Well, not if you have to go back to work today. Which I don’t.

But even if you do, there is always positives in our lives.

That’s why I love celebrating Marvelous In My Monday with the beautiful Katie. It reminds me to stay positive, not focus on the negatives and to live life to it’s fullest.

So let’s recap some positive moments from the weekend. There were a few.

Starting with my Saturday breakfast.

Last weekend our cupboards were pretty bare, so I seriously think I had pb&j for breakfast and lunch 2 days in a row.

But with as many nut butters and jams that I have, this actually wasn’t as boring as it sounds.

Or not so classic Rudi’s english muffin topped with homemade banana coconut butter, more banana and blueberries.

So even though this may look simple and a bit plain, with as much as I love nut butter and jam, this meal to me was not boring and was quite satisfying.

But this weekend I was craving some change and something different. So I made a special trip to the store for one ingredient to satisfy that craving.

Plantains.

Yes, surprise surprise, I missed my protein plantain pizza.

And one of the best toppings ever was my home made banana almond butter. So good.

I stick this back in the oven for a few more minutes after I add the toppings and oh my the melty banana goodness that results is amazing.

But there were more fun happenings this weekend other then my breakfast.

Matt’s parents came down to visit to celebrate Matt’s birthday with him since they didn’t get to see him on his actual birthday.

We met at one of our usual Mexican Restaurants for lunch.

Let’s just say lots of good food happened. And of course Matt’s dad told the waiter it was his birthday, so a sombrero and sopapillas also happened. The staff sang a little song and as soon as they left Matt quickly proclaimed “get this hat off of me it smells funny”. It was a fun afternoon and I love any time we get to spend with Matt’s parents.

Other marvelous scenes from the weekend were drinks with friends,easily amused moments and the discovery of a little liquor store with the most amazing beer selection ever.

Needless to say, I had a pretty marvelous weekend, and the fact that I have today off of work, well that makes my Monday pretty marvelous as well.

I know last week I promised to try and create some new dishes.

I am happy to report that I did not completely fail you.

I had my fair share of repetitive eats. But that is just me, when I get on a kick of a food I like, I tend to eat it until I’m sick of it. And with me, well sometimes that takes awhile.

So this What I Ate Wednesday has a little bit a lot of old and a little bit of new.

It’s really not all my fault though. I blame my schedule for week day breakfasts. My Protein Breakfast Wraps are just so convenient. And I seriously do not get tired of them.  It doesn’t hurt that I have like 10 different protein powders that I make protein frosting with, and since we have an amazing client who brings so much fresh fruit every Tuesday (that I of course fill a tupper ware container full of to take home) my wraps are never the same.

My one constant though is a banana. There has to be a banana.

And then when my weekend’s roll around, trust me I really want to try new breakfasts. I have been itching to make a version of protein french toast, I have about 10 bread recipes I want to try, and drool worthy protein pancake recipes that flood my Instagram have been tempting me too,  but with only two days to make prepared breakfasts I have been falling back on two classics that I know will not fail me.

I have probably pinned about 87347234 of Anna’s recipes over at Protein Pow(d)er, but as per usual me, never got around to making them. My excuse it always “will I eat all of it”. Since I am on such a tight budget, I don’t like to use ingredients if I’m not going to consume the entire batch.

But I finally decided to take the plunge and make one.
Oh goodness. So glad I did.

I of course tweaked it a bit and made some modifications, but you know me, I can never follow a recipe 100%. But I followed this one pretty closely and I will say it is a winner.

But I’m going to make you wait until I share my recipe. Don’t worry. It will be soon.

The powders kind of reminded me of Carnation Instant Breakfasts and yes I could have just mixed them with milk like directed to make a shake, but we all know me and I don’t walk down the beaten path. I of course had to be a little bit more creative.

Since I am still on the Protein Plantain Pizza kick (and don’t plan getting off it any time soon) I decided to use the chocolate as one of my toppings. It mixes quite well and didn’t need much liquid to make the frosting, a huge plus in my book.

So since the chocolate worked so well, I decided I needed a little pink in my morning.

What? Another Protein Plantain Pizza? Yes. But the frosting stole the show.

Not only was this actually quite tasty, but seriously, I love anything pink.

I had to experiment more with the shakes and I am known for adding protein powder to almost…well almost everything.

The next thing I added the Extend shake too was my night time snack.

Strawberry Greek yogurt with a healthy chocolate drizzle.

I took 1/2 packet of the strawberry Extend nutritional shake and mixed it in with plain Chobani Greek yogurt.  I spread the yogurt mix over a Wasa Multi Grain Crispbread and I then made my healthy chocolate sauce (unsweetened cocoa+almond milk+stevia) and drizzled it on top.

