Ohhh Wednesday.
What a tease. Not quite the beginning of the week, but not yet the end.

However, I have been so tired lately it really doesn’t matter day of the week it is. I’m still tired regardless.

So what’s a girl to do when she has no energy?

Make protein energy bites of course!

And thankfully I have my favorite protein powders there to help the cause.

Coconut Mocha Energy Bites

Ingredients:

– 102g combined Drink Click Mocha protein powder + Growing Naturals chocolate rice protein powder (or proteins of choice)

– 3/4 cup almond flour

– 2 tbsp banana flour (or coconut flour)

– 1 tsp baking soda

– 2 tbsp coconut butter (I used Sweet Spreads Vanilla Cupcake)

– 1 tbsp honey

– 15-20 drops coconut stevia

1/4 cup vanilla almond milk (or coconut milk)

– more protein powder or cocoa powder for dusting

Directions:

– Whisk together dry ingredients until there are no lumps

– Add in your wet ingredients

– Mix until well incorporated and dough is formed

– Roll into desired sized balls

– Roll balls in protein powder or cocoa powder (or other desired toppings)

– Store in sealed tupperware in refrigerator

Makes approximately 18-20 balls depending on size

These make a great pre or post work out snack. I sometimes grab a few while heading out the door to work before I have my actual breakfast. I love using the Click protein as it has the added caffeine for a nice energy boost. And I love the mocha flavor in the bites themselves.

This week has been full of highs and lows for me, and even though days of the week really don’t matter to me with my always changing schedule, for some reason the end of this week is a very welcomed one.

We all know my love for protein powder. I have made countless dips, spreads, breads, muffins, pancakes, waffles and added a protein kick to them. And really plain ole protein frosting is a favorite of mine.

But on to the new protein packed creation.

Since I am so obsessed with cooking and baking with protein powders it’s no surprise that I spend countless hours perusing Anna at Protein Pow’s website. That girl has so many amazing creations and I want to make them all.  We all know I can’t follow a recipe for the life of me, but I definitely get a lot of inspiration for creating dishes from her.

This one is no different.

She has posted multiple protein pizza bases and I finally got around to playing around with one of my own.

You can check out her original recipe, but I will of course admit, I did not follow it exactly and used what I had on hand, and adjusted certain ingredients and I’m sure it comes as no surprise, didn’t really measure and threw random ingredients in. Some of the changes I made were I upped my chickpea flour and pea protein amounts and omitted the oat flour, and I didn’t add the ground almonds (only because I didn’t have any) and added in some other random spices.

My toppings turned out to be kind of random as well. I swear I had a can of tomato paste that I was going to use as my sauce, but I guess I was wrong because I couldn’t find it anywhere. To improvise I used roasted red pepper hummus as my sauce, mixed nutritional yeast with cottage cheese for my “cheese” and topped it with baby spinach and tomato and sprinkled more nutritional yeast and spices (oregano and basil).

Since I winged it I really wasn’t sure how this was going to come out. I never really have high expectations when I make something for the first time. I am happy to report it came out amazing!

The crust got so much crispier than I thought it would, and it held together great and even had a nice crunch to it!

Just add this to my list of protein experiments. Actually gone right!

Happy Weekend!

I know I have been a bit absent, but this was a long week for me and I attempted multiple times to get this post written up, but failed each time to actually finish it and publish.  So this post is actually a draft that originally was going to be published Tuesday, attempted again on Thursday, then pushed back once more to Friday and now it finally is getting finished for Saturday.

I really just wanted to share with you guys some fun food finds I have been enjoying lately. I love sharing new products that I am using and loving, because one great thing about the blog world, Twitter and Instagram is finding out about products that we may not have found on our own.

So here goes.

1. Thin Slim Foods

I got the opportunity to try some of Thin Slim Foods and I think they are worth checking out.

I don’t personally follow a low carb diet (this girl loves her carbs) but I think it’s great that there are company’s who cater to people who do.

 They offer a wide variety of products including breads, bagels, muffins, cookies and brownies.

I first tried their everything bagel and topped it with my home made almond banana butter.

It toasted great, but I think it would have been better paired with cream cheese or something savory. I just didn’t have any on hand but it was still tasty none the less and toasted like a regular bagel which was nice!

