First off thank you all so much for the comments on my cookie post!

It was a lot of work, but a lot of fun! I forgot how much I enjoyed baking.

I had a few requests for the recipe for the Peanut Butter Cookie with the Reese’s Cups so I thought I would post it.

(Modified from Iowa Girl Eats)

Her recipe called for cookie butter and trust me if all the Trader Joe’s weren’t sold out of it I would have used it too.

No really. I called 4 Trader Joes. All out. So you know the stuff is good!

So I ended up buying a new peanut butter to use and experiment with. It was an organic chunky peanut butter made with flax seeds.

And it may not have been as good as if I used cookie butter, but it sure was good.

Peanut Butter Cup Peanut Butter Cookies

(Makes 20-25 cookies)


1/2 cup butter (I used Earth Balance)

1/2 cup Trader Joe’s Flax seed Chunky Peanut Butter (or feel free to sub whatever peanut butter or nut butter you have/want)

1/2 cup granulated sugar

1/2 cup brown sugar

1 egg

1/2 teaspoon vanilla

1 1/4 cups all purpose flour

3/4 teaspoon baking soda

1/4 teaspoon salt

20-25 Reese’s miniature peanut butter cups


1. Preheat oven to 375 degrees. Cream together butter, peanut butter, sugars, egg and vanilla until light and creamy. In a separate bowl, sift together flour, baking soda and salt. Add dry ingredients to wet ingredients in 3 batches, mixing until just incorporated before adding the next batch.

2. Spray a mini muffin tin very well with non-stick spray. Add 1 Tablespoon cookie dough into each cup. Bake for 8 minutes exactly. Unwrap peanut butter cups while the cookies bake.

3. Once the cookies have been removed from the oven, immediately push one peanut butter cup into the center of each cookie. Cool in mini muffin tin completely before removing.

Remember when I said since I had time off from school I would be spending more time in the kitchen? Well. Let’s say meals haven’t really turned out that way.

Let’s just say my new rut has been simplicity.  But not because of laziness or lack of time. It’s been what I’ve been craving.  And you know me and going with my cravings. I feel like you should. And I have. So yes my meals may be a bit boring this time around, but they have really hit the spot.

My breakfast started out, you guessed it. Super simple.

Ok, so I know bread is bread, but I found this amazing new bread at Sprouts.  It’s actually Sprouts brand and it’s an organic whole wheat/oatmeal bread. It is amazing.  Again, I know. Just bread. But it is so thick and just super tasty. I’m in love.

on the side some banana and greek yogurt sprinkled with some cookies and cream protein powder and cinnamon.

Sometimes simple is satisfying. And this was. I was actually full, content, and happy. All good things if you ask me.

Hey guess what lunch was? Super simple.

turkey panini with a side of trader joe’s roasted red pepper soup.

I usually get Pacific’s roasted red pepper soup, but it is just so expensive.  I saw Trader Joe’s had their own, and we all know my love for all of their products so I thought I would give it a shot.  Surprise? Amazing.

again something so satisfying from a simple panini.

But I do always say anything made into a panini is delicious. And it is.

(as we can see my phone is still not fixed. grr)

i have been on a huge bean “quesadilla” kick lately. i don’t know what it is, but they have just really been hitting the spot lately.

Since I don’t use cheese, I try to add some sort of substance along with the beans.  Sometimes it’s pumpkin, sometimes it’s Trader Joe’s black bean dip and honestly sometimes it’s just beans.

-yawn- Boring.

Hello my loves!

Today has been quite a day!

So as a lot of you know today was my first day of school!!

(Read here about my decision to become a vet tech)

And other then the excitement/nervousness of starting school what happens on my way?

I get a flat tire. And I don’t mean a gradual flat tire, I mean my tire basically exploded.  I have never had a flat tire. So of course of all days, my first day of school, I get a flat tire.