Oh my was this delish. Chocolate strawberry goodness. I do believe this combination will happen again.

And then we all know my love for overnight prOATs. So what did I decide to add to a recent bowl?

You guessed it, the Extend nutritional shake.
I used the vanilla and in addition to vanilla nut extract and a sprinkle down pour of cinnamon I had a delicious bowl of oats waiting for me for breakfast.

Topped with the traditional frozen banana, granola sprinkle and some raisins for good measure.

Since these shakes could be used as a meal replacement,  and even though I didn’t use a full serving, it was amazing how much more filling this bowl of oats was.

Another win in my book.

I plan on experimenting more with the shakes, I’m curious to how it would do in baking.

My new version of my Protein Plantain Bread.

It started as a blank canvas.

Ingredients:

– 1 ripe medium plantain

– 1/2 scoop vanilla protein powder

– 1 tbsp coconut flour

– 1/2 cup liquid egg whites

– 1 tsp vanilla nut extract

– 5-7 drops liquid vanilla NuNaturals Stevia

– 1/2 tbsp cinnamon

Directions:

– Blend all ingredients

– Bake in pre-heated oven at 350 degrees for 20-25 minutes

Plantain bread may have been one of the most amazing things I have discovered lately. Plantains definitely went from something I never bought, to something I will be buying a lot of in the near future. Hopefully I don’t become as addicted as I am to kabotcha squash.

But on to other new creations.

Matt and I are really working on having more family meals. We got so use to eating separate meals and not cooking together anymore, and we both really want to change that. So we scoured the inter-webs for dinner ideas, both chose a few and decided to take turns cooking meals.

I went first and chose a Sweet Potato Lentil Enchiladas.

I based it off of this recipe, but instead of cooking them as enchiladas, I just cooked up the filling, pre-cooked some rice, and figured we would just make what we were feeling that night.

Matt made his into corn tortilla tostadas and I made quesadilla’s out of mine.

These turned out absolutely amazing. I used Trader Joe’s enchilada sauce, which seriously that stuff is so amazing on it’s own, that I knew it would make this dish.  But the combination of the sweet potato, lentils and veggies was so so good.

I love Fridays a lot now. Mainly because I don’t work! I love having the extra day off, and since Matt typically goes into work (even though he technically has Friday’s off too) it’s my one day to myself. I love spending time with Matt, don’t get me wrong, but I also love having that one day alone to just relax. I would love to claim that I get things done around the house, but I’ll be honest, I’m pretty lazy and don’t get much accomplished.

Sprint 2 the Table

I actually think I find more inspiration from “strange” recipes than “normal” recipes. What can I say, I like weird food combinations.

I actually have two creations I want to share with you. Both of which I can’t take full credit for, but both totally worth sharing.

First I have to share Lori and Michelle’s plantain bread.

As soon as I saw them post this, I knew it was something I had to try.

I of course made my own version with the flavorings and toppings, but the idea is totally there’s and totally amazing.

Protein Plantain Bread

(based on this recipe from Purely Twins)

Ingredients:

– 1 medium plantain (7-8oz)

– 1/2 cup egg whites

– 1/2 scoop vanilla protein powder (I used Plant Fusion vanilla bean)

– 1 tbsp coconut oil

Directions:

– Blend all ingredients in a blender or magic bullet.

– Bake in pre-heated oven at 350 degrees for 25-30 minutes.

I of course went the sweet route with toppings and made a little protein pizza.

I got about 6-8 acorn squash when I went to the Market on the Move, so I have been trying to use it up.

I pre-roasted a few and on a lazy day I just topped it with some protein whipped cottage cheese and peanut flour drizzle then sprinkled with my Trader Joe’s Coffee and Sugar grinder.

On a not so lazy day I made a cake in a squash.

I know, I’m obsessed with protein frosting, I swear I put it on everything.

It’s not my fault Plant Fusion makes the best protein frosting, and peanut flour sauce is just too good and easy to pass up.

Hey Loves and Happy Wednesday!

I am sorry to report this will be another short visit as I am really trying to focus on my studying. Fun times, let me tell you.

But since it is What I Ate Wednesday and all, I just had to come around and say hello.

Although I am sad to report, I really don’t have a lot of exciting things for you.

I’m lame, what can I say.

I can report though, that on top of being able to strength train, I am able to run again! Not for long periods and not for long distances, which I don’t think I could do anyways, but my nutritionist thinks it’s ok if I did some short runs. Which I’m telling you, is pretty refreshing.

#Proof. Sweat-tastic and loving it.