(edit: since this was originally written I have had this bagel topped with cream cheese and I am happy to report it is 10x better with a more savory topping. You can actually really enjoy the “everything” taste and I loved it!)

If you remember my obsession with The Great Low Bread Company’s squares, Thin Slim Foods offer something very similar!

We all know my love for anything banana. I made a chocolate protein greek yogurt mix to have with this and really chocolate +banana = amazing.

The great thing about these squares is they are a very decent size for just 40 calories! So if you’re counting calories this is a great late night snack to satisfy that sweet tooth.  And since they also have brownies, that’s even better.

Their muffins aren’t your standard muffin by any means, but again if you’re looking for a little snack they are a great option.

Overall I was pretty impressed with these products. I will mention that my cinnamon bagels did get some mold spots shortly after receiving them and I was not able to try them due to not wanting to risk eating a spoiled product.  This could have easily been a shipping issue and maybe not an actual product problem. I’m not sure, but it is something to be aware of.

We all know my love for baking with protein powders and NutriForce has some pretty fun flavors.  You had me at coffee. I’ve been adding this to my protein breads, donuts, and overnight oats. I’m a huge fan of coffee and anything flavored coffee, so this was a fun flavor to add into my breakfast baking. I’m playing around with a coffee protein pancake/waffle recipe, so be on the look out for that in the near future!

They also offer a wide variety of performance products, I think their recovery aminos look great too! Definitely check them out!

It’s not a rare occurrence with me that once I find a new food that I love I become a bit obsessed with it and eat it almost daily.

That’s what happened with my dark chocolate hemp protein muffins.

I can’t get enough of them.

I have tried hemp protein before, but I’m telling you this dark chocolate hemp protein is by far the best I have used.

These muffins are a great addition to any meal.

I hope you all had a wonderful relaxing weekend. For some reason I feel like a lot happened in the short few days, but it might be due to the fact that I had Friday off this week, which is not common for me. So other than working Saturday (which was a short easy day), I had a lot of down time.
Which was just fine with me.

Marvelous Is… Introducing co-workers to my obsessions.

1. Sushi.

It’s no secret that I eat a lot of sushi. I have one particular co-worker who always tells me I am going to become a fish I eat so much of it.  She also really had never eaten sushi, but wasn’t opposed to it. We both actually had Friday off, so I asked her if she would like to go have sushi with me for dinner.

Guess what. She loved it. And yes. She ate it with her fingers. I laughed and said I was sure they had a fork she could use (that or get the child chopsticks!). She opted for the fork.

2. Frozen Yogurt

I figured since I introduced her to one of my obsessions it was only fair to take her for the other.So after dinner we went to our favorite frozen yogurt spot.

I was dumb-struck to find out she had never been to a self serve frozen yogurt place, so she had a blast trying all the flavors! It was nice to be able to introduce her to two new things she had never done and I have a feeling we may be having more sushi and fro-yo dates in the future!

Marvelous Is… Actually following a recipe!

I know seems like an impossible statement coming from this girl, but I was very lucky to have been given the opportunity to try some products from Manitoba Harvest including their hemp protein.

For the longest time I have been wanting to make The Purely Twins chocolate hemp protein english muffin, and I know I probably could have subbed the hemp protein for another protein or even flour, but I just never did.  Well since I actually now had some hemp protein I finally decided to give it a try. And the kicker, I followed their recipe exactly.

Not my best presentation, but I will say I was very happy with how this came out.

I topped it with some maple whipped cottage cheese and as you can tell from the couch background, I didn’t initially have intentions of taking picture of it. But since I was so happy with how it turned out, of course I wanted to share my success!

I love working with companies that truly care about their consumers and really appreciate the promotion and opinions given for their products from bloggers. The Great Low Carb Bread Company is one of those companies.

I have proclaimed my love for their squares that I had the opportunity to sample.

And it was great to hear that the winners of my giveaway loved them just as much as me! I passed this information on to the company and they were amazing and offered to send me some new products they were releasing. (they also were even more amazing and included more of the squares – see what I mean about great companies?)

We all know I am a huge cracker lover, and these were interesting to say the least. First off they’re huge.I tried the nacho cheese flavor first and I honestly loved them.

I’m thinking these would be pretty amazing made into nachos or dipped in salsa. I’m excited to play around with them! Or I may just eat them all plain. Who knows!