Thank God that I am so nervous that I had left incredibly early, and then even a little earlier because I wanted to stop at Starbucks on my way to school(which unfortunately didn’t get to happen) I was so scared because they have a very strict attendance policy and I didn’t want to make a bad first impression, but I had a guardian angel watching over me, because literally seconds after I pulled off a car pulled in and asked me if I needed help.  I quickly said yes and this guy came over with his own jack and changed my tire in probably 15 minutes or less. I couldn’t believe it.  I was so thankful (ps. this guy barely spoke English) and tried to give him some money and a hug, but he really wasn’t having it.  Truly just a good Samaritan. So all things worked out and I still ended up getting to school early.  This seriously happened on the worst of days, but I surprisingly handled it well and it all worked out.  I really can’t thank that kindness of that man enough.

But I made it! And it’s official.

Oh.My.Gosh. I am only taking one class at a time (that’s how they offer it) But take a look at this book load.

there is actually 2 more books to add to this stack that we hadn't received yet.

Matt and I had contemplated whether or not I should get an actually backpack or if my shoulder bag would suffice. I quickly sent him this picture and told him I was pretty sure I would need a backpack! Seriously a great arm workout carrying these bad boys around.

It is a lot of information in a very short period of time, but I am so excited. I am finally doing something I am passionate about!

Today ended up being a very long day too! I had to stop in financial aid to finish some things up and ended up actually not being able to do a lot of it, but ended up staying out because I had a therapy session later in the day and having that spare on I didn’t want to do a lot of driving.  So I ended up heading over early and just read in my car until it was time.  And trust me. I have plenty to read.  Matt came and got my car while I was at my appointment and took it to get fixed.  Love that kid.  I guess all my tires were in pretty bad shape so he ended up getting them all changed.  I seriously am so blessed.  As of late I have really come to appreciate all the good people I have in my life and I am thankful to have quite a few.  Matt being my #1 fan.  His parents being super supportive of my decision to go back to school. And all of my true friends who have been generally concerned and involved in my life. It is incredibly humbling and I couldn’t be more thankful.

after i got home from my walk matt had actually already left for work, but i found this waiting for me on our chair right inside the door! (this picture was actually taken inside my bag. i took it with me and took a little peek before class started to calm me down. instant smile.)

On our way home from my appointment I texted Matt and told him to meet me at our Whole Foods.  I wanted to get him a little treat for being so helpful today.  I let him pick it out 🙂

is anyone surprised he picked beer? i'm not. although that was my intention. i was going to surprise him, but i figured it might be nice to let him pick out what he wanted.

Then dinner was a quick leftover bean “quesadilla”.  No cheese of course with added pumpkin.  I know beans, pumpkin, together?  It’s amazing. Trust me.  Sprinkle some cinnamon in there and you will be in love.

and i have been obsessed with salsa lately. found a really good bean and corn one at whole foods and have been in love. i know it's just salsa. don't judge me. i get excited over little things.

Seriously guys I don’t think I will ever get sick of pumpkin. I mean seriously. We all know I’ve been a little pumpkin crazy lately.

I was so excited today I even treated myself with a little bit of this.

progress sure is tasty. this stuff is seriously to die for. so good.

 I am so glad I am able to treat myself once in awhile. It feels good to be somewhat normal again and not freak out after eating a little bit of ice cream.

Well loves, I must say I am going to be insanely more busy, so I don’t know if I will be posting as often.  I also have some other issues going on that I want to address, but this post is all about positivity and positive changes so we’re going to keep it that way!

Time sure does fly, I didn’t even realize it was party time!

I seriously lost track of time and didn’t even realize what day it was, and I have been completely slacking (again) on taking photo’s of my food.  So how about a few of my favorites? Some recent, some not so recent.

Breakfast Loves

recent obsession = tofu scrambles. this one is a pumpkin variety. pumpkin butter on one half pumpkin infused tofu on the other. fresh peach on the side.

 I went a little pumpkin crazy at one point and seriously put it in everything.

Lunch Loves

one of my most random but most delicious lunches. english muffin one half with chocolate coconut butter (ob-sessed) the other half with chocolate peanut butter and blueberry jam. carrots and oven roasted veggies. oh yea. ketchup to dip. duh.

salad beast. topped with everything in my fridge. sprinkled with dulse and nutritional yeast.

oh how i heart panini's. soy chocolate panini with apple and banana bread hummus. trader joe's vanilla greek yogurt (♥!!) topped with fresh kiwi and strawberries. i miss berry season.

no really. i love panini's. veggie panini with oven roasted veggies and a mini yogurt mess on the side.