I am seriously loving being back in fitness and being able to focus on balanced health. Not just food. For so long I dwelled on calorie counting, being in a deficit, reaching that “goal”. Which the goal seemed to always be a smaller and smaller calorie intake. Funny how we want to be in deficit and if we “go over” we’re disappointed in ourselves, and we did something wrong.

The truth is. No. You didn’t do anything wrong. You listened to your body. I think we should all learn how to step away from labels, calorie content, fat content, carb content, whatever it is you focus on and just listen to our bodies. Feed it what it needs, listen when it’s had enough.  Things I think would be so much simpler. Your body is a lot smarter than you think it is.

But speaking of food groups, since I am trying to build some muscles, I have tried switching my breakfast to more protein packed ones.

Ok, so I know this is not the prettiest dish. I mean. You guys know how pretty I like to make my food, but it is seriously so tasty.

Pumpkin/Chocolate PowerCake topped half with my Chocolate Protein Dip and half with apple butter. Swirled together.

As you can tell I had no intentions of photographing it, seen by the missing chunk I ate, but after eating it, I thought, man; I have to share this. I need a picture.

I did best with what I had to work with.
So ok. Not pretty. But delicious.

Oh wait a sec. I did make a prettier one earlier in the week.

This one was topped with cookies and cream protein frosting, blueberries and a sprinkle of granola.

This was pretty tasty as well.

Well, we think Beagle/Dachshund mix, but same thing.

Meet Vienna. The cutest puppy ever. She is one of the new puppies at our school and this dog is just adorable. And a trooper. She took my chest bandaging with a tail wag.

We went to Matt’s parents for Easter and had a wonderful relaxing weekend. Just what I needed.

Things have been so busy for Matt and I; with school for me and work for him, that sometimes it is just so nice to just sit. Relax. And be with family.

But things are back in full swing around here. School is intense. But I am loving every minute of it!

But let’s all take a break, because it’s that time. And I missed it last week, so I am super amped to not miss it this week!

Before we headed out to Matt’s parents on Saturday (PS I love that they only live a little over an hour away now. We don’t have to spend half our day driving. So nice!) we decided to hit up the farmer’s market just to spend a little time outside together. Our days have be gorgeous here! I am loving it!.
So on our bikes we hopped and took a stroll.
As much as I love my bike (totally vintage 50’s) I miss my old bike that got stolen. Stupid kids.

I always forget to take pictures at the farmer’s market (too busy sampling) but the fresh flowers always catch my eye!
If we weren’t on bikes I totally would have taken some home with me.
Or maybe someone will bring some home for me. -wink wink nudge nudge-

My meals however have been kind of blah lately.
Same ole same ole if you ask me.
Thanks to Chobani, I have been quite stocked (however that stock quickly diminishes in this house)
So breakfast’s have included a lot of these combinations.

I love dipping my fruit in my yogurt. To me it’s so much better than mixing it together. Am I the only dipping lover?

Now I know the April challenge is an extra cup of greens, trust me there are no shortage of greens in this house.

Just a little boring.

Matt and I are really trying to be more creative in the kitchen.  But with it being so hot (hello Arizona heat) sometimes we just don’t like to heat the kitchen up.

We are being stubborn and refusing to turn on our air! Although the last few nights have been pretty miserable, I might be the one to break!

But the greens have been coming in this lazy form lately.

Oh yes. Oven roasted broccoli. And yes. I dip it in ketchup. I don’t know what it is. But I love the combination.

No I am not pregnant.

 So although not super green, I made a re-creation of an amazing breakfast I hadn’t had in awhile.

We have a lot of banana’s around here lately and one went a bit ripe.

I’m not a big smoothie protein shake person, I find them non filling, so I decided to use this in something I have recently been addicted to.  You guessed it.  I made protein frosting out of it.

I decided to use the vanilla and used it to top my morning oats.

I had tasted the protein frosting plain before I added it to the oats and I was a bit skeptical.  I’ve never actually used a vanilla protein powder before.  I am typically a chocolate girl, so I was a bit disappointed that it wasn’t more “vanilla-y” tasting.  But mixed in with the oats it was amazing.  And I love having ways to add protein to my carb-y breakfasts.

I was very impressed with Sunwarriors ingredients and process of the making of their protein.  I also liked that it was non-GMO, is gluten free and 100% vegan.  I  am trying to cut a lot of gluten out of my diet, so it was nice to know this.    I also liked that it didn’t have that chalky texture that a lot of protein powders have.  When I made the frosting it had a nice smooth texture.   Perfect for topping oats!  I just love that Sunwarrior is so organic and rich in nutrients and vitamins.  An over all good for your protein, not filled with chemicals and ingredients you can not even pronounce.   Everything is natural, just the way I like it.
