know though and it took a bit of pressure off. I of course still wanted to do well. You know over-achiever me.

Final over. Ready to celebrate. And I did. I have some amazing classmates and celebrated this with gorgeous creation.

It tasted as amazing as it looks. S’mores cupcake. Oh.em.gee it was amazing. And totally worth it.

I deserved it right?

My next class is a general class, which I don’t even have to take, so I’m basically going to a class that doesn’t count, but let me tell you, I am so excited to be able to relax and not worry for a whole month. So excited.

We went to visit Matt’s parents Saturday and it was so nice to not have to bring my text book and have nothing to prep for.

Matt’s mom is still recovering from her GI upsets (she had to have another surgery) so it was so nice to see her feeling better.

We even went out to lunch to watch the Colt’s game.

Oh little mountain town bars. I love them.

(I didn’t take a picture, but I ordered a grilled chicken salad, that for a small little bar was amazing. Loaded!)

I started off my challenge by having the juice every morning.

Let me say. This stuff regulates you. Well, it regulated me.

Like I said, I never really had an issue in that department, but this definitely kept my body on a schedule. Which I didn’t mind.

The Tropical Green flavor also gets a huge thumbs up in my book. It was basically just like drinking juice in the morning, but this stuff is better for you.

The shots and drinks were good as well. I didn’t consume them everyday since I was drinking the juice everyday, but once in awhile I would sneak one in.

The lemon-ginger flavor was interesting, but good interesting. And I loved that it was sugar free.

And the blueberry acai was amazing. I think these would also be good mixed into green smoothies to add a little flavor and probiotics.

Overall, even if you really don’t have issues in that department, these products are worth checking out!
