I have a lot to share with you, but I will warn you it is not all food related. Actually most of it is not food related, but just some of the happenings around here.

As I mentioned my grandma had recently passed away.  As much as I did not want to, I took my mother’s offer of flying me out there for the funeral.  The reason I did not want to take her up on this, was again as briefly mentioned, me and my parents do not have the best of relationships, especially when it comes to money.  My mother does not let me forget when she gives me money or does something for me.  But I really wanted to say goodbye to my grandma properly and have that closure.  And even though it was the longest 2-day visit, I really do think it was worth it and I am so glad I got to say good bye to my grandma and see her one more time.

My flight was at 7am, meaning a 4:30am wake up call, so bright and early Matt and I headed to the airport. I always hate leaving him.

Oh funny story. The guy in front of me ordered an iced chai tea, they gave him a hot one instead.  So of course I asked if they were just going to throw it away, the barista actually offered me the whole coffee, which I declined, but not before I poured some into my Americano. Oh the perks of being so random and forward it kills me sometimes. But it made my Americano much better and much creamier!

When I arrived in Chicago, my friend Natalie picked me up from the airport. Since I haven’t seen her in awhile and as a little thank you for picking me up (and the fact I was really anxious/nervous about seeing my parents and grandma) we stopped for lunch and a drink.  I of course sent Matt a picture to make him jealous. (he was stuck at work and all)

It was so great to catch up with her. And enjoy a good beer of course.

But I had to face reality and go to meet my parents at the funeral home. Well regardless of our past, I had a decent visit, had some good conversations with my parents in the short amount of time we had and the highlight of my trip, I got to see my niece!!

Sometimes tragedy brings us together and I am so glad that I got to go back, say goodbye to my grandma, and spend some time with my family.

Overall a good visit. However I am completely exhausted and don’t know when, if ever, I will catch up on sleep.

It definitely wasn’t the next day. Oh no. It was graduation day!

I contemplated not going to the ceremony because I was seriously a zombie walking that day.  I had a celebratory lunch with Matt’s parents and talked with them about possibly not going.  They talked sense into me and told me that I should go and I would more than likely regret it later if I didn’t.

Well let me tell you, they were right.  In looking at the program (as I was sitting waiting to get my diploma) I noticed something. I was valedictorian of my class!  I didn’t even know! I even got to go up on stage and receive a plaque from the school’s president. Kind of cool. On top of that I also made the school’s academic excellence list and was inducted into their honor society.  So needless to say, I am glad I went.  And it was good to see some of my classmates as well!

Of course the ceremony was long, and we didn’t get home to late, but the next day being Saturday I would get to at least sleep in right?

Wrong.

I had to work at 7am. But it was at least an easy day and I got great news.

My externship was technically over on Tuesday and today they offered me a job!

So I am officially a paid employee now! I am so excited.

So instead of coming home, maybe taking a nap, this is how I spent the rest of my afternoon.

For a graduation gift Matt’s mom gave me some money to buy new scrubs so I think I am going to treat myself to a little shopping adventure today, but that’s pretty relaxing if you ask me!

Long weeks make me actually appreciate hump day.

My days have been long, but exciting, so I guess it all evens out. My externship is giving me exposure to so many new things, and even though it’s a bit frustrating I don’t know how to do everything yet, it is also so exciting to experience it! (for example we had an emergency where a dog jumped though a window and ripped the tendons in his foot and was bleeding all over the place and then I delivered my first C-Section puppy and revived it back alive!)

But as exciting as all that is, I know that is not why you’re here. You’re here for the foodie wonderfulness that is What I Ate Wednesday.

But even though it may not look super pretty, seriously, these things taste amazing.

Fail.

The egg wrap totally fell apart and it quickly turned into a egg pancake in some classy tupperware topped with banana and peanut butter.

But again, still delicious.

And just so you don’t have to stare at my ugly (but delicious) breakfast creations, I was actually impressed at the breakfast one of my co-workers created.

Talk about mountain of fruit goodness. She also used Chobani greek yogurt, so I was very impressed with that as well.