Dinner Loves

one of my food challenges, but so good. spinach cheese tortellini with oven roasted veggies in marinara sauce. yum!

simple and satisfying. bean quesadilla (sans cheese) sometimes i get crazy and add pumpkin in there. crazy i know! (sprinkle a little cinnamon too and you'll be in love)

whole wheat tortilla pizza's. Seriously you can do so many things with these. this one has trader joe's bean dip as the sauce topped with baby spinach, zucchini, yellow and red bell pepper and soy crumbles.

I’ve also made number of other varieties including pumpkin/hummus pizza’s and you can of course feel free to use your standard pizza sauce! The possibilities are endless!

wiaw #9 – more pumpkin more ways

I have been super slacking on taking photo’s of my food, but mainly because I am eating very ugly things.  But that is one good thing about What I Ate Wednesday’s because it encourages me to make prettier fun creative dishes.

So thank you miss Jenn, for hosting this wonderful party.  Everyone needs to head over to PeasandCrayons and not only check out the par-tay, but thank the lovely lady for putting this all together every week.

So you think I got over my pumpkin craze? Because I haven’t.

And I found a new way to include it in my breakfast.

pumpkin tofu scramble. oh yes. half a bagel spread with pumpkin peanut butter, tofu mixed with some pumpkin on the other. side of peach.

So glad I decided to mix my pumpkin and peanut butter.  Sometimes some of my weird idea’s work. Ok sounds weird I know. But it was seriously pretty tasty.

Snackage was super fun today, because I used my new Halloween goodies that I had gotten at Target.

isn't it just that much more fun to eat with mini utensils? especially ones with little pumpkins on them?

small yogurt mess. plain greek yogurt mixed with chocolate protein powder topped with pineapple, cherries, raspberries and some maple sunrise for a crunch!

I have been having more simple lunches lately.  Trying to find combinations that keep me full.  Which is still very hard for me and very frustrating.

I find the addition of the soup actually fills me up a bit more. I’ve never had butternut squash soup and am so glad I decided to try it. So good.

the kale chips weren't as crispy as they normally were, but i burnt the first batch i made with this kale and i think i was just nervous i was going to do it again. but none the less they were good.

Dinner, was ugly ugly ugly, but so so good.

I made kind of an upside down vegetarian shepherd’s pie to give it a name if I have to.

i later added some vegan gravy. everything is just better with gravy.

I’ve noticed my meals have kind of become a hodge podge of items, anything to keep me full.  I’m not sure if that’s a good or bad thing, but I am so sick of not being full or satisfied after a “normal” meal.

i mean seriously, this was a lunch, but i'm trying really hard to get proteins, fats and carbs into my meals.

Random combinations, but so tasty.  I don’t think just because something is classified as a “breakfast” food or “lunch” food should determine the time of day I can eat something.  My body clearly doesn’t know the difference. Food is food.

dun dun dun – giveaway winner

First thing I want to talk about is something I feel very accomplished about.

My nutritionist had given me a goal to go out to eat to a place I use to love.  I had chosen sushi, which really shouldn’t be that scary.  Sushi after all can be very good for you.  However I had to order what I normally would have ordered before my ED.  So spicy tuna roll and all.  I however failed this task, and it wasn’t only fear, but a lot of things actually played in to why I didn’t go.  I had a very rough body image week.  My hunger and hunger cues were just off all week and I never felt comfortable going out.  Also if you’ve been reading my past posts you know that Matt and I are really starting to struggle financially, so going out to eat really wasn’t an option due to lack of money.  Although I know he would have made an exception if it would help me in my recovery and maybe I used that as an excuse.  But all in all, going out to eat did not happen.  So when I saw my nutritionist the next time she told me that her and I would be going out to lunch together on our next visit…and we were getting pizza.  You want to talk about anxiety and fear food? That would be it.