Marvelous Is… Random dates with my love

I decided kind of spur of the moment on Sunday to have a mini date with Matt. We had been talking awhile about going to see a movie, so I told him he had 20 minutes to get ready to leave and we were going for a surprise.

We ended up seeing Lego (yes we’re 5) and had a nice little mini date.

Purple potatoes!!

The lovely STUFT Mama has been posting these beauties all over Instagram and I had never seen them in my stores.  I finally spotted them and had to grab a few!

I was blown away at the color when cutting into them and I was very excited to see what they would taste like. I ended up roasted them like I would a sweet potato, cutting them into chips, drizzling with coconut oil and sprinkling with cinnamon.

They ended up tasting more like a regular white potato to me, so I think next time I will take a more savory route with them.

I’m still having fun experimenting with my protein bread. And still loving my Sweet Spreads.

Seriously guys, these flavors are out of this world. So really even if I have a fail protein loaf, topped with this stuff just makes it automatically better.

I ran out of nori and had some broccoli slaw to use up. Problem solved by making a sweet and spicy peanut sauce and marinating the slaw in it.

It.Was.Delish.

For the sauce I just took about 1 tbsp peanut flour and mixed it with maple syrup, a few dashes Braggs Liquid Aminos, a few drops of Sriracha and water to thin. Add ingredients to your preference.

I have been trying to be a little bit more creative with my breakfasts, but one morning I was running so late breakfast turned into “throw whatever I can into a tortilla” It turned out pretty delish. I mixed Growing Naturals Vanilla Pea Protein, Cellucor Peanut Butter Marshmallow protein, some of my cookie dough hummus and sprinkled in some local seed mix and called it good.  It turned out way more tasty than I thought.

I also dipped it in some strawberry greek yogurt. Dipping never hurts.

I have the rest of the week off work, but will probably be more busy running around with my parents.  Should be fun though.

Hello my loves!

I hope everyone is having a wonderful new year so far! I mentioned in my new years re-cap post about not making resolutions or “starting over”, as I feel like life should be one long continuous journey where we are constantly trying to improve ourselves, make new goals and work on them, and try new things. I don’t think we need a new year to start that, however if it’s motivation for you, then that’s great!

My creativity, experiments and surprising successes just happen to coincide with the new year, but I really have Christmas to blame thank as I got so many fun new things to play with.  Regardless, you guys have benefited with some new tasty recipes and delish dishes.  And I’ve had some tasty new treats to eat!

And with that being said, I have another one for you!

I’ve been having a lot of fun with my new juicer, basically throwing random fruits and veggies in and hoping for a good tasting juice, but I really don’t think you can go wrong when you’re using fresh produce and most of my concoctions have been fresh and nourishing. I may or may not be obsessed with fresh juice and don’t know if I can ever go back to smoothies.

I talked about wanting to use my left over pulp and have been experimenting with ways on how to use it.

I shared my fail with my pulp crackers...

I am determined to perfect these because even though they may not have turned into actual crackers per say, they still were pretty tasty. Definite potential.

But before that happened I decided to go around route with some of my pulp and try something different.

With a new mini loaf pan begging to be used back to Pinterest I went to find a good pulp bread recipe.

But let’s be real. Like I ever follow a recipe. I basically look at recipes to get the ingredient ratio’s correct and then use and substitute to what I have on hand and to my taste preference.

This time was no different. I also made the recipe to be a single serving since I hate making big portions with the risk 1. I will not like the outcome and 2. I don’t want to waste ingredients if #1 happens.

However, I was pleasantly surprised when my first attempt turned into a success.

I actually accidentally left out a few ingredients and didn’t realize it until after I had put it into the oven. So I really had no expectations for this bread. So when I opened the oven 25 minutes later I was shocked and pleasantly surprised to find that it actually raised like real bread.  For those of you who have made protein breads before, they typically are pretty flat due to not using much flour.

I don’t know if this was a fluke, an accident, a once in a lifetime thing, but I am so happy it happened. I honestly don’t even know if I re-create this if it will turn out as good, but I definitely took advantage of this success.

Protein Pulp Bread

Protein Pulp Bread

Ingredients

Instructions

  1. Pre-heat oven to 325 degrees
  2. Blend all ingredients together. Add almond milk in small amounts if batter is too thick. This will depend on how wet your pulp is. I only needed about 1tbsp
  3. Pour into mini loaf pan
  4. Bake for 25-30 minutes or until toothpick comes out clean
  5. Let cool. Top with desired toppings.