We have a guy who boards his dogs with us at the clinic every Tuesday (I guess free of charge), so in return he brings us masses of fresh fruit and donuts or some baked treat. Fair trade if you ask me, and you better believe I gorge on that fruit. You guys know me and fruit. I’m obsessed.

I started my externship and even though I am happy to report I have survived my first few days, I am not happy to report that since two of my three meals are eaten either in the car or at work, they are not exciting nor photo worthy. And I’ll be honest after 11 hour work days I don’t have much motivation to make dinner presentable.

You were warned.

I did however want to make sure I participated in this week’s What I Ate Wednesday because as mentioned above, I have no idea if my meals will be worth mentioning anytime soon. Maybe since I won’t be eating breakfast or lunch at home, it will force me to be more creative at dinner time. I can’t make any promises though.

But before that happens, let’s first head over to Jenn’s at Peas and Crayons and say thank you and check out everyone’s tasty eats, and then let’s look at what might be my last artfully put together meals.

I first want to prove my point of non photo worthy breakfasts.

This breakfast was so ugly, I felt like I just had to share it.
Even though it looks like absolute garbage, it was still pretty tasty.
In the mix:
1 heaping handful of organic baby spinach
1/2 frozen banana
1/2 cup Trader Joes frozen Berry Blend
– 1 tbsp Cinnamon Raisin Swirl Peanut Butter
1 scoop Plant Fusion chocolate protein powder
5-7 drops of  liquid vanilla Stevia
dash of cinnamon, ginger
and to bulk it up a bit I added a sprinkle of chia seeds and rolled oats.
I actually made this the night before to let it all absorb and hopefully get a bit thicker (I think I added too much liquid when making it)

So let me redeem myself and show you my last photo worthy breakfast I made before I started externship.

 This was my last relaxing morning breakfast I plan on having for awhile. I enjoyed it very very slowly and savored every last bite.

Everyone always says oatmeal is boring. Not around here. I love oatmeal, you can seriously flavor it so many ways, and put endless toppings on it. You just have to be creative. How is that boring?

This delicious looking bowl was

Chai Overnight TVP/prOATs.

In my mix:

1/4 cup rolled oats

1/3 cup TVP

1 scoop Plant Fusion vanilla protein powder (stirred in at end)

1 cup almond milk (I use Silk vanilla)

1/2 tbsp cinnamon

1 tsp ginger

1 tsp cloves

7-9 drops vanilla Stevia

Topped with my typical mish mosh of frozen banana, fresh strawberries, and a local granola for the crunch. I gotta have that crunch.

Maybe not as pretty, but worth mentioning, I have been snacking on some pretty tasty things lately.

Matt and I got this bottle of wine from our favorite local winery I honestly want to say about 2 years ago.

I had braces at the time and didn’t drink red wine due to not wanting to stain my teeth.

We decided it would be our celebratory wine when I got my braces off.

Yea, that never happened.

I figured my first day of externship, first 11 hour day of many to come, finally called for a little red wine celebration.

So with that being said, I am off to be a grandma and go to bed early.

Do you guys have any good green/power smoothie recipes to share? I need something that will make them tasty, yet will keep me full for hours. The chia seeds, peanut butter and oatmeal seemed to help, but I’m open to suggestions!

I can’t believe it’s already Monday, my weekend just seemed to have flew by. I am also such a mix of emotions right now. I actually just sent an e-mail to my potential externship site to set up a finalized schedule with them. I am so nervous about actually starting to work, but also so excited to be actually starting to work! Funny how one experience can give you multiple emotions. The clinic I choose I think will offer me a lot though in terms of a learning experience and exposing me to a wide range of client and animal care experiences. The doctor was very honest in saying some of their clients are somewhat “difficult”, this being because they kind of cater to the breeding/show dog community, so the owners can be a bit “demanding” if you will.