So the next week came and let me tell you my ED was working overtime on my drive there and my nutritionist saw it the moment I walked in. But she wasn’t letting me off the hook.  She told me to think of good times I had in the past that was around pizza.  There were tons of times when Matt and I would just randomly order pizza and no, I didn’t gain 10 pounds overnight after those nights.  So off we went.  And let me tell you something. I DEMOLISHED TWO WHOLE PIECES OF PIZZA. And I loved every bite of it.  I was very proud of myself.  It might have helped that I was starving so there was no way I wasn’t eating, but I didn’t let myself stop.  I ate until I was full. Yay me.

Now on to some recent eats. Because there have been some tasty ones.

 Since I have the pumpkin fever, I’ve been trying to find creative ways to incorporate it into my meals.

i guess this is a pumpkin quesadilla but with no cheese. this is stuffed with pumpkin, banana bread hummus, and an apple.

paired with a side salad mix of romaine and baby spinach topped with some carrots and red bell pepper.

I could seriously probably eat pumpkin in every meal and be perfectly ok with it.

buckwheat adventure

Holy best breakfast in awhile batman!

Inspired by Courtney at SweetToothSweetLife and wanting to add more gluten free products into my diet (I’ve been having severe bloating lately and I have increased my carbs, so I am wanting to see if gluten has anything to do with it) I decided to get some buckwheat hot cereal, because um she did a mouth watering post on her buckwheat bowls.

Let me tell you for being my first bowl I made a wonderful concoction.

yea, i put it in a cottage cheese container. i just so happened to have finished the best cottage cheese ever the night before and thought hmm oats would be great in here! well it turned into buckwheat, but you know same thing.

Seriously if you are a cottage cheese person. Get this cottage cheese. Now. Go.

Well like I said I made one of the best concoctions I think I have made lately, and of course it just a random process of throwing in a little bit of this a dash of that. But I’ll try and approximate what I put in it for recipe sake.

Chocolate Protein Pumpkin Buckwheat Bowl

1/4 cup Bob’s Red Mill Buckwheat Hot Cereal

1-1/2 cup water (or liquid of your choice)

1 tbsp unsweetened cocoa

1 scoop chocolate protein

1-2 tbsp pumpkin

1/2 tbsp vanilla extract

1/2 tbsp cinnamon

1 tsp pumpkin pie spice

topped with coconut butter, chocolate coconut butter and a few slices of banana. i can't ever go without banana.

Not my prettiest work, but as far as tasty goes. Well yes, this was one of my tastiest.

This actually kept me a bit fuller than my oats typically do which was a great thing, but I must admit, I like the texture of my steel cut oats the best.  I am having fun experimenting with all these different grains and textures and love that I have a choice now instead of always just going with plain rolled oats.  Now don’t get me wrong, I love my rolled oats, but again the choice of texture is nice to have!

savory girl

I consider myself a really sweet girl. I know I know, thank you thank you.

Well yes, I think I am pretty nice, but what I mean is I prefer sweet over savory.  Which may explain why I could literally have breakfast for all of my meals.  Starting my recovery and having a nutritionist has really changed my eating habits.  Not only do I eat ALL the time now (ugh when will this never ending hunger part be over?), but I also had to expand the foods I was eating.  Which was very hard for me.  Thankfully my nutritionist works with me and my vegetarianism, but I was still forced to focus on making real meals.  Something for the past 9 months I had not been doing.  But the truth of the matter is I’m a snacker, and I like to snack.  But having to get a certain amount of protein, fats and carbs, I now need to make sure that my meals are more balanced.  Which if you don’t have to pay attention to it, it’s quite a task.  I also find that I have to eat foods that I don’t necessary have a taste for, but it’s the “right” thing to eat.  I HATE this.  I feel food is all about enjoyment, enjoying what you put in your mouth and eat what you have a taste for.  So what if you have cereal for dinner, it’s what you had a taste for, it filled you, and you’re satisfied.

this sweet oat bowl of goodness was actually a dinner, but i was in the mood for oats and fruit, my body didn't care what time the clock said, it gave me a craving, and i fulfilled it. but this isn't a "real" dinner. well, my stomach was pretty happy with it.