Even though I was excited to see that my bread looked like..well, bread there is always that chance that once it cools it will deflate. I think letting it cool was the hardest part.  I seriously had to distract myself to get me away from the kitchen.

15 minutes later I decided to give it the test and sliced it.

It was still firm and dense and I was so ecstatic. But would it pass the taste test?

It did!

Even Matt was pleasantly surprised that he liked it. He typically doesn’t like my protein baking experiments, so to get the thumbs up from him is a pretty big deal.

The next big decision was what to top it with.

I started with a no brainer.

Peanut Butter.

And not just any peanut butter. I used my P28 Signature Protein Spread.

Ah-mazing.

And I couldn’t stop there. You know me and my toppings.

And also another test to the bread. Would it be good the next day?

It was!

And even better topped with my Avocado Banana Protein Frosting.

This stuff is good on anything, but why not add more green to green?

I almost don’t want to try to make this again in fear it won’t be a success, but maybe if you guys make it and have the same great results I did I’ll be brave enough to try it.

And if you don’t have a juicer and don’t have juice pulp, I’m pretty sure shredded zucchini or carrot would work in place of the pulp. It’s worth playing around with.

You guys know I am a huge snacker and cracker lover, so when I saw these Exotic Rice Toast I had to try them.

They are amazing plain, but I of course added a secret not so secret ingredient topper.

Especially Peanut Butter & Co. The Bee’s Knees.

I definitely want to put some cheese or savory dip on these crackers since the sesame flavor is so strong.

But I love love love these crackers.

The next item I was super excited about was the shredded coconut.

I have been seeing so many recipes using coconut that I have been dying to make, but before I dove into all that, I made my own creation.

Instructions

  1. Preheat oven to 350 degrees.
  2. Blend all ingredients in magic bullet or small blender.
  3. Bake in oven for 20-25 minutes.
  4. For cinnamon swirl: sprinkle cinnamon on top of batter before baking.

Notes

If not using a liquid sweetener you may need to increase the amount of egg whites or use almond milk to thin out batter.

This bread came out so much thicker. I loved it!

I of course had to sprinkle more shredded coconut on top.

I really loved everything about this plantain bread and couldn’t have been happier with the results.

I can’t wait to try the coconut in more recipes, but I really think I’m just going to make this bread again.

So confession, this week my contribution isn’t all that strange. But it is something I want to share.

I’ve made chia jam before, but this time I stepped it up a notch.

One of our clients at my work always brings us an insane amount of fresh fruit in payment for us boarding his dogs for the day. It’s almost impossible for us to eat it all, so I always take a bunch home. This time I brought home blueberries, raspberries and blackberries, and since they tend to go bad kind of quickly, I decided to make a chia jam out of them.  But my secret twist?

Lemon Stevia and fresh ginger.

Mixed Berry Lemon Ginger Chia Jam

Ingredients:

– 1 cup blueberries

-1/2 cup raspberries

– 1/2 cup black berries

– 2 tbsp chia seeds

– 10+ drops liquid lemon stevia

– Approximately 1/2 tbsp freshly grated ginger (about 1 inch)

Directions:

– Blend all ingredients in a magic bullet or small food processor and lightly blend.

– Place in a jar and refrigerate to allow chia seeds to absorb liquid.

This is great on top of Silver Hills Bakery Omega Flax.

Another #strangebutgood spread that I made that I was not planning on being so good, so appropriate pictures were not taken included more lemon stevia.

I am loving this stuff obviously.

Protein Lemon Curd

Ingredients

(serves 1)

– 1/2 cup cottage cheese

– 1/2 scoop vanilla casein (I use CytoSport)

– 5 drops liquid lemon stevia.

Directions

– Place in magic bullet or small blender (I actually use my coffee grinder) and whip cottage cheese.

I topped a rice cake (sprayed with coconut spray and sprinkled with cinnamon – new obsession) with healthy chocolate sauce (unsweetened cocoa+water+stevia) and the protein lemon curd. So simple, but so delicious.

Well I know you guys are super surprised that I gave you more dips and spreads, but hey, it’s what I’m good at!