But the doctor along with the staff seemed really laid back and easy to get along with, so I think that will balance out the needy/challenging clients. Another thing I’m worried about? My schedule will be 7am-6pm. Oh yes, I have 11 hour days in my future. And considering I am a bit OCD when it comes to schedule, this scares me. But in the big picture I think this will be good for me. Because let’s be honest, my fears are: 1. I won’t have time to exercise (eating disordered fear that needs to be addressed) 2. I won’t be able to plan my meals, I may have to eat what they order in (eating disordered fear that needs to be challenged) 3. I won’t know what time I will be home and I will be exhausted (this fear is legit).

So I actually think this schedule will be good for me in the long run for my recovery. I will not get to work out everyday (which my nutritionist has been begging me not to do for some time now), I will be forced to eat uncomfortable foods (foods that are normal to eat and I shouldn’t have a problem with anyways). It will force me to face issues I have been hiding from. So, I’m scared, yes, but ready for the challenge. My end goal is to get better and not have eating disordered thoughts, so let’s go big or go home!

But enough of that, because as we know Monday’s are the time to be marvelous.

My weekend was full of fun times. I knew it would be my last Friday off for awhile so Matt and I took advantage of it. The weather here has been absolutely gorgeous, so I told him day drinking was in order. We even made a lunch date and went to a local taco stand  that he raved about.

It was pretty tasty! And fun!

Sunday was pretty fun as well. While all you crazy kids were out celebrating Cinco de Mayo, I was stuck at work. Thankfully next weekend will be my last weekend (there is no way I’m working 11 hour days and working the weekend). I did  however sneak away on my break and met Matt  at a local brewery for a quick drink.

Did you celebrate Cinco de Mayo?

This will be two. Count them two Monday’s where I am just so ecstatic.

If you remember my last MIMM you will know I not only was almost done with school, but I had a pretty epic weekend in terms of making huge progress in my recovery. Seriously, this weekend was like deja vu.

So again, for my Marvelous In My Monday (thanks to the ready to pop Katie ♥), I am going to re-cap on the amazing weekend I had.

 

I will start off my saying, I’m not going to lie in saying my huge dinner out last week did not follow with some  heavy thoughts. The amazing thing about where I am now, is yes, I may still have some eating disordered thoughts, but I counter-act them almost immediately. It never affects my food choices, I never restrict, and I know I am doing what I need to do to get healthy.

But let’s get to this past weekend, because guys. Whew. It was a good one.

First off.

Although I’m not going to lie, I’m going to miss those cute little notes Matt left me.

But I did it guys, and I totally am going to take this opportunity to toot my own horn and say I did amazing. I got a 91% on my final, which got me an A in my class and, guys, a little secret (I have gotten an A in every.single.class)

So of course celebrations were in order. And it started at school.

Our teacher was nice enough to get us a cake to celebrate us being done! And really, what’s a celebration without cake?

Matt and I had already discussed going out to dinner to celebrate and he left the location up to me.

Ok guys, a first happened. I did not have a taste for anything.

Seriously, coming from me, that’s a pretty big deal. I usually have a craving for something, but I for the life of me could not think of anything that sounded good. But after all day of contemplating, and getting advice from my Facebook and Twitter folks, I decided on a place that I had been to with a girlfriend and raved to Matt about, but him and I hadn’t gotten the chance to go yet.

True Food Kitchen is a more natural, organic whole foods restaurant and their food is just so fresh and amazing, I knew I wouldn’t be disappointed going there.

I love that they prep all their food right out in the restaurant. It’s all so open and fresh. And seriously, look at my date, the night was bound to be good.

We of course had to start with cocktails. I asked the waitress for a recommendation and she suggested the Ginger Margarita.

So with that, that’s what I chose, Matt had a Kiltlifter which is a beer from a local brewery.

There is something about fresh cocktails that make them that much better. And goodness that bartender was kind to me, because he must have poured with a heavy hand because I sure was feeling it.

So to counter act my boozy-ness, we decided to get an appetizer.

Herb hummus topped with feta and the best pita bread ever. But seriously, this hummus. One of the best things I have put in my mouth. Seriously, I may be over excited, but as soon as the first bite hit our mouths, Matt and I both were just oh my goshing the whole time we were eating it. We actually both made comments tonight how we wanted more. So good.