Now I am in no way shape or form saying I’ll just eat whatever I want and not meet my nutrition goals, because let’s be honest, my main concern and goal is to get healthy again and with that I need to have a balanced diet.  What I am saying is if I want a sweet dinner, and I’ve met my goals, I’m going to have a sweet dinner, that and I can always make up for it in sides and make sure I am getting everything I need into my day.

this was a pretty sweet dinner. but i have all my components. even though this is a soy chocolate pudding panini, i have a banana bread hummus on it for my fat, yogurt on the side for my protein, carbs of course bread, and ok the baby cheese puffs are just for fun.

With all that being said, my main point really is, I can make real meals too. Real to me anyways. This girl can be savory too!  It’s hard to say no to my sweet tooth sometimes, but I have made some pretty tasty savory meals.

Ok so that was was sweet and savory.

quinoa stir fry with buffalo chickpeas. i'm obsessed with buffalo and it didn't really "go" with the dish, but it was amazing. i have weird tastes. i know. you should know by now too.

Then there was today. I was totally craving cereal, but the days right after I see my nutritionist (when I seem to have the most sense still in me) I decided against it and made a more savory lunch. It was good, trust me, but it just didn’t quite “hit the spot”.

now as tasty as this was, and it was, you can bet your bottom dollar I still had to have a sweet snack when i was done.

Wow I swear I actually don’t eat chickpeas that often, but it looks like I eat them with every meal! I’ve been making a lot of home made hummus which leaves me with only a handful of left over chick peas, which is why I just like to randomly throw them into my meals.  For some reason I have a weird obsession and hate tupperware containers taking up space in my fridge.  That thing is so organized it’s kinda pathetic!

I can’t help the ruts I get in, and right now it’s a sweet one. But I am truly one of those eaters that can eat the same thing over and over and over. Then I will probably never eat it again. And I really believe that if you don’t satisfy your cravings you will just end up eating more, because even if I eat the “right” things, get my protein, fats, and carbs in, if I’m not satisfied, I’m going to be hungry again.

I’ll eat my words. I have no problem doing it. However, the words I am about to eat, I’m not completely at fault.

Or at least I will tell myself that.

A few days ago I made this post regarding my refusal to eat pumpkin until our temperatures cooled down.

I can guarantee you, our temperatures have not gone down.

But I can also tell you…

I had pumpkin oats for breakfast.

pumpkin oats in all their glory. coconut butter glob? yes please, sprinkle of brown sugar and cinnamon. check! and yes i think a spoonful of chocolate coconut butter also made a later appearance, because i dont think i can go a meal without adding it to something.

I really can’t be to blame here.

Then the fact that I had company who loves pumpkin.

And we all remember my case of pumpkin that stares me down from the corner?

i mean look at how menacing this thing is.

And I didn’t want to be rude when all the requests for a pumpkin breakfast were made. Seriously, I mean, you just can’t deny your guests what they want.  So a big batch of pumpkin oats was made.  And I’m not sad about it at all.  I’ll eat my words and my oats thank you. -chomp chomp-

the coconut butter is a must on this pumpkin gooey lovelyness of pumpkin magic. i found a new lover and his name is coco-nut.

So I figured well. If I’m breaking my pumpkin strike, might as well finish the can right? I had been wanting to make muffins for a few days and Nicky had suggested her maple pumpkin muffins, so why not right? I have the day off,  the friends had left for their trek home, the house was already a mess. Muffin making it is!

 These turned out ah-mazing. The only change I made was I left out the oil and used unsweetened applesauce instead. But oh my gosh.  These things were delicious.  As soon as I tasted the batter I knew I was in trouble.  In trouble meaning it was going to be very hard not to eat them all in one sitting.

as soon as these came out of the oven, the smell was amazing.

I really am starting to love baking. It really is a totally different experience than cooking. I’m not too educated on the different flours and how everything works together, but I am very eager and excited to learn.  I feel the more baking recipes I try and the more successes I have the more my passion for it comes out.

I am so excited to experiment with new recipes and may even buy some new flours! I know it may seem like I am a bit too excited over this, but for someone who really didn’t have a lot of passions in her life, finding something that you really enjoy and feel great doing is very freeing.  Even if it’s just cooking and baking.  But I really am happy to find something I love doing so much. Culinary school anyone? Maybe. It’s something I may start looking into.