For my entree I got the Teriyaki Brown Rice Bowl with Tofu. This is actually what I got last time I was there, part of me wanted to venture out and get something new, but part of me remembered how amazing it was. I’m so glad I got it again, just as amazing as I remembered, however I think next time I will be adventurous and get something new. You never know, I could find a new favorite. But don’t worry, I enjoyed every last bite of this.

Matt, God bless his heart, get’s so excited when he eats something good, that I basically had to beg him to take a break so I could try a piece.

I managed to steal a bite and it was delicious as well and as expected.

Even though I felt stuffed after dinner, I really wanted to get dessert.

I decided to get the Lemon Ginger Frozen Yogurt, Matt got the Strawberry Rhubarb Crisp.

Ok, so my frozen yogurt was good. But Matt’s crisp? Dear Lord. I really really wanted to stop at one bite, but I couldn’t. As stuffed as I was, I found so much room for that dessert. I haven’t ordered dessert from a restaurant in so long, I am so glad we decided to that night.

I will say I went home with a very full belly and a bit of a heavy head, but it always passes and that is one thing I have learned. The uncomfortableness always passes. It was a night of celebration, I enjoyed my food, my company, and my accomplishments. Overall it was an amazing night. Again.

Being in school I am also always looking for healthy snacks to take on the go. Sometimes my lunches remind me of when I was a kid and my mom still packed my lunch. I don’t know about you, but I got your cookie cutter brown bag lunch. A sandwich of some sort, chips/crackers/cookies and if I was lucky maybe a piece of fruit. But I’m going to be honest, I think that piece of “fruit” was usually a fruit roll up or fruit snacks. I wasn’t the healthiest of an eater back in the day, but you know what, I was a kid and let’s be real that’s what kids eat.

Growing up, I kind of miss those lunches, but I now know that a lot of those items are not the best nutritionally. And the older we get, the better we need to care for our bodies. (I’m not promoting feeding children loads of processed foods, I really think we need to be more proactive in providing our children with healthy food choices, but it is what I ate growing up, and I’m not dead so I really don’t think an Oreo here and there will kill anyone.)

But back to today and my life now. Growing up on things like Cheez-Its and Wheat Thins, they hold a special place in my heart. So what’s a more health conscious girl to do when she gets a craving for that little orange square?

Well, Fiber Gourmet came to my rescue.

Fiber Gourmet takes these classic crackers, but offers a lower calorie, higher fiber option.

Being the huge snacker I am, I knew I had to try these!!

They not only offer crackers, but also offer pasta as well.

I of course had to try the crackers.

I’m going to be completely honest, one thing I love about the original Cheez-It is the salt. Yea, I’m a a salt girl. These were actually not salty, and lightly baked, which to all you salt avoiders is a huge thumbs up. I did love that they were so light and airy. A great alternative to the original cracker.

Next I tried the Nacho flavor for an on the go snack for school.

Ok guys, seriously. These were amazing. I mean, I know it’s just a cracker, and it’s just nacho flavoring, but I am a spicy cracker type of girl and these satisfied both of those cravings. So I highly recommend this flavor. (no really go buy a box right now)

Lastly I tried the Wheat Thinables. I’m not going to lie, I was the most excited for these because I love Wheat Thins, I will be honest in saying I was a bit disappointed in these.

The crackers were extremely dry. But I solved that problem by dipping them in one of my dessert hummus creations. Nothing that stuff can’t fix.

Overall I like the options Fiber Gourmet gives in term of a healthier cracker. Extra fiber is always a good thing especially if you are trying to curve a hungry growling stomach in the middle of class.

This post might be short and sweet, but I have so much school work it’s ridiculous.

Not only do I have normal class work, but on top of that, we have surgeries to prepare for, which basically makes my teacher rush through book stuff, which then basically puts it all on us to just read and teach ourselves the book stuff.

It’s frustrating, but in all honesty, I’d rather be prepared for surgeries than do notes.

On the flip side, my test is still based on the book.

But I am so excited for today’s surgery.

I have to say the one flavor that most took me by surprise on how much I liked it…Cream Soda.

I wouldn’t say it tastes like real cream soda, but it is amazing on it’s own for what it is.

I can’t decide if it being Wednesday has come quickly, or if the week is going by slow.

My week has already been so jam packed I’m happy the week is halfway through, but I also feel like Friday can’t come soon enough.

For starters this week at school has been intense.

I am in Microbiology and we are starting to learn all the bacteria.

Do you know how many bacteria there are? A lot. And it’s almost impossible to learn them all.

I sure am trying though.

I also have had an intense week in terms of my recovery.

Guys, I think I am finally making the weight gain plunge and have developed the mind set of “just do it” because honestly, that’s the what I have to do.

For anyone who has recovered from an eating disorder this is one of the hardest things to accept. You know what you need to do (gain weight),  you know you need to do it, yet it’s just so dang hard to do. Which is weird.

But let’s take a break from all the heaviness and take some time for fun, positive things.

Ironically the day I had planned to have my wonderful OIAJ, the inspirational Sarah posted an Instagram picture of her “chocolate cake” oats that were in the making.

I made my oatmeal/TVP chocolate cake prOATS (thanks to Plant Fusion chocolate, NuNaturals vanilla Stevia and a little vanilla and nut butter flavoring) and added them to my beautiful Wild Squirrel chocolate sunflower seed butter jar that was waiting for me.

So with a delicious, satisfying breakfast accomplished, it was on to the stressful school situation.
But I got a little help in that department too.
I have wonderful classmates who make it just a bit more enjoyable.

Ok, I know I have been eating a lot of cupcakes lately, and I almost passed this one up. But so glad I didn’t.
This seemingly simple chocolate cupcake was topped with the most amazing fresh raspberry frosting. It literally was amazing raspberry goodness in my mouth.
And every bite was delicious. (and guilt-free, win!)
So with that being said let me take a moment to acknowledge my new found success in the weight gaining department.
(Feel free to skip this part if you’re not interested in my eating disorder conversation. You won’t hurt my feelings. It’s not for everyone.)

For the past 6 months, I have been going up and down in the weight gain department. I would have a few weeks of really good progress and then I would just stall again. I know I need to gain weight. I want to gain weight. But when I actually pushed myself, made myself uncomfortable, I always questioned it with “will I be able to stop”. Well, I didn’t question it, my ED was just trying to scare me and stop me. And sometimes he won.
But great conversations with Matt, his help to push me to eat even when I wasn’t hungry and to eat foods that scared me, made me realize I need to do this. For me. For my health.
So our new motto was I was not gaining weight, I was getting healthy.
Amazing what changing that perspective can do for motivation and acceptance.
So I’ve accepted that I need to get healthy. And I think finally I am mentally able to accept that.
(with the help of my amazing fiance, nutritionist and therapist as great support)

Ok back to fun stuff.
Other meals sadly have been low key due to the craziness of school (however come back soon for the amazing crock pot recipe I have cooking as we speak!) but I have managed to sneak in a few tasty snacks.
First to celebrate Matt and I finally cracked open this bad boy.

We have had this brand in the Maple Bacon, which to me was a bit too maple and a bit too bacon. But if this one was going to be over powering on flavors I figured you couldn’t go wrong with chocolate, peanut butter or banana.
Surprisingly enough, this beer was an amazing blend and balance.
It tasted like a great deep brown ale, with just a hint of all the other flavors. Matt and I both loved it.

Another new to me drink that gets me through class is Zevia.
Well Zevia isn’t new to me, that is a long time obsession, but the Grape flavor was new to me.

Black Cherry will always hold the top spot in my heart, but I was pretty impressed with the Grape.

I also took the time cheer up my night time “dessert”.
Greek yogurt mixed with CytoSport Chocolate Casein with PB Thins as my little dunk-a-roos and then of course sprinkles to make it cute.
Because I love sprinkles. And they make everything better.
